전통 한국 식이의 비교 영양학 (Comparative Nutrition of Traditional Korean Diet)

  • Rice is the primary main dish of Traditional Korean diet. Although there have been changes in food consumption and nutrient intake among Koreans, traditional dietary pattern is stil dominant among Koreans. Traditional Korean diet has emphasized breakfast, which is the most frequently missed meals in Korea today but important for daily work performance and health. Compared to diets of the U.S. and Greece, Korean diet is high in carbohydrate and low in fat and cholesterol due to low intake of meat. Koreans also consume large amount of plant food, which makes fiber content of diet to be high. However fruit and milk consumption tends to be low in Korea. Koreans use fermented food, including kimchi, very frequently as well as foods cooked and consumed at high temperature and over direct fire. Traditional cooking methods are time consuming which limits the usage among modern city dwellers with working women. Despite the strengths of traditional Korean diets in reducing risk factors of chronic diseases, preservation of the tradition in modern Korean society requires special attention and efforts to make them more adaptable to contemporary life styles.

Effects of Synchronization of Carbohydrate and Protein Supply on Ruminal Fermentation, Nitrogen Metabolism and Microbial Protein Synthesis in Holstein Steers

  • Three rumen-cannulated Holstein steers were fed three diets, each with a different synchrony index (SI) (LS: 0.77, MS: 0.81, and HS: 0.83), in order to examine the effect of diet on rumen fermentation, nitrogen balance, and microbial protein synthesis. Synchrony index was calculated based on the carbohydrate and crude protein fractions of each ingredient and their degradation rates. Feeding the steers diets with different SIs did not influence dry matter, crude protein, NDF, or ADF digestibility. The concentrations of total and individual VFA in the rumens of steers that were fed the two higher-SI diets were higher than in those fed the low-SI diet (p<0.05), but there was no significant difference between the two higher-SI diets. One hour after feeding, steers on the LS diet had lower ruminal pHs than did those fed the MS or HS diets (p<0.05), and animals on the LS diet generally showed higher ruminal $NH_3$-N levels than did animals on the other diets, with the 4-h post-feeding difference being significant (p<0.05). Steers receiving the LS diet excreted more nitrogen (N) in their urine than did those on the two higher-SI diets (p<0.05), and the total N excretion of those on the LS diet was also higher (p<0.05). Microbial N levels calculated from the concentration of urinary purine derivatives were generally higher when the SI was higher, with the highest microbial protein synthesis being produced by steers on the HS diet (p<0.05). In conclusion, in the current study, ingestion of a synchronous diet by Holstein steers improved microbial protein synthesis and VFA production and decreased total N output.

  • A feeding experiment was conducted to determine the nutritional value of various dietary protein sources without a vitamin premix supplementation in juvenile black rockfish, Sebastes schlegeli. Diets containing similar quantities of lipid and carbohydrate with 50% crude protein from fish meal (FM)/soybean meal (SBM)/corn gluten meal (CGM), FM only, casein/gelatin, high FM/low casein and low FM/high casein were fed to rockfish along with a commercial rockfish diet. The diet containing only 65.6% FM and the commercial rockfish diet produced significantly greater weight gain (WG) and feed efficiency (FE) than all other semipurified diets (SPDs); the economical diet with 52.8% FM, 10% SBM and 5% CGM produced lower WG than the diet containing FM and commercial rockfish diet, but FE and survival were similar both diets. Intermediate responses were observed for rockfish fed the SPD containing 32.8% FM and 27.4% casein, while SPDs containing 10% FM and 41.8% casein and 38.5% casein and 10% gelatin yielded the lowest WG and FE. Some differences in tissue indices and body composition of rockfish were induced by the diets containing various protein sources and levels without the vitamin premix supplementation.

