Chemical composition of copra, palm kernel, and cashew co-products from South-East Asia and almond hulls from Australia

  • Objective: Oilseeds and nut co-products can be used as alternative feed ingredients in animal diets because they may have a lower cost than traditional ingredients. A study was, therefore, conducted to determine the chemical composition of copra, palm kernel, and nut co-products from South-East Asia or Australia. The hypothesis that country of production influences nutritional composition was tested. Methods: Oilseed meals included 2 copra expellers, 3 copra meals, and 12 palm kernel expellers. One source of almond hulls and cashew nut meal were also used. Samples were obtained from suppliers located in South-East Asia or Australia. All samples were analyzed for dry matter, gross energy, nitrogen, amino acids (AA), acid-hydrolyzed ether extract (AEE), ash, minerals, insoluble dietary fiber, and soluble dietary fiber. Copra and nut co-products were also analyzed for total starch and sugars. Results: Copra expellers had greater (p<0.05) concentrations of dry matter and AEE compared with copra meal. However, copra meal had greater (p<0.05) concentrations of total dietary fiber (soluble and insoluble) and copper than copra expellers. Palm kernel expellers from Indonesia had greater (p<0.05) concentration of histidine and tyrosine compared with palm kernel expellers from Vietnam. Almond hulls was high in dietary fiber, but also contained free glucose and fructose, whereas cashew nut meal was high in AEE, but low in all free sugars. Conclusion: Copra expellers have greater concentration of AEE, but less concentration of total dietary fiber when compared with copra meal, and except for a few AA, no differences in nutrient composition of palm kernel expellers produced in Indonesia or Vietnam were detected. According to the chemical composition of nut co-products, cashew nut meal may be more suitable for non-ruminant diets than almond hulls.

율무와 염주의 식이섬유, 아미노산 및 지질 성분의 비교 (Comparative Studies on the Dietary Fiber, Amino Acids and Lipid Components of Yullmoo and Yeomjoo)

  • 현율무, 율무쌀, 율무겨 그리고 현염주를 시료로 하여 일반성분, 총 식이섬유 함량, acid detergent fiber 함량, lignin 함량, 수분 결합력, 아미노산 조성 및 중성지질 조성 등을 살펴보았다. 그 결과, 율무쌀의 총 식이섬유량은 2.70% 였고, 현율무는 3.86% 였으며 현염주는 4.33% 그리고 율무겨는 13.12%였다. Acid detergent fiber 양은 율무쌀이 1.81%로 가장 낮았고 현율무, 현염주는 각각 3.45%, 3.26%로 비슷한 값이었다. 율무겨에서 추출한 총 식이섬유와 acid detergent fiber 의 수분 결합력을 측정하여 비교한 바 총 식이섬유의 수분 결합력은 $2.63{\pm}0.02g\;H_2O/g\;TDF$로 매우 낮았고, acid detergent fiber의 수분 결합력은 $5.89{\pm}0.152g\;H_2O/g\;ADF$였다. 율무쌀, 현율무, 현염주 그리고 율무겨의 아미노산 조성은 glutamic acid 함량이 가장 높았고 다음이 leucine 이었으며, 율무쌀의 경우 leucine 의 chemical score는 189로 매우 높았으며 반면에 lysine의 chemical score는 22-32 사이로 매우 낮아 율무, 염주의 제한 아미노산이 되었다. 지질성분은 중성지질이 80.89%-96.55% 범위로 대부분을 차지했고, 당지질이 2.35%-7.48% 사이로 현염주의 당지질 함량이 가장 낮았다. 인지질은 함량이 매우 낮아서 1.10%-2.12% 범위였다. 각 지질 성분의 지방산 조성은 palmitic acid, oleic acid 그리고 linoleic acid 였으며 현염주를 제외하고는 조성상에 크게 차이가 나지 않았다.

EFFECTS OF DIETARY CELLULOSE LEVEL ON NUTRIENT UTILIZATION IN CHICKENS

  • The effects of 5%, 10%, 15% and 20% dietary cellulose levels on the nutrient utilization in chickens were investigated. Four experimental diets were alternatively given to 8 colostomized White Leghorn cockerels to make a $4{\times}4$ Latin-square design. The diets of 70 g.day were force-fed once a day, and water was given freely. The digestibilities of DM and energy increased linearly with the increase in dietary cellulose level. The digestibilities of ether extract and nitrogen-free extract were not so much influenced by the dietary cellulose level. The digestibility of acid detergent fiber was very low and not influenced by the dietary cellulose level. The digestibility of neutral detergent fiber was not different among the diets containing 5%-15% cellulose, but that of the 20% cellulose diet was diminished. This might be due to the reduction of hemicellulose digestibility. True digestibility and biological value of protein were also not influenced by the dietary cellulose level from 5% to 20%. In conclusion, no ill-effect was found even when the chicken was fed a diet containing 20% of cellulose.

