This study aimed to develop Chinese restaurant set menu which was proper to tendency of market segmentation by using conjoint analysis. In order to examine tendency of market segmentation, this study investigated the important factors and effective values of whole market and segment market. First, the study found that whole market and segment market seemed to prefer seafood to meat except Cluster 3 (Gentle demand type). Second, regarding efficiency of attribute level, the study found that crap soup is favored over seafood in both whole market and segment market except Cluster 1 (strong demand type). Third, Cluster 1 (strong demand type) showed a high level of efficiency on menu which is mixed with meat and seafood. In Cluster 2 (middle demand type), there was a high level of efficiency in meat menu. In case of Cluster 3 (gentle demand type), seafood menu showed high level of efficiency. Forth, there was a high level of efficacy in rice and western dessert menu on the result of analysis on whole market and segment market. Therefore, this study suggests that the preference of seafood is more higher than the preference of meat. It means that current customers care their health more than they used to be. According to this study, people who want to develop Chinese restaurant menu should focus on seafood more than meat. What's more, marketers of chinese restaurants have to not only present new awareness and fresh atmosphere but also provide typical composition of set menu for target customers.
The purpose of this study was to evaluate satisfaction degree on menu served and identify food preference of the meal served to 271 business and industry foodservice workers from 4 institutions by gender difference. The demographics indicated that male(54.6%) and female(45.4%) were about an half each, mean age was ranged from 20 to 39 years old. The workers were not contented with most of menu quality attributes served from past foodservice operation. Primary complaint was improper temperature of the meal. Most workers liked meat and fish(52.1%) the most. Sensory quality evaluation from all workers was 3.37 points out of 5 points. However, female workers rated higher on the most of menu(3.72 points) compared with that of male workers(3.35 points), indicating that satisfaction was higher in the female workers(p<0.05). Mean preference of all the menu according to food type also have shown higher in female(3.52 point) than in male(3.45 point). Best food preference according to food type considering cooking method of male was given to barley rice, boiled rice with assorted mixtures, marine product stew, and Kimchi stew. On the other hand, females cared for curried rice, hash rice, and spaghetti but males have shown low preferences to those foods females liked. Also, females liked more of fried, grilled and broiled food. However, both males and females showed indifferent taste about the food cooked with steamed and stewed. From the findings, the business and industry foodservice workers were not well satisfied with menu quality considerably and differed in food preferences by gender clearly. Therefore, the manager of foodservice institution require to consider composition of gender ratio in menu preparation along with sensory quality evaluation to lead the successful foodservice management.
The purpose if this study is to analyze the psychological preference of Family Restaurants and their behavioral characteristic and its segmentation, positioning, new product development and marketing min. Result of analysis, index and type of MBTI psychological preference are related to Family Restaurant Choice attributes intimately. Specially, "Menu composition reflected restaurant image", and "Providing of corresponded value to price"were shows considerable difference according to psychological preference. And "Providing of the corresponded value to price"of Value, Price and Image Factor, indexes, types, including all the other aspects, shows the most considerable difference. Therefore, all market of Family Restaurant when inventing or designing a menu, they should consider restaurant′s concept and image to manage a menu, and keep in mind that all customer take "value"at up most importance.
To help reduce the 'breakfast-skip' rate of the high school students and improve such 'breakfast-skipping' practice this study devised a new covenience menu for school breakfast Program. Dictated by a dietitian the form of cooking was rendered within directly-cookable convenient food; The price of menu ranged from 1,500-2,000won taking into account the parents' survey ; the menu formation drew largely from the student food preference survey and their favorites. The composition of menu - the Korean dish and the western dish put together-were of two folds and was based on the two: main menu, subsidiary menu. While main menu used rice, the subsidiary one used fruits, salads, milk, and juices. Energy intake sufficiency standard was set at a level of between 1/4 and 1/3 of the relevent group(mid&high students, 15-18 yrs old)'s approximated energy need, drawn from the Dietary Reference Intakes For Koreans(2010). 10 disparate, divised menus were tested deliberately- cooked at a site, thereafter qualifed and supplemented to meet the targeted energy amount. The nuturitional facts of each menu set were measured through the usage of CAN-PRO 3.0, Computer Aided Nutritional Analysis Program, for professionals. Completed menu set were then given in photograph. The results of this study were as follows : The results of this study were as follows : the newly developed menu's calories and nuturitional content were as follows in the ratio of Dietary Reference Intakes For Koreans(2010) : Calories 95.7%(4.3% below the targeted intake standard), Protein(131.1%), Calcium(130.2%) the both of which marked higher than the recommended daily intake, iron(71.0%), Potassium(93.1%) both of which figure lower than the recommended daily intake. The cost of ingredients per each person was 1,335won, which was lower than the targeted cost(1500won). When calculated, hypothetically provided breakfast's labor hour needed per 1 meal is shown to be average 1.2 minute. In conslusion : Convenience style school breakfast program would bring an increse in the intake of high school students' breakfast, which may contribute not only to the sound physical growth but to academic performance. Various developments of the school breakfast program is much needed continually.