백미에 쑥 첨가급식이 이유식후 백서의 영향에 미치는 영향 (A Weanling Rats by Feeling Mugwort Powder Supplemented to Rice Diets with Different ProStudy on the Nutritional Effect in tein Level)

  • This study was designed to investigate the nutritional effect of mugowrt powder supple mentation to rice diets with different protein levels. Thirty female albino rats weighing 39-43g were adopted for the feeding trial for 4 weeks. The different 5 kind of experimental diets were performed . Control diet was commercially available forage for rats, experimental diet (I-C) highly milled rice, (Ⅰ) highly milled rice 95% and mugwort powder 5%, (Ⅱ-C)highly milled rice 95% and milk casein 5%, and (Ⅱ) highly milled rice 90%, milk casein 5 % and mugwort powder 5%. Growth rate was remarkably high in the dietary group fed on highly milled rice supplemented with 5% mugwort powder (protein 8%) (P<0.05), but it showed the tendency to be rather low in the group fed on highly milled rice supplemented with 5% casein and 5% mugwort powder (protein 12%). Food efficiency as well as protein efficiency appeared similar to the growth rate. Hematodcrit level demonstrated the same tendency as growth rate, but hemoglobin content was observed to increase by diets supplemented with increasing amount of mugwort regardless of protein level. Each nutrient intake was increased by adding mugwort powder to diets after a week's feeding, but it was increased by 8% protein diet, and decreased by 12% protein diet in 3 weeks as well as 4 weeks after feeding . The absorption rate of carbohydrate and protein decreased by feeding mugwort supplemented diets regardless of protein level and feeding period, and that of lipid increased with 12% protein diet.

열량 영앙소의 수준이 흰쥐의 단백질 평형과 체조성에 미치는 영향 (Effects of Varying the Concentration of Energy Yielding Nutrients on Nitrogen Balance and Body Composition of the Growing Rats)

  • 섭취된 단백질이 성장하는 쥐의 체내에서 이용되는 효율을 알고, 지방 섭취량이 단백질 대사에 어떤 영향을 주는지 알기 위해서 생후 6주되고 평균 체중이 약 106g 정도되는 Sprague-Dawley 계 albino rat 숫컷 51마리를 사용하여 (3 마리는 개시시 도체분석에 사용하고, 48마리는 사양시험에 사용하였음) 시험 사료의 에너지 수준은 M.E.가(價)가 4000Kca1/kg으로 모두 같게 하되 단백질 공급 수준은 저단백질구(10%), 중단백질구(20%), 고단백질구(30%)로 하고, 지방 급여 수준은 각 단백질 수준마다 총 에너지의 20%(저지방구), 40%(고지방구)로 정하고 나머지 에너지는 전분과 포도당으로 보충한 6종의 사료처리구에 대한 사양시험, 대사시험 및 도체분석 시험을 실시했던바 얻어진 결과를 요약하면 다음과 같다. 1) 증체량은 사료의 단백질 수준을 증가시킬 경우 저지방구에서는 증가했으나 고지방구에서는 오히려 감소되있다. 사료 효율은 저지방구에서는 단백질 공급수준을 높일수록 증가되었으나 고지방구에서는 일정한 경향을 찾을 수 없었다. 단백질 효율에 있어서는 저단백질구의 그것이 높았는데 특히 저단백질 고지방구(LPHO)의 단백질 효율이 가장 높았으며 단백질 수준이 높아질수록 지방의 공급량에 관계없이 저하되었다. 2) 고형물, 단백질 총탄수화물의 소화율은 같은 수준의 단백질을 공급하는 경우 고지방구의 것보다 저지방구의 것이 높았으며, 단백질 급여 수준이 높을수록 고형물과 탄수화물의 소화율은 약간 감소되었으나, 단백질의 소화율은 오히려 약간 증가되었다. 지방의 소화율은 사료의 단백질이나 지방의 급여 수준에 큰 영향을 받지 않고 모두 높았다. 3) 질소 이용률에 있어서는 중단백질구(20%)인 경우 저지방구가 가장 높았으나, 고지방구는 가장 낮았다. 사료단백질 20%까지는 저지방 수준인 경우 질소이용률이 뚜렷하게 높은 것을 알 수 있었으나 고단백질구(30%)에서는 지방의 급여량에 따른 차이를 볼 수 없었다. 4) 에너지 섭취량은 사료의 단백질과 지방 수준에 따라서 영향을 받았다. 각 처리구별로 에너지의 대사율을 비교해 보면, 첫째로 사료의 단백질 수준이 높아질수록 에너지 대사율은 약간씩 낮아졌고, 둘째로 같은 단백질 수준에서는 저지방구의 에너지 이용률이 고지방구의 그것보다 훨씬 높았다. 5) 체성분은 시험 개시시 체조성에 미하여 체수분은 감소되었고 체단백질과 체지방은 모두 증가되었다. 단백질 공급 수준이 높아질수록 체수분은 높았고, 체단백질과 체지방은 모두 낮은 경향이 있었다. 단백질 수준이 같을 경우 고지방구의 체수분은 저지방의 그것보다 높았으며 체단백질과 체지방은 오히려 고지방구에서 낮은 경향을 보였다. 6) 이상에서 설명한 실험결과를 종합하여 볼 때 성장하는 흰쥐의 경우 단백질 20%, 지방 20%, 탄수화물 60%로 구성된 식이가 가장 이상적인 것으로 생각된다.

