Exfoliation of abalone, Haliotis discus hannai using edible plants (식용작물을 이용한 전복 박리)

  • Twenty nine edible plants were selected in order to study their exfoliation effect on abalone Haliotis discus hannai from its substrate. Exfoliation was observed in spearmint Mentha spicata, lemon balm Melissa officinalis, rose flower, onion Allium cepa, wasabi powder, mustard powder, omija Schizandra Chinensis, and hibiscus Hibiscus sabdariffa solutions. In particular, both the omija and hibiscus solutions exfoliated over 90% of the abalone. In field tests, 3% and 4% omija solutions exfoliated 93.6% (850/908) and 97.1% (810/834) of abalone, respectively, whereas 3% and 4% hibiscus solutions exfoliated 96.1% (780/812) and 97.4% (700/719), respectively. The detached abalone were recovered within 1 min 39 seconds. These results indicate that the omija and hibiscus solutions (3% and 4%) may be useful in the exfoliation of abalone.

Determination of 105 pesticide residues by GC/MS/MS (GC/MS/MS를 이용한 105종의 잔류농약 분석에 관한 연구)

  • A multi-residual method using gas chromatography coupled with mass spectrometry (GC/MS/ MS) was developed for the analysis of 105 pesticides. This method was tested on lemons, beans and other vegetables. The pretreatment of these pesticides was performed by liquid-liquid partition followed by cleanup with solid phase extraction cartridge (SPE Florisil), after acetonitrile extraction from matrices and sodium chloride (15 g) addition. The recovery ranged from 71.1% to 126.0% except for azinphosmethyl, famoxadone, fenamidone, flufenoxuron and triadimefon in lemons and from 72.5% to 124.5% in bean. In lemon, the limit of detection (LOD) and limit of quantification (LOQ) were 0.001~150 ng/ mL and 0.004~500 ng/mL, respectively.

In vitro Antioxidant Properties and Phenolic Composition of Korean Commercial Vinegars

  • Total phenolics and antioxidant properties of various Korean commercial vinegars (apple vinegar, AV; blueberry vinegar, BV; grape vinegar, GV; lemon vinegar, LV; Opuntia ficus vinegar, OFV; persimmon vinegar, PV; Prunus mume vinegar, PMV; rice vinegar, RV) were investigated. The total phenolic contents of 8 vinegars were within the range of 54.18-491.02${\mu}g/mL$. The vinegars were also capable of scavenging 1,1-dipehnyl-2-picrylhydrazyl (DPPH) and 2,2'-azino-3-ethylbenzothiazoline-6-sulphonic acid (ABTS) radicals in a manner dependent on concentration. The greatest reducing power was observed in PV relative to the other vinegars. The ferric reducing ability of plasma (FRAP) of PV, PMV, GV, and BV were 1.012, 0.969, 0.931, and 0.856 at a dose of 1 mL, respectively. Therefore, our study verified that the GV, PV, and PMV have powerful antioxidant activities which are correlated with its high level of phenolics, particularly gallic acid, and epigallocatechin.

Characteristics of $Mandu$ with Ripened Korean Cabbage $Kimchi$ (묵은지 첨가에 따른 만두의 품질특성)

  • A new recipe for $mandu$ was developed by adding ripened Korean cabbage $kimchi$. To counter the bad smell of ripened $kimchi$ and to enhance the function of the food, rosemary was added to it. The preference for the herb over $kimchi$ was determined via a sensory evaluation. The preference was in the following order from highest to lowest: rosemary, lemon balm, and thyme. Ripened Korean cabbage $kimchi$ was added to beef or pork stuffing for $mandu$. Sensory evaluation was used to determine the optimal contents of ripened Korean cabbage $kimchi$. The result showed that 75% of the $kimchi$ content was best for beef $mandu$ and 100% for pork $mandu$.

Evaluation of Natural Oils in Antimicrobial Activity and Rodent Repellent Effectiveness (천연오일의 항균 및 설치류 기피제 활성 평가)

  • This study was performed to evaluate the rodent repellency and antimicrobial activity of natural oils. Thirteen natural essential oils were evaluated for repellent efficacy against rodent feed intake suppression activity. Salvia sclarea (sage), Cinnamomum zeylanicum (cinnamon) Cymbopogon citratus (lemon grass), and Syzygium aromaticum (clove) showed the best repellent efficacy among tested natural oils. Antimicrobial activity against Gram-negative (four strains) and Gram-positive (four strains) bacteria were evaluated using four natural oils, which showed high efficacy on the rodent repellent test. Syzygium aromaticum showed antimicrobial activity against all tested bacteria and Cymbopogon citratus, Cinnamonum zeylanicum, and Salvia sclarea showed antimicrobial activity against some tested bacteria.

  • Soil microfungi of the paddy fields in Korea were isolated by the dilution plate method from soil samples of two selected sites. It was concluded that 14 species among 30 species identified were undescribed fungi in Korea. Among them, 7 species of Ascomycetous fungi were described in this paper as new to Korea. Species of the genus Talaromyces were found to be dominant in paddy field soils and they consisted of Talaromyces flavus var. flavus, T. panasenroi, T.stipitalus and T.trachyspermus. Special attention was paid on the predominant occurrance of Westerdyrella multispora which produced globose to subglobose pseudothecia containing 32 spored asci with multiseptate, cylindrical ascospores. A cellulose decomposing ascomycete, Chaetomium globosum, was also found which produce black, ostiolate perithecia furnished with numerous, wavy to undulate terminal hairs. They contain evansecent, clubshaped, 8 spored asci with lemon-shaped, olive brown ascospores. Another ascomycte, Emericellopsis terricola with Acremonium anamorph, waas isolated from two sites.

