Development and Commercialization of Wash Free Rice Equipment (홍국(Red Yeast Rice)개발)

  • When the quality and cooking characteristics of wash free rice was compared with those of control milled rice during storage, smaller quality change during storage and more easy to cook was found in wash free rice than control. The wash free rice equipment manufactured in foreign country was carefully investigated and commercial wash free rice equipment with 1metric ton per hour capacity was made considering the characteristics of domestic rice cultivar. Modification of the equipment was made through the repeated field test, and the technique on wash free rice equipment was transferred to the RICETECH. These systems were manufactured in RICETECH will be exported to China next year.

Effects of the Substitution of Wet-Milled Rice Flour for Wheat Flour on the Physicochemical Properties and Acceptability of Yellow Layer Cake (습식제분 쌀가루의 첨가가 옐로 레이어 케이크의 이화학 특성과 소비자 기호도에 미치는 영향)

  • This study investigated the physicochemical properties and acceptability of yellow layer cake prepared using various levels of wet-milled rice flour (RF). RF was used to substitute 0% (control group), 15% (RF-15 group), 30% (RF-30 group) and 45% (RF-45 group) of wheat flour (WF) to manufacture yellow layer cakes. The substitution of WF with RF showed no significant effect on the pH but decreased the specific gravity and viscosity of the batter. Baking loss rates ranged from 4.65% to 5.03%, showing no significant difference among samples. In the color measurement, the experimental groups showed higher redness (a) and yellowness (b) than the control group (p<0.05). The experimental groups showed lower gumminess and chewiness than the control group. According to the results of intensity measurement of sensory properties, the RF-30 and RF-45 groups showed stronger intensities for darkness, sweetness, moistness and softness than the control group. The acceptance test found that the RF-45 group had significantly higher or similar results for all acceptance attributes than the control group. These results indicate that RF addition as a replacement of WF at a ratio of 45% is optimal for producing yellow layer cakes.

Effects of Enzyme Treatment in Steeping Process on Physicochemical Properties of Wet-Milled Rice Flour (효소 전처리에 의한 습식제분 쌀가루의 이화학적 특성)

  • This study investigated the physicochemical characteristics of wet-milled rice flour treated with pectinase and cellulase in a steeping process. Enzyme treatments were used as follows: pectinase 0.05%, cellulase 0.05%, and mixed enzyme treatments 0.05~0.2%. For particle distribution, rice flour E-treated with mixed enzymes (pectinase 0.05% and cellulase 0.05%) was the finest at 48.3% particle distribution less than $53\;{\mu}m$. Protein contents and damaged starch were reduced by enzyme treatments. Damaged starch was the lowest (12.1%) in rice flour E compared with non-enzyme treatment (18.1%). Amylose content, water binding capacity, solubility, and swelling power all increased upon enzyme treatments, and their effects increased upon mixed enzyme treatment. For gelatinization characteristics of RVA, peak viscosity, final viscosity, breakdown, and total setback viscosity increased in rice flours treated with mixed enzymes. Especially, in steeping method with mixed enzyme treatment, pectinase 0.05% and cellulase 0.05% treatment was suitable for minimizing damaged starch and high fine particle distribution of rice flours compared with single enzyme treatment.

Antioxidant Compounds and Antioxidant Activities of the 70% Ethanol Extracts from Brown and Milled Rice by Cultivar (벼 품종별 현미와 백미 70% 에탄올 추출물의 항산화 성분 및 항산화 효과)

  • The objectives of this study were to determine various bio-active components from some brown rice and milled rice of some cultivars, as well as to assess their contribution to the radical scavenging linked-antioxidant activity. DPPH or ABTS radical scavenging activities, and reducing power have been used to investigate the relative antioxidant activities of 70% ethanol extracts. The contents of total polyphenol, total flavonoid, $\gamma$-oryzanol, and vitamin E in the extracts were also measured by spectrophotometric methods or HPLC. The antioxidant components and antioxidant activities of 70% ethanol extracts from brown rice were higher than those from milled rice. In addition, our results showed that the high level of antioxidant compounds was found in brown rice of Hongjinju, and the antioxidant activities of the 70% ethanol extracts from pigmented brown rices, such as Hongjinju and Heugkwang, were comparably higher than the others.