Food and nutrient Intake in Relation to Alcohol consumption in the Korean National Health and Nutrition Survey

  • Dietary pattern in relation to alcohol consumption was studied in 7,370 Korean adults aged 20 years and older in 1998 Koran National Health and Nutrition Survey in which 24 hour recall method was used for dietary survey, The aim of this study was to investigate the effect of alcohol consumption on food and nutrient intake among Koreans, Individual drinking data was collected by interview as a part of health behavior survey T est was adopted to between nutrient intake level and drinking status. Drinkers of both sexes showed less consumption of foods from vegetable origins than non-drinkers, Consequently,. They also had significantly less carbohydrate consumption then non-drinker. This result may suggest that diets of Korean drinkers is unbalanced in terms of low consumption of food from vegetable origin and carbohydrate, Nutrition education should focus on those issues to improve the nutritional status and prevent potential risk disease by unbalanced diet.

식이 중 지방과 탄수화물 비율이 쥐 간이 Glucokinase의 활성도에 미치는 영향 (Effects of Dietary Fat to Carbohydrate Ratio on Hepatic Glucokinase Activity in Rats)

  • This study was undertaken to determine the effect of dietary fat to carbohydrate ratio on plasma glucose. free fatty acid level and hepatic glucokinase activity in normal or insulin treated diabetic rats. Sprague-Dawley male rats were fed with 3 different but isocaloric diets for 5 weeks. Diet 1 made to have low fat(4% corn oil and 65.8% corn starch wt/wt) : diet 2 medium fat (12% : 47.8%) : diet 3 high fat (20% : 29.8%) In the normal rats an apparent increase of GK activity was observed from the animal fed low fat diet when compared with other groups. GK activities were decreased in all the alloxan-diabetic rats than the normal rats. When insulin was injected the GK activities in all the livers of alloxan-diabetic rats restored to normal level and GK activity was highest in low fat group. In the entire group significant relationships were seen between the plasma glucose and GK activities(r=-0.6, p<0.001) FFA levels and GK activities(r=-0.63 p<0.001) Both in normal and insulin treated diabetic rats significantly depressed level of hepatic GK activity was observed in the livers of animals fed high fat diet for 5 weeks and depressed level of GK activity may be related to insulin resistance.

참전복 사료의 탄수화물원 평가 (Evaluation of Dietary Carbohydrate Sources for Juvenile Abalone (Haliotis discus hannai))

