Effects of Jerusalem Artichoke Powder and Sodium Carbonate as Phosphate Replacers on the Quality Characteristics of Emulsified Chicken Meatballs

  • Today incorporation of natural ingredients as inorganic phosphate replacers has come into prominence as a novel research topic due to health concerns about phosphates. In this study, we aimed to investigate the quality of emulsified chicken meatballs produced with Jerusalem artichoke powder (JAP), either alone or in combination with sodium carbonate (SC) as sodium tripolyphosphate (STPP) replacers. The results showed that naturally dried JAP showed favorable technological properties in terms of water-oil binding and gelling. Emulsion batters formulated with JAP-SC mixture showed lower jelly and fat separation, higher water-holding capacity and higher emulsion stability than control samples with STPP. In final product, incorporation of JAP-SC mixture increased moisture and reduced lipid and energy values, and kept the pH value similar to control. Added JAP lead to increments in $b^*$ values whereas decreases $L^*$ values. Cook yield was similar to control in phosphate-free samples formulated with JAP-SC mix. Either low or medium ratios of JAP in combination with SC managed to protect most of the sensory parameters, while sensory scores tend to decrease in samples containing high levels of JAP. Addition of JAP to formulations presented samples that have equivalent behavior to phosphates in terms of lipid oxidation. In conclusion, our study confirms that utilization of JAP in combination with SC had promising effects as phosphate replacers by presenting natural solutions and providing equivalent quality to standard phosphate containing products.

  • Ablation phenomena is very complicated because it includes momentum, energy and mass transfer, chemical reactions as well as phase change. In this paper, ablation at the rocket nozzle throat is modeled as unsteady one dimensional axi-symmetric with proper boundary conditions and field equation is solved numerically. Analytical results are compared with measured ablation data from firing experimental liquid rocket engine. Test variables are combustion pressure and mixture ratio. for low combustion pressure and low mixture ratio, the discrepancy between analysis and experiments are large but for the normal rocket operation range, two results show a simliar trend with maximum discrepancy of $100\%$.

  • This paper dealt with experimentally the effect of $N_2$ and $H_2$ gas mixtures ratio in the fatigue characteristics of SM45C on Ion-nitrided. The specimen were treated water cooling after Ion-nitriding at $500^{\circ}C$ and 5 torr. in 80% $N_2$and 50% $N_2$gas mixtures ratio in the atmosphere for 3 hrs. The hardness distribution and the depth of nitriding layer shows more increase in 80% $N_2$gas mixture ratio than 50% $N_2$. Ion-nitrided specim- en for 80% $N_2$gas mixture ratio show more increase infatigue strenght in the $>1.5{\times}10^5$ cycles region than 50% $N_2$. In the $<1.5{\times}10^5$cycles region, fatigue failure is due to cracking of the brittle nitrided case, and the propergation of the surface cracks into the core. But in the $>1.5{\times}10^5$cycles region, it is found that cracks propagate from the non-metallic inclusions in the subsurface.

  • To analyze the mixture formation process of evaporating diesel spray is important for emissions reduction in actual engines. Then the effects of change in density of ambient gas on spray structure in high temperature and pressure field have been investigated in this study. The ambient gas density was changed from ${\rho}_a=5.0kg/m^3$ to ${\rho}_a=12.3kg/m^3$ with CVC(Constant Volume Chamber). Also, simulation study by modified KIVA-II code was conducted and compared with experimental results. The ambient temperature and injection pressure are kept as 700K and 72MPa, respectively. The images of liquid and vapor phase in the evaporating free spray were simultaneously taken by exciplex fluorescence method. As experimental results, with increasing ambient gas density, the tip penetration of the evaporating free spray decreases due to the increase in the drag force from ambient gas. The spatial structure of a diesel spray can be verified as 2-regions consisted of liquid with momentum decrease and vapor with large-scale vortex. The calculated results obtained by modified KIVA-II code show good agreements with experimental results.

Combustion Enhancemen of Premixed Mixtures Using Laser-Induced Cavity Ignition (레이저 유도 공동 점화방식을 이용한 예혼합기 연소 특성 향상)

  • In this study, a new type of laser-induced ignition using a conical cavity has been developed to utilize all the available incident laser energy. In the method, it is possibile to ignite combustible methane/air mixtures by directing a laser beam of a constant small diameter into a small conical cavity, without focusing the laser beam. Shadow graphs for the early stage of combustion process show that a hot gas jet is ejected from the cavity, especially with lean mixture. After a very show time, the hot gas jet finishes issuing and the flame behavior is quite similar to flame propagation initiated by a conventional spark ignition. The combustion process using the new method exhibits more rapid pressure increase and a higher maximum pressure rise than that of the center ignition using laser-induced spark, with significant decrease in the combustion time. Also, the new ignition method is numerically modeled to simulate the flame kernel development and subsequent combustion process using the KIVA-IIcode. The calculated results show satisfactory agreement with experimental results.

