죽초액을 급여한 육용 오리고기의 저장기간 중 pH, 지방산패도, 육색 및 관능평가의 변화 (Changes of pH TBA, Meat Color and Sensory Evaluation on Duck Meat Fed Supplemental Bamboo Vinegar during Storage Period at 4$^{\circ}C$)

  • This study was conducted to investigate the changes of pH, TBA, meat color and sensory evaluation on duck meat fed supplemental Bamboo vinegar during storage period at 4$^{\circ}C$ . Experiment animals (five-wk-old, Cherry Valley F$_1$, 100 chicks) were randomly assigned in four treatment groups. Treatments were control, 1%, 2% and 4% based on Bamboo vinegar addition. There was no PH difference in breast meat between groups on day 1 of storage, while pH of bamboo vinegar supplemented group was sustained hi호 after 3 days. TBA values of Bamboo vinegar treated groups were significantly lower than control group (P<0.05) and were steady change during storage. The color value in lightness no difference between groups during the storage. The control was significantly increased in 6 d and 9 d, while the bamboo vinegar treated groups no difference during storage. The redness and yellowness in bamboo vinegar treatment were decreased in 3 d and 9 d storage. The decrease in yellowness was outstandingly observed in bamboo vinegar 1% and 2% treatment (P<0.05). The odor in terms of sensory evaluation was improved by supplemental bamboo vinegar treatment. The significant differences were observed on 1 d, 3 d and 6 d storage (P<0.05). The appearance of sensory evaluation of supplemental Bamboo vinegar treated groups (P<0.05) was significantly different in 1 d and 3 d storage. The results of this study indicate that the supplemental Bamboo vinegar 1% and 2% may improve meat quality during storage period in duck meat.

토끼고기의 영양성분 및 품질특성 평가 (Evaluation of the Nutritional Composition and Quality Traits of Rabbit Meat)

  • This study evaluated the nutritional composition and quality traits of rabbit meat as compared to chicken meat. Samples of loin (M. longissimus dorsi) and breast meats were collected from rabbit and chicken carcasses, respectively. The meats were then analyzed for the proximate composition, collagen and energy contents, fatty acid composition, myoglobin and heme iron contents, pH value, water-holding capacity (WHC), cooking loss, meat color, Warner-Bratzler shear force (WBSF) value, and texture profile. Compared to chicken breast meat, lower (p<0.05) protein content and higher (p<0.05) ash and collagen contents were obtained in rabbit loin meat. Rabbit meat remarkably had higher (p<0.05) total polyunsaturated fatty acids (PUFA) and linolenic acid contents and lower (p<0.05) n-6/n-3 PUFA ratio as compared to chicken meat. The pH value and WHC were lower (p<0.05) in rabbit meat than in chicken meat (p<0.05). Rabbit meat exhibited lower (p<0.05) L* value and higher (p<0.05) a* and b* values compared to chicken meat (p<0.05). The WBSF value, hardness, and gumminess were higher (p<0.05) in rabbit meat than in chicken meat (p<0.05). These findings suggest that rabbit meat has higher essential n-3 PUFA, darker color, and firmer texture as compared to chicken meat.

Porcine Blood Plasma Transgluataminase Combined with Thrombin and Fibrinogen as a Binder in Restructured Meat

  • The purpose of this study was to use pig blood plasma transglutaminase (TGase) combined with thrombin and fibrinogen as a binder, which was applied to restructured meat, and to investigate its effect on the restructured meat quality. Pig meat was obtained 10 h post mortem from a traditional market was ground using a 10 mm aperture plate. A binder admixture was added (TGase:thrombin:fibrinogen mixed as 0.5:1:20 (v/v/v) to which was added 12% of its volume of 0.25 M calcium chloride) at 0, 5, 10, 15 and 20% of meat weight. Measurements included cooking loss, shrinkage rate, shear value, total plate count, pH value, TBA value, color difference, tension strength and sensory evaluation. The results showed that ground meat containing 20% w/w of binder admixture had higher cooking loss, shrinkage rate and shear value (p<0.05). Addition of different percentages of binder admixture did not affect total plate count, pH value, TBA value, and sensory evaluation of restructured meat (p>0.05). Tension strength was increased with increased level of binder admixture. Addition up to 15% binder admixture to restructured meat showed better scores of sensory texture, flavor and total acceptability (p<0.05).

