청소년의 식사행동.식품섭취와 체격에 관한 연구 (A Study on the Relation of Eating Behavior and Food Intake to Obesity Index of Adolescents)

  • The present study was conducted to investigate the relation of eating behavior and food intake to 534 adolescents' obesity indices. Group means of relative body weight (RBW) were 93.66 for males and 97.12 for females. Body mass index(BMI) were 20.39 for males and 20.41 for females. Respondents were divided into 3 groups on the basis of RBW as an obesity index. Astonishingly, 44.76% of total respondents were underweight and 12.92% overweight and obese. 64.54% of respondents usually skipped their breakfasts and 24.23% their dinners. More males did not have their breakfasts than females. In contrast, more females skipped their dinners than males. A significant difference was found between males and females in their eating habits(p<.001) that should be changed. As their undesirable eating habits, males pointed out 'skipping meals', while females stressed 'overeating'. There were more overeating respondents in the overweight group, while more respondents skipping their meals were found in the underweight group. Many females(72.79%) and males(52.78%) tended to alternate consistently overeating and fasting to lose weight. The most important reason for losing weight was to improve their appearance(61.12%). In addition, nutrient score indices of respondents were very low with a mean of 33.39. Only 42.13% of total respondents showed good nutrient score indices. More males ate meat, bean, white vegetables, potato and fat than females(p<.05), whereas more females ate bread, rice cake and fruit than males(p<.01). Among the 3 groups -overweight, normal weight and underweight groups, overweight group was the most eaters of meat, fish, egg and milk; underweight group was the least eaters of them.

재미 한인의 식생활 변화와 관련된 건강 상태 연구 (Health Risks in relation to Dietary Changes in Korean Americans)

  • Differences in dietary intake of Korean Americans (KA) by the length of residence in the U.S. were studied in relation to health and disease patterns in Michigan. Of 1860 questionnaires mailed, 637 (34.3%) responded with demographics, anthropometrics, self-reported disease patterns, lifestyle, and dietary patterns (93-item FFQ developed for KA). Complete responses were available for 498 people (263 men,253 women, aged 30-87 yr), who were then divided into three groups based on the number of years lived in the U.S.: 15y, 16-25y, 26y. Age-adjusted weight, height, BMI, and waist to hip ratio were within the normal ranges and did not differ among the three groups. Chronic diseases frequently reported in men and women (age-adjusted) included hypertension (14.4%, 14.1%), digestive diseases (5.4%, 8.5%), diabetes (3.6%,4.9%), and arthritis(3.3%, 12.5%), respectively. The length of residence in the U.S. was inversely associated with the age-adjusted prevalence of digestive diseases (12.4%, 6.5%, 0.4% in men, 13.0%, 11.7%, 0% in women). The length of residence was positively associated with health consciousness, receiving regular health care, taking supplements regularly, and exercising, while inversely related to smoking. The majority favored American foods for breakfast and Korean foods for dinner. Foods frequently consumed included cooked rice (w/other grains). kimchi, coffee (w/cream and sugar),bread (white and dark), citrus juice, milk (low fat and skim), lettuce and cucumber, apple, seaweed, and soda. Intake frequency of the Korean starch food group was inversely associated with the length of residence for both men and women (p<0.001), but not with the American starch food group. Fat intake did not differ by the length of residence in the U.S. The dietary changes were associated with the length of residence and chronic disease patterns for the first generation of KA, which should be further examined 'for the subsequent generation of KA.