경기 일부 지역 중년기 농촌주민의 고혈압에 따른 건강상태와 식생활관련 건강행동의 비교 (The Comparison of Health Status and Dietary Health Practice with or without Hypertension of Middle-aged Rural Adults in Kyunggi Province)

  • The purpose of this study was to compare health status and diery health practice of middle-aged rural adults with or without hypertension. Eighty three subjects (mean age : 55.6$\pm$11.9), were composed of 22 males and 61 females. Data collection includes serum and urine collections for health status and the questionnaire including dietary habit of salt, sugar, dietary fiber and fat intake for dietary health practice The results were as follows : The subjects were composed 23 persons of under 55 year-old group and 19 persons of over 65 year-old group. Of the 83 subjects, 28.9% were recognized hypertension and 33.7% were measured hypertension by systolic blood pressure. In the aspects of dietary health practice, hypertension group showed that smoking and weight control practice and were significantly low score, alcohol and dietary fiber intake were high score. Hypertension group showed higher frequency in diabetes mellitus and lower in gastrointestinal complain and liver disease. than normal blood pressure group. Serum, TG, bilirubin, BUN and cholesterol, were significantly higher in hypertension than normal blood pressure group. The mean values of serum albumin and urinary creatinine excretion in hypertension group werw significantly lower. The consciousness of health status was lower in hypertension group and also attributed to worse personal feeling health by modified CMI test.

식생활교육이 저나트륨식 적응에 미치는 영향 (Effects of Dietary Education on Low-sodium Diet Adaptation)

  • Korean style DASH (Dietary Approaches to Stop Hypertension) and a dietary education program for sodium reduction were developed. Reduced sodium diets (15 and 30% reductions) were developed from general diets for 3 consecutive weeks from Monday through Saturday. Subjects (19 total) were classified into two groups according to dietary education. Experimental period was from June 24 to July 23, 2012. Total sum of adaptation scores for low sodium diets significantly increased in the group that underwent dietary education compared to that without (p<0.05). After the experiment, both groups showed significantly increased values in terms of food group balance, sodium-related nutrition knowledge, attitude, and practice by paired t-test. Especially, group that underwent dietary education showed significantly higher values for attitudes by ANCOVA pre-test as a variation (p<0.01). For the results of the nutrient intake survey, group that underwent dietary education showed significantly increased values for dietary fiber (p<0.01), vitamin A (p<0.001), vitamin K (p<0.001), vitamin C (p<0.01), Folic acid (p<0.001), vitamin B12 (p<0.01), calcium (p<0.01), iron (p<0.05), and zinc (p<0.05) and significantly decreased values for sodium (p<0.05) and chloride (p<0.005). Subjects adapted to reduced sodium diets showed apparent improvements in sodium-related knowledge, attitude, practice and intake of nutrient, and these improvements were even higher in the group that underwent dietary education compared to that without. Thus, adaptation to low sodium diet combined with dietary education can improve dietary habits.

Nonheme철분의 흡수와 식이성분 (Nonheme Iron Absorption and Dietary Factors)

  • 철분 결핍은 아직도 전 세계적으로 공통적인 영양장애중 하나이다. 특히 개발도상국에서는 식이로부터의 철분 생이용도가 매우 낮은데 이는 nonheme 철분 흡수를 매개하는 식이성분의 양이 매우 적은 것이 주원인이다. 식이에 함유된 철분의 양, 개체의 철분 영양상태, 그리고 식이성분 등은 철분흡수에 영향을 주는 주 요소들이다. 식이로부터 부적당한 철분의 섭취는 칼로리가 낮은 식이, 제한된 음식물 섭취, 단조로운 식이로부터 오기 쉽다. Ascorbic acid, 육류, 생선, 닭고기 등은 식이에서 nonheme 철분의 흡수를 증가시키는 매우 중요한 요소이며, ascorbic acid와 육류는 여러 연구에서 철분 생이용도 증가 효과를 일정하게 보여 주었다. Phytate, polyphenols, dietary fiber는 nonheme 철분 흡수의 주요 저해 요소로서 인지되어 왔다. 또한 nonheme 철분의 생이용도는 함께 섭취한 식품의 성분에 의해 크게 영향을 받을 수 있으므로 어떤 조합에 의한 식품의 섭취는 철분 흡수를 상승 또는 저해시킬 수 있다.