Effect of Acacia karroo Supplementation on Growth, Ultimate pH, Colour and Cooking Losses of Meat from Indigenous Xhosa Lop-eared Goats

  • The objective of the study was to determine the effect of Acacia karroo supplementation on growth, ultimate pH, colour and cooking losses of meat from indigenous Xhosa lop-eared goats. Eighteen castrated 4-month-old kids were used in the study until slaughter. The kids were subdivided in two treatment groups A. karroo supplemented (AK) and non-supplemented (NS). The supplemented goats were given 200 g per head per d of fresh A. karroo leaves. The kids were slaughtered on d 60 and sample cuttings for meat quality assessment were taken from the Longistimus dorsi muscle. The supplemented kids had higher (p<0.05) growth rates than the non-supplemented ones. The meat from the A. karroo supplemented goats had lower (p<0.05) ultimate pH and cooking loss than the meat from the non-supplemented goats. Acacia karroo supplemented goats produced higher (p<0.05) $b^*$ (yellowness) value, but supplementation had no significant effect on $L^*$ (lightness) and $a^*$ (redness) of the meat. Therefore, A. karroo supplementation improved growth performance and the quality of meat from goats.

Effects of dietary hatchery by-products on growth performance, relative organ weight, plasma measurements, immune organ index, meat quality, and tibia characteristics of broiler chickens

  • Objective: The objective of the current study was to investigate the effects of dietary hatchery by-products (HBPs) as a replacement of fish meal (FM) on growth performance, relative organ weight, plasma measurements, immune organ index, meat quality, and tibia characteristics of broiler chickens. Methods: A total of 720 broiler chickens (3 d of age) were randomly allotted to 1 of 9 treatments with 8 replicates. Each replicate consisted of 5 male and 5 female birds. The basal diet was formulated to contain 5.0% commercial FM, whereas eight treatment diets were prepared by replacing 25%, 50%, 75%, or 100% of FM in the basal diet with infertile eggs (IFE) or a mixture of various HBPs (MIX); therefore, the inclusion levels of IFE or MIX in the experimental diets were 1.25%, 2.50%, 3.75%, or 5.00%. The diets and water were provided on an ad libitum basis for 32 d. Results: Increasing inclusion levels of IFE as a replacement of FM in diets had no effects on growth performance, plasma measurements, immune organ index, and tibia characteristics of broiler chickens. Increasing inclusion levels of IFE in diets increased (linear, p<0.05) meat lightness (L*) but decreased (linear, p<0.05) meat redness (a*). The breast meat pH at 1-h postmortem was increased (linear, p<0.05) by increasing inclusion levels of IFE in diets. Likewise, increasing inclusion levels of MIX in diets had no effects on growth performance, relative organ weight, plasma measurements, immune organ index, and tibia characteristics. However, increasing inclusion levels of MIX in diets increased (linear, p<0.05) 1-h postmortem pH but decreased (linear, p<0.05) 24-h postmortem pH of breast meat. Increasing inclusion levels of MIX in diets decreased (linear, p<0.05) thiobarbituric acid reactive substances values of breast meat. Conclusion: Both IFE and MIX are suitable alternatives to FM as protein ingredients in broiler diets.

Effects of Dietary Metabolizable Energy and Lysine on CarcassCharacteristics and Meat Quality in Arbor Acres Broilers

  • An experiment was performed to evaluate the effects of dietary metabolizable energy (ME) and lysine on carcass characteristics and meat quality in Arbor Acres (AA) broilers from 1 to 56 days of age. A total of 2,970 1-d-old male broiler chicks were randomly allocated to nine dietary treatments (three ME levels in combination with three lysine levels), and dietary ME and lysine concentrations were formulated by varying corn, soybean meal, tallow, and L-lysine sulfate concentrations. Live body weight (BW), carcass weight (CW), dressing percent, breast muscle weight (BMW), yield of breast muscle, muscle color (CIE L*, a*, and b*), pH values 45 min and 24 h postmortem ($pH_{45}$, and $pH_{24}$), meat shear force value (SFV), and water loss rate (WLR) were evaluated. Results showed that live body weight and dressing percent increased (p<0.05) as dietary energy increased. Higher dietary lysine content improved breast muscle weight. Neither carcass weight nor yield of breast muscle was affected by dietary energy or lysine content. Higher ME increased the b* value (p = 0.067) and $pH_{24}$ value (p<0.05), whereas it decreased SFV (p<0.05) and WLR (p = 0.06). Only water loss rate was influenced (p<0.01) by dietary lysine, which was higher in broilers from the high lysine diet as compared to those from medium or low lysine diets. The $pH_{45}$ value and L* value of breast muscle were not affected by ME or lysine. Significant interaction of dietary ME and lysine was found on a* value of breast muscle. These results indicated that dietary ME and lysine had important effects on breast muscle growth and meat quality, however their effects were different. Different concentrations of dietary ME and lysine might be considered to improve meat quality.