고객들이 지각하는 메뉴선택 속성에 대한 고객만족과 재방문의도 간의 영향 관계 분석을 통하여 현재 소비자층의 특성에 맞는 메뉴의 구성 및 마케팅 전략을 수립하는데 필요한 IMC 활동정보를 제공하고자 하는 연구 결과는 다음과 같다. 이태리 레스토랑의 메뉴선택 속성이 고객만족에서는 제품 품질, 메뉴구성, 물리적 제공은 고객만족에 유의한 영향을 미치는 것으로 나타났다. 이태리 레스토랑의 메뉴선택 속성이 재방문의도에서는 제품 품질과 메뉴구성은 영향을 미치는 것으로 나타났으며, 물리적 제공은 영향을 미치지 않는 것으로 나타났다. 이태리 레스토랑의 IMC 활동은 고객만족에서는 광고, 홍보는 유의적인 영향을 미치고 있는 것으로 나타났고, 인적 판매는 영향을 미치지 않은 것으로 나타났다. 이태리 레스토랑의 IMC 활동은 재방문의도에서는 광고, 홍보는 유의한 영향을 미치는 것으로 나타났고, 인적 판매에는 영향을 미치지 않은 것으로 나타났다. 이태리 레스토랑의 고객만족은 재방문의도에 영향을 미치는 것으로 나타났다.
This study was carried out to provide the improvable way of foodservice management to dietitian in the elementary schools. For this purpose the serving pattern of food, menu planning, nutrition education, leftover management and difficulties in foodservice were investigated. The survey was conducted through questionnaires, which were collected from 249 dietitions randomly selected in Taejon and Chung Nam. Data were analyzed by SAS program. The main results of this study are as follows. The children in Taejon took foods in the class room(65.7%) and those in Chung Nam in the dinning hall(89.9%)(p<0.01). In menu planning the balance of nutrition(42.6%) was mainly considered and then food preference(19.7%), variety of menus(16.1%), food cost(16.1%), composition of food color, taste and texture(3.2%), skills of food making(1.6%) and the number of students(0.8%). They referred cooking magazines(47.7%), the previous menu(42.2%), children's opinion(7.2%) for planning menu. The insufficiency of implements and devices for food(24.1%) and lack of season's food(20.4%) were indicated as difficulties in their job. 34.5% of dietitians used a standard menu, 79.5% investigated food preference of children, 74.3% evaluated taste of foods before serving, and 80.7% regularly checked leftover. The major reason for leftover was careless of the teacher in charge in Taejon and bad taste of foods nutrition in Chung Nam(p<0.001). 98.5% of them answered that they had the responsibility for nutrition education in elementary school. They had a hard time in relationship with the staffs in school(40.6%) and employees for food(39.8%), and lack of market information(38.2%). To efficiency of dietitian's work can be enhanced by reflecting the results of children's food preference and leftover, by using standard cooking method and proper cooking utensil, and by performing nutrition education for children by themselves.
Objectives: This study aimed to analyze menu patterns and food group diversity in daycare centers managed by the Center for Children's Foodservice Management in South Korea. Methods: Data from 18 Center for Children's Foodservice Management centers across various provinces (excluding Jeju Island) were analyzed. We examined 8,796 meals served in February, May, August, and December 2021, focusing on seasonal lunch and snack menus for children aged 3-5. Foods were categorized into 19 groups for lunch and 21 for snacks. The frequency of food groups and dietary patterns were assessed using the Dietary Diversity Score. Analyses were conducted using Excel 2016 and IBM SPSS Statistics version 28. Results: Most lunch menus (89%) included five menu items, with a ratio of grain, meat, and vegetables at 88%. Snack menus typically had one item (57%), with significantly more items in the afternoon compared to the morning (P < 0.001). Regarding snack patterns, 75.2% of morning snacks and 61.1% of afternoon snacks contained only one solid food and drink (P < 0.001). Fruit and milk (22.4%) was the most prevalent pattern in morning snacks, while grain and milk (31%) dominated afternoon snacks (P < 0.001). Only 48% of daycare center menus (all snacks and lunch) included all five food groups (grain, meat, vegetables, fruit, and milk). Notably, only 83% included milk and 57% included fruit. Conclusions: These findings highlight the need to improve food variety and diversity in the Center for Children's Foodservice Management-managed daycare center menus. Developing more detailed guidelines for menu structure and food composition is crucial to ensure children receive balanced and diverse nutrition.