  • 참전복 사료의 적정 탄수화물 종류 및 첨가량을 구명하기 위하여 카제인, 북양어분 및 대두박을 단백질원으로하나 실험사료에 소맥분, dextrin,참전복 사료의 적정 탄수화물 종류 및 첨가량을 구명하기 위하여 카제인, 북양어분 및 대두박을 단백질원으로하나 실험사료에 소맥분, dextrin, $^{\alpha}$-potato starch, sucrose를 각각 2-~24%씩 첨가하여 그 이용성을 평가하였다. 또한 $^{\alpha}$-potato starch를 15%, 20% 및 25% 첨가하여 적정함량을 조사하였으며, 북양어분, 대두박, 콘글루텐밀, 면실박, 소맥분의 첨가 비율을 조절하여 탄수화물 함량이 다른 배합사료와 비슷하게 유지한 배합사료구도 설정하였으며, 천연먹이로 건조 다시마와 건조 미역 공급구를 두어 실험배합사료와 비교하였다. 실험용으로 중간 크기의 건강한 치패(평균체중;125 mg)를 사료마다 4반복으로 20주간 사육 실험하였다. 사육한 후의 생존률은 건조 다시마와 건조 미역구가 타 실험구보다 낮았다(P<0.05). 실험종료시의 평균체중과 증체율은 사료의 탄수화물 종류에 영향을 받지 않았으며, 건조 다시마와 미역구보다 유의적으로 높았다(P<0.05). $^{\alpha}$-potato starch 20%와 25% 첨가구와 통계적인 차이는 없었지만, $^{\alpha}$-potato starch 15%첨가구의 성장효과는 다소 낮아져 $^{\alpha}$+$^{\beta}$-potato starch 20%와 sucrose 20%와 25% 첨가구와 유의차를 보였다(P>0.05). 실험 종료시 지질 함량은 소맥분, dextrin, $^{\alpha}$-potato starch 첨가구들이 서로 유의차없이 타 실험구보다 높았고, 천연먹이구와 상($\alpha$)-potato starch 25% 첨가구들이 낮은 값을 보였다(P<0.05). 이상으로부터 본 실험에 사용된 탄수화물원들은 모두 참전복 사료에 적합할 것으로 전망된다.

Consumer Acceptability of Intramuscular Fat

  • Fat in meat greatly improves eating quality, yet many consumers avoid visible fat, mainly because of health concerns. Generations of consumers, especially in the English-speaking world, have been convinced by health authorities that animal fat, particularly saturated or solid fat, should be reduced or avoided to maintain a healthy diet. Decades of negative messages regarding animal fats has resulted in general avoidance of fatty cuts of meat. Paradoxically, low fat or lean meat tends to have poor eating quality and flavor and low consumer acceptability. The failure of low-fat high-carbohydrate diets to curb "globesity" has prompted many experts to re-evaluate of the place of fat in human diets, including animal fat. Attitudes towards fat vary dramatically between and within cultures. Previous generations of humans sought out fatty cuts of meat for their superior sensory properties. Many consumers in East and Southeast Asia have traditionally valued more fatty meat cuts. As nutritional messages around dietary fat change, there is evidence that attitudes towards animal fat are changing and many consumers are rediscovering and embracing fattier cuts of meat, including marbled beef. The present work provides a short overview of the unique sensory characteristics of marbled beef and changing consumer preferences for fat in meat in general.

Effect of Synchronizing Starch Sources and Protein (NPN) in the Rumen on Feed Intake, Rumen Microbial Fermentation, Nutrient Utilization and Performance of Lactating Dairy Cows

  • Eight crossbred (75% Holstein Friesian) cows in mid-lactation were randomly assigned to a switchback design with a 2x2 factorial arrangement to evaluate two nonstructural carbohydrate (NSC) sources (corn meal and cassava chips) with different rumen degradability and used at two levels of NSC (55 vs. 75%) with protein source (supplied by urea in the concentrate mix). The treatments were 1) Low degradable low level of corn (55%) 2) Low degradable high level of corn (75%) 3) High degradable low level of cassava (55%) and 4) High degradable high level of cassava (75%). The cows were offered the treatment concentrate at a ratio to milk yield at 1:2. Urea-treated rice straw was offered ad libitum as the roughage and supplement with 1 kg/hd/d cassava hay. The results revealed that total DM intake, BW and digestion coefficients of DM were not affected by either level or source of energy. Rumen fermentation parameters; NH3-N, blood urea nitrogen and milk urea nitrogen were unaffected by source of energy, but were dramatically increased by level of NSC. Rumen microorganism populations were not affected (p>0.05) by source of energy, but fungal zoospores were greater for cassava-based concentrate than corn-based concentrate. Milk production and milk composition were not affected significantly by diets containing either source or level of NSC, however concentrate than corn-based concentrate averaging (4.4 and 4.2, respectively). Likewise, income over feed, as estimated from 3.5% FCM, was higher on cassava-based concentrate than corn-based concentrate averaging (54.0 and 51.4 US$/mo, respectively). These results indicate that feeding diets containing either cassava-based diets and/or a higher of oncentrates up to 75% of DM with NPN (supplied by urea up to 4.5% of DM) can be used in dairy rations without altering rumen ecology or animal performance compared with corn-based concentrate.