영양균형식단 작성을 위한 식품교환표와 식사구성안 개발 (Development of a Food Exchange Table and Food Pattern for Nutritionally Balanced Menu Planning)

  • Objectives: The purpose of this study was to develop new meal planning tools for a nutritionally balanced diet. Methods: Based on the food exchange list for diabetes, we adjusted the food group classification system to reflect the suggested nutritional factors for chronic disease prevention and health promotion. We developed a nutritionally balanced dietary profile for adults and compared it with the dietary reference intakes for Koreans (KDRIs) and the food pattern recommended by the Korean Diabetes Association. Results: The newly developed menu planning tools are the LOHAS food exchange table and the LOHAS food pattern. Our recommended daily 1,800 kcal dietary composition for adults is as follows: The carbohydrate food group consists of 4 'whole grains', 3 'refined grains', 2 'sugars', 9 'vegetables', 3 'starchy vegetables', 2 'fruits' and 1 'high sugar fruits'. The protein food group includes 3 'plant protein foods', 3 'animal protein foods (low-fat)', and 1 'animal protein foods (high-fat)'. The fat food group consists of 2 'oils and nuts' and 1 'solid fats'. The total number of calories is estimated at 1,840 kcal and the energy ratio is 62% carbohydrate, 18% protein, 20% fat, 6.8% saturated fat and 13.2% sugars. Using the LOHAS food exchange table, it is possible to estimate values of saturated fat, unsaturated fat, dietary fiber, and sugars besides carbohydrate, protein and fat. It is also possible to compose a dietary design considering carbohydrate, sugars, saturated fat and dietary fiber. The LOHAS food pattern provides benefits for the management of both institutional food services and individual meals, as it can help reduce the levels of saturated fat and sugar intake and help develop healthy meals rich in unsaturated fats and dietary fiber. Conclusions: The LOHAS food exchange table and LOHAS food pattern are expected to be practical tools for designing and evaluating nutritionally balanced diets.

충남지역 중학생의 채소 섭취실태와 식습관에 관한 연구 (A Study on Vegetable Intakes and Dietary Habits of Middle School Students in Chungnam)

  • The purpose of this study was to provide basic data for nutritional education for juveniles' desirable vegetable intake by analyzing their vegetable intake, dietary habit and nutrient intakes according to gender of middle school students in Chungnam. The average age of the subjects was 15.0, height was 162.5 cm, weight was 53.5 kg and their average BMI was $20.1kg/m^2$. The frequency of eating supper in girls was lower than that in boys. Many respondents answered that a meal-time was 10~20 minutes. Without gender difference, more than 90% respondents thought that vegetables were good for health. As for the preference of vegetable, subjects responded, "I am in the middle", "I like them", "I dislike them", "I like them very much", and "I dislike them very much" in order, without gender difference. The frequent eaten leaf vegetable was Chinese cabbage, the frequent eaten fruit vegetable was cucumber, and the frequent eaten root vegetable was radish. The favorite leaf vegetable was lettuce, the favorite fruit vegetable was corn, and the favorite root vegetable was sweet potato. The preference degrees of taro and ginger were very low. The reasons why they liked a vegetable were that it was delicious and they ate it at home often. In addition, the reason why they disliked vegetables was that they are untasty in flavor or texture and it showed that many students had a prejudice that vegetables were untasty. The intakes of plant protein, dietary fiber, ash and INQs of dietary fiber, calcium, vitamin C, folate, vitamin E in the group with high preference of vegetables were significantly higher than those of low preference group. The study results indicate that intake frequency and preference of root vegetables in juveniles are low and the major reasons of these results are taste and eating experience of vegetables. In addition, the intake amounts of dietary fiber and folate are poor in the subjects with low preference of vegetables. Therefore, families and schools should make efforts that juveniles can recognize the importance of vegetable intake and select various vegetables properly through the development of cooking methods and systematic nutrition education.

열처리 덱스트린을 이용한 난소화성 덱스트린의 제조 (Preparation of Indigestible Dextrin from Pyrodextrin)

  • 열처리 덱스트린을 내열성 ${\alpha}-amylase$로 가수분해함으로써 난소화성 텍스트린 I을 제조하였다. 황색 덱스트린으로부터 제조한 난소화성 덱스트린 I의 난소화성 획분과 식이섬유 함량의 평균치는 각각 50%와 25%였다. 또한, 열처리 덱스트린의 효소반응액으로부터 에탄올 처리에 의해 glucose를 포함하는 저분자의 당류를 제거함으로써 난소화성 덱스트린 II를 제조하였다. 초기 효소반응액의 80% 이상의 glucose와 maltose가 제거되어 난소화성 획분과 식이섬유 함량이 증가하였다. ${\alpha}-amylase$ 및 amyloglucosidase에 의한 황색 덱스트린의 가수분해액의 에탄올 침전으로 제조된 난소화성 덱스트린이 다른 효소 조합보다 높은 함량의 난소화성 획분 및 식이섬유를 나타내었으며, 각각 평균 83.6%와 62.8%였다. 따라서, 전분 가수분해 효소에 저항성을 갖는 난소화성 덱스트린은 열처리 덱스트린으로부터 용이하게 제조될 수 있으며, 수용성 식이섬유로서의 생리효과를 발휘할 수 있을 것으로 추정되었다.
