Effect of Aging and Freezing Conditions on Meat Quality and Storage Stability of 1++ Grade Hanwoo Steer Beef: Implications for Shelf Life

  • This study was conducted to establish the shelf life of $1^{++}$ grade Hanwoo beef by evaluating the changes in meat quality and storage stability under distribution conditions similar to those during export to Hong Kong and China. Four muscles of the loin, striploin, tenderloin, and top round muscles were obtained from 10 animals of $1^{++}$ grade Hanwoo steers. The distribution conditions were 0, 7, or 14 d of aging at $2^{\circ}C$ and continuous storage at $-18^{\circ}C$ for 0, 3, 6, or 9 mon. The lightness (CIE $L^*$) values decreased as the duration of freezer storage increased (p<0.05). The water-holding capacity of 4 muscles increased as the aging time increased when they were frozen for 3 mon (p<0.05). The cooking loss values of the four muscles were significantly increased as the duration of freezer storage increased (p<0.05). The Warner-Bratzler shear force values were significantly decreased in the loin, striploin, and top round muscles as the aging time increased (p<0.05). The changes in volatile basic nitrogen (16.67-18.49 mg%) and thiobarbituric reactive substance values (0.75-0.82 mg MA/kg meat) were significantly increased when the meat was frozen for 9 mon after 14 d of aging. On the basis of these observations, the shelf life of $1^{++}$ grade Hanwoo beef during distribution should be limited to less than 9 mon of freezer storage at $-18^{\circ}C$ after 14 d of aging at $2^{\circ}C$.

Determination of Flood-limited Water Levels of Agricultural Reservoirs Considering Irrigation and Flood Control (농업용 저수지의 이·치수 기능을 고려한 홍수기 제한수위 설정 기법 개발)

  • In this study, we developed a method to determine the flood-limited water levels of agricultural reservoirs, considering both their irrigation and flood control functions. Irrigation safety and flood safety indices were defined to be applied to various reservoirs, allowing for a comprehensive assessment of the irrigation and flood control properties. Seasonal flood-limited water level scenarios were established to represent the temporal characteristics of rainfall and agricultural water supply and the safety indices were analyzed according to these scenarios. The optimal scenarios were derived using a schematic solution based on Pareto front analysis. The method was applied to Obong, Yedang, and Myogok reservoirs, and the results showed that the characteristics of each reservoir were well represented in the safety indices. The irrigation safety of Obong reservoir was found to be significantly influenced by the late-stage flood-limited water level, while those of Yedang and Myogok reservoir were primarily affected by the early and mid-stage flood-limited water levels. The values of irrigation safety and flood safety indices for each scenario were plotted as points on the coordinate plane, and the optimal flood-limited water levels were selected from the Pareto front. The storage ratio of the optimal flood-limited water levels for the early, mid, and late stages were 65-70%, 70%, and 75% for Obong reservoir, 75%, 70-75%, and 65-70% for Yedang reservoir, and 75-80%, 70%, and 50% for Myogok reservoir. We expect that the method developed in this study will facilitate efficient reservoir operations.

Study of the Calendar Aging of Lithium-Ion Batteries Using SEI Growth Models (SEI 성장 모델을 이용한 리튬 이온 배터리의 캘린더 노화 연구)

  • We predicted the calendar aging and long-term lifetime of lithium-ion batteries using an electrochemical-based SEI growth model. Numerical simulation was carried out employing the four different long-term SEI growth models (i.e., solvent diffusion limited model, electron migration limited model, Li-interstitial diffusion limited model, reaction limited model), and we calculated the capacity fade and loss of lithium inventory during calendar aging. The result showed that the electron migration limited model and Li-interstitial diffusion limited model showed lower capacity fade, while the solvent diffusion limited model and reaction limited model reached 80% of capacity fade within 10 years. During calendar aging, the lower storage temperature showed less capacity fade due to the hindrance of SEI growth rate. During cycling, the higher C-rate showed a shorter life cycle; however, the differences were not significant.

