Quality Comparisons of Tomatoes Irradiated with Light, Treated with Ethylene, and Stored in Darkness

  • Quality characteristics of tomatoes irradiated with light (red light of far-red light followed two days later with a red light treatment), treated with ethylene, and stored in darkness were evaluated by subjective sensory and objective physical and chemical evaluations. Overall and individual liking evaluations and sensory evaluations were made by an untrained panel of eighteen people. A rankin gof treatments for consumer (panelist) acceptability was also conducted by the panel. Physical and chemical evaluations included surface color measurement (L*, a*, and b*), mechanical puncturing (firmness), soluble solids content (SSC), titratable acidity(TA), and tomato juice pH. Sensory data showed that outside color, inside color, and flavor of tomatoes treated with red light (R) and far-red light/red light (FR/R) were scored significantly higher than those of tomatoes treated with ethylene and those kept in darkness. The L* values for tomatoes treated with R and FR/R were lower (more darkening) than those for tomatoes treated with ethylene and those stored in darkness. Tomatoes treated with FR/R had the highest A* values, followed by those irradiated with R, treated with ethylene, and kept in darkness, respectively. Sensory values for firmness were similar for tomatoes treated with R, FR/R, and ethylene. Treatments had no significantly different effects on sweetness and acidity. There were no significantly different effects between treatments for pH, SSC, TA, and SSC/TA. From observations made during the study, it was suggested that R irradiation stimulated red color development in tomatoes after it had been delayed by FR irradiation. Consumer acceptability for tomatoes with either R or FR/R treatment was significantly higher than that for tomatoes treated with ethylene or stored in darkness. panelists' overall liking scores correlated well with all sensory variables except acidity, and also correlated highly with inside color, flavor, and sweetness (P<0.001). Overall liking versus flavor had the most pronounced relationship (r=0.78, P<0.001).

  • The phenomenon of color sensory has been mainly studied on the relation with the stimulus source of light source color according to dispersed energy of light. However, it has not been definitely found that the phenomenon of color sensory be collcerned with evoked potentials stimulated by object color. This paper proposes the method that evoked potentials stimulated by object colors are analyzed and examined on the phenomemon of color sensory. The model of evoked potentials is assumed that it is consisted of an additive noise and a transient signal caused by stimulus. The method which is used to estimate the signal is time-varying filtering.

FTIR spectroscopy of the two-photon product of sensory rhodopsin I

  • A halophilic archaeon, Halobacterium salinarum, exhibits phototactic behaviors, by which the organism is guided to red-orange light and evades shorter wavelengths of light. The phototaxis is mediated by two retinal proteins, sensory rhodopsin I and II (SRI and SRII), whose structures are analogous to the cognate protein bacteriorhodopsin, a light-driven proton pump. SRI mediates both attractant and repellent swimming behaviors to orange light and near- UV light, respectively. The two different signaling through the single photoreceptor have been ascribed to the presence of two active structures of SRI (S$\_$373/ and P$\_$520), which are produced upon orange light illumination of SRI and upon subsequent near-UV illumination of S$\_$373/, respectively. In the present study, we have measured the difference FTIR spectra of S$\_$373/ and P$\_$520/ states. In P$\_$520/, the isomeric structure of the chromophore is assignable to all-trans, and the Schiff base of the chromophore is protonated with concomitant deprotonation of Asp76, a combination which allows for the formation of a salt bridge between them. It was suggested that the way of interaction between the Schiff base and the counterion, which is different among SRI$\_$587/, S$\_$373/ and P$\_$520/ and which has been shown to drive the conformational changes in the cognate protein, bacteriorhodopsin, is the key to controlling conformational changes for the attractant and the repellent signaling by SRI.

높은 굽 신발이 감각계의 변화와 균형에 미치는 영향 (Effects of the High-Heeled Shoes on the Sensory System and Balance in Women)

  • The purpose of this study were to compare light touch, two-point discrimination, position sense, and static balance ability and to examine the relationship of static balance ability and different senses in those who are wearing various heights of high-heeled shoes. Each 29 women was classified two different heights (below 3 cm, above 7 cm) by experience in wearing shoes. A t-test was used to determine the differences between low- and high-heeled shoe in light touch, two-point discrimination, position sense, and static balance ability. Pearson correlation was used to examine the relationship of static balance ability to these sensation. The results were as follows: 1) No significant differences in average light touch, position sense between two groups were found(p>0.05). But significant differences in average two-point discrimination, static balance ability were found(p<0.05). 2) Static balance ability was not significantly correlated with light touch, position sense, two-point discrimination(p>0.05). The results suggest that long time experience in wearing high-heeled shoe may be caused local sensory change and decreased static balance ability. Even though, static balance ability was not significantly affected but correlated with two-point discrimination, position sense, and light touch in order.