쑥과 정어리유의 첨가가 계육의 품질 및 저장성에 미치는 영향 (Effect of Mugwort and Fish Oil Addition on Quality and Shelf-Life in Meat-type Chicken)

  • 본 연구는 육계에 오메가 3계열을 다량 함유한 정어리유 1%와 쑥의 급여수준(0, 1, 2, 4%)에 따라 4처리구로(T1, T2, T3, T4)구분하여 5주간 급여 후 도계하여 대퇴 부위 근육을 냉장온도$(4{\pm}1^{\circ}C)$에서 10일간 저장하면서 pH, VBN, TBARS 및 육색의 변화를 조사하였다. 증체량은 T3구에서 가장 낮았으며, pH는 대조구에 비하여 처리구에서 높았고, 저장 기간이 경과하면서 유의성 있게 상승하였다(P<0.05). VBN과 TBARS는 처리구에서 저장기간이 지남에 따라 증가하였을지라도 대조구는 처리구에 비하여 높은 경향을 나타내었다. 육색은 처리구에서 $L^*$$b^*$값이 대조구보다 높은 경향이었다. 이상의 실험 결과로 미루어 육계사료에서 정어리유를 1%급여시에 2%까지 첨가하면 계육의 품질 및 저장성 개선 효과가 있는 것으로 사료된다.

  • 본 연구는 쑥 3%, 정어리유 4%와 쑥 3% + 정어리유 4%를 5주간 급여한 후 도계하여 가슴살 부위와 다리살 부위를 냉장온도 (4$\pm$1)$^{\circ}C$에 15일간 저장하면서 육질에 미치는 영향을 연구하였다. pH는 저장기간이 경과하면서 전 처리구에서 증가하였고, 다리살 부위가 가슴살 부위보다 약간 높은 경향이었다. VBN과 가열 감량은 저장기간의 경과에 따라 증가하였으며 (p<0.05), 처리구간에는 특이한 변화가 없었다. 육색은 저장기간이 경과하면서 L*값이 증가하였으나(p<0.05) a* b*값은 변화가 없었다.

Comparison and Correlation Analysis of Different Swine Breeds Meat Quality

  • This study was performed to determine the influence of pig breed and gender on the ultimate pH and physicochemical properties of pork. The correlations between pH and pork quality traits directly related to carcass grade, and consumer's preference were also evaluated. The pH and meat grading scores for cold carcasses of 215 purebred pigs (Duroc, Landrace, and Yorkshire) from four different farms were obtained. Meat quality parameters of the pork loin were analyzed. Duroc and female animals were more affected compared to other breeds and male pigs. Duroc animals had the highest ultimate pH, carcass back fat thickness, marbling scores, yellowness, and fat content (p<0.05). Landrace pigs had the highest color lightness and cooking loss values (p<0.05). Among all trait parameters, marbling scores showed the highest significant differences when evaluating the impact of breed and gender on meat quality characteristics (p<0.001). Ultimate pH was positively correlated with carcass weight (0.20), back fat thickness (0.19), marbling score (0.17), and color score (0.16) while negatively correlated with cooking loss (-0.24) and shear force (-0.20). Therefore, pork samples with lower ultimate pH had lower cooking loss, higher lightness, and higher shear force values irrespective of breed.

의사결정나무분석기법을 이용한 계절별 한우육의 육색 특성에 미치는 요인분석 (Analysis of Factors for Seasonal Meat Color Characteristics in Hanwoo(Korean Cattle) Beef using Decision Tree Method)

  • 계절별로 도축된 한우육의 육색에 미치는 요인들을 구체적으로 분석하고자 2000년도에 도축된 한우의 pH, 성별, 등지방두께, 등심단면적, 도체중, 출하연령, 도체심부온도, 외기온도, 외기상대습도 요인이 육색에 미치는 영향을 분석하였다. 분석결과, 여름에는 L*값(명도)이 비거세우가 유의적으로 낮았던 것을 제외하고 모든 육색특성에서 유의적이지 않은 것으로 나타났으며 기타 계절에서는 모든 육색특성에서 거세우가 유의적으로 높은 값을 나타내었다. 또한 중회귀분석결과 모든 육색특성(L*, a*, C*, $h^0$)에서 pH가 증가할수록 그 값들은 감소하였으며, 등지방두께는 증가할수록 그 값들은 증가하였다. 각 요인별로 의사결정나무분석을 실시한 결과, 명도(L*)가 가장 높은 것은 봄과 가을에 도축한 암소와 거세우였으며 적색도(a*)는 가을에 도축한 한우중 pH가 5.63 미만이고 외기상대습도가 71.5% 이상인 경우인 것으로 나타났다. Chroma값(C*)은 여름과 가을에 도축하고 pH가 5.60 미만이면서 등지방두께가 8mm 이상인 한우가 가장 높았으며, hue angle($h^0$)은 봄, 여름, 가을에 도축하고 pH가 5.66 미만이며 등지방두께가 8mm 이상인 한우 중 심부온도가 4.7$^{\circ}C$ 미만인 것으로 나타났다.
