일본 북해도의 낙농 ${\cdot}$ 유업현항 (위생적 유질을 중심으로) (Dairy Industry Situation in Hokkaido, Japan (Sanitary Quality of Raw Milk))

  • Hokkaido, as center of Japanese dairying, 3.48 million tons of raw milk which was about 40% of total production in Japan were produced from 11,400 farms in 1996. The average herd size and the annual volume of milking per head in Hokkaido were 78 head, 7,200kg, and the quality of raw milk also is much better than that of other area in Japan. Raw milk having less than 100,000/ml in viable count and less than 300,000/ml of somatic cell count were 99.6%, 93% respectively. In spite of producing large amount of high quality milk, only 26% of total amount was processed as market milk and 76% was used for making dairy products like butter, cheese and milk powder. Therefore, because of big difference in price between the raw milk for market milk and for dairy products. the income of dairy farms are much less comparing to other parts of Japan, where most of the raw milk are consumed as market milk.

수유 첫 5개월간 모유 영양아의 비타민 A 섭취량에 관한 연구 (Study on Vitamin h Intake of Breast-fed Infants during the First S Months of Lactation)

  • This study was performed to investigate the vitamin A intake of exclusively breast-fed infants and to compare the value with the Recommended Dietary Allollwances(BDA) for Korean infants. We examined retinol and ${\beta}$-carotene contents of breast milk in 32 lactating women by HPLC analysis and also the consumed volume of the milk of their infants by the test-weighing method during the first 5 months of lactation. Total vitamin A contents of the milk shelved 67.3, 56.5, 51.2, 45.2, 39.0 and 34.lR.E./100m1 at 0.5, 1, 2, 3, 4 and 5 months of lactation respectively. Vitamin A intake of breast-fed infants were 320, 371, 368, 325, 292 and 251R.E/day during the five-month nursing period. Vitamin A intake per body weight of breast-fed infants was measured at 86.4, 79.8, 63.6, 49.1, 40.0 and 31.9R.E/kg/day. Body weight gain of infants was not affected by the vitamin A intake from the milk during the lactation. We conclude that breast-fed infants most likely receives vitamin A from the milk adequately compared with the RDA for Korean infants. (Korean J Nutrition 31(9) : 1433-1439, 1998)

우유의 품질향상과 유대지불체계 개선 (Improvement of Milk Quality and Milk Pricing System)

  • The most important task in Korean dairy industry is to keep the seasonal and annual balance of raw milk supply and demand. Too much surplus milk supply which causes dumping sale of market milk makes dairy industries get in trouble of management, and eventually affects to farmers and consumers economically. As balancing of supply and demand is so important in the fee economic market system, the adaption of the quota system of milk production and seasonal price differentiation has been recommended very often as a method of controlling the milk supply and demand. However, this recommendation did not go through successfully due to the strong objection of dairy farmers. Recently, the voice of consumer's requirement for safer and more hygienic, and high protein, low fat level dairy product is getting stronger. By knowledge of this kind changes, quality improvement in nutrients and hygiene is the most positive way to expand the volume of milk consumption. To meet the consumer's demand, therefore, it is necessary to revise the level of milk fat content and the hygienic grading system for the payment system of raw milk.

Ultrafiltration을 이용한 Gouda Cheese의 제조 (Manufacture of Gouda Cheese from the Concentrated Milk by the Use of Ultrafiltration)

