The objective of this research was to investigate the effect of marbling scores on carcass grade factors, physico-chemical and sensory traits of Hanwoo. Data used in this study were collected from 73,316 carcasses obtained at the Nonghyup Seoul slaughterhouse in 2009 and 271 cuts of M. longissimusdorsi were analyzed to estimate beef qualities. As the marbling scores increased, backfat thickness was linearly increased (p<0.05) in cows (9.51 mm-14.69 mm) and steers (8.71 mm-14.23 mm). As the marbling scores increased, maturity of cows was increased and meat color, texture and quality grade improved for all genders. With increase of the marbling scores, crude fat contents (3.07%-26.70%), water holding capacity (52.09%-58.66%), $L^*$ value (34.08-41.97) were significantly increased (p<0.05) and Warner-Bratzler shear force was linearly decreased (p<0.05) from 8.58 kg to 2.60 kg. The increase of crude fat contents had the similar interval with the increase of marbling scores from 1 to 6 but it is sharply increased from marbling score 7. There was no difference observed on $pH_{24}$ (5.50-5.66), protein contents (19.57%-21.15%) among the marbling scores. Marbling score was significantly correlated with live weight (r=0.29) in cows, loineye area (r=0.35) in steer, and overall acceptability of panel scores (r=0.67) (p<0.01).
The simple method of evaluating highly marbled beef was examined by image analysis. The images of the cross section at the 6 to 7th rib were obtained from 82 carcasses of Wagyu cattle. By using an overall trace method, the surrounding edges of the longissimus thoracis and three muscles were traced automatically and manually with image analysis. In a spot method, 3 to 5 locations (2.5 or 3.0 cm in diameter) for each muscle were rapidly selected with no manual trace. The images were flattened, binarized, and the ratio of fat area to muscle area was determined. The correlation coefficients for marbling between different muscles, and between the overall trace and the spot methods were 0.55 to 0.81 between different muscles and 0.89 to 0.97, respectively. These results suggested that the simple spot method is speedy and almost as useful as the overall trace method as a measuring technique for beef marbling in loin muscles, especially for highly marbled beef.
Despite several issues in relation to human health, beef is still a most popular meat product among large section of society due to the presence of high quality protein and other nutrients. The current paper reviews numerous studies that provide nutritional profiles and health implications of high marbled beef consumption. In relation to lipid content of beef, intramuscular fat contains high level of PUFA and MUFA compared to other beef fat. Level and composition of intramuscular fat varies depending on breed and feeding regime. Literature suggests that the marbling is more complex than the development of subcutaneous fat and marbling not only provides good fatty acids but also contributes to the higher eating quality of beef. Finally, the current work emphasize that meat plays a pivotal role in nutritious diets, high quality marbled beef is not only of excellent eating quality but also contain more beneficial fatty acids.
This study is to investigate the amount of biased estimates for heritability and genetic correlation according to data structure on marbling scores in Korean cattle. Breeding population with 5 generations were simulated by way of selection for carcass weight, Longissimus muscle area and latent values of marbling scores and random mating. Latent variables of marbling scores were categorized into five by the thresholds of 0, I, 2, and 3 SD(DSI) or seven by the thresholds of -2, -1, 0,1I, 2, and 3 SD(DS2). Variance components and genetic pararneters(Heritabilities and Genetic correlations) were estimated by restricted maximum likelihood on multivariate linear mixed animal models and by Gibbs sampling algorithms on multivariate threshold mixed animal models in DS1 and DS2. Simulation was performed for 10 replicates and averages and empirical standard deviation were calculated. Using REML, heritabilitis of marbling score were under-estimated as 0.315 and 0.462 on DS1 and DS2, respectively, with comparison of the pararneter(0.500). Otherwise, using Gibbs sampling in the multivariate threshold animal models, these estimates did not significantly differ to the parameter. Residual correlations of marbling score to other traits were reduced with comparing the parameters when using REML algorithm with assuming linear and normal distribution. This would be due to loss of information and therefore, reduced variation on marbling score. As concluding, genetic variation of marbling would be well defined if liability concepts were adopted on marbling score and implemented threshold mixed model on genetic parameter estimation in Korean cattle.
