Lactic Acid Bacteria Isolated from Fermenting Kimchi and Their Fermentation of Chinese Cabbage Juice (김치에서 젖산균의 분리 및 이 세균들의 배추즙액 발효)

  • Lactic acid bacteria(LAB) were isolated from fermenting Kimchi and were cultivated in filter-sterilized Chinese cabbage juice individually or in combination. LAB isolated were Lactobacillus leichimannii, Lac. fermentum, in addition to the already known Leuconostoc mesenteroides, Lac. plantarum, lac. brevis and pediococcus pentosaceus. Lac. leichimannii, Lac. fermentum and Lac. sake, the early lactobacilli, were high in number exceeding $10^4cells/ml$ at 0 time and multiplied up to $10^9cells/ml$ altogether at the 3rd day of kimchi fermentation. When the representative LAB were cultivated singly in Chinese cabbage juice with or without 3.0% NaCl, one strain of Leu. mesenteroides and La. leichmannii were not different in acid producing ability while the other strain of Leu. mesenteroides and Lac. fermentum Lac. plantarum, produced less acid when NaCl was present. When the bacteria in combination were cultivated in Chinese cabbage juice with 3.0% NaCl, the presence of Leu. mesenteroides was essential to eliminate the lag phase in acid production with higher amounts of acid produced than without. The total number of lactobacilli in the mixture of kimchi ingredients was about $2.9{\times}10^4 cells/ml$ while the number of Lac. plantarum was 7.3 cells/ml. The number of Lac. plantarum in individual ingredients were normally in the range between $0.0{\sim}240cells/g$ except garlic sold in ready-to-use form with $9.0{\times}10^3 cells/g$.

Quality Characteristics of Southeast Asian Salt-Fermented fish Sauces (동남아산 액젓의 품질특성)

  • To investigate quality characteristics of southeast asian salt-fermented fish sauces, various chemical properties were examined against 13 kinds of southeast asian salt-fermented fish sauces. The range of chemical compositions were $60.6{\~}72.8{\%}$ moisture, $18.2{\~}25.8{\%}ash,\;0.9{\~}13.7{\%}$ crude protein and $14.1{\~}338.6\;mg/100 ml$ VBN. The pH and salinity were $4.66{\~}5.91,\;24.1{\~}30.6{\%}$, respectively. Total nitrogen, amino nitrogen, total free amino acid, and total ATP related compounds (sum of $ATP{\~}IMP$, HxR, Hx and uric acid) were in the ranges of $0.140{\~}2.199g,\;115.4{\~}1,643.0 mg,\;46.4{\~}9,056.3\;mg\;in\;100 ml,\;and\;0.829{\~}9.564 {\mu}mol\;in\;1\;ml$, respectively. Southeast asian salt-fermented lish sauces were rich in tree amino acids, such as glutamic acid, Iysine, leucine, alanine, aspartic acid, valine and isoleucine in the order.

Anti-Inflammatory and Antidiabetic Effects of Brown Rice (Oryza sativa L.) Extracts (항염증 및 항당뇨 활성에 미치는 현미 추출물의 영향)

  • Physiological activities of hot water (BRW) and 80% ethanol (BRE) extracts from brown rice were investigated in this study. The highest activity (94.9%) of nitrite reductase was observed for BRE at 1 mg/ml at pH 1.2, while the activity for BRW was about 75.4% under the same conditions. The inhibitory effects of BRW and BRE on xanthine oxidase activity were about 39.0 and 72.9% at 10 mg/ml, respectively. The digestibility of starch was lower for brown rice than for milled rice and the highest inhibition (93.1%) of ${\alpha}$-glucosidase activity occurred with BRE. Superoxide dismutase (SOD)-like activities of BRW and BRE were weakly increased in a dose-dependent manner and were about 56.4 and 44.9% at 10 mg/ml, respectively. The influences of BRW and BRE on alcohol metabolizing activity were determined by measuring the generation of reduced nicotinamide adenine dinucleotide (NADH) by alcohol dehydrogenase (ADH) and acetaldehyde dehydrogenase (ALDH). Increases in ADH and ALDH activities were only detected with BRE.

