  • UR 농산물 협상 이후 국내 농림수산물 및 가공식품 시장의 수입개방이 확대되어 생산 농어민이 직접적으로 큰 피해를 보고 있을 뿐만 아니라 국내 농산물을 원료로 사용하는 산지 가공업체도 경쟁력 학보에 어려움을 겪고 있다. 수입식품 중에서는 국내생산이 이루어지지 않아 수입이 불가피한 품목도 있고, 또한 국내의 기술수준이 뒤떨어지기 때문에 품질경쟁력에서 열위인 품목도 있지만 대다수 품목은 중국을 위시한 후발 개도국에서 낮은 기술과 저임 노동력을 이용하여 생산된 단순가공품으로서 이들 품목은 국내산에 비하여 가격은 낮지만 품질이 조악하고 안전성이 낮은 것으로 알려져 있다. Effect of Drying Methods of Rice Flour on Growth Properties of Bacillus cereus and Enterobacter sakazakii (쌀가루의 건조방법에 따른 Bacillus cereus와 Enterobacter sakazakii 생육 억제 특성)

  • In order to sterilize Bacillus cereus and Enterobacter sakazakii in rice flour, hot-air drying ($65^{\circ}C$/15 min, HT) and microwave drying (700 watt/30 sec, MT) treatments were evaluated and a storage study performed. Color changes (${\Delta}E$) appeared to be less in the MT rice flour than in HT treated rice flour. The effectiveness of the MT treatment showed reduced growth rates for B. cereus (0.54 log CFU/g) and E. sakazakii (1.45 log CFU/g). The populations of B. cereus in the control (NT) rice flour greatly increased during storage at 4, 10 and $20^{\circ}C$ as storage times increased. However, the growth of B. cereus was minimized in the MT rice flour. In conclusion, MT treatment is considered to be a good drying method when substituted for HT treatment to assure microbial safety in rice flour.

Effects of Cooking and Drying Methods on the Polar Lipids Composition of Shrimp (가열 및 건조방법이 새우의 극성지방질 조성에 미치는 영향)

  • Effects of cooking and drying methods on the composition of glycolipids and phospholipids of shrimp, Metapenaeus joyneri, were investigated. Major components of the glycolipids were esterified steryl glycosides, monogalactosyl diglycerides and steryl glycosides. Hot air drying enhanced the esterified steryl glycosides content substantially with the reduction of the monogalactosyl diglycerides content. However, reversed pattern was shown for freeze drying. Main components of the phospholipids were phosphatidyl ethanolamines, phosphatidyl cholines, phosphatidic acids, phosphatidyl inositols and phosphatidyl serines. Phosphatidic acids content for hot air and freeze dried shrimp without tooting was 8.3% and 5.9%, respectively. On the other hand, freeze dried shrimp with microwave heating was higher in phosphatidyl ethanolamines contents but lower in phosphatidyl cholines contents than hot air dried shrimp. Major fatty acids of the glycolipids and phospholipids fractions were pentadecanoic acid, palmitic acid, oleic acid, nervonic acid and eicosapentaenoic acid in fresh shrimp.

A Study on the recycling of sewage sludge cake using microwave drying (하수슬러지 케이크의 마이크로파 건조 후 재활용 연구)

  • The objective of this research is to evaluate various reclamation methods of sewage sludge cake after treating with microwave under optimum conditions. In this study the sewage sludge cakes used from S and N wastewater treatment plants in the P city. Microwave with an induced electricity heating way was employed for dehydration of sewage sludge cake. Microwave operation conditions is 2,450 MHz of frequency and the power with 1 to 4 kW. This sewage sludge cake had a moisture content of 70%. The moisture content of the sludge decreased notable up to 2%(wt) resulted in breaking of cell wall. When the treated sewage sludge cake mixed with soils could be applied to use midterm and last cover material soils. Moreover, the adsorption ability of heavy metals such as copper, lead, chromium and cadmium was greatly enhanced by treated sewage sludge cake. Within 30 minutes, 1ppm of copper, chromium and cadmium and 10ppm of lead with 1g of the treated sewage sludge cake in $100m{\ell}$ were below detection. It was possible to use the treated sewage sludge cake as an absorbent for absorption of toxic heavy metals. Results from this research indicated that using of microwave radiation was an effective method for treating sewage sludge cake economically and environmental. A point of view of reclamation, the treated sewage sludge cake appeared to be feasible with an adsorption of heavy metals in steady of using expensive yellow earth.

Estimation Error and Reliability of Measuring Unit Water Content Test Methods for Fresh Concrete Depending on Mix Design Factors at the Laboratory Level (실험실 수준에서 배합변수별 굳지 않은 콘크리트 단위수량 실험방법의 추정오차 및 신뢰성 검토)

  • In this study, water content tests were performed on various fresh concretes subjected to different binder compostions to review the estimation errors and reliability of water content test methods. Micro-oven drying method, air-meter method, capacitance method and microwave penetration method were used to estimate water content of fresh concrete. Errors in water content estimation were analyzed by each test method. Regardless of the test method of water content, the estimation error was less than 5 %, and in the case of the test using mortar, the error in the estimation value was relatively large. In addition, based on the test results of water content of various concrete, the probability density function in which the estimation error for each test method becomes the population was analyzed. Water content test methods of fresh concrete which using concrete samples showed high estimate reliability of 97 % within the estimation error range of ± 10 kg/m3. On the other hand, the reliability of water content test method using mortar samples was lower.

