Quality Characteristics of High-Fiber Breads Added with Domestic Wheat Bran (국산밀 제분부산물을 첨가한 고식이섬유빵의 품질 특성)

  • Wheat bran, a milling by-product of domestic wheat grains, containing approximately 42% of the total dietary fiber, was tested for the effects on bread-making properties. The amylograph peak viscosity and set bark values considerably decreased with increasing levels $(0{\sim}30%)$ of wheat bran. Adding wheat bran somewhat increased water absorption and showed no consistent effect on mixing time. Yeast-leavened breads were baked with wheat flour with up to 30% of the flour substituted with domestic wheat bran. Adding domestic wheat bran exerted detrimental effect on loaf volume and decreased sensory acceptability such as crust and crumb color, crumb grain, texture, and flavor. Wheat bran decreased lightness and imparted red and yellow tint. It was suggested that domestic wheat bran could be substituted for wheat flour at levels up to 15% without significantly depressing bread quality in the preparation of high-fiber bread. Crumb firmness of bread containing 15% wheat bran was significantly higher than that of the control bread (100% wheat flour) and increased rapidly at $2{\sim}3$ days during storage.

Evaluation of Stomatal Characteristics of Adaxial and Abaxial Side of Flag Leaves of Korean Wheat Cultivars

  • Stomatal traits such as stomata density (SD), aperture length (APL) and width (APW), guard cell length (GCL) and width (GCW), and distance between stomata (DIS) were investigated to identify correlation with agronomic traits for 35 Korean wheat cultivars. Flag leaf width (FLW) of Korean wheat cultivars was the widest in Ol-mil, and the narrowest in Keumkang. SD tended to be higher on the adaxial side than on the abaxial side in Korean wheat cultivars. SD of adaxial and abaxial sides was classified into a cultivar with a significantly different or not. In APL, 18 wheat cultivars showed significant differences according to leaf side, and APL of adaxial was longer than APL of abaxial in 13 wheat cultivars. In APW, 15 wheat cultivars showed a significant difference, and APW of abaxial was wider than APW of adaxial among them. In GCL, 14 wheat cultivars showed a significant difference, and the GCL of abaxial was longer than the GCL of adaxial in 10 wheat cultivars. In GCW, 10 wheat cultivars showed a significant difference, GCW of adaxial was wider than GCW of abaxial and in 6 wheat cultivars. FLW of adaxial and abaxial showed a negative correlation with GCL and a positive correlation with grain number per panicle. FLW of only abaxial showed a positive correlation with DIS. The SD of the adaxial showed a negative correlation with GCL, while the SD of the abaxial showed a negative correlation with APL. APL of both sides of the leaf showed a positive correlation with GCL, and APW of only abaxial showed a negative correlation with GLC. DIS of adaxial showed a negative correlation with tiller number (TN), while DIS of abaxial showed a positive correlation with GNP.

Regeneration Potential of Immature Embryos during Seed Development in Spring and Winter Wheat Genotypes

  • The immature embryos during seed development were examined to predict the suitable embryos for an efficient regeneration system. Five spring wheat genotypes and five winter wheat genotypes were tested using immature embryos as explants. Spring wheat genotypes showed much higher levels of plant regeneration than those of winter wheat genotypes. The highest frequencies of embryogenesis and regeneration were obtained when embryos at 13-14 days after anthesis (DAA) were used as explant and decreased using embryos at 21-22 DAA during seed development. Significant differences were also found for callus induction and regeneration as affected by immature embryo size. The regeneration efficiency was drastically decreased in spring and winter wheat genotypes when embryos larger than 2.0 mm of length were used. The optimum developmental stage and embryo length for regeneration efficiency were at 13-14 DAA and 1.0-1.5 mm, respectively. The selection of suitable embryos for the high frequencies of embryogenesis and regeneration leads us to efficient genetic improvement of wheat.