A Study of Blood Folate Levels in Adolescent Girls (사춘기 여학생의 혈액엽산수준에 관한 연구)

  • This study was carried out to determine the folate status of adolescent girls. Serum and red blood cell(RBC) folate levels of 132 Korean adolescent girls aged 12 to 15 years were evaluated by micorbioligical assay using Lactobacillus casei(ATCC 7469). Serum folate concentrations were less than 3ng/ml in 4.5% and 3 to 4.9ng/ml in 42.4%. Of the RBC folate values, 4.5% were less than 120ng/ml and 40.2% were 120 to 159ng/ml. These findings demonstrated that serum folate levels were subnormal in 46.9% and RBC folate levels were subnormal in 44.7% of the adolescent girls. Serum and RBC folate concentration tend to be high in folate supplemented subjects. There was no significant difference in serum and RBC folate levels, hemoglobin, and hematocrit values between regular meal group and irregular meal group.

Postmortem Blood Concentration of Paraquat in Korean intoxicated by Paraquat (Paraquat 중독 사망한 한국인의 혈액 농도)

  • To elucidate the fatal blood concentration of paraquat (Gramoxone), a contact herbicide, we investigated blood concentration of paraquat in 91 cases of paraquat intoxication. The blood paraquat concentration of 91 cases due to ingestion of paraquat was 0.9 $\mu$g/ml-1023.5$\mu$g/ml and has been subdivided according to survival time. 48 of 91 cases were identified survival time. In 34 of 48 cases died within a day after ingestion of paraquat, blood paraquat concentration was ranged from 2.3-636.61$\mu$g/ml, and in 12 of 48 cases died 1-4 days after ingestion of paraquat, blood paraquat concentration was ranged from 0.9- 25.1 $\mu$g/ml.

Enhanced ML-LEACH with additional Relay Node

  • In this paper, we propose a new routing protocol for wireless sensor networks. This protocol improves energy consumption of ML-LEACH by reducing the transmission distance of member node via Relay Node. Since clusters of each Layer in ML-LEACH are randomly formed, the distance, between member node and cluster head may be longer than specific distance, distance threshold value. To improve this, we propose the new routing protocol using 2-Hop transmission via Relay Node depending on the transmission distance of the member node.

The Diagnostic Significances of Serum Carcinoembryonic Antigen in Gastrointestinal Tract Cancers (위장종양(胃腸腫瘍)에 있어서 혈청(血淸) Carcinoembryonic Antigen의 진단적(診斷的) 의의(意義)에 관(關)한 연구(硏究))

  • Carcinoembryonic antigen (CEA) levels were measured in the serum of 35 normal control subjects and 179 cases of various benign and malignant gastrointestinal diseases. Malignant gastrointestinal tumors include 69 cases of stomach cancer, 24 cases of hepatoma and 33 cases of colorectal cancer. Benign gastrointestinal diseases include 29 cases of peptic ulcer and 24 cases of liver cirrhosis. The results were as followings: 1) Mean serum CEA level in normal control subjects was $6.9{\pm}3.3ng/ml$ and there was; no difference in mean serum CEA level between age and sex difference. 2) In malignant gastrointestinal tumors, mean serum CEA level in colorectal cancer, hepatoma and stomach cancer, were $54.3{\pm}88.9ng/ml,\;62.1{\pm}99.7ng/ml$ respectively. Serum CEA level showed positive rate of 67% in colorectal cancer, 63% in hepatoma and 62% in stomach cancer. There was no difference in mean levels and positivity of serum CEA between these 3 malignant tumor groups. 3) Positivity of serum CEA was 61% in malignant gastrointestinal tumor group in spite of 37% in benign gastrointestinal disease group. In both mean level and positivity of serum CEA, stomach cancer was much higher than peptic ulcer. But there was no difference in mean level and positivity of serum CEA level between hepatoma and liver cirrhosis. 4) In hepatoma serum CEA level showed positive rate of 62.5% and alpha-feto protein showed a rate of 58.3%. 5) Mean serum CEA levels in patients with cancer in rectal, cecal, sigmoid colon, ascending: colon and descending colon were $73.7{\pm}106.7ng/ml,\;69{\pm}84.8ng/ml$, $15.7{\pm}9.1ng/ml,\;7.5{\pm}10.6ng/ml$ and 4.0ng/ml respectively. Positive rate of serum CEA showed 86% in sigmoid. colon cancer, 68% in rectal cancer and 66% in cecal cancer. 6) In considering of histological background, there was no correlation between the degree of differentiation of tumor cell and the serum CEA level in colorectal cancer. According to Duke's classification, the mean serum levels of CEA were $8.8{\pm}11.4ng/ml$ in group A, $15.3{\pm}16.0ng/ml$ in group B and $68.5{\pm}101.5ng/ml$ in group C respectively. Positivity-of serum CEA in group A, Band C were 40%, 50% & 69% respectively. So there was significant correlation between the degree of elevation of serum CEA and tumor extension.

