수입식품의 품질조사연구원(1) -중국산을 중심으로- (A Study on the Quality Evaluation of Imported Processed Foods(1)- With Special Reference to Chinese Products-)

  • The purpose of present paper is to compare and analyze the quality of imported Chinese products with the Korean local products in terms of proximate composition, character of external appearance , ingredient composition of dried bracken , dried radish cubers, meju , dried pollack, dried mussel , and dried brown seaweed(Undaria puinnatidifida) which were imported between Oct., and Dec. 1992 and distributed in the market. Moisture recovery of dried products resulted in changed shape and incomplete moisture recovery due to an excessive drying in consideration of hygroscopic property in the course of distribution. The amounts of water soluble brown pigment were two times greater in Korean dried pollack and bracken than those of Chinese products. The content of volatile basic nitrogen (VBN) were twice in Chinese dried pollack, and this may be due to foregin odor from a long transport time and distribution process. The contents of aflatoxin in Korean products were not detectable and these of Chinese products were 5 $\mu\textrm{g}$(%) in dried pollack, bracken and radish cuber. the remaining agricultural chemicals were not detectable in all products. Because of poor technique and facilities, the external appearance of Chinese products especially dried mussels and dried pollack were not uniformed in size and color. Discoloration and foregin substance such as hair, dust were checked , Korean products were mostly packed in small size in PP or bag, and Chinese products were packed in bulk size and distributed as a bulk.

  • Century-old nutrition and health concepts can be revived and applied in the modern age in the forms of newly developed menus, recipes, and lifestyle education. Current medical nutrition therapy concepts were first described in the Chosun Dynasty (1392-1897) in Korea based on the philosophy that food and medicine originate from the same source, which is known as 'food as medicine'. Recognizing the importance of culture, tradition, local diet, and lifestyle on health and medical nutrition therapy, we tried to rediscover traditional Korean approaches towards food consumption and nutrition through systematic review of the literature and developed contemporary menus accordingly. The medical nutrition therapy prescriptions described in 'Shikryochanyo' (1460) by the Chosun Dynasty's royal physician Soonyi Jeao cover 45 different diseases. In this project, we developed contemporary menus for those disease models that are most prevalent in modern society. Menus developed with foods that are readily available today were evaluated for their nutritional content and adequacy using a computer-aided nutritional analysis program (CAN pro 3.0, developed by the Korean Nutrition Society for comparison with RDA for Koreans). Therefore, century-old nutrition and health concepts can be revived and applied in modern society as newly developed menus recipes and lifestyle education.

  • Arginine is one of the basic aminoacid found to be associated with histones and also one of the essential aminoacids now. Arginine is provided by diet, and also found to be synthesised in the body through intestinal-renal axis. Justification---BMI---Associated Risks-How to gain body weight---Healthy. Foods to Gain Weight Fast---High-Protein Vegetables and Fruits(with Image)-Recipes---Physical exercises-List of fruits and vegetables grown in Bangladesh with local names, English names and Botanical names-taxonomic family names. Arginine as drug was first approved by FDA and has recognised as a excellent dietary supplement for curing diseases like preeclampsia during gestation, diabetes and insulin resistance in obese patients. Preeclampsia is characterised by high blood pressure and proteinuria in gestational period of after 20 weeks. Severe preeclampsia is characterised by headaches, blurred vision, and inability to have high photovision, nausea and vomiting. L-Arginine along with Vit C and E are given as medical food to the patients and decrease in condition symptoms is the project now under phase II clinical trial. However the role of arginine in ameolirating preeclampsia symptoms is uncertain except with that of hypertension. Arginine is used to treat pain in sickle cell anaemia, lung damage, reperfusion injury, Trauma and shock but should be excluded during sepsis.

학교급식의 위생관리 현황과 개선방안 (A Study on Improvement of Food Safety Program in School Feeding Setting)

  • Korea has experiencing outbreaks of food borne illnesses since school feeding programs had been introduced to students. In order to prevent food borne diseases, preventive measures applicable to Korean school system were reviewed. The conclusions are summarized as follows; 1. Raw materials should be purchased through reliable sources in order to ensure the quality of food stuffs in the aspect of food safety and hygiene. 2. The potential causes of food borne illnesses should be carefully identified and control system should be established in order to monitor critical points. 3. Temperature of refrigeration should be monitored and controled continuously in order to safeguard the quality of foods. 4. National and local governments have to provide adequate equipment and utensils to the food establishments of school systems, and public health authorities have to make evaluation of the facilities periodically. The food handlers should be trained in safe food handling and the ways how to prevent food borne illnesses.