Photochemistry of pharaonis phoborhodopsin and its interaction with the transducer

  • Phoborhodopsin (pR or sensory rhodopsin II, sRII; the absorption maximum of ∼ 500 nm) is a retinoid protein and works as a photoreceptor of the negative phototaxis of Halobacterium salinarum. pharaonis phoborhodopsin (ppR or pharaonis sensory rhodopsin II, psRII) is a corresponding protein of Natronobacterium pharaonis. These sensory proteins form a complex with a cognate transducer protein in the membrane, and this complex transmits the light-signal to the cytoplasm to evoke avoidance reaction from blue-green light. Recently, the functional expression in Escherichia coli membrane of ppR was achieved, which can afford a large amount of the protein and enables mutant studies to clarify the role of various amino acid residues. A truncated transducer which can bind to ppR is also expressed in Escherichia. coli membrane. In this article, we will review properties of ppR mainly using observations of our laboratory; which contains photochemistry (photocycle), light-driven proton uptake, release and transport, F -helix titling during photocycle and association of the transducer.

감각정보의 차이가 운동에 미치는 영향에 대한 정량적 분석 (Quantitative Analysis for the Effect of Sensory Information on the Motor)

  • 본 연구는 감각-운동 통합의 관점에서 다양한 시각 자극에 의하여 생체 내에 입력된 각기 다른 감각 정보가 운동 기능에 미치는 영향을 정량적으로 분석하기 위하여 수행되었다. 특히 보색 관계의 시각 자극이 이에 대한 운동의 반응시간에 어떠한 영향을 주는지에 관심을 두었다. 실험은 20세에서 25세 사이의 20대 성인 남녀 각각 10명을 대상으로 자체 제작한 방음 암실에서 수행하였다. 실험 장치는 디스플레이 판넬, 시각 자극을 위한 고휘도 LED 그리고 자극에 대한 반응시간 검출을 위한 키보드 스위치로 구성하였다. 지금까지의 많은 연구들은 감각 정보의 차이가 인식에 미치는 영향에 대한 평가나 색채 자극에 의한 감각 수용기의 반응의 강도의 차이를 연구하는데 머무르고 있으며 색채 환경에서의 감각-운동 협응에 대한 연구는 미흡한 실정이다. 따라서 본 실험에서는 다양한 시각 자극 환경에서 운동의 반응 시간을 계측함으로써 감각과 운동의 관계를 정량적으로 분석하였다. 그 결과 보색 관계의 시각 자극에 대한 반응시간이 동일한 색채 환경 하에서의 반응시간 보다 빠르고 동일 색채 자극 환경에서는 빛의 파장의 크기에 반비례하여 반응속도가 나타나는 결과를 얻었으며 통계적 분석(p<0.05)을 통해서 유의성도 검증되었다.

아동을 대상으로 한 감각통합치료의 중재효과에 대한 체계적 고찰: 국내 연구를 중심으로 (A Systematic Review of Sensory Integration Intervention for Children in Korea)

  • 목적 : 본 연구에서는 최근 10년간 국내에서 발표된 아동 감각통합치료에 대한 중재효과를 체계적으로 분석하여 이해하기 쉽도록 제시하고자 한다. 연구방법 : 학술연구정보서비스(RISS)와 디비피아(DBpia)의 검색엔진을 사용하여 2011년에서 2020년 6월까지 출판된 국내 논문을 대상으로 하였다. 검색어는 "감각통합", "감각처리", "ASI(Ayres Sensory Integration)"이었다. 총 19개의 논문을 분석하였다. 연구결과는 PICO(Population, Interventions, Outcomes, Comparisons), 국제기능장애 건강분류(International Classification of Function, Disability and Health; ICF)방법과 수정한 The Evidence Alert Traffic Light Grading System을 사용하여 그림으로 제시하였다. 결과 : 아동 감각통합치료를 가장 많이 적용한 진단은 발달지연이었고, 중재법은 개별 감각통합치료가 가장 많았다. ICF의 신체구조 및 기능에 해당하는 중재는 91%에서 긍정적인 효과를 보였다, 세부 영역은 감각조절 및 감각처리, 소운동과 대운동, 신체도식, 신체-자기개념, 균형, 기본 움직임, 자세조절 및 손기능, 집중, 자존감이었다. 결론 : 아동 감각통합치료의 중재효과를 ICF의 분류와 그림으로 간단히 제시하여 치료사, 연구자, 아동의 가족들이 쉽게 이해하고 이용할 수 있는 근거를 마련하고자 하였다.

