Synergistic Antioxidant Effects of Lycopene and Other Antioxidants on Methyl Linoleate Autooxidation

  • The beneficial effects derived from consuming natural antioxidants may not depend on the action of an individual antioxidant, but rather on the concerted action of several antioxidants naturally present. The aim of this study was to determine the concentrations and combinations of antioxidants that can produce synergistic effects (SyEs). Quantification of the lipoperoxyl radical scavenging capacity of antioxidants was carried out in a homogeneous model system where the free radicals were produced by the oxidation of methyl linoleate, initiated by the 2,2'-azobis (2,4-dimethylvaleronitrile). The greatest SyE (2.21, p<0.05) was seen in mixtures of all 4 antioxidants when used with concentrations of 15 ${\mu}M$ lycopene, 2.5 ${\mu}M$ vitamin E, 0.16 ${\mu}M$ vitamin C, and 10 ${\mu}M$ ${\beta}-carotene$. Doubling the vitamin E concentration from 2.5 to 5.0 ${\mu}M$ in the mixture with all 4 antioxidant reduced the SyE to 1.69 (p<0.05). Other combinations produced synergistic effects that ranged from 1.28 to 1.41.

Physicochemical, Microbial, and Sensory Properties of Queso Blanco Cheese Supplemented with Powdered Microcapsules of Tomato Extracts

  • The present study examined the physical, chemical, microbial, and sensory characteristics of Queso Blanco cheese supplemented with powdered microcapsules containing tomato extracts (0.5-2.0%) during storage at $7^{\circ}C$ for 60 d. The lactic acid bacterial count and lycopene concentrations in Queso Blanco cheese supplemented with powdered microcapsules were significantly higher than those of the control. In a texture analysis, the gumminess, chewiness, and hardness values for Queso Blanco cheese were significantly higher with increasing concentrations of the powdered microcapsules containing tomato extracts. Total short-chain fatty acids in Queso Blanco cheese supplemented with powdered microcapsules containing tomato extracts were not significantly altered compared to the control. Sensory evaluation scores for the yellowness, tomato taste, and firmness of Queso Blanco cheese were significantly higher after supplementation with powdered microcapsules containing tomato extracts.

떫은감 Carotenoid의 색소 안정성 (The Stability of Carotenoid Pigments in Astringent Persimmon(Diospyros kaki) Consumed in Korea)

  • Studies on extraction and color stability of carotenoids from astringent persimmon(Diospyros kaki) were performed to provide the basic information for the utilization of persimmon pigment as a new source of natural food colorant. The major carotenoids in astringent persimmon were beta-cryptoxanthin, lycopene and beta-carotene. Beta-cryptoxanthin was the first major pigment and lycopene the next. Total carotenoid content in persimmon calculated as beta-carotene equivalent was 107.4 $\mu\textrm{g}$/g. The data indicated that the astringent persimmon was a good source of carotenoid pigment. The physical and chemical stabilities of carotenoid from astringent persimmon were investigated at various conditions of temperature, pH and antioxidant. The effects of oxygen and light on the stability of carotenoid pigment has been investigated. The factors that cause the discoloration were visible light, temperature above 60, pH below 5 and oxygen. Especially, the carotenoid pigment was very sensitive to light and oxygen. Carotenoid stability was much improved with increasing nitrogen concentration in the atmosphere. Persimmon pigments have been found to be most stable at 5∼10. And tocopherol was the most effective inhibitor of the pigment discoloration.

Effect of Bacillus mesonae H20-5 on Fruit Yields and Quality in Protected Cultivation

  • A variety of microorganisms in rhizosphere affect plant health by plant growth promotion, mitigation of abiotic stresses as well as protection from pathogen attacks. In our previous study, we selected a bacterium, Bacillus mesonae H20-5, for alleviation of salinity stress in tomato plants. In this study, we verified the effect of a liquid formulation of B. mesonae H20-5 (TP-H20-5) on fruit production and phytochemical accumulation including lycopene and polyphenol in cherry tomato and strawberry fruits in on-farm tests of protected cultivation under salinity stress. When vegetables including tomato, cherry tomato, strawberry, and cucumber were treated with TP-H20-5 by irrigated systems, final marketable yields were increased by 21.4% (cherry tomato), 9.3% (ripen tomato), 120.6% (strawberry), and 14.5% (cucumber) compared to untreated control. Moreover, treatment of TP-H20-5 was showed increase of phytochemicals such as lycopene and total polyphenol compared to untreated control in cherry tomato and strawberry. Therefore, these results indicated that a formulant of B. mesonae H20-5 can be used as a potential biofertilizer for increasing fruit production and quality.