Effects of chlorine dioxide gas fumigation on the storage quality of astringent persimmon (Diospyros kaki T.) Cheongdobansi

  • Because of their short harvest season, large quantities of persimmons must often be processed within a limited time. Therefore, new methods to extend their storage life are required. This study examined the effects of chlorine dioxide (ClO2) gas fumigation for various treatment periods on the storage quality of astringent persimmons Cheongdobansi under low-temperature conditions. The conditions consisted of continuous treatment with ClO2, treatment for 2 weeks with ClO2, and no treatment, all of which are stored at low temperatures. Control samples (storage 0 days) without any treatment were prepared and all experiments were conducted for 10 weeks at two-week intervals. The ClO2 gas treatment maintained the moisture content, color value, hardness, soluble tannin content, and sensory characteristics. However, ClO2 gas treatment did not affect the soluble solids, pH, and total sugar content. In particular, continuous treatment with ClO2 maintained the storage quality after 6-8 weeks of storage, particularly the hardness and weakness (sensory evaluation). The results suggest the potential of continuous treatment with ClO2 as a highly effective method for maintaining the freshness of Cheongdobansi.

Assessing Irrigation Water Supply from Agricultural Reservoir Using Automatic Water Level Data of Irrigation Canal (관개용수로의 자동수위측정 자료를 활용한 농업용 저수지 공급량 산정 및 분석)

  • KRC (Korea Rural Community Corporation) is in charge of about 3,400 agricultural reservoirs out of 17,240 agricultural reservoirs, and automatic water level gauges in reservoirs and canals were installed to collect reservoir and canal water level data from 2010. In this study, 10-minute water level data of 173 reservoir irrigation canals from 2016 to 2018 are collected, and discharge during irrigation season was calculated using rating curves. For estimation of water supply, irrigation water requirement was calculated with HOMWRS (Hydrological Operation Model for Water Resources System), and the summation of reservoir water storage decrease was calculated with daily reservoir storage data from RAWRIS (Rural Agricultural Water Resource Information System). From the results, the total yearly amount of irrigation water supply showed less than 10% difference than the irrigation water requirement. The regional analysis revealed that reservoirs in Jeollanam-do and Chungcheongnam-do supply greater irrigation water than average. On the contrary, reservoirs in Gyeongsangnam-do and Chungcheongbuk-do supply less than others. This study was conducted with a limited number of reservoirs compared to total agricultural reservoirs. Nevertheless, it can indicate irrigation water supply from agricultural reservoirs to provide information about agricultural water use for irrigation.

Postharvest technologies for fruits and vegetables in South Asian countries: a review

  • Agricultural systems in South Asian countries are dominated by smallholder farmers. Additionally, these farmers have limited access to pre- and post-harvest technologies due to their high initial cost. The lack of these technologies in postharvest handling is responsible for 20% to 44% of fruit and vegetable losses. These high losses are largely the result of a generally weak basic postharvest infrastructure for the preservation of products, which avoids damage from improper handling, transportation, packaging, and storage. High postharvest losses of products negatively affect food availability, food security, and nutrition, as the producer is able to sell less of the farm yield and the net availability of these food commodities for consumption is reduced. An underlying cause of these postharvest losses is the limited awareness and knowledge bases of stakeholders (researchers, farmers, governments, non-governmental organizations, and merchants) in the traditional supply chains in which these losses occur. The analysis presented in this paper explores the state of postharvest practice in South Asian countries and discusses options for low-cost postharvest technologies in the region that can support small-scale farmers and provide a viable pathway for supply to the market, joining with modern value chains and bringing about individual and regional reduction in postharvest losses of fruits and vegetables. The improvement of basic and simple low-cost technologies through precise research efforts has the potential to prevent such huge losses of products, and help meet the ever-increasing demand for food in South Asian countries.

