Quality Characteristics of Cookies with Hot Water Extract of Seamustad (Undaria pinnatifida) Sporophylls and Treated with Gamma Irradiation (감마선 조사된 미역귀(Undaria pinnatifida Sporophyll) 열수추출물을 첨가한 쿠키의 품질 특성)

  • In this study we assessed the effects of gamma irradiation (50 kGy) on cookies to which was added various concentrations (1%, 3%, 5%, 7%) of hot water extract from seamustad (Undaria pinnatifida) sporophylls (WEUS) for future industry use. The pH of the dough went down significantly with the addition of WEUS. However, density was not related to that. The spread ratio of the cookies increased significantly as more WEUS was added to the cookie recipe, and cookies containing gamma-irradiated extract were taller than non-irradiated cookies with the same concentration. The loss rate of cookies was the same between control and experiment groups. On the other hand, the leavening rate significantly increased upon the addition of WEUS, and gamma-irradiated cookies were higher than non-irradiated cookies in the same concentration. The L value of cookies was much reduced with higher WEUS content, but the b value showed no significant differences between the control and experiment groups. The a value showed no significant difference for non-irradiated groups, but did for gamma-irradiated groups. Upon the addition of WEUS, hardness was shown to be higher than the control. The antioxidant activity, DPPH radical scavenging, was significantly higher with the control cookies, and upon the addition of WEUS, the gamma-irradiated cookies had higher antioxidant effects than non-irradiated cookies. The sensory evaluation showed that cookies made with WEUS have a positive impact in color, smell, taste, texture, and overall acceptability, but the sensory evaluation worsened with a lot of WEUS. The results of acceptability were higher in cookies with 3% the non-irradiated group and 1% the gamma-irradiated group. These results suggest that the 1% gamma-irradiated group was in the best condition to use in the industry since just a little of it makes exceptional quality, sensory properties, and functionality.

  • Purpose : To evaluate the usefulness of functional MRI (fMRI) of visual cortex in patients with ischemic infarction in the occipital lobe. Materials and Methods : Four patients with the symptoms and signs of visual cortical ischemia were included. Functional MRI was performed by 2D-FLASH technique with the parameter of 90/56msec TR/TE, $40^{\circ}$ flip angle, $240{\times}240{\;}FOV,{\;}64{\times}128$ matrix number, 8.32 seconds acquisition time, 8mm slice thickness. An axial slice including both visual cortices was selected and alternative activation and resting of the visual cortex was performed using red color photostimulator. all patients undertook visual field test, and vascular abnormality was examined by MRA (n=4) and DSA (n=2). fMRI results were compared with the results of a visual field test, conventional MRI and cerebral angiography. Results : On fMRI, decreased activity of the visual cortex was found in the occipital lobe corresponding to stenosis of the posterior cerebral artery or its branch noted on angiogram. However, 2 of 4 patients showed no abnormal findings on conventional MRI. Visual field defect was noted in 3 patients, one and of whom showed no abnormality on conventional MRI and diffusion-weighted image, but revealed decreased activity in the corresponding visual cortex on fMRI. Conclusion : fMRI may be a sensitive method for detection of the status of decreased blood flow or vascular reserve which other methods can not.

Ecological Studies on the Epilithic Algal and Change of Agricultural Irrigation Water Quality in the Seomjin River (섬진강 수계 수질과 부착조류에 대한 생태학적 연구)