토마토 종류에 따른 토마토 소스의 품질특성 (Quality Characteristics of Tomato Sauces Prepared using Different Tomato Varieties)

  • The purpose of this study was to investigate the quality characteristics of tomato sauce, which is widely used in Western cuisine, according to tomato variety. The plum tomato sauce treatment had the highest pH at 4.13 while sauces made with Seo gwang and Young gwang tomatoes exhibited the lowest pH level of 4.07 (p<0.05). Sweetness was highest in the plum tomato sauce at $9.80^{\circ}$Brix. This might have been due to the fact that the plum tomato variety was the sweetest among the different tomatoes. There were no significant differences among the treatments in terms of reducing sugars, salinity, or viscosity. A color difference analysis indicated that redness (a-value) was highest in the plum tomato sauce, which contained a high level of lycopene. Sensory evaluations were performed by 15 professional panelists with scoring tests for color, flavor, taste, aftertaste, viscosity, and overall acceptability. The plum tomato sauce received the best scores in every evaluation, except for viscosity. These comparative results will support the development of better quality tomato sauce using plum tomatoes.

Effects of arbuscular mycorrhizal fungi on enhancing growth, fruit quality, and functional substances in tomato fruits (Lycopersicon esculentum Mill.)

  • This study aimed to investigate the efficiency of arbuscular mycorrhizal fungi (AMF) in enhancing plant performance and bioactive compound concentrations in tomatoes (Lycopersicon esculentum Mill.). This factorial pot experiment included nine replications over 120 days of cultivation. Three AMF species (Rhizophagus prolifer, Claroideoglomus etunicatum, and Acaulospora mellea) were utilized as inoculum, while non-mycorrhizal controls with or without synthetic NPK fertilizer were compared. Interestingly, C. etunicatum KS-02 inoculations effectuated the best fruit growth and weight, which were statistically higher than those of the control without AMF. However, only fruit fresh weight was higher in plants inoculated with C. etunicatum KS-02 than those treated with the synthetic NPK fertilizer. In addition, C. etunicatum KS-02 inoculations induced a ≥ 11% increase in DDPH (1,1-diphenyl-2-picrylhydrazyl) activity, lycopene content, and carotenoid content compared to the control. This study is the first to report Claroideoglomus species' effectiveness in promoting growth, fruit yield, and bioactive compound production in L. esculentum Mill. These findings substantiate the significant potential of C. etunicatum KS-02 for tomato cultivation without the adverse effects of excessive synthetic fertilizer use.

중년기 성인의 혈중 항산화 물질 분석 및 혈중 지질과 신체계측치와의 상관성 (Analysis of Serum Antioxidant Materials Concentration and Their Relation with Blood Lipids and Anthropometric Indices in Middle-Aged Adults in Korea)