초등학교 2학년 일부 아동의 단맛 선호와 동기 요인과의 관련성 (Relationship between Sweet Preferences and Motivation Factors of 2nd Grade Schoolchildren)

  • This study was implemented to understand the motivation factors for $2^{nd}$ grade schoolchildren that effect on their preference for the sweet taste. The subjects included were 118 children (59 boys and 59 girls) and 118 children's guardians, from one elementary school. Children participated in sweet preference test and questionnaire survey with researcher's guidance provided in the school. Children's guardians were asked to fill out the questionnaire via home-letters. The results were as follows: 59% of the children preferred the cocoa beverage with the highest concentration of sugar among five cocoa beverages (0%, 2.5%, 5%, 7.5%, and 10% of sucrose/milk volume). The variables consisted of affective attitude, cognitive attitude, self-efficacy, parenting style, and sweets frequency. According to the analysis, sweet preferences were correlated with children's affective attitude (r=-0.207, p<0.01), self-efficacy (r=-0.288, p<0.01), frequency of drinking carbonated beverage (r=0.272, p<0.01), preference for yogurt (r=0.184, p<0.05), and preference for sweet bread (r=0.226, p<0.05). These results indicated that children can be more affected by affective attitude than cognitive attitude, and self-efficacy can be an important motivation factor to control the eating behavior related to sweets. Therefore, nutrition educators need to focus on developing various methods related to increasing self-efficacy for encouraging and motivating healthy eating behavior in children.

광주지역 일부 저소득층 여자노인에서 지역사회 영양중재 프로그램 적용에 따른 식행동 변화 및 영양상태 개선 효과 (The Effect of a Community-Based Nutrition Intervention Program on Dietary Behavior and Nutritional Status of Low-Income Elderly Women in Gwangju City)

  • This study was conducted to measure the effect of a community-based nutritional intervention program on dietary behaviors and nutrient intakes of low-income elderly women in Korea. The subject of the study was a group of 88 elderly women using the free meal service in Dong-gu, Gwangju city in Korea. The study was carried out from April to July 2009, and the pretest, application of nutrition education, and post-test were applied in each stage. This community-based nutrition intervention program consisted of snack supplement and nutrition education provided three times a week and 36 times in total. The nutrition education was led by the nutritionists and professionals using various educational media. Snack supplement included were milk, soymilk, carrot juice, bread, yogurt, and bananas. The result of pretest showed that the nutrient intakes of the subjects were much below the Recommended Nutrient Intake (RNI) level of Dietary Reference Intake for Koreans. Comparison of the dietary behavior score and nutrient intakes before and after the nutritional intervention program indicated that the food behavior score increased from 3.1 to 5.6 (P<0.001) and intake of energy, protein, carbohydrate, thiamin, niacin, vitamin C, iron, and potassium of the subjects all increased significantly (P<0.05). Mean Adequacy Ratio (MAR) of their nutrient intakes was also improved from 0.53 to 0.64 (P<0.01). These results indicated that the nutrition intervention program conducted in this study was effective in improving dietary behavior and nutrient intakes of elderly women in local community.

초등학교 1학년 학동들의 구강보건지도활동 지침기준을 위한 조사연구 (Study on the Activity of Oral Health Instruction of First Grade in an Elementary School)

  • This research reached conclusions to prepare indications for activity of Oral health Instruction of the first grade in an elementary school by several items of Oral examination and investigation. 1. The frequency of brushing their teeth of the children that were examined was generally two times a day(64.42%) : it showed that it was the highest after breakfast (30.08%), and hardly any brushed their teeth after lunch(6.36%). 2. Most of the toothbrushes used were for children(97.46%), and the proper time to change their toothbrushes was less than two months(65.25%), but 31.37% of them used their toothbrushes for more than three mouths. 3. They usually used toothpaste. Those using toothpaste were 64.41%. By the way, for adults was the percentage 31.36%, and for those including fluorine it was 74.58%. 4. They mainly ate cookies, beverages, (coke, cider, etc.), fruit, bread, milk and so on for their dessert. 5. Most students had dental plaque (95.76%) : 14.4% of then had calculus and 23.73% had gingivitis. 6. The results of disclosing showed that twelve anterior teeth were colored. The Mandible was comparatively more severe than the Maxillary in the colored -degree. the low -right - laterial incisor was the most severe and the right central incisor was the most severe of the Maxillary. 7. The pressure of tooth - brushing showed that half of the students brushed their teeth severely. The width of the brushing movemtnts was more than 8mm for 51.70%, 5-8mm for 33.05% and less than 5mm for 15.25% Therefore 66.5% of them were shown to move their brushes insufficiently or oppositely. 8. When they brushed, the children who opened their mouth while brushing were more than those who kept their mouth closed.