  • This study was carried out to investigate distribution of epilithic algal and chemical contents of irrigation water influencing in the Seomjin River from March to October in 1996 and 1997. In the water quality of the Seomjin River, the monthly average contents of $NH^+\;_4-N,\;SO_4\;^{2-}$ and $Cl^-$ showed the lowest peak in July and August while that of $NO_3-N$ showed the highest peak in June. The water quality of the Seomjin River was deteriorated by inflow of Yo-cheon and Sosi-cheon in the middle stream. The concentration of anions and cations of the Seomjin River was $Cl^->SO_4\;^{2-}>NO_3\;^->PO_4\;^{3-}\;and\;Ca^{2+}>Na^+>Mg^{2+}>K^+>NH_4\;^+$, respectively. The epilithic algal community identified 339 taxa consisting of 7 forma, 42 varieties and 290 species in 6 classes. In species composition, green algae and diatoms were heavily dominated which were evaluated 50.4% and 31.3% of total classification, respectively. In seasonal distribution, 219 species presented in summer but, 147 species were in winter. In this study, dominant species were Cocconeis placentula var. euglypta and Cosmarium furcatospermum in spering. Cyclotella meneghinasa and Synedra ulna, Scenedesmus ecornis in summer. Melosira varians, Achnathes minutissima in autumn and Gomphonema parvulum in winter were dominated. Finally, the dominant indices in this study have ranged 0.10-0.43.

Survey on the Effect of the Herd Size on Reproductive Traits of Korean Native Cows (사육규모에 따른 한우 번식 실태 조사)

  • A survey was carried out to investigate the effect of the herd size on the reproductive traits of Hanwoo(Korean native cows). Data on the reproductive traits of 670 Korean native cows were collected from January, 1996 to December, 1997 and analyzed by the herd size. The results obtained were summarized as follows: 1. The average ages at first breeding were 437.9, 425.5 and 452.9 days in herd size 1 (less than 20 heads), 2 (21∼50 heads) and 3 (more than 51 heads), respectively (the over all average was 443.0 days). However, there was no significant difference between herd sizes (p>0.05). 2. The average ages at first conception were 452.8, 438.4 and 467.1 days in herd size 1, 2 and 3, respectively (the over all average was 460.0 days). However, there was no significant difference between herd sizes (p>0.05). 3. The average ages at first calving were 741.2, 730.2 and 755.9 days in herd size 1, 2 and 3, respectively (the over all average was 746.6 days). However, there was no significant difference between herd sizes (p>0.05). 4. The average days to first estrus after calving was 70.1 days and it was shortest in herd size 3 (64.8 days) and longest in herd size 1(82.1 days). 5. The average numbers of services per conception were 1.54, 1.61 and 1.48 in herd size 1, 2, and 3, respectively (the over all average was 1.53). However, there was no significant difference between herd sizes (p>0.05). 6. The average days to first conception after calving were 115.6, 99.1 and 80.6 days in herd size 1, 2 and 3, respectively (the over all average was 91.2 days). There was a trend that it was shorter as the herd size increased(p<0.05). 7. The average length of calving interval was 375.3 days and it was shortest in herd size 3 (367. 4 days) and longest in herd size 1 (389.5 days).

  • If the lowest leaves of the cucumber were removed or training cultivable method was changed, a computer vision system could divide well the cucumber fruit from the others, and also an end-effector could reach and grip cucumber fruit and cut well its fruit stalk. Therefore, this study investigated whether removal leaves and training cultivable method of a cucumber could affect its growth and yield. They can help to be designed the vision system and the end-effector. A cucumber fruit grew by 6-l5cm long for 2 days regardless of removing leaves. Removal leaves didn't affect growth of cucumber fruit. Number of cucumber fruit was produced within 10% different values by three methods (A, B, C) of removal leaves. The first grade rate (best quality) of 4 B and C was 56.7%, 53.1%, 56.3% respectively. Consequently, proper removal leaves were better than traditional way, which does not remove a leaf, because they make cucumber plant ventilate more freely and absorb more light.

Effect of Atmospheric Pressure Plasma on the Quality of Commercially Available Sunsik (대기압 플라즈마가 선식의 품질 특성에 미치는 영향)

  • Atmospheric pressure plasma (APP) was applied to examine microbial safety and qualities of commercial Sunsik. APP was generated in a square-shaped plastic container (250 W, 15 kHz, ambient air) and dielectric barrier discharge plasma treatment was applied for periods of 0, 5, 10, and 20 minutes. The total aerobic bacterial count in the control was 4.44 log CFU/g. Under plasma treatment for 20 minutes, Sunsik samples inoculated with Bacillus cereus, B. subtilis, and Escherichia coli O157:H7 resulted in a reduction of bacterial counts by approximately 2.20, 2.22, and 2.52 log CFU/g, respectively. The pH of the sample was found to decrease after APP treatment. Although hunter color $L^*$ of Sunsik increased, $a^*$ and $b^*$ value decreased as a result of APP. Increasing the APP time also enhanced the peroxide value. Further, sensory evaluation revealed that APP decreased color, flavor, taste and overall acceptability. The results of this study indicated that APP treatment improved the microbial quality of Sunsik, although further studies should be conducted to reduce the deterioration of sensory quality induced by APP.