Inhibition of Biogenic Amine Production by Bacillus sp. BCNU 9171 Isolated from Doenjang (된장에서 분리한 Bacillus sp. BCNU 9171에 의한 바이오제닉 아민 생산 저해)

  • Biogenic amines such as histamine, tyramine, cadaverine, and putrescine may have detrimental effects on consumers' health; therefore, they must be considered hazardous substances in foods. In recent years, the application of microorganisms that can degrade biogenic amines has become an emerging method for reducing the amount of these amines in foods. Primarily, Bacillus sp. BCNU 9171 was isolated from Doenjang, a Korean traditional fermented soybean paste. The inhibitory effects of the cell-free supernatant (CFS) of Bacillus sp. BCNU 9171 on biogenic amine production by 4 amine-positive food pathogenic bacteria were investigated using high performance liquid chromatography (HPLC). Our results showed that 4 different CFS concentrations-10% [1 ml CFS + 9 ml histidine decarboxylase broth (HDB)], 25% (2.5 ml CFS + 7.5 ml HDB), 50% (5 ml CFS + 5 ml HDB), and 75% (7.5 ml CFS + 2.5 ml HDB)-reduced the biogenic amine production up to 87% compared with that of the control without CFS. These results suggested that it is advisable to use Bacillus sp. strain BCNU 9171 as a starter organism for the manufacture of fermented foods and to ensure food safety since it prevents the accumulation of high amounts of biogenic amines in fermented foods by amine-positive bacteria.

Effect of Indomethacin on Progesterone Profile in Rabbit (Indomethacin이 가토의 Progesterone 수준에 미치는 영향)

  • 배란 및 착상시기에 indomethacin 투여가 혈액의 progesterone 수준과 착상율에 미치는 영향을 조사하였다. Progesterone수준은 HCG 주사후 4시간이내에 9ng/ml로 증가 되었다가 배란시에는 3ng/ml로 감소하였다. indomethacin투여구에서는 배란시 8ng/ml를 나타내기 까지 계속증가하였다. Indomethacin투여는 착상을 억제하였다. 대조구의 착상율은 83%이나, indomethacin을 HCG 주사후 1일부터 4일까지 투여하면 착상율은 63%, HCG주사후 5일 부터 8일까지 투여하면 착상율은 27%로 감소하였다. Progesterone 수준은 HCG 주사후 12ng/ml의 높은 수준을 나타내다가 HCG 주사후 3일까지는 3ng/ml이하의 낮은 수준을 나타내였으며 4일 부터는 10ng/ml의 높은 수준을 나타냈다. Indomethacin을 HCG 주사후 5일부터 8일까지 투여하면 HCG 주사후 3일까지는 대조구와 비슷하지만 4일 부터는 5ng/ml이하로 대조구 보다 낮은 수준을 나타냈다.

Stability of Taxol and Ondansetron Hydrochloride in $5\%$ Dextrose Injection and $0.9\%$ Sodium Chloride Injection during Simulated Y-Site Administration (Y-Site 투여시 $5\%$ 포도당액과 생리식염수에서 탁솔과 온단세트론의 안정성)

  • Y-Site 투여시 $5\%$포도당액과 생리식염수에서 탁솔과 은단세트론의 안정성에 관해 실온과 형광등 아래서 연구하였다. 온단세트론 0.03 mg/ml, 0.1 mg/ml, 0.3 mg/ml와 탁솔 0.3 mg/ml, 1.2mg/ml를 각각 1:1로 혼합한 후 0, 1, 2, 4, 12시간에서 즉시 약물농도를 HPLC로 분석하였다. 방해물질에 의한 분석오차를 줄이기 위해 분석법을 여러상태에서 확인하였으며, 각 농도에서 3차례씩 실험하였고 각 샘플은 2차례 연속 HPLC 분석하였다. 분석전에 각 시료의 투명도, 색의변화, 침전상태 및 pH를 검사하였다. 온단세트론 0.03, 0.1 및 0.3 mg/ml와 탁솔 0.3 및 1.2mg/ml를 각각 혼합하였을 때 12시간 동안 안정성이 있었다. 혼탁이나 색의 변화 및 침전은 나타나지 않았으며 12시간 동안 pH의 변화는 특별한 경향이 없었다.