Extension of shelf-life in golden needle mushroom (Flammulina velutipes) according to pressure composition packaging using oriented polypropylene film (연신 폴리프로필렌 필름으로 진공 포장된 팽이버섯(Flammulina velutipes)의 저장성 향상)

  • The shelf-life of fresh mushrooms is notably limited because their browning, texture change, and decay are too fast after immediately harvest. Especially, the best management for extending golden needle mushroom's shelf-life is modified atmosphere packaging under pressure vacuum at cold storage. In this study, three types of films, $20{\mu}m$ polyethylene+polypropylene (PE+PP), oriented polypropylene (OPP), and low density polyethylene (LDPE) were tested to extend the shelf-life of golden needle mushrooms. Mushrooms were packed under pressure vacuum and stored at $10^{\circ}C$ for 2 weeks. The golden mushrooms in LDPE film as a commercial packaging, were highly perishable and immediately proceed deterioration as browning, elongation, fluctuation of respiratory quotient (RQ) and softening within 7 days after packaging. On the other hand, the mushrooms in OPP and PE+PP film shown that shelf-life were extend to 14 days from 7 days, causing delay breakup of vacuum and maintenance of color, length, and RQ during storage. The breakup of vacuum in PE+PP film was faster few days than OPP film packaging. This present study indicated that the golden needle mushrooms by OPP packaging under pressure vacuum treatment might be extended the shelf-life until approximately 14 days during cold storage.

Enzyme Replacement Therapy for Lysosomal Storage Disease in Indonesia

  • Rare diseases are life threatening or chronically debilitating diseases with a low prevalence (less than 2,000 people in a population), which includes lysosomal storage diseases. These diseases are often seen as unimportant especially in developing countries, such as Indonesia, due to small number of patients. National Rare Disease Center in Indonesia was pioneered almost 20 years ago and officially established in 2017 by the Indonesian Minister of Health. Lysosomal storage disease become the most commonly found inborn errors of metabolism (IEM) in Indonesia due to easily accessible diagnostic facilities. Currently there are 7 patients receiving ERT in this mixed-donation scheme, one patient with Gaucher disease and 6 patients with MPS type II. Few challenges for ERT in Indonesia include importation through special access scheme, preparation of ERT infusion in intensive care settting, and cost of treatment. Even with limited resources, healthcare professionals in Indonesia have been giving the best care possible for rare disease patients, especially to provide diagnostic facilities through collaboration and treatment options for treatable rare diseases. Improvements in care for rare disease patients are still needed.

Wear Leveling Technique using Bit Array and Bit Set Threshold for Flash Memory

  • Flash memory has advantages in that it is fast access speed, low-power, and low-price. Therefore, they are widely used in electronics industry sectors. However, the flash memory has weak points, which are the limited number of erase operations and non-in-place update problem. To overcome the limited number of erase operations, many wear leveling techniques are studied. They use many tables storing information such as erase count of blocks, hot and cold block indicators, reference count of pages, and so on. These tables occupy some space of main memory for the wear leveling techniques. Accordingly, they are not appropriate for low-power devices limited main memory. In order to resolve it, a wear leveling technique using bit array and Bit Set Threshold (BST) for flash memory. The proposing technique reduces the used space of main memory using a bit array table, which saves the history of block erase operations. To enhance accuracy of cold block information, we use BST, which is calculated by using the number of invalid pages of the blocks in a one-to-many mode, where one bit is related to many blocks. The performance results illustrate that the proposed wear leveling technique improve life time of flash memory to about 6%, compared with previous wear leveling techniques using a bit array table in our experiment.

Study on Processing Properties of Chestnut Resources (밤 자원의 가공적성 연구)

  • Although the production of chestnut in Korea is the second largest in the world, domestic consumption of chestnut is very limited. Furthermore, consumption of chestnut in Korea is highly dependent on export to Japan and China. Large amount of chestnut in Korea have been deteriorated and discarded during storage. In order to increase the consumption of chestnut in Korea, it is necessary to know the processing properties of chestnut and its starch. Additionally, through the various investigations such as modification treatment, it will be extended to utilization of chestnut. So far, there is a little information on the processing properties of chestnut; therefore, the expansion of research will bring results to increase the consumption of chestnut.