Changes in Quality Characteristics and Antioxidant Activity of Apples during Storage (저장 기간에 따른 사과의 품질특성과 항산화 활성 변화)

  • This study was performed in order to compare the changes in Korean apples' qualities and antioxidant activity when stored at room temperature, $20^{\circ}C$, for fifteen days. The results showed that the weight, moisture content, soluble solid content, acidity, and hardness levels decreased as the storage period increased. However, pH and color value L increased as the storage period increased. Total phenol contents, total flavonoids contents, DPPH free radical scavenging activity, and vit. C contents of apples significantly decreased with increased storage period. Sensory parameters, such as appearance, sweetness, sourness, crunchiness, and overall acceptability of apples, also decreased as the storage period increased. Based on these results, if, the apple are being stored around $20^{\circ}C$, then, to have the highest quality, the apples should be sold within three days, We also suggested that it is desirable not to store the apples fore more than eight days.

Quantitative Microbial Risk Assessment Model for Staphylococcus aureus in Kimbab (김밥에서의 Staphylococcus aureus에 대한 정량적 미생물위해평가 모델 개발)

  • Quantitative microbial risk assessment (QMRA) analyzes potential hazard of microorganisms on public health and offers structured approach to assess risks associated with microorganisms in foods. This paper addresses specific risk management questions associated with Staphylococcus aureus in kimbab and improvement and dissemination of QMRA methodology, QMRA model was developed by constructing four nodes from retail to table pathway. Predictive microbial growth model and survey data were combined with probabilistic modeling to simulate levels of S. aureus in kimbab at time of consumption, Due to lack of dose-response models, final level of S. aureus in kimbeb was used as proxy for potential hazard level, based on which possibility of contamination over this level and consumption level of S. aureus through kimbab were estimated as 30.7% and 3.67 log cfu/g, respectively. Regression sensitivity results showed time-temperature during storage at selling was the most significant factor. These results suggested temperature control under $10^{\circ}C$ was critical control point for kimbab production to prevent growth of S. aureus and showed QMRA was useful for evaluation of factors influencing potential risk and could be applied directly to risk management.

Effect of Benzyladenopurine Soaking Period on Growth of Mungbean Sprouts (BA침종기간이 숙주나물의 형태와 생장에 미치는 영향)

  • In bean sprout culture water imbibition and benzyladenopurine (BA) treatment are done at the same time. The study was carried out to check the effect of treatment period (3, 5, and 7 hours) on growth of mungbean (cv. Keumseongnogdu, Owoolnogdu, and Zhong Lu 1) sprouts and to analyse its absorption amount on the base of their moisture content. The 3 cultivar seeds were soaked in 50 ppm BA solution immediately before 3 hour aeration and then cultured for 6 days. The sprouts were sorted by 4 categories on the base of hypocotyl length; > 7cm, 4 to 7cm < 4cm, and non-germination, and their morphological characters, fresh and dry weights were measured. The cultivar Zhong Lu 1 had the highest rate in longer than 7cm hypocotyls of the three cultivars but the lowest one in shorter than 4cm. Rates of the above 4 categories in cv. Keumseongnogdu, Owoolnogdu showed no significant difference between the treatment periods while one of longer than 7cm hypocotyls in cv. Zhong Lu1 was decreased with longer treatment period. Lateral roots were less formed with longer treatment period, especially as lengthened from 3 to 5 hours. Hypocotyl and root were also lengthened with longer treatment period and hypocotyl was more thickened in 5 hour treatment period than in the two others. Total fresh and dry weights per sprout showed no significant difference between treatment periods although cv. Zhong Lu1 relatively faster grew than the other cultivars. In the case of shorter than 5hour treatment periods the absorption amount of BA was the greatest in cv. Zhong Lu1 but in 7 hour treatment period it was the greatest in cv. Keumseongnogdu and Zhong Lu 1.