Changes in Quality Characteristics of Brown Rice During Storage (저장중 현미의 품질 특성 변화)

  • The quality changes of brown rice during storage were determined by the method of quantitative analysis of n-hexanal, amylogram, texture and volume expansion. The qualities of stored brown rice were also analyzed with sensory evaluation of cooked milled rice obtained from brown rice, n-Hexanal content, peak viscosity and total setback of brown rice flour pastes increased substantially with the increased of storage period at 35$^{\circ}C$. Up to 10 months of storage at 35$^{\circ}C$, stale flavor obtained by a sensory method markedly increased, but stickiness decreased. The scores of overall preference were in good agreement with those of stale flavor (r=-0.98) and sticky texture (r=0.98). The correlation coefficient between stale flavor obtained by a sensory method and instrumetal analysis for stored brown rice was r=0.97.

Application of Italian Ryegrass-Rice Double Cropping Systems to Evaluate the Physicochemical Properties of Soil and Yield and Quality of Rice in Paddy Field in Southern Parts of Korea (남부지역 논에서 토양의 이화학적 특성 및 벼의 생산성과 미질 향상을 위한 이탈리안 라이그라스-벼 이모작 작부체계의 적용)

  • The physicochemical properties of soil and the yield and quality of rice (Oryza sativa L. cv. Sailmi) were assessed using Italian ryegrass (Lolium multiflorum Lam. cv. Kowinearly)-rice double cropping systems in the paddy fields at Goseong and Miryang in southern Korea. The average temperatures during the ripening period were approximately 1 ℃ higher than the optimal temperature for rice ripening and the sunshine duration was reduced by frequent rainfall. Consequently, it was slightly below the optimal conditions required for rice ripening. In the soil at Goseong, winter Italian ryegrass cropping increased the pH, electrical conductivity, and the contents of organic matter, total nitrogen (T-N), available P2O5, K, Ca, and Mg than winter fallowing. Particularly, the contents of T-N and available P2O5increased significantly. In the soil at Miryang, Italian ryegrass slightly increased the electrical conductivity and the T-N, Mg, and Na contents. Therefore, winter Italian ryegrass cropping improved the physicochemical properties of paddy soils; however, Italian ryegrass-rice double cropping slightly reduced the culm length at both Goseong and Miryang, without markedly changing the panicle length or number compared to fallow-rice cropping. Furthermore, at Goseong, Italian ryegrass-rice double cropping slightly decreased the spikelet number and milled rice yield, and increased the ripened grain rate; however, at Miryang, contrasting results were observed. In addition, fallow-rice cropping revealed no differences in the head rice or opaque rice rates. The protein content was slightly increased in Italian ryegrass-rice double cropping, without significant changes in the amylose content or Toyo value, compared to that in fallow-rice cropping. The peak and breakdown viscosities were slightly decreased. These results indicate that winter Italian ryegrass cropping might alter rice taste but may not exhibit remarkable negative effects on rice cultivation. Therefore, Italian ryegrass-rice double cropping system is recommended for paddy fields in southern Korea. Nevertheless, to increase the rice yield and quality, fertilization standards for rice cropping that consider the changes in the T-N and organic matter contents in paddy fields caused by winter Italian ryegrass cropping need to be established.

  • Calorie, mineral content and amino acid composition of four japonica, seven $j{\times}indica$ and one waxy milled rice were analyzed. No significant differences in calorie, mineral content and amino acid composition were found between japonica and $j{\times}indica$ rice varieties. Only the variation of methionine among varieties was noticed. The most limiting amine acid of milled rices was lysine.

  • Relation between amylose and physical properties of milled rice was investigated. Amylose content was negatively and positively correlated with chalkiness and alkali solubility, respectively. No correlation was observed between amylose content and water uptake rate, cooked rice hardness or relative crystallinity. Relative crystallinity of the starch was negatively correlated with alkali solubility and water uptake rate.