  • In this study we compared traditional cheesemaking process with the process utilizing ultrafiltration(UF) system. The whole milk retentates were prepared by ultrafiltration to volume concentration ratio(VCR) of 2.00:1, 2.25:1 and 2.50:1. Along with the untreated whole milk, there were studies in terms of the change of pH, titratable acidity and Soxhlet-Henkel($\circ $SH) value by mesophilic lactic starter and curd formation by rennet during Gouda cheese manufacture. Due to the increase of buffering effect titratable acidity and $\circ $SH value increased with the higher concentration ratio. When inoculated with the same volume of mesophilic lactic starter, less pH change occurred in UF retentates than in control milk. When added 0.0025% rennet, UF retentates coagulated 16~ 17 minutes ealier then the control milk. Gouda cheese yield from raw milk and UF retentates was 12.5~13.1% equally, but yield efficiency of UF retentate cheese was slightly higher than that of the raw milk cheese. Quantity of whey from retentate cheese was inversely related to VCR. But whey from retentate cheese contained higher percentage of amjor components than that from control milk cheese. In early ripening, the concentrations of lactose and soluble nitrogen compound were higher in retentate cheeses. Lactose content of control milk cheese was 3.49% and that of 2.00:1. 2.25:1, 2.50:1 VCR retentate was 3.77%, 4.89%, 7.03%, respectively. Thus, the more concentrated cheese contained a higher amount of lactose and all the lactose was hyerolyzed durion 35-day ripenion period. Soluble nitrogen compound of control milk cheese was 1.22% and that of UF cheeses was 1.82~2.06%. After 20-day ripening, soluble nitrogen compound increased starply in UF cheese.

It makes a through study on the medical treatment mechanism and efficacy of colostral milk, the results as fllows. 1. Colostral milk is some special things for baby newborn, and the other men and women of course. It is low in fat, and high in carbohydrates, protein, and antibodies to help keep your body healthy. Colostral milk is easy to digest, and it is low in volume, but high in concentrated nutrition for the newborn and men and women. 2. Colostral milk provides some of living cells which will defend babies against many harmful agents. The immune factors is much higher in colostral milk than in nature milk. Colostral milk works as a vaccine. It contains some quantities of an antibody called secretory immunoglobulin A Which is a important substance to the baby and men, 3. Colostral milk has a role to play in the baby's gastrointestinal tract. A newborn's intestines are permeable. The colostral milk makes the gastrointestinal tract in general. In addition, colostral milk contains a lot of leukocytes.

Effects of Milk Proteins and Gums on Quality of Bread Made from Frozen Dough following Freeze-Thaw Cycles

  • The quality of frozen bread dough made with the milk proteins casein (C), whey (W), and the gums sodium alginate (A) and ${\kappa}$-carrageenan (K), was investigated to develop methods to suppress the deterioration of the frozen dough quality. The control had a lower dough volume than dough with additives during freeze-thaw cycles. In bread stored at $5^{\circ}C$, the moisture content of bread prepared with whey plus sodium alginate (WA) decreased less than that of the control. The control also had a lower specific loaf volume than breads made with added milk proteins and gums. The hardness of the control bread and bread made with casein plus sodium alginate (CA) and whey plus ${\kappa}$-carrageenan (WK) increased during freeze-thaw cycles, although that of the control increased more than the others. There was no significant difference in sensory preference among breads with and without milk proteins and gums. Addition of CA and WA improved the baking quality by reducing the deterioration of frozen dough and retarding the staling of bread.

  • The purpose of this study was to develop a preprocessor for real-time portable quality evaluation system of milk. The preprocessor consisted of two flow pump to supply milk sample and reaction reagent at given volume, a fan to mix milk with reaction reagent, a thermoelectric device to maintain sample temperatures of $40^{\circ}C$, and I/O interface to control signals. The tests conducted with different level of flow rate of pump, fan speed, ambient temperature, and intial temperature of mixtures. To evaluate performance of the preprocessor, the supplied volumes, color changes, and temperatures were measured and analyzed. The results showed that the preprocessor could control supplying volumes, mixing, temperatures of samples automatically. The preprocessor showed good performance to be used for portable quality evaluation system of milk.