Effects of Extrusion Process Parameters on Puffing of Extruded Pellets (압출성형 공정변수가 압출성형 펠릿의 팽화에 미치는 영향)

  • Pressure-puffing system or extruder has been used to puff rice kernel or rice flour. Most of the study on rice puffing were the effect of process conditions such as moisture content and heating temperature on physical and chemical characteristics of popped rice. The study on mechanism and development of instant puffed rice like popcorn has been limited. Extruded waxy rice pellets were puffed in a microwave oven after drying and conditioning. Extruded pellets were formed with extrusion conditions of $20{\sim}27%$ moisture content, 2.76 MPa $CO_2$ gas injection pressure and 200 rpm screw speed. Under these conditions, puffed waxy rice pellets in microwave oven had low density and soft texture. Density and texture of puffed waxy rice pellet could be optimized by control of moisture content, $CO_2$ gas injection pressure and screw speed that affect significantly when puffing extruded waxy rice pellet.

Drying Boards of Populus alba×P. glandulosa in Conventional, High-Temperature and Microwave-Vacuum Kilns (은사시나무 판재의 열기건조, 고온건조, 마이크로파-진공 건조)

  • Flat-sawn 32 mm-thick boards of Populus alba×P. glandulosa, one of major plantation species in this country, were dried in conventional, high-temperature and microwave-vacuum (MW/V) kilns. The average green specific gravity of the specimens used in this study was 0.349±0.074. Their average green moisture contents of heartwoods and sapwoods were around 200% and 100%, respectively. From green to oven-dry they shrunk 2.4 and 7.3% in radial and tangential directions, respectively, and there was no discrepancy between heartwoods and sapwoods. It took 65, 35 and 22 hours to dry from green to 10% moisture content in conventional, high-temperature and MW/V kilns, respectively. A colorimetry study showed that the surface color of the specimens dried in a MW/V kiln was clearer and lighter than those in other kilns.

Effect of Sterilization Conditions on Microbial Reduction in Cleaning Tools (살균 조건이 세척 도구 중 미생물 저감화에 미치는 영향)

  • In this study, we compared the microbial reduction effects of drying, hot water, and microwave sterilization in scourers and dishcloths to suggest a most suitable sterilization method. Three scourer types (silver, copper, and mesh) were used, and three dishcloth types (silver, bamboo, and cotton) were used. Drying time dependent reduction in Escherichia coli was high in silver and copper scourers, but minimal bacterial reduction was obtained against Bacillus cereus in all scourers and dishcloths. In scourers, E. coli was not detected after ≥30 s of hot water sterilization at 77℃, and B. cereus was not detected after ≥60 s of hot water sterilization at 100℃. In dishcloths, E. coli was not detected after hot water sterilization at 77℃ for ≥30 s, but B. cereus was detected after hot water sterilization at 100℃ for ≥60 s. In scourers, E. coli was not detected after microwave sterilization at 700 W for 3 min, but B. cereus was detected. In dishcloths, E. coli was not detected after microwave sterilization with 700 W for ≥1 min, but B. cereus was detected in the cotton dishcloth even after sterilization for 3 min. In conclusion, the use of antimicrobial scourers (silver and copper) and dishcloths (silver and bamboo) are not sufficient to reduce the microbial contamination. The guideline provided by the Ministry of Food and Drug Safety suggesting dishcloth sterilization via hot water at 100℃ for 30 s was also found to be insufficient. Based on our research, we suggest that the most effective methods of microbial management are submerging scourers in hot water at 100℃ for ≥1 min, and sterilizing dishcloths for ≥3 min using a 700 W microwave.

Analysis of Land Subsidence and Microwave Penetration on Drying Mudflat by using a Polarimetric Scatterometer Experiment (다편광 산란계 실험을 통한 개펄 건조시의 지반 침하와 마이크로파 침투 분석)

  • 새로 조성된 간척지 갯벌이 건조 수축하면 지반 침하와 더불어 토양 내로의 마이크로파의 침투 깊이가 증가한다 따라서 인공위성 DInSAR를 이용하여 지반 침하량을 구하고자 할 때, 건조 시 동시에 발생하는 마이크로파의 개펄 침투 현상을 규명하여 보정해 주어야 한다. 이를 위하여 다편광 산란계(Polarimetric Scatterometer)를 구성하여 건조 개펄에 대한 실내실험을 실시하였다. PolScat의 구성은 5.0-5.6GHz 대역의 dual-polarization square horn antenna를 사용하였으며 Agilent 8753ES 벡터 네트워크 분석기를 사용하였다. 길이 2m, 폭 2m, 높이 20cm의 개펄 샘플을 약 6주 동안 실내에서 건조시켜 위상을 측정한 결과 지반 침하와 함께 약 4mm의 마이크로파 투과현상이 발견되었다. 따라서 인공위성 DInSAR 지반침하량 계산에 있어서 반드시 토양 수분에 따른 마이크로파의 토양 침투 깊이를 보정해 주어야 함이 밝혀졌다.