Thyroid hormones play an important role in regulating metabolism and can affect homeostasis of fat depots. The gene encoding thyroglobulin (TG), producing the precursor for thyroid hormones, has been proposed as a positional and functional candidate gene for a QTL with an effect on fat deposition. The SNP occurs in the 5' promoter region of the TG gene and is widely used in marker assisted selection (MAS) programs to improve the predictability of marbling level and eating quality in beef cattle. In this study, we identified three SNPs at the 5' promoter region of the TG gene in Korean cattle. Of the three SNPs identified in TG gene, the C257T and A335G were previously unreported new SNPs. The sequence data were submitted to GenBank (GenBank accession number: AY615525). The previously reported C422T SNP showed three genotypes, CC, CT and TT, by digestion with the restriction enzyme MflI using the PCR-RFLP method. A new allelic variant corresponding to the C${\rightarrow}$T and A${\rightarrow}$G mutations at positions 257 and 335, respectively, could be detected by the SSCP analysis. The gene-specific SNP marker association analysis indicated that the C422T SNP marker was significantly associated (p<0.05) with marbling score. Animals with the CC and CT genotypes had higher marbling score than those with the TT genotype. Results from this study suggest that TG gene-specific SNP may be a useful marker for meat quality traits in future MAS programs in Korean cattle.
A group of Hanwoo (Korean cattle) steers (n=14,386) was sampled from a commercial abattoir located in Seoul over one year period (spring, summer, autumn and winter) and their carcass traits were collected. Carcass traits assessed by an official meat grader comprised degree of marbling, meat color, fat color, texture and maturity for quality grade, and back fat thickness, ribeye area and carcass weight for yield grade. A heavier carcass with a higher marbling score, more red meat color and white fat color received better quality grade (p<0.05). Regression analysis showed that the marbling score was the strongest attribute (partial $R^2=0.88$) for quality grade. Lighter carcasses with a thinner back fat and larger ribeye area received higher yield grade score. The back fat thickness was the most negative determinant of yield grade (Partial $R^2=-0.66$). The slaughter season had a little effect on quality and yield grades. As slaughter weight increased, back fat thickness and ribeye area increased linearly, whereas marbling score reached its asymptotic level at approximately 570 kg. As a consequence, quality grade showed a considerable improvement up to 570 kg, but increases in slaughter weight afterward showed a little benefit on quality grade. There was a clear curvilinear relationship between slaughter weight and yield grade in that the yield grade reached its highest point at approximately 490 kg and decreased afterward. These results suggested that 570kg at the age of 24 months might be the economic slaughter weight for quality grade but 490 kg for yield grade.
The aim of this study was to analyze the contribution factors (backfat thickness, eye muscle area, carcass weight, marbling score, and feeding period) affecting meat unit price (South-Korean Won / Kg of meat). The best slaughtering age to maximize unit price was also assumed. All data used in this study were acquired from the Korea Institute for Animal Products Quality Evaluation from 2010 to 2014. Contributions to the estimated unit price of cows by the following factors, backfat thickness, eye muscle area, carcass weights, feeding period, and marbling score were 2.65%, 0.04%, 1.58%, 1.58%, and 95.72%, respectively. Contribution to estimated unit price of steers by the same factors (backfat thickness, eye muscle area, carcass weights, feeding period, and marbling score) were 7.88%, 1.24%, 0.07%, 90.81%, and 95.72%, respectively. Slaughtering ages ranged from 26 to 36 months and the data were separated into each month for an 11 month period. The unit price of meat from Hanwoo slaughtered at 30 months was highest among groups. The lowest unit price was observed in the group belonging to the Hanwoo slaughtered at 36 months. In conclusion, of all contributing factors, marbling score affected unit price the most. Based on our results, it is recommended that the optimal slaughtering age be set at 30 months to maximize unit price. Moreover, the feeding of beef cattle past 30 months of age is not recommended because of the increase in feeding costs.