Differential Morphological, Structural and Biological Characteristics of Cysts in Heterodera Species in Korea

  • Morphological (cyst shape, color, and sizes [length (L), maximum width (W), volume and "a" (L/W)]), structural (vulvar cone slope angle [VCSA], surface wrinkle [VCSW], cyst wall thickness, composition, and texture) and biological characteristics (fecundity, hatching, and emergence [number of second-stage juveniles (J2) from a cyst]) in preceding Heterodera glycines (Hg), currently-recorded H. sojae (Hs) and H. trifolii (Ht) were examined by microscopy. Cysts were lemon-shaped, indicating the genus is Heterodera except for Hs that formed frequently globular cysts with significantly flatter VCSA (102.2°) with smooth VCSW than Hg (50.6°) and Ht (82.0°), but not genus Globodera because of the presence of vulvar cone in Hs. Ht was significantly larger in all morphological characteristics than Hg and Hs, suggesting Ht may be diagnosed differentially by cyst sizes and also host plant preferences. Hs showed smaller "a" value with more globular shape and stronger structures with more thickened and strengthened collagen-like texture of cyst wall than Hg and Ht. This suggests Hs may be diagnosed differently by structural characteristics from the others, especially Hg with similar cyst sizes. There were no significant differences in emergence (inoculum potential) among cyst nematodes due to the offset of fecundity and hatching rate; however, the inoculum potential of Hs may be not so persistent as Hg and Ht in fields because of its lower fecundity and higher hatching rate (causing rapid inoculum loss) than the others. These characteristics of cysts provide information useful for simple and differential diagnoses and reliable management of cyst nematodes.

Effects of Resistant Starch on the Viscosity and Stability of Fat-Free Dressing (무지방 드레싱의 점도와 안정성에 미치는 저항전분의 효과)

  • Purpose: To develop fat-free dressing containing a resistant starch (RS) as a dietary fiber, the viscosity and stability of various type RSes prepared from wheat, maize, potato, rice, waxy rice, and amaranth starches were investigated by using Brookfield viscometer. The shape of RS granule in the dressing during storage was also observed. Methods: The viscosity of fat free dressing with different retrograded RS3 (RS3V) prepared from waxy rice starch with 0.1% lemon vinegar and ascorbate mixed solution had higher RS3 that was maintained constant during storage. Annealing and heating prior to cross-linking, and heating after cross-linking increased RS level of RS4 type starches. Results: The viscosities and stabilities of dressings with RS were different depending on starch sources and RS preparation conditions. The heated RS4 (HRS4) increased in viscosity and stability with RS4 addition. Especially the fat-free dressings with HRS4 prepared from rice and waxy rice starches maintained stability regardless of separation after one month storage with only 7% separation after 6 month storages. The shape of RS4 granule in acidic medium of dressing did not change until 6 months. Conclusion: In this study, RS4 made by the rice and waxy rice starches showed high viscosity and maintained stability of the fat-free dressings during storage.

Effects of Aromatherapy Footbath on Stress and Autonomic Nervous System Activity (아로마테라피 족욕이 스트레스와 자율신경계 활성도에 미치는 효과)

  • Background: A quasi-experimental study with non-equivalent control groups was performed to determine an effect of aromatherapy foot bath on stress and autonomic nervous activity. Methods: To confirm the effect of aromatherapy foot bath, aromatherapy foot bath group was asked to have a bathing by dropping 0.5 cc in 18 L water after blending with a ratio of 6:3:1 with essential oil lavender, lemon, and tea tree and a foot bath group was asked for bathing only by water. Results: Aromatherapy foot bath group showed significant decrease in subjective stress score (t=3.465, p=0.001) and stress index (t=3.021, p=0.004) in addition to simultaneous increase in sympathetic nervous activity (t=-2.913, p=0.005). However, no significant stimulation of parasympathetic nervous system was observed (t=-1.831, p=0.072). Conclusions: As aromatherapy foot bath is a possible effective intervention for stress relief, it can be applied as an effective method to relieve the stress for healthy adults and patients.

The Role of Information Search Cost on Seller's Disclosure of Negative Information (정보 검색 비용이 판매자의 부정적 정보 공개에 미치는 영향에 대한 연구)

  • This study has attempted to provide an important understanding about the information asymmetry in markets through empirical analysis on how the disclosure of low quality can increase demand even in the short run. More specifically, this study has extended the previous findings from the related literature by considering the effect of information search cost and providing empirical evidences about the effect of voluntary disclosure of low quality, using an experimental method with purchase scenarios. The results from our analysis show that reduced perceived risk have an important effect on sharing negative information, while the effect of information search cost is minimal. We also explain the circumstances whereby the information disclosure of a seller with low-quality product can enhance not only the seller's profitability but also customers' welfare by increasing the market demand and the demand for the seller claiming high quality.
