남해안 아귀(Lophiomus setigerus) 아가미에 기생하는 Acanthochondria spirigera에 관하여 (A report on Acanthochondria spirigera from the gills of Lophiomus setigerus in the southern coast of Korea)

  • 남해안 아귀, Lophiomus setigerus에서 기생성 요각류, Acanthochondria spirigera(Chondracanthidae, Poecilostomatoida)이 채집되었다. 이 종은 한국 미기록종이다. A. spirigera는 나선형으로 굽어지는 알주머니를 가짐으로서 Acanthochondria속 다른 종과 쉽게 구별된다. 또한 이 기생충은 5월을 제외하고 1~4월에 아귀 아가미에서 채집되었다. 감염률과 상대 감염밀도는 1월에서 5월로 진행됨에 따라 점차 감소하였다. Acanthochondria spirigera는 아귀 구강에 제한적으로 기생하며, 숙주의 아가미에서 분비되는 점액질 등을 섭취하면서 서식한다. 그리고 수컷은 암컷의 복절에 작은 혹처럼 부착되어 있다.

Protein Quality Evaluation of Cooked Monkfish (Lophiomus setigerus) Meats

  • To investigate the effect of cooking methods on protein quality of domestic fresh monkfish meat (FMM) and imported frozen monkfish meat (IMM), in vitro protein qualities were determined by amino acid anlysis, trypsin indigestible substrate (TIS) formation, and protein digestibility using the four-enzyme method. Crude protein contents of the boiled FMM and IMM were $90\%$ of the dry base, which were higher than fresh FMM $(82\%)$ and IMM $(84\%)$. Profiles of total amino acid in FMM and IMM were not changed by cooking methods. Total free amino acid contents decreased to $ 29.0-33.6\%$ for boiled $(l00^{\circ}C,\;10 min)\;and\;24\%$ for steamed $(100^{\circ}C,\;10\;min)$ samples. In vitro protein digestibilities of boiled and steamed FMM incnased $86.6-86.8\%$, compared to raw IMM $(82.9\%)$, boiled and steamed IMM $85.1-85.5\%$ and raw IMM $(83.6\%)$. TIS of FMM (23.6 mg/g solid) and IMM (15.9 mg/g solid) showed no significant (p<0.05) difference in cooking methods. The C-PERs (computed protein efficiency ratio) of boiled FMM (2.63) and IMM (2.50) were significantly higher (<0.05) than raw (1.97) and steamed FMM(1.97) and IMM(1.94). These results demonstrate that boiling of FMM and IMM improves protein digestibility and C-PER when compared to steamed FMM and IMM. Therefore, boiling could be an excellent means to maintain high-protein quality of monkfish meat. Also, the cooking method may be applicable to the preparation of monkfish stew without any loss of free amino acids.

수산부산물을 재활용한 제조방법이 기능성 비료와 사료에 미치는 영향 (Effect of Manufacturing Technology on Functional Fertilizer and Feed through Recycling of Fishery Resources)

  • In this study, to provide basic information for design of a large-scale recycling system for fishery by-products, the food nutrient components, fertilizer components, and microbial composition of fertilizers and feed which were made of fishery by-products were analyzed before and after fermentation. The results of the analysis of the edible portion of fishery by-products indicated that calories per 100 g of crustaceans were the highest followed by those of fish and brown algae in order of precedence with values as follows; Korean Krill 94 Kcal, Portunus trituberculatus 65 Kcal, Lophiomus setigerus 58 Kcal, and Undaria pinnatifida 16 Kcal. As for changes in amino acids per 100 g of fishery by-products between before and after fermentation, calories per 100 g of P. trituberculatus decreased by 74.7% from 15.7 g to 4.0 g, that of L. setigerus decreased by 61.1% from 11.9 g to 4.6 g, that of Korean Krill decreased by 53.5% from 11.6 g to 5.4 g, and that of U. pinnatifida decreased by 49.4% from 1.7 g to 0.9 g. Among amino acids, those contained in fishery by-product fertilizers (liquid fertilizer) in large amounts were shown to be Glutaminic acid, Aspartic acid, Glycine, Lysin, and Leucine. The lipid content of Korean Krill decreased by 11.9% from 3.2 g to 2.8 g, that of L. setigerus increased by 2.0 times from 1.1 g to 2.2 g, that of P. trituberculatus increased by 4.5 times from 0.4 g to 1.7 g, and that of U. pinnatifida increased by 9.4 times from 0.2 g to 1.9 g. The ash (mineral) content of P. trituberculatus decreased by 82.5% from 26.2 g to 4.6 g, that of U. pinnatifida increased by 27.6% from 3.3 g to 4.2 g, that of Korean Krill increased by 21.9% from 3.1 g to 3.8 g, and that of L. setigerus increased by 88.7% from 1.2 g to 2.2 g. The microbial composition of liquid fertilizer using recycled fishery by-products was shown to be Bacteria, Actinomycetes, Fungi, Yeast, and Lactobacillus sp.

