p-Mentha-8-ene-2-one계 향료합성 (Synthesis of Odorants p-Mentha-8-ene-2-one Derivatives by the Reaction of Dihydrocarvone with Formaldehyde)

  • The synthetic product of 1-hydroxymethyl-p-mentha-8-ene-2-one was afforded by the reaction between dihydrocarvone and formaldehyde. This reaction involves the aldol condensation. The preferential position of formaldehyde is methyl substituted .alpha.-carbon atom where these enols are regiospecifically formed. The hydroxymethylation of dihydrocarvone was also proved to happen regiospecifically in the position of .alpha.-methyl substituted ketone. When 1-hydroxymethyl-p-mentha-8-ene-2-one reacted with LiAIH$_{4}$, 1-hydroxymethyl-p-mentha-8-ene-2$\beta$-ol obtained. 1-Hydroxymethyl-p-mentha-8-ene-2-one reacted with PDC and chromic acid to give 1-formyl-p-mentha-8-ene-2-one and 1-carboxy-p-mentha-8-ene-2-one. When the hydroxymethyl group of 1-hydroxymethyl-p-menta-8-ene-2-one was reducted to methyl group, 1-methyl-p-menta-8-ene-2-one was obtained. Some of these new compound have certain odor. I, II have woody aroma and IV, V have camphory odors. IX has flowery minty odor.

Organoleptic Profiles of Kefir and Yogurt Supplemented with Various Concentrations of Mentha piperita's (Peppermint) Oil: A Preliminary Study

  • The objective of this study was to evaluate the organoleptic profiles of Kefir and yogurt supplemented with Mentha piperita's (peppermint) oil. The organoleptic profiles of Kefir and yogurt were evaluated by 15 trained panelists between 20 to 50 years of age. The products of Kefir and yogurt were prepared with Mentha piperita's oil at concentrations of 0%, 0.1%, 0.3%, 0.5%, and 1.0%. Taste, color, and overall acceptability scores were the same or lower in Kefir supplemented with 0.1%, 0.3%, 0.5%, or 1.0% Mentha piperita's oil than the control group (0%). The scores of all categories were higher for yogurt containing 0.1% Mentha piperita's oil than the control group. Taste, color, and overall acceptability decreased in proportion to the added amount of Mentha piperita's oil. Further studies are needed to evaluate the functionalities and effectiveness of Mentha piperita's oil in promoting human health.

  • 제주에서 생산된 페퍼민트, 스피아민트, 오데코롱민트 3종으로 부터 추출한 에센셜오일의 성분을 기체 크로마토그래피-질량분석기(GC-MS)와 headspace-GC-MS (HS-GC-MS)를 이용하여 분석하였다. GC-MS 분석결과 페퍼민트, 스피아민트, 오데코롱민트 각각에서 13종의 성분이 동정되었다. 전체 이온 크로마토그램의 피크 intensity를 기초로 보았을 때, 페퍼민트에서는 peperitenone oxide, 스피아민트에서는 carvone과 limonene, 오데코롱민트에서는 linalool이 주 화합물로 동정되었다. HS-GC-MS 분석에서는 GC-MS와 비교하였을 때 alcohol과 acetate와 같은 휘발성이 강한 성분이 많이 검출되었고, 검출되는 성분의 수도 증가하였다. 하지만 스피아민트와 오데코롱민트의 주 화합물은 GC-MS에서 검출된 것과 같았고, 페퍼민트에서만 GC-MS에서 낮은 함량을 보였던 menthol이 주요화합물로 동정되었다. 흥미롭게도, 오데코롱민트 에센셜 오일에서 linalyl acetate와 linalool의 함량이 탁월하게 높음을 확인했다.

Activity of Essential Oil from Mentha piperita against Some Antibiotic-Resistant Streptococcus pneumoniae Strains and Its Combination Effects with Antibiotics

  • To investigate natural antibiotics from plant essential oils and to evaluate their synergism with current antimicrobial drugs in inhibiting antibiotic-resistant strains of Streptococcus pneumoniae. The minimal inhibitory concentrations (MICs) of eleven plant essential oils and their main components were established for two antibiotic-susceptible and two antibiotic-resistant strains of S. pneumoniae, using broth microdilution tests. Potential synergism with oxacillin, norfloxacin, or erythromycin was evaluated using a checkerboard microtitre assay. Among the tested oils, Mentha piperita oil and its main component, menthol, exhibited the strongest inhibitory activities against all of the tested strains. The activity of antibiotics against antibiotic-resistant strains of S. pneumoniae was enhanced significantly by combination with Mentha piperita oils and its main component, menthol. In conclusion, the combination Mentha piperita essential oil or menthol with antibiotics could be used to reduce the effective dose of antibiotic and to modulate the resistance of S. pneumoniae strains.

Antimicrobial Effect of Mentha piperita (Peppermint) Oil against Bacillus cereus, Staphylococcus aureus, Cronobacter sakazakii, and Salmonella Enteritidis in Various Dairy Foods: Preliminary Study

  • There are more than 25 species of Mentha plants, which are aromatic perennial herbs. Currently, these species are being widely used with great interest because of various clinical findings regarding their health benefits. This is due to the abundance of volatile compounds that could expedite environmental interactions such as protection against herbivores, parasites, pathogens, and so on. Therefore, in this study, the antimicrobial effect of Mentha piperita (peppermint) oil on Bacillus cereus, Staphylococcus aureus, Cronobacter sakazakii, and Salmonella Enteritidis were investigated using the spot-on-lawn method. The results show that Mentha piperita (peppermint) oil exhibited antimicrobial activities against Bacillus cereus, Staphylococcus aureus, and Cronobacter sakazakii; however, it did not inhibit the growth of Salmonella Enteritidis. This shows that the antimicrobial effect of Mentha piperita (peppermint) oil is effective against both Gram-positive and Gram-negative bacteria. Hence, in the present study, Mentha piperita (peppermint) oil was shown to have strong antimicrobial activities; it could be used as a potential food additive for improving the quality of various milk-based products due to its various bioactive properties. Future studies should be conducted for manufacturing functional dairy products with the addition of peppermint oil to prevent and/or alleviate specific diseases.