당류편식 아동의 식습관 및 식품섭취패턴 (A Study on Dietary Habits and Food Frequency of Young Children Who Like Sweets)

  • The objective of this research was to assess the dietary habits, food frequency, and nutrition knowledge of young children who like sweets in the Busan area; the study was conducted using survey method with questionnaires. One hundred eighty three children, aged 8 to 9 years, were divided into two groups: the sweet preference group (SPG) and the control group, based on the subjects' scores for sweets-related dietary habits, sweets preference, and sweets frequency. For dietary habits, the score for eating more snacks than meals was significantly higher in the SPG group than the control group. The SPG group members were also more likely to skip breakfast, have irregular meals, and consume instant and fast food more frequently (p<0.001) than the control group. Nutrition knowledge scores for proper snack intake and proper dietary attitude were significantly lower in the SPG than in the control group (p < 0.05). With regard to food frequency, the SPG consumed more bread, cake, chicken, ham, sausage, hamburger, and ice cream, but less fish, tofu, beans, kimchi, bean sprouts, and milk than the control group. Strong positive correlations were noted between sweets preference, sweets frequency, and sweets-related dietary habits, whereas all of them were correlated negatively with nutritional knowledge. Sweets frequency was related negatively to meal regularity, having breakfast, eating the adequate amount of meals, and recommended food frequency.

미취학 아동의 영양교육을 위한 사전연구 (A Preliminaly Study on Nutritional Educatin for Preschool Children.)

  • Adequate intake of nutrients exert a profound influence on the physical and spiritual development of children. Thus, it is important to children and their mothers about nutrition and selection of nutritious foods. In order to underline the importance of nutrition for children, this study investigated and analyzed food habits of children expecially those in preschool ages, to obtain basic data to develop effective educational materials related to nutrition. dietary habits of 61 boys and 44 girls in the average age of six were surveyed through their mothers. Results therefrom are as follows : 1. Only 17 per cent of the mothers questioned replied that they considered the balance of diet in preparing meals, while 58.1% of the mothers gave precedence to the liking of their family . The lower the educational level of a mother , the higher her stress on the food preference of her family. 2. Seventy six of the mothers said they understand the basic food group , but only one mother displayed an accurate knowledge about it. 3. As for between meal eating , 82.9% took fruits, 68.6% milk, 35.2 bread, and 33.3% cookies. 4. Problems with food habits of children were : Unbalanced diet for 43.8% of children ,eating of snacks at irregular intervals for 26.7% and TV impact for 5.7%. 5. Children's food habits are greatly influenced by their parents, In the case of animal liver, 32.1 % of the children surveyed do not like to eat it, while 35.8% have never tasted it . 27.9% of children also do not like to eat cereals. Children's likes and dislikes with regarded to foods were influenced greatly by their parents. Thus, it is urgent to educate mothers about balanced diet and basic food group. Children will have to be taught to understand unfavorable effects of unbalanced diet so that they may correct their unsound food habits. This study also indicated the need for developing new cooking methods for those food items which are very liked by children to be a major cause of their unbalanced dietary habits.