  • 본 연구에서는 우리나라 건강한 중년성인의 혈청 carotenoids류 (${\alpha}$-carotene, ${\beta}$-carotene, ${\beta}$-cryptoxanthin, lutein, lycopene)와 ${\alpha}$-tocopherol, ${\gamma}$-tocopherol, retinol의 수준을 파악하고 혈중 지질상태 및 신체계측치와의 상관성을 평가해보고자 하였으며 조사 대상자는 40대 이후 건강한 성인 373명 (남자 231명, 여자 142명)이었다. 우리나라 건강한 중년기 성인의 혈청 중에 존재하는 주요 carotenoids는 ${\beta}$-cryptoxanthin, ${\beta}$-carotene, lutein이었고 lycopene, ${\alpha}$-carotene은 더 낮은 농도로 존재하였다. 성별에 따른 비교에서는 ${\alpha}$-carotene, ${\beta}$-carotene, ${\beta}$-cryptoxanthin, lycopene 등의 carotenoids 물질들의 농도는 여자가 남자에 비해 유의하게 높았고, retinol은 남자가 여자에 비해 유의하게 높았으며 lutein과 tocopherol은 성별에 따른 유의차를 보이지 않았다. 혈중 항산화 물질의 농도는 연령이 높아짐에 따라 증가하는 경향을 보였으며 retinol과 ${\alpha}$-tocopherol 영양상태는 남자가 여자에 비해 우수하였다. 혈청 항산화 물질들의 농도와 혈청 및 소변 중의 지질과산화물 농도 사이에는 뚜렷한 상관성을 발견할 수가 없었다. 혈청 carotenoids들은 상호간에 또 ${\alpha}$-tocopherol 사이에 유의적인 양의 상관관계를 보였으며, 반면 lutein을 제외하고는 retinol과는 음의 상관성을 나타내었다. 혈 중 ${\alpha}$-tocopherol과 retinol 사이에는 유의적인 양의 상관성을 보였다. 혈 중 지질과의 상관성 분석에서 측정된 모든 항산화 물질들은 총콜레스테롤과 양의 상관관계를 나타내었다. 반면 중성지질은 carotenoids 물질과는 음의 상관성을 보였고 tocopherol, retinol과는 양의 상관성을 보였다. 혈청 항산화 물질들의 농도와 신체계측치 사이에는 성별에 관계없이 전반적으로 혈청 carotenoids류는 신체계측치들 및 혈압과 음의 상관성을 보였으며, tocopherol들과 retinol 수준은 양의 상관성을 보였다. 이 중 특히 유의적인 상관성을 보인 것은 남성에서 ${\beta}$-carotene과 lutein의 혈압과의 음의 상관성, 여성에서의 ${\alpha}$-carotene, ${\beta}$-carotene, ${\beta}$-cryptoxanthin과 체지방 관련 지표들 (BMI, WHR, 체지방율)과의 음의 관련성이었다. 본 연구 결과 중년 성인의 혈중 항산화 물질들의 농도는 종류에 따라 성별, 연령별로 유의적인 차이를 나타내었으며, 혈중 지질 수준 및 신체 계측치와도 유의적인 관련성을 가지는 것으로 나타났다. 따라서 이러한 상관성의 원인과 의미에 대해서는 향 후 식생활 및 생활습관 등과 관련된 연구를 통해 밝혀져야 할 것이다.

방울토마토 (Lycopersicon esculentum var. cerasiforme) 라이코펜 품종의 기능적 특성 (Functional Properties of the Lycopene Cultivar of Cherry Tomato (Lycopersicon esculentum var. cerasiforme))

  • 본 연구에서는 방울토마토 라이코펜 품종의 기능성 식품 또는 식품 소재로서의 효용성을 알아보기 위하여 총 폴리페놀 및 플라보노이드 함량, 항산화 활성, 암세포 생육억제 효과를 검증하여 보았다. 방울토마토 라이코펜 품종의 폴리페놀 함량은 건조물 1 g당 $12.28{\pm}1.78mg$으로 국내산 일반 토마토와 유사하였으며, 플라보노이드는 건조물 1 g당 $3.89{\pm}0.54mg$이 함유되어 있어, 일반 토마토에 비해 4~6배 가량 높았다. 방울토마토 라이코펜 품종의 항산화 활성을 알아보기 위해 DPPH radical scavenging activity(DSA), ABTS radical scavenging activity(ASA) 및 Ferric reducing antioxidant power(FRAP)를 측정하였다. DSA와 ASA를 측정한 결과, 추출물의 농도가 증가함에 따라 유의적으로 라디칼 소거 활성이 증가하였으며, $IC_{50}$은 각각 $328.64{\pm}4.190{\mu}g/mL$, $350.61{\pm}3.30{\mu}g/mL$이었다. 또한, FRAP값은 $26.92{\pm}0.68{\mu}mol$ $Fe^{2+}/g$으로 밝혀져 방울토마토 라이코펜 품종은 항산화 활성이 있음이 확인되었다. 방울토마토 라이코펜 품종의 세포독성과 암세포 생육억제 효과를 검증한 결과, 폐암세포(A549)에 대해 강한 생육 억제 효과를 확인할 수 있었다. 방울토마토 라이코펜 추출물은 처리 농도가 증가함에 따라 유의적으로 A549 세포의 생육을 억제하였다. 추출물을 $500{\mu}g/mL$ 농도로 처리하였을 경우, 67.39%의 암세포 억제 효과를 보였으며, $IC_{50}$$375.46{\pm}33.67{\mu}g/mL$이었다. 또한, 방울토마토 라이코펜 추출물은 자궁경부암세포(HeLa)와 간암세포(HepG2)에 대해서도 약한 생육억제 효과를 보임을 확인할 수 있었다. 이상의 결과를 통해 방울토마토 라이코펜 품종은 기능성 식품 또는 식품 소재로서의 가치가 매우 높음이 확인되었다.