A Study on the Dyeing of Ramie Fabric Treated with Medicinal Plant IV. The Natural Dyeing on Ramie Fabric Using Mentha arvensis Herba

  • This study was performed to investigate the effect of Mentha arvensis Herba extract on the treatment of chromaticity and colorfastness. Mentha arvensis Herba has been used as a Korean medicine. It is effective in headache and stress. It is also good as a aphtha and in treating cold. In the long history of Korea, dyeing has been applied for a means representing the grace of natural and inner esthetic consciousness of man. Vegetable dyes give us such great benefits, diversified color, but no pollution. And ramie fabric has distinctive features such as beautiful brilliance, elegance, and strong durability. So, it is regarded as a special product of Korea traditionally. These studies were carried out to treat with acetate iron, dichloride copper and alum with a mordant to ramie fabric. The ramie fabric was died with Mentha arvensis Herba extract. The results of experiment showed as follows: First, the chromophoric degree was the highest in acetate iron but not distinction in another mordants. Second, the light colorfastness was the highest in non treated and dichloride copper, but alum was the lowest. Third, the discoloration was alum and dichloride copper showed first grade in washing colorfastness. Abrasion colorfastness was not significant in this test. According the previous results, Mentha arvensis Herba has an efficiency in removing aphtha and in treating cold. So it is considered that Mentha arvensis Herba can be applied effectively to headache and stress.

약용 식물 추출물의 항산화 활성 검색 (Screening for Antioxidant Activity of Plant Medicinal Extracts)

  • 현재 시판되고 있는 한약재 및 약용식물 118종에 대해서 80% 메탄올 추출물을 제조하였고 , 이들의 항산화 활성을 DPPH 와 superoxide anion radical 소거능 측정 방법을 이용하여 조사하였다. DPPH radical 소거 활성은 괴화 (Sophora japonica: 줄기부)의 메탄올 추출물에서 76.9%의 활성을 보였고 회수(Camptotheca acuminata Dence: 지상부)의 추출물에서는 50.9%의 활성을 보였으며 박하(Mentha arvensis: 지상부), 비파엽 (Eriobotryajaponica: 지상부), 소엽(Perilla frutescens: 줄기부), 애엽(Artemisia asiatica: 줄기부 ), 초과(Amomum. costatum: 지상부) 의 추출물과 산비장이(Serratula koreana: 잎), 살구나무(Prunus ansu: 잎)는 30% 이상의 활성을 보였다. Superoxide anion radical 소거능은 박하(Mentha arvensis), 비파엽(Eriobotrya jαponica), 초과(Amomum costatum), 희수(Camptotheca acuminata Dence)의 지상부에서 80% 이상의 활성을 보였으며 괴화(Sophora jαponica), 소엽(Perilla frutescens), 애엽(Artemisia asiatica), 순비기나무 (Vitex rotundifolia)의 줄기부 , 짚신나물(Agrimonia pilosa)의 잎, 창질경이(Plantago lanceolata) 지상부는 50% 이상의 활성을 나타내었다. 박하(Mentha arvensis) 와 비파엽(Eriobotrya jαponica), 초과(Amomum costatum), 희수(Camptotheca acuminata Dence)의 지상 부는 DPPH뿐만 아니라 superoxide anion radical 소거능에서도 높은 활성을 보였다.

  • 박하(Mentha piperita) 세포현탁배양에(-)-menthol 생합성 중간체를 투여하여 배양된 세포의 대사경로를 연구하였다. (-)-Limonene을 투여 하였을 때 이는 다른 대사물로 변환되지 않는 것으로 관찰 되었다. (+)-Pulegone은 (+)-isomenthone 및 (-)-menthone으로 변환되었으며, (-)-menthone은 (-)-menthol로 변환되었다. 이 실험은 현탁배양세포가 대부분의 생합성 활성을 유지하고 있으며 (-)-limonene hydroxylase의 활성이 제한적임을 보여 주었다. (-)-Isopiperitenone을 투여하였을 때는 (+)-pulegone, piperitenone, (-)-7-hydroxyisopiperitenone, (R)- 및 (S)-6-hydroxyisopiperitenone이 생성되었다.

Scavenging Effect of Plant-Derived Materials on Free Radieals and Active Oxygen Species

  • The in vitro antioxidative activities of the 33 plant-derived essential oils and 37 phytochemicals including 3 Mentha arvensis leaf-, 2 Thymus vulgaris leaf- and 2 Syzygium aromaticum flower-derived isolates were determined by the inhibition of linoleic acid autoxidation, the generation of superoxide anion and scavenging of DPPH radical. They were then compared to those of the widely used plant-derived antioxidants (pyrogallol and quercetin) and synthetic antioxidant BHT. At a concentration of 0.01%, potent antioxidative effect was observed in the essential oils from Cinnamomum cassia roots, Mentha arvensis leaves, Ginkgo biloba fruits, and Syzygium aromaticum flowers. Of the phytochemicals used, eugenol and isoeugenol at 0.01% showed potent antioxidative activity, and their activities were comparable to those of pyrogallol, quercetin, and BHT. The Cinnamomum root-, the Mentha leaf-, the Ginkgo fruit-, and the Syzygium flower-derived materials may be a good source for an alternative to the currently used antioxidants.