충청지역 고등학교 학교급식 관계자의 아침급식 요구도 (Stakeholder's Demand for School Breakfast Programs in High School at Chungcheong Areas)

  • The purpose of this study is to observe students' eating habits and to evaluate the necessity of high school breakfast service by surveying concerned persons such as high school dietitians, parents, and students to find practical solutions to decrease the breakfast-skipping rate of the high school students in Chungcheong. The data were collected from 75 dietitians, 584 students, and 420 parents. Parents and students participated the survey more positively, and the more monthly income participants' families had, the probability of participation increased by 1.5 times (OR=1.452). Parents suggested that breakfast should be offered at a lower price (1,000~2,000 won) than school lunch, and for the school breakfast cost, they preferred to bear the expense together with schools. For the type of breakfast, the dietitians preferred convenient foodservice (40.0%), the students preferred simple meals such as bread, milk, fruit and salad (3.97), and Kimbap, Joomukbap et al (3.93) rather than Korean traditional foods (3.76) such as rice, soup and side dish. The dietitians answered 'needed' and 'very much needed' to the necessity of breakfast relatively low by 30.7%. As the result of the study, the researchers suggest the execution of school breakfast program should start first for the students who cannot have breakfast at home. Moreover, more studies should be conducted to reduce the constantly increasing rate of breakfast-skipping rate of high school students.

미취학 아동 학부모의 식품 알레르기 인지도와 영양관리 (Food Allergy Awareness and Nutritional Management by the Parents of Preschool Children)

  • Objectives: This study was performed to measure the food allergy (FA) awareness and management by the parents of preschool children. Methods: A questionnaire survey was conducted with the parents of preschool children. The questionnaire was designed to identify the prevalence of food allergies, requirements of food allergy support and differences in food management according to the presence or absence allergic diseases, using a modified International Study of Asthma and Allergies in Childhood (ISAAC) questionnaire. After excluding incomplete responses, the data of 158 parents of preschool children (90.3%) was used for statistical analysis. Results: The rate of the preschool children who had experienced food allergy (FA, ever) was 38.6% while diagnosed for food allergy by doctor (Diagnosis of FA, ever) was 17.7%. Forty nine preschool children (80.3%) had food restriction, and twenty three of them (37.7%) had self-restriction without diagnosis. The consumption frequencies of allergenic foods in FA group, such as ramyeon, noodles, bread, eggs, yogurt and ice cream were significantly (p<0.001) lower than those of the other two groups. The major allergenic foods were eggs, milk, wheat and processed foods in FA group. The overall food allergy-related knowledge level of parents was insufficient. Only 26 parents (16.5%) had received training about food allergies. All parents wanted to receive food allergy-related supports. In addition, most of parents wanted information on substitute menu for children with food allergy. Conclusions: This study identified a lack of food allergy training for the parents of preschool children and the necessity for food allergy education. Food allergy-related supports, such as menus without allergenic ingredients, guidelines for managing food allergy & anaphylaxis emergency care plan etc, should be provided to the parents in order to avoid events related to food allergies.

성조숙증 및 소아비만 아동에서 영양상담 모니터링에 따른 식습관 개선 효과 (Improvement of Food Habits and Eating Behavior of Children with Obesity and/or Precocious Puberty by Nutrition Education Monitoring)

  • The purpose of this study was to investigate improvement of food habits and eating behavior in children with obesity and precocious puberty by nutritional education monitoring. The results are as follows. Average height and weight of subjects exceeded Korean height and weight standards for children as outlined by The Korea Pediatric Society. Using nutrition education monitoring, meals became more regular, overeating significantly decreased, and eating speed decreased. Further, frequencies of eating-out and night-eating significantly decreased. The most preferred menu item when eating-out was Korean food, and the most preferred menu item for night-eating was fruits, fast food, & processed food. Meat & fish and vegetable intakes all significantly increased. Fruit and milk intakes also significantly increased while bread, snack, and ice cream intakes decreased. Further, fast food & instant food intakes decreased. However, water intake was not significantly affected. The favorite food of children was meat & fish, followed by fast food & processed food. This study may provide information on dietary behavior of children with obesity and precocious puberty and suggests that nutrition education or counseling can improve food habits and eating behavior.