본 연구에서는 어린이집에서 제공하는 간식에 대한 식품 가이드 등 구체적인 기준을 설정하기 위한 기초자료를 마련하기 위하여 어린이집 간식식단의 유형 및 식품의 다양성을 평가하고자 하였다. 이를 위해 서울시 소재 육아종합지원센터 총 14개소에서 2013년 3월 중 어린이집에 제공한 오전 및 오후 간식 630식을 분석하였다. 연구결과, 제공시간에 따라 간식식단의 유형 및 식품 다양성에 차이가 있었다. 전체적으로 두 가지 메뉴 품목을 포함한 간식식단이 가장 많았으나 (66.8%), 오전간식 (1.63개)에 비해 오후간식 (1.74개)의 메뉴 품목 가짓수가 유의적으로 더 많았다. 스낵 음료 조합 패턴을 살펴본 결과, 전체적으로 스낵과 음료를 각 한 개 포함한 (Food + Beverage) 비율이 가장 높았다 (56.7%). 간식식단의 식품군별 제공비율을 분석하였으며 총 630식의 간식식단에서 곡류, 고기 생선 달걀 콩류, 채소류, 과일류, 우유 및 유제품류를 포함하고 있는 식단은 각각 63.5%, 20.3%, 24.9%, 23.0%, 45.6%였다. 간식식단의 식품군 패턴에서는 곡류 (G)와 곡류+우유 및 유제품류 (G + D) 패턴이 각 18.9%, 17.1%로 가장 비율이 높았다. 식품군별 다빈도 메뉴 품목을 분석하였으며, 곡류에서는 '빵류 (21.3%)', 고기 생선 달걀 콩류에서는 '콩류 (32.5%)', 채소류에서는 '숙채류 (66.7%)', 과일류에서는 '생과일 (85.1%)', 우유 및 유제품류에서는 '우유 (66.9%)'가 제공된 비율이 가장 높았다. 본 연구결과 특히, 오후간식 식단에서 한 가지 식품군만으로 구성된 경우가 절반 정도로 제공되는 식품이 다양하지 못했다. 또한 오후간식의 경우 전체 식단의 약 1/3이 곡류만으로 구성되어 있어 충분한 무기질과 비타민 공급이 부족할 가능성이 있었다. 식사로 섭취하기 어려운 우유 및 유제품류는 간식으로 제공되는 것이 바람직하나 본 연구 결과 전체 간식식단의 46%에만 포함되어 있었으며, 과일류 제공 비율은 23%에 불과하였다. 따라서 어린이집을 이용하는 영유아들에게 질적, 양적으로 보다 바람직한 간식을 제공하기 위해서는 오전과 오후간식의 기본 형태, 식품군 구성, 메뉴유형 등에 대한 보다 구체적이며 통합적인 기준이 마련되어야 할 것이다.
본 연구에서는 더 나은 음식 주문 메커니즘을 제공하고 글로벌 고객의 맞춤형 음식 주문에 대한 레시피 성분 비율을 실시간으로 선택할 수 있는 인터페이스를 구현하였다. 각 레시피 재료의 기본 비율을 보여주는 주문 시스템 화면에 선택 메뉴를 배치하여 글로벌 고객에게 적절한 음식을 제공하고, 단순히 음식 메뉴를 선택하고 주문하는 시스템 없이 레시피 그래프를 구성하여 맞춤형 레시피 재료 구성 비율을 제공하는 알고리즘을 연구하였다. 상호 작용을 가능하게 하여 사용자가 음식 메뉴 주문 장치에서 다양한 레시피 재료의 비율 조정을 통해 맞춤형 서비스를 제공한다.
현행 교무업무시스템의 사용자 인터페이스(User Interface, UI)는 데이터 입력방식이 복잡하고, 유사 항목들 사이나 관련 기능 메뉴들 사이에 연계가 원활하지 않아 업무의 효율이 떨어진다. 여기에서 UI는 해당 시스템 사용자가 업무를 수행하는데 필요한 입출력, 입출력 관련 기능, 메뉴구성 등을 포함한 포괄적 개념이다. 본 논문에서 우선, 경기도내 3개 초등학교 교사 100명을 대상으로 설문조사를 실시하여 기존 교무업무시스템의 문제점을 파악하였다. 기존 교무업무시스템의 UI 문제점들은 수작업에 의한 입력과 메뉴구성의 불편, 학사 일정과 교육과정의 연계 미비, 출결관리 및 교과평가의 복잡성 등이다. 문제점들을 해결하기 위해 입력기능과 메뉴구성 등이 개선된 UI를 고안하여 교사들에게 제시한 후 다시 설문조사를 수행하여 그 결과를 평가하였다. 평가 결과에 따르면, 입력 편의성과 사용자 중심의 화면 구성 등의 면에서 UI가 개선되는 것을 크게 선호하였다.