현지 식문화에 기반한 유럽권 김치 문화 확산 방안 연구 - 국내 체류 중인 유럽인을 대상으로 - (A Study of Method for Spreading Kimchi Culture in European Countries Based on Local Food Culture - Survey of European Residents in Korea -)

  • This study aims to establish a strategy for selling kimchi to satisfy the needs and wants of European consumers through survey, FGI, and IDI. All survey participants were Europeans and were selected on the basis of their kimchi awareness. For the quantitative survey, 246 participants 15 years or older were selected; for FGI, 33 participants aged between 20 and 49 were selected; and for IDI, eight chefs were selected. The survey included four steps of 'Awareness-First try-Needs-Future consumption'. The participants got to know kimchi through the Internet; for example, by visiting Korea and Hallyu, and suggested positive comments, including 'fancy' and 'exotic.' While satisfaction with kimchi sharply decreased due to taste and appearance in the first try of kimchi, it is important to provide the best first-try experience. It also showed that important needs for kimchi are 'hot sensation', 'crunchiness' and 'presentation'. They gave a negative answer to combination with traditional cuisines of their own country, but provided positive comments for benchmarking the use of traditional pickled foods. This study suggests that it may be necessary to implement a two-track strategy by the traditional kimchi as a 'strategic product' and localized kimchi as a 'key product'.

Study on Measures to Improve Fresh Food Sales at Military Commissaries (PX)

  • This study aims to confirm the appropriateness of fruit and vegetable sales at military commissaries, with the purpose of enhancing the physical health and morale of military personnel. In order to achieve this objective, we examined the actual conditions of fruit and vegetable sales at military commissaries and analyzed the soldiers' awareness of fruit and vegetable sales through questionnaire surveys. The conclusions of this study are as follows: Firstly, fresh fruits and vegetables were not sold at military commissaries. Secondly, soldiers acknowledged the need for the consumption of fruits and vegetables and strongly expressed the desire for these fresh food products to be sold at military commissaries. Although the ROK Navy privatized military commissaries for the purposes of increasing management efficiency of national defense and strengthening combat power by transferring PX salesclerk soldiers to join combat personnel, this effort produced a negative effect of price increase. The following are proposals for improving this condition: fruit and vegetable products should be introduced to military commissaries through military welfare funds; fresh food markets should be established by closely cooperating with the local community's agricultural producers; processed fruit and vegetable product (dry, frozen, airtight packaged, etc.) sales should be increased; and the privatization of the navy commissaries should be abolished.

국내와 국외브랜드 커피전문점의 서비스품질 비교 (Comparison of Service Quality between Local and Global Coffee Brand Shops)