  • In 2009, the world dairy industry had the most impressive experience throughout all the experiences it had. The milk price in major regions fell to their lowest level for decades. Including Korea, the world economy is obviously slowing. The nations' export plunged due to the global economic recession, in result reduced industrial output and domestic demand. In Korea, the intake of liquid milk slightly decreased from 45 kg per capita in 2005 to 44.3 kg per capita in 2008. However, production and consumption of milk increased fast in China and India. According to 2008 statistics, total milk volume of the world trade reached 42 million tonnes and the major exporters of dairy products were EU, New Zealand, USA and Autralia. The tropical countries has traditionally consumed buffalo milk. The production of buffalo milk is increasing faster than cow milk. IDF expected that EU milk production would recover the medium term displaying a gradual growth over the milk quotas phasing-out period, while constantly remaining below the quota level.

모유영양아의 수유기간별 모유섭취량에 관한 연구 (A Longitudinal Study on Human Milk Intake in Exclusively Breast-fed Infants)

  • The longitudinal changes on human milk intake of exclusively breast-fed infants(boys=15, girls=12) from 0.5 to 6 months after parturition have been studied by test-weighing method in Cheongju and Anseong area. Infant milk intake per day tended to increase during lactation. The mean intake at 0.5, 1, 2, 3, 4, 5, and 6 months were 532, 695, 734, 756, 785, 767, and 710g, respectively. The average intakes were 752 and 660g for boys and girls, respectively. The overall mean intake was 711g/day. The milk intake between boys and girls at 1, 2, 4 months, and mean value was significantly different(p<0.05). Infant milk intake had a significant positive correlation with human milk volume of lactating women, but no correlation with maternal age, weight before delivery, height, and birth weight.

Holstein 젖소에서 조사료 급여 수준이 유방크기, 호르몬 및 산유특성에 미치는 영향: 육성기부터 비유기까지 (Effects of Forage Feeding Levels on the Udder Volume, Serum Hormone Level and Lactation Characteristics in Dairy Cows: From Growing to Lactating Phase)

  • 본 연구결과 조농비가 다른 사료를 각각 급여한 젖소에서 임신초기의 유방 크기는 HF군이 LF군 보다 2.4배 가량 유의하게 컸으나, 임신중기와 착유기 동안에는 두 군 간에 차이가 없었다. Estradiol의 혈중농도는 두 군 모두 사춘기부터 서서히 증가하여 임신기간 동안 사춘기의 2~3.5배가량이 되었으며, 두 군간 유의한 차이는 나타나지 않았다. 착유기 전 기간에 걸쳐서도 estradiol의 농도는 두 군간 차이가 없었다. Progesterone의 혈중 농도는 사춘기부터 증가하기 시작하여 임신중기까지 두 군 모두 비슷한 농도로 유지되었으며, 시험 전 기간에 걸쳐 두 군간 유의한 차이는 없었다. 산유량 4% FCM은 두 군 모두 분만 후 증가하다 LF군은 분만 100일, HF군은 150일을 기점으로 감소하였다. 그러나, 분만 후 50일까지를 제외하고 그 후 전 기간에 걸쳐 양질 조사료 함량이 높은 사료를 급여한 HF군의 젖소에서 산유량이 유의하게 높았으며, 분만 250일 까지도 높은 산유량을 유지하였다. 우유 내 체세포 수는 분만초기를 제외하고 착유기 전 기간 동안 HF군에서 유의하게 감소하였다. 유지율은 분만 후 비유 초기에 LF군에서 다소 높게 나타났으나, 그 이후부터는 두 군간 차이가 없었으며, 그밖에 우유 내 단백율, 고형율, MUN 모두 두 군간 차이는 관찰되지 않았다. 산유량과 체세포 수 및 유지율을 기초로 계산한 유대에 있어 HF군이 LF군에 비하여 최고 141.5% 증대되었다. 본 연구결과로부터 젖소의 양질 조사료의 함량을 적당 수준으로 증가시킴으로써 유방의 크기나 관련 호르몬의 변화 없이 우유의 생산량을 증대시키고 우유의 질을 높일 수 있을 것으로 평가되었다.