Formulation and Sensory Evaluation of Granule and Tablet from Lotus Rhizome(Nelumbo nucifera Rhizome)

  • Nelumbo nucifera root(NNR) is used to clear summerheat(暑熱), bear Yang(陽) upwards and stop bleeding as mentioned in traditional Korean medicine. Also, it has been known that NNR is effective for lowering blood pressure and hyperlipidemia. The rhizome is considered to be nutritive, demulcent, diuretic and cholagogue and is used to treat piles, dyspepsia and diarrhea. An increasingly growing market for nutraceuticals and functional foods has triggered the study on natural sources for nutraceuticals, health foods and functional foods. But rhizome was inconvenient to formulate liquid dosage form(extract) by way of hot water because of its limited storage. Also the majority of the consumers have a complaint against the dosage. The purpose of this study was to develop the functional materials from NNR without side effects. We formulated the solid dosage form viz tablet and granule from the lotus root. Sensory evaluation was performed in terms of smell, taste, color and overall of lotus root and all colored forms(brown, dark brown, light green and yellow) of tablet and granule to evaluate the acceptability of the formulated tablets and granules. In sensory evaluation, among the formulated tablets and granules, light green granules obtained best score overall and yellow tablets showed the overall improved acceptability. In conclusion, lotus rhizome could be recommended as functional food. Further studies to clarify bioactive functions of Nelumbo nucifera in experimental animal model on atopic dermatitis are in progress.

진열중 조도 처리에 따른 재래종 돈육과 개량종 돈육의 지방산화 및 육색 안정성 비교 (Lipid Oxidation and Color Stability of Korean Native Black Pork and Modern Genotype Pork under Light-Exposure during Refrigerated Display)

  • 본 연구는 진열중 조도 처리에 따른 재래종 돈육과 개량종 돈육의 지방산화 및 육색 안정성을 비교하고자 실시하였다. 평균 출하체중 66 kg의 재래종 돼지(거세돈) 5두와 112 kg인 개량종 돼지($Landrace{\times}Yorkshire{\times}Duroc$, 거세돈) 5두를 도축하여 등심(M. longissimus) 부위를 $1^{\circ}C$에서 5일 동안 숙성한 다음 $4^{\circ}C$의 암실 및 3,000 lux에 7일 동안 진열하였다. 재래종이 개량종보다 높은 지방 함량을 가진 반면(p<0.05), 개량종보다 낮은 $C_{14:0},\;C_{18:3},\;C_{20:5}$ 함량을 가졌다(p<0.05). pH는 진열기간 동안 재래종이 개량종보다 낮았으며(p<0.05), 조도 처리시 두 돈육의 PH가 빨리 증가하였다. TBARS는 재래종이 진열기간 동안 개량종보다 빨리 촉진되었으며, 조도 처리시 더 빨리 증가하였다. 표면육색은 조도 처리시 두 돈육 모두 빨리 변질되었으나, 재래종의 육색이 개량종보다 붉고 진함을 더 오랫동안 유지하였다. 신선육의 기호도는 진열기간 동안 조도 처리에 의해 빨리 감소하였지만, 재래종이 개량종보다 높은 기호도를 보였다. 결론적으로, 진열기간 동안 재래종 돈육이 개량종 돈육보다 우수한 색택과 신선육 기호도를 보였으나, 개량종 돈육보다 낮은 지방산화 안정성을 보였다. 또한 식육을 조도 처리시 지방산화와 변색이 더 빨리 촉진되었다.

MPEG-V 표준 실감미디어 테스트베드에 기반을 둔 문화재 360 콘텐츠 시범 서비스 플랫폼 (360 Content Pilot Service Platform of Cultural Assets Based on MPEG-V Standard Realistic Media Testbed)

  • 본 논문에서는 MPEG-V 표준 실감미디어 테스트베드에 기반을 둔 문화재 360 콘텐츠 시범서비스 플랫폼을 제안한다. MPEG-V 국제 표준은 바람(wind), 지속광(light), 섬광(flash)와 같은 실감효과메타데이터(SEM; sensory effect metadata) 에 대한 표준 포맷과 장비와의 통신 규약 등을 정의한 것으로, 360VR 콘텐츠와 융합할 경우 체험자로 하여금 실재감(presence)과 몰입감(immersion)의 증대가 가능하다. 제안하는 플랫폼은 문화재 360 콘텐츠를 재현할 수 있도록 특화된 형태로 설계와 구축을 수행하고, 실감효과메타데이터(SEM; sensory effect metadata)와 콘텐츠를 재현시키는 소프트웨어와 하드웨어로 구성되며, 하드웨어는 실감효과 재현 장치로, 소프트웨어는 콘텐츠 플레이어와 실감효과 재현 서버로 구성된다. 제안하는 플랫폼을 활용한 시범서비스 사례와 플랫폼의 특징과 장점에 대해 언급한다.