Japanese Black cattle (Wagyu) are fed for a long period to produce high quality beef, however, extended feeding often causes inefficiency and greater environmental load mainly derived from their manure. The objectives of this study were to analyze changes in feeding length by listing breeding values (BVs) at calf markets and the relationships between BVs and carcass characteristics of 4,052 Japanese Black cattle, and to examine the feasibility of optimizing feeding length by referring to listed BVs. BV classes A, B, and C were defined based on BVs of cows in Shimane Prefecture as follows: an upper quarter of BVs was classified as A, a second quarter as B, and under the average as C. For cattle sold at calf markets in the first term of 1996, just before the start of BV listing, the feeding length of cattle with class B BVs for the beef marbling standard (BMS) was longer (p>0.05) than that of class A cattle. However, in the second term of 1996, just after the start of BV listing, the feeding length of class B cattle became shorter (p<0.001) than that of class A cattle. Then, the feeding lengths of both classes showed no significant differences. Feeding lengths of both class A and B BVs for carcass weight (CW) changed similarly to the corresponding BV classes for BMS. The analysis of the relationships among the listed BV classes and the actual carcass characteristics showed that class A cattle had a higher (p<0.001) BMS than class B cattle, and that the higher-class cattle had a heavier CW (p<0.05). On the basis of previous reports, the cattle, particularly those with lower genetic marbling ability, seem to only increase marbling at markedly low efficiency for a few months before slaughter. Therefore, the finding that carcass characteristics corresponded to their class of BVs suggests that an optimum feeding length based on listed BVs not only increases the efficiency of beef production, but also reduces the environmental load.

The aim of this study was to evaluate combination of each of g.15532 C>A, g.17924 G>A SNP of FASN gene and beef quality grade of progeny in Hanwoo cow. In order to analyze the SNPs, genomic DNA was obtained from 270 Hanwoo cow and their progeny steer and g.15532 C>A and g.17924 G>A SNP was genotyped using single-based extension. Employing GLM as a statistical model. g.15532 C>A and g.17924 G>A SNP have a significant effect in Hanwoo steer but no significant effect in Hanwoo cow. Combination of each of g.15532 C>A, g.17924 G>A SNP and beef quality grade of progeny have a significant effect on marbling score in Hanwoo cow. Therefore, we suggest that g.15532 C>A and g.17924 G>A SNP contribute to genetic improvement on marbling score in Hanwoo cow.

The present study investigated the contribution of carcass traits on carcass prices of Holstein steers in Korea. Phenotypic data consisted of 76,814 slaughtered Holsteins (1 to 6 yrs) from all over Korea. The means for live body weight at slaughter (BWT), chilled carcass weight (CWT), dressing percentage (DP), quantity grade index (QGI), eye muscle area (EMA), backfat thickness (BF) and marbling score (MS), carcass unit price (CUP), and carcass sell prices (CSP) were 729.0 kg, 414.2 kg, 56.79%, 64.42, $75.26cm^2$, 5.77 mm, 1.98, 8,952.80 Korean won/kg and 3,722.80 Thousand Korean won/head. Least squares means were significantly different by various age groups, season of slaughter, marbling scores and yield grades. Pearson's correlation coefficients of CUP with carcass traits ranged from 0.12 to 0.62. Besides, the relationships of carcass traits with CSP were relatively stronger than those with CUP. The multiple regression models for CUP and CSP with carcass traits accounted 39 to 63% of the total variation, respectively. Marbling score had maximum economic effects (partial coefficients) on both prices. In addition, the highest standardized partial coefficients (relative economic weights) for CUP and CSP were calculated to be on MS and CWT by 0.608 and 0.520, respectively. Path analyses showed that MS (0.376) and CWT (0.336) had maximum total effects on CUP and CSP, respectively; whereas BF contributed negatively. Further sub-group (age and season of slaughter) analyses also confirmed the overall outcomes. However, the relative economic weights and total path contributions also varied among the animal sub-groups. This study suggested the significant influences of carcass traits on carcass prices; especially MS and CWT were found to govern the carcass prices of Holstein steers in Korea.