  • 본 연구는 대전지역에 위치한 국내 및 국외브랜드 커피전문점을 이용하는 고객을 대상으로 커피전문점의 서비스품질을 평가하고, 고객의 개인적 특성 및 브랜드에 따라 서비스품질에 차이가 있는지를 검증하였다. 연구결과를 요약하면 첫째, 브랜드 커피전문점 고객 330명 중 20대가 71.5%로 가장 많았으며, 일주일에 1~2회 이상 커피전문점을 이용하는 고객은 46.7%이었다. 국내브랜드 커피전문점 이용고객은 여성(64.5%)이 남성(35.5%)에 비해 약 1.8배 정도 많았으며, 한 달 수입이 많을수록 국내브랜드에 비해 국외브랜드 커피전문점의 고객비율이 좀 더 높게 나타나 통계적으로 유의한 차이를 보였다(p=0.010). 둘째, 전반적인 서비스품질은 7점 척도에서 4.66으로 보통보다 약간 높은 수준이었다. 요인분석 결과, 4개의 요인이 추출되었고, 각 요인별 평균점수는 '대표성'(5.01), '커피의 관능 및 커피 외 음료의 관능'(4.77), '종사원의 태도'(4.74), '물리적 환경'(4.14) 순이었다. 셋째, 서비스품질 요인 중 '종사원 태도'와 '커피의 관능품질 및 커피 외 음료의 특성' 품질에 대해 수입이 높은 고객일수록 유의적으로 낮게 평가하였다(p=0.019, p=0.032). '물리적 환경' 품질에 대해서는 브랜드 커피전문점을 자주 이용하는 고객일수록 유의적으로 높게 평가하였다(p=0.034). 넷째, 국내와 국외브랜드 커피전문점간의 서비스품질을 비교한 결과, '대표성' 품질은 국외브랜드 커피전문점(5.17)이 국내브랜드 커피전문점(4.78)에 비해 유의적으로 높았다(p=0.003). '종사원의 태도'는 국내브랜드 커피전문점(4.88)이 국외브랜드 커피전문점(4.68)에 비해 유의적으로 높았다(p=0.050). '물리적 환경' 품질은 국내브랜드 커피전문점이, '커피의 관능품질 및 커피 외 음료의 특성'은 국외브랜드 커피전문이 각각 유의적은 아니나 다소 높게 나타났다. 이상의 결과를 통하여 국내브랜드 커피전문점에서는 국외브랜드에 비해 낮은 '대표성' 품질을 제고하기 위해 주 고객층인 20대 여성을 중심으로 브랜드 인지도 증진을 위한 마케팅 활동과 브랜드를 대표할 수 있는 독창적인 음료 및 서브메뉴의 지속적인 개발과 홍보 전략을 수립하는 것이 급선무임을 확인할 수 있었다. 반면 국외브랜드 커피전문점에서는 고객과 상호작용하게 되는 종사원들의 역할 중요성을 인식하고 '종사원 태도' 품질 개선을 위해 내부마케팅 활동에 주력할 필요가 있겠다. 국내 및 국외브랜드 간 경쟁이 심화되고 있는 시점에서 커피전문점 산업의 특성에 따른 서비스품질 속성을 반영하여 개발된 척도인 CoffeeSERV를 이용하여 서비스품질을 측정한 후 비교 분석을 통하여 국내 및 국외브랜드별로 개선이 필요한 서비스품질 요인들을 좀 더 정확하게 규명하고, 그에 따른 마케팅 전략 등 시사점을 제시한 본 연구는 서비스품질 향상을 위한 전략수립 시 기초자료로 활용될 수 있으리라 본다.

국내 콩(Glycine max L.)자원의 lutein 함량 (Lutein Contents of Soybeans (Glycine max L.) Cultivated in Korea)

  • 본 연구에서는 국내 콩 자원의 lutein 함량 변이를 분석함으로써 우수 품종을 선발하고 신품종 육성연구와 기능성 식품 개발을 위한 우수 품종을 선발하고자 하였다. 본 연구에서는 장려품종 23종과 육성품종 140종(장콩품종 56종, 나물콩품종 44종, 지역재래품종 40종)을 lutein 분석에 사용하였다. 검화방법을 이용하여 lutein을 추출하였고 역상 HPLC를 이용하여 분석하였다. 연구 결과 장려품 23종의 평균 lutein 함량은 $240.27{\pm}90.74{\mu}g/100g$으로 IT No. 24634가 $402.48{\mu}g/100g$으로 가장 높은 함량을 나타내었다. 장콩은 $777.73{\mu}g/100g$으로 IT No. 153398이, 나물콩은 $588.88{\mu}g/100g$으로 IT No. 25490이, 지역재래종은 $861.07{\mu}g/100g$으로 IT No. 22564가 높은 lutein 함량을 나타내었다. 장려품종과 육성품종간의 그 평균치는 통계학적으로 유의적인 차이를 나타내지 않았으나 장려품종 보다는 육성품종에서 상대적으로 높은 lutein 함량을 나타내는 품종이 많은 것으로 나타났다. 본 연구결과는 국내 콩 유전자원의 품종개량 및 고 부가가치 기능성 식품의 개발에 대한 기초 자료가 될 것으로 생각된다.