Experimental study on Cervi Cornu on Adjuvant Arthritis in rats (록각(鹿角)의 Adjuvant 관절염(關節炎)에 대한 실험적(實驗的) 연구(硏究))

  • Objective: To investigate effects of Cervi Cornu on Adjuvant Athritis in rats, the edema inhibit rate, the anaJgesic effects, the number of WBC, RA facter, Platelet, the quantity of CRP, total protein, albumin and globuline in the blood serum were measured in the arthritis part. Results: The results obtained as fonows ; 1. After arthritis of Sprague dawley(SD) rats was induced by injecting Freund's complete adjuvant for 2 weeks, any treatment was not for Control group, acupunctured for Treat Ⅰ group. normal saJine was ora] administrated for the Treat Ⅱ group, Cervi Cornu Ex. was oral administrated for Treat Ⅲ, and Cervi Cornu Herbal-acupullcture was injected for Trea Ⅳ group during 2 weeks every other day. Selected point was on pressure pain point in both groups. And then the edema inhibit rate were checked. The edema inhibit rate was $46.03\%$ in Treat I group, $43.24\%$ Treat IV group, $37.44\%$ in Treat III. there was significance in the edema inhibit rate between Control group and Treat group, in order of Treat Ⅰ, Ⅳ, Ⅲ.(p<0.05) 2. The analgesic effects was $7.58{\pm}1.80$(${\times}10$gm) in Control group. $11.00{\pm}1.10$(${\times}10$gm) in Treat Ⅰ group. $99.92{\pm}1.28$(${\times}10$gm) in Treat Ⅲ group and $14.67{\pm}1.03$(${\times}10$gm) in Treat Ⅳ group. There was significance in the analgesic effects between Control group and Treat group(p<0.05) 3. The number of WBC was $14.72{\pm}1.48$(${\times}10^3$㎕) in control Group, $10.26{\pm}1.13$(${\times}10^3$㎕) in Treat Ⅰ group, $11.00{\pm}1.13$(${\times}103$㎕) in Treat Ⅱ Group and $9.63{\pm}1.75$(${\times}10^3$㎕) in Treat Ⅳ group. There was significance in the number of WBC between Control group and Treat group(p<0.05) 4. The content of total protein in the blood serum were $6.13{\pm}0.05$g/dl in control group, $5.73{\pm}0.14$g/dl in Treat I group, $5.88{\pm}0.13$g/dl in Treat Ⅲ group and $5.90{\pm}0.13$g/dl in Treat IV group. There was significance in The content of total protein in the blood serum between Control group and Treat group(p<0.05) 5. The contests of albumin in the blood serum were $2.32{\pm}0.12$g/dl in the Control group, $2.35{\pm}0.05$g/dl in Treat Ⅰ group, $2.35{\pm}0.05$g/dl in Treat Ⅱ group, $2.30{\pm}0.06$g/dl in Treat Ⅲ group, $2.42{\pm}0.08$g/dl in Treat IV group. There was no significance in The content of albumin in the blood serum between Control group and Treat group(p<0.05) 6. The contests of globulin in the blood semm were $3.68{\pm}0.08$g/dl in the Control group, $3.43{\pm}0.12$g/dl in Treat Ⅰ group, $3.55{\pm}0.10$g/dl in Treat IV group. There was significance in The content of globulin in the blood serum between Control group and Treat group(p<0.05) 7. The numbers of RA factor were $3.47{\pm}0.54$IU/ml in Control group and $2.38{\pm}0.50$IU/ml in Treat Ⅱ group. There was significance inThe numbers of RA factor between Control group and Treat group(p<0.05) 8.