Vibration analysis of sandwich sectorial plates considering FG wavy CNT-reinforced face sheets

  • This paper presents the influence of carbon nanotubes (CNTs) waviness and aspect ratio on the vibrational behavior of functionally graded nanocomposite sandwich annular sector plates resting on two-parameter elastic foundations. The carbon nanotube-reinforced (CNTR) sandwich plate has smooth variation of CNT fraction along the thickness direction. The distributions of CNTs are considered functionally graded (FG) or uniform along the thickness and their mechanical properties are estimated by an extended rule of mixture. In this study, the classical theory concerning the mechanical efficiency of a matrix embedding finite length fibers has been modified by introducing the tube-to-tube random contact, which explicitly accounts for the progressive reduction of the tubes' effective aspect ratio as the filler content increases. Effects of CNT distribution, volume fraction, aspect ratio and waviness, and also effects of Pasternak's elastic foundation coefficients, sandwich plate thickness, face sheets thickness and plate aspect ratio are investigated on the free vibration of the sandwich plates with wavy CNT-reinforced face sheets. The study is carried out based on three-dimensional theory of elasticity and in contrary to two-dimensional theories, such as classical, the first- and the higher-order shear deformation plate theories, this approach does not neglect transverse normal deformations. The sandwich annular sector plate is assumed to be simply supported in the radial edges while any arbitrary boundary conditions are applied to the other two circular edges including simply supported, clamped and free.

The Study on Drag Reduction Rates and Degradation Effects in Synthetic Polymer Solution with Surfactant Additives (계면활성제를 이용한 합성고분자 수용액의 마찰저항감소 및 퇴화 특성 향상 연구)

  • The turbulent flow resistance of water solution with polymer is reduced as compared with that of pure water. This effects is named th drag reduction and offers the significant reduction of the pumping power and the energy consumption. But the intense shear forces and the high temperature experienced by the polymer solution when passing through the pipes cause the degradation a loss of drag reduction effectiveness. Especially, the degradation behavior is found to be strongly dependent on temperature. This mechanical and thermal degradation can be avoided by adding materials such as surfactant to the polymer solution, which enhance the bonding force between molecules. In the present study, Copolymer and SDS were utilized and they were mixed in 10 different mixture ratios, while total concentration was fixed as 100wppm. Degradation of Copolymer-SDS mixture solutions was investigated experimentally in closed loop at the temperature of $10^{\circ}C\; and\; 80^{\circ}C$ with various flow average velocities of 1.5 m/sec, 3.0m/sec, and 4.5m/sec. Degradation characteristics of polymer solution without surfactant show a radical loss of drag reduction effectiveness at high temperature. Degradation alleviation ability of surfactant is especially effective at high temperature. Consequently, this results show that the addition of surfactant to the polymer solution can control unfavorable degradation phenomena for high temperature systems.

  • Based on the proven feasibility of bottom ash and tire shred-soil mixtures as lightweight fill materials, tire shred-bottom ash mixtures were suggested as a new lightweight fill material to replace the conventional construction material with bottom ash. Therefore, we carried out the laboratory test, field compaction test and performance test of large scale embankment in order to evaluate their suitability for the use of lightweight fill materials in the before studies. We could verified that the ash, tire-shred and the mixture are able to be the useful materials as light fill materials. In this study, we built real scale embankment with RBA(Reclamated Bottom Ash), TRBA(Tire shred-Reclamated Bottom Ash mixture), WS(Weathered Soil), BA(Bottom Ash screened by 5mm sieve) for monitoring the behavior such as settlement, lateral displacement and water content change. Furthermore, we are examining the ground water quality in the surrounding area of the test embankment.

Rheological Differences of Waxy Barley Flour Dispersions Mixed with Various Gums

  • Rheological properties of waxy barley flour (WBF) dispersions mixed with various gums (carboxyl methyl celluleose, guar gum, gum arabic, konjac gum, locust bean gum, tara gum, and xanthan gum) at different gum concentrations were examined in steady and dynamic shear. WBF-gum mixture samples showed a clear trend of shear-thinning behavior and had a non-Newtonian nature with yield stress. Rheological tests indicated that the flow and dynamic rheological parameter (apparent viscosity, consistency index, yield stress, storage modulus, and loss modulus) values of WBF dispersions mixed with gums, except for gum arabic, were significantly higher than those of WBF with no gum, and also increased with an increase in gum concentration. In particular, konjac gum at 0.6% among other gums showed the highest rheological parameter values. Tan ${\delta}$ values of WBF-xanthan gum mixtures were lower than those of other gums, showing that there is a more pronounced synergistic effect on the elastic properties of WBF in the presence of xanthan gum. Such synergistic effect was hypothesized by considering thermodynamic compatibility between xanthan gum and WBF. These rheological results suggest that in the WBF-gum mixture systems, the addition of gums modified the flow and viscoelastic properties of WBF, and that these modifications were dependent on the type of gum and gum concentration.

Pyro-Electrochemical Reduction of a Mixture of Rare Earth Oxides and NiO in LiCl molten Salt (LiCl 용융염에서 NiO를 혼합한 희토류 산화물의 파이로 전해환원 특성)

  • An electrochemical reduction of a mixture of NiO and rare earth oxides has been conducted to increase the reduction degree of rare earth oxides. Cyclic voltammetry (CV) measurement was carried out to determine the electrochemical reduction behavior of the mixed oxide in molten LiCl medium. Constant voltage electrolysis was performed with various supplied charges to understand the mechanism of electrochemical reduction of the mixed oxide as a working electrode. After completion of the electrochemical reduction, crystal structure of the reaction intermediates was characterized by using an X-ray diffraction method. The results clearly demonstrate that the rare earth oxide was converted to RE-Ni intermetallics via co-reduction with NiO.