환동해지역 거점도시에서의 시장성장과 경쟁 및 유통구조: 후쿠오카, 울산 및 옌지의 시장을 중심으로 (Market Growth, Competition, and Distribution Structure in Major Cities of the East Sea Rim)

  • Purpose - This is a comparative study of the market development and characteristics of Ulsan in South Korea, Fukuoka in Japan, and Yanji in China, which are major East Sea Rim cities with adjacent areas of similar natural characteristics of the sea and the country. Particularly, it considers these aspects while focusing on the evolution of networks that appear in the distribution system and at the same time examining the institutions of market activation and regulations that are handled by the central and the local government and the changing logistics due to the development of transportation and the concern of food safety, using a meso-analysis approach. Research design, data, and methodology - The study used a historical and comparative approach with a focus on case studies. It made use of various materials such as local newspaper articles, reports, literature, interviews with experts, discussions with local merchants, discussions with customers, and so forth. Results - In the case of Fukuoka, from the 1960s, due to the entry of supermarkets, supermarkets expanded and they have now come to a dominant market position in the current market. They offer a convenient and comfortable environment while providing a large mall offering a variety of educational and cultural activities for customers to meet the customers' needs, such as the preferences of Korean tourists, who appear to prefer Japanese foods. The Fukuoka City Central Wholesale Market has been exporting fruits and vegetables as well as seafood products to Korea, China, and so forth. In the case of Ulsan, as in the early 2000s, due to the expansion of supermarkets, the traditional markets have been shrinking and further, the modernization of traditional markets was conducted under the auspices of the Small Business Administration. In addition to the large discount malls, the expansion of SSM is expected to further drive the small trader bay. Shopping malls, department stores, and traditional markets contend with each other in Yanji, China, but a large number of citizens appear to prefer traditional markets and imported milk in the supermarket after the melamine scandal in China. Recently, the WanYuan (萬源) wholesale market has been partially completed and made an attempt to become a logistics hub in Northeast Asia. Conclusions - For the development of Korea's retail industry, it is important to offer the government with proposals regarding desired regulation. On the other hand, in order to enable the business of traditional markets, it requires an association for cultural tourism. At present, it would be better to provide a venture fund for the youth rather than infrastructure support. This study emphasizes the importance of institutions and policy to develop networks in the East Sea Rim. Future studies should conduct a survey on customers, managers, and merchants more carefully and systematically to understand the market situation while considering the size of the city and its evolution of markets, as well as policies and institutions.

일부 한국 가공식품의 벤조산과 소르빈산의 함량 조사 (Quantitatation of Benzoic and Sorbic Acids in Some Processed Foods of Korea)

  • 본 연구에서는 소비자의 안전과 관련하여 일부 한국식품에서의 벤조산과 소르빈산의 함량과 안전소비량을 평가하고자 하였다. 몇 개 브랜드의 과일 쥬스, 요거트, 치즈, 말린 과일류, 잼, 마가린을 대전의 시장에서 구입하여 HPLC로 분석하였다. $C_{18}$ column을 사용하여 chromatogmphic separation을 얻었으며 35:65 비율의 methanol acetate buffer(PH 4.4)로 벤조산과 소르빈산을 초기 mobile phase에서 회수하여 254 nm에서 분석하였다. 그 결과 과일 쥬스, 요거트, 치즈, 말린 과일류, 잼, 마가린 샘플들의 벤조산 농도는 각기 평균 $40.26{\pm}0.02$, $2.07{\pm}0.06$, $0.02{\pm}0.09$, $0.36{\pm}08$, $265.3{\pm}0.02$$27.34{\pm}0.08\;mg/kg$ 였으며 소르빈산의 농도는 각기 평균 $0.92{\pm}0.06$, $1.06{\pm}0.07$, $7.30{\pm}0.01$, $14.14{\pm}0.08$, $25.65{\pm}0.06$$4.8{\pm}0.07\;mg/kg$ 였다. 따라서 조사한 식품들의 벤조산과 소르빈산의 사용량은 KFDA 허용치 이하이었으며 벤조산과 소르빈산의 평균 소비량에 대한 EDI 또한 ADI 이하의 안전한 수준이었다.