Anisakis simplex Larvae: Infection Status in Marine Fish and Cephalopods Purchased from the Cooperative Fish Market in Busan, Korea

  • The infection status of marine fish and cephalopods with Anisakis simplex third stage larva (L3) was studied over a period of 1 year. A total of 2,537 specimens, which consisted of 40 species of fish and 3 species of cephalopods, were purchased from the Cooperative Fish Market in Busan, Korea, from August 2006 to July 2007. They were examined for A. simplex L3 from the whole body cavity, viscera, and muscles. A. simplex L3 were confirmed by light microscopy. The overall infection rate reached 34.3%, and average 17.1 larvae were parasitized per infected fish. Fish that recorded the highest infection rate was Lophiomus setigerus (100%), followed by Liparis tessellates (90%), Pleurogrammus azonus (90%), and Scomber japonicus (88.7%). The intensity of infection was the highest in Gadus macrocephalus (117.7 larvae per fish), followed by S. japonicus (103.9 larvae) and L. setigerus (54.2 larvae). Although abundance of A. simplex L3 was not seasonal in most of the fish species, 10 of the 16 selected species showed the highest abundance in February and April. A positive correlation between the intensity of L3 infection and the fish length was obvious in S. japonicus and G. macrocephalus. It was likely that A. simplex L3 are more frequently infected during the spring season in some species of fish. Our study revealed that eating raw or undercooked fish or cephalopods could still be a source of human infection with A. simplex L3 in Korea.

완도 해역의 새우조망어업에서 발생한 부수어획물의 계절적 변동 (Seasonal Bycatch Variations in the Shrimp Beam Trawl Fishery of Coastal Wan-do, Korea)

  • We examined shrimp and bycatch species composition in the shrimp beam trawl fishery off Wan-do, Korea(in the major or fishing ground)from December 2004 to November 2005. We observed a total of 103, 072 individuals in 96 taxa. By densities of individuals, 96.97% were shrimps, 1.20% decapods, 1.10% fish, 0.30% cephalopods and 0.43% other species. By catch weight, 57.29% were shrimps, 26.33% fish, 6.82% decapods, 4.64% cephalopods and 4.92% other species. In spring, the dominant bycatch species by biomass were Okamejei kenojei, Lophiomus setigerus, and Charybdis bimaculata. In summer, the dominant species were Charybdis bimaculata, Muraenesox cinereus, and Paralichlhys olivaceus. In autumn, dominants were Okamejei kenojei, Conger myriasler, and Sefipinna tenuifilis, and in winter they were Okamjei kenojei, Chaeturichthys stigmatias, and Sillago japonica. Bycatch species composition and individual species abundances differed significantly among seasons, probably indicating that variations were related to the life history characteristics of bycatch species. The diversity index was highest in October (2.797) and lowest in July (1.012). The July dominance index (0.569) was much higher than in other months; evenness was highest in September (0.856) and lowest in July (0.374). During the study period, the bycatch-to-shrimp ratio of this fishery varied from 0.063 in February 2005 to 11.031 in May 2005, with a mean of 3.363 These temporal variations may be linked 10 variations in reproductive behaviors and migration patterns of the marine animals sampled.

Relationship between the Distribution of Water Masses and that of Demersal Fishes in the East China Sea in Spring

  • The relationship between the distribution of demersal fishes and that of the water masses was examined by using the catches data and hydrographic data in the Yellow Sea and the East China Sea on May 13-19, 1996 and May 10-17, 1997. During the study period, the dominant fish species were Cleisthenes pinetorum herzinsteini, Lophiomus setigerus and Pseudosciaena polyactis. These three low temperature water species accounted for $21-24\%$ of the total catches. The percentage of the low temperature water species was high in the Yellow Sea and the coastal area on the continental shelf of the East China Sea but was low in the vincinity of Kyushu during the study period. In the East China Sea, the isotherm of $15^{\circ}C$ at 50m, mid layer depth, was located more southeast in 1996 than in 1997. The bottom water temperature was about it lower in 1996 than in 1997. The direction of the detided current on the continental shelf of the East China Sea was southward in 1996 and northward in 1997. Yellow Sea Bottom Cold Water (YSBCW) strongly expanded to south in 1996 when the northward current was weak. But, Tsushima Warm Current (TSWC) strongly intruded into the continental shelf of the East China Sea in 1997. As YSBCW expanded strongly to south in 1996, the percentage of the low temperature water species relative to the total catches was high. But, TSWC strongly intruded and the percentage of low temperature water fishes was low in 1997.

서식지에 따른 다소비 어류의 납과 카드뮴의 오염 및 위해 평가 (Contamination and Risk Assessment of Lead and Cadmium in Commonly Consumed Fishes as Affected by Habitat)

  • This study determined the concentrations of lead and cadmium in 18 species of commonly consumed fish and assessed the risk based on provisional tolerable weekly (monthly) intakes [PTW(M)I] % as affected by behavioral characteristics, such as migration and settlement. In the 18 species, the mean concentrations of lead and cadmium were higher in the 11 species of migratory fish (llargehead hairtail Trichiurus lepturus, chub mackerel Scomber japonicus, Pacific saury Cololabis saira, skipjack tuna Katsuwonus pelamis, Pacific cod Gadus macrocephalus, anchovy Engraulis japonicus, Alaska pollack Theragra chalcogramm, brown croaker Miichthys miiuy, Japanese Spanish mackerel Scomberomorus niphonius, yellow croaker Larimichthys polyactis, and Pacific herring Clupea pallasii) than in the seven demersal species (red stingray Dasyatis akajei, brown sole Pleuronectes herzensteini, bastard halibut Paralichthys olivaceus, conger eel Conger myriaster, blackmouth angler Lophiomus setigerus, rockfish Sebastes schlegelii, and filefish Stephanolepis cirrhifer). Based on the mean concentrations, the PTWI % of lead and cadmium in commonly consumed migratory fish were 1.900 and 2.986%, respectively, which were higher than the values for lead and cadmium in the commonly consumed demersal fishes (0.257 and 0.318%, respectively). The estimation of weekly (monthly) intakes and target hazard quotients for the toxic elements lead and cadmium revealed that the commonly consumed migratory and demersal fish do not pose any health risks for consumers.