Genetic Analysis of Wheat for Plant Height by RNA-seq Analysis of Wheat Cultivars 'Keumkang' and 'Komac 5'

  • One of the most widely grown food crops in the world, wheat, is increasing more lodged since for increased rains and winds caused by abnormal climate. During the Green Revolution, shorter wheat cultivars were bred using many Rht genes to increase lodging resistance. However, since only some Rht genes were used for breeding shorter wheat, it may have had a limited impact on wheat breeding and reduced genetic diversity. Therefore, it is essential to search for genes that have breeding potential and affect dwarfism in order to increase the genetic diversity of dwarf characteristics in wheat. In this study, we performed the RNA-seq between 'Keumkang' and 'Komac 5' ('Keumkang' mutant) to analyze the difference in plant height. Differentially expressed genes (DEGs) analysis and Gene function annotation were performed using 265,365,558 mapped reads. Cluster set analysis was performed to compress and select candidate gene DEGs affecting plant height, stem and internode. Gene expression analysis was performed in order to identify the functions of the selected genes by condensing the results of the DEG analysis into a cluster set analysis. This analysis of these plant height-related genes could help reduce plant height, improve lodging resistance, and increase wheat yield. Its application to wheat breeding will also affect the increased genetic diversity of wheat dwarfism.

Optimal Nitrogen Fertilizer Application Method for High Quality Bread Wheat Production

  • For high quality bread wheat production in Korea, it is necessary to develop optimal nitrogen (N) fertilizer methods. For optimal N fertilizer, we evaluated the alteration of growth, yield, yield components and end-use qualities according to the treatment of N fertilizer amounts and timings at heading stages. Growth, yield, yield components, and end-use quality weren't altered by various timings of N fertilizer treatment conditions whereas, 1,000 grain weight and lodging degree was increased by increasing amounts of N fertilizer treatment conditions at 7 days after heading (7 DAH). Especially, lodging degree was significantly increased by 6kg/10a of N fertilizer treatment conditions at 7 DAH. The flour protein contents increased by various amounts of N fertilizer treatment conditions. However, SDS-sedimentation and bread loaf volumes were decreased by exceeding 6kg/10a of N fertilizer treatment conditions at 7 DAH. When considering the quality of bread, 6kg/10a N fertilizer treatment is best, but 3kg/10a N fertilizer treatment is more suitable for both quality and lodging at 7 DAH. Therefore, it is preferable to fertilize 3kg/10a of nitrogen at 7 DAH in addition to standard fertilizer when cultivate bread wheat.

Studies on the Farinograph Test and Crude Protein Content of Wheat Flour (밀가루의 조단백함량(粗蛋白含量)과 생지형성(生地形成)에 관(關)한 시험(試驗))

  • Six kinds of wheat flour were used for the assessments of the content of crude protein and the valorimeter value of Farinograph. Results obtained from these assessments are as follows. 1. In the case of common wheat varieties, a great differences are understood between Korean wheat and American wheat. The content of crude protein is negatively correlated to the valorimeter value in Korean wheat variefies, but there is a proportional tendency in American wheat varieties. 2. In the case of American wheat varieties, distinct differences are recognized between common wheat and durum wheat. The content of crude protein is directly correlated to the valorimeter value in common wheat varieties, but there is no proportional tendency in durum wheat.

Flour and End-Use Quality of "Charmdlerak" Wheat, A Korean Wheat (국내산 밀 브랜드 "참들락"의 품질 특성)

  • "Charmdlerak" a new high-quality Korean wheat, was produced with production management from the Rural Development Administration (RDA). We evaluated the characteristics of grain, flour, and end-use quality of "Charmdlerak" wheat to assess consumer satisfaction with this new variety of wheat. Eighty-two farmers (450MT/100 ha) in Gwangju metropolitan city produced Keumkangmil wheat and 23 farmers (30 ha) produced "Charmdlerak" wheat "Charmdlerak" wheat had 1.55% ash content and 11.0-13.0% protein content "Charmdlerak" flour was milled by a commercial machine in Samyang Milmax. The protein content of "Charmdlerak" was slightly higher than that of flour from Hard Red Winter Wheat (HRWW), the most popular multipurpose flour in Korea. The ash content and color of "Charmdlerak" wheat were similar to those of HRWW. End-use quality testing of cooked noodles and bread indicated that "Charmdlerak" flour resulted in softer noodles and similar bread loaf volume compared with products made from Keumkangmil wheat.

  • Wheat is one of important food crop in the world. However, wheat has some negative things that are allergen. Wheat includes four different allergen kwon as alpha-, beta- and gamma gliadin and amylase inhibitor. Recently, people are interesting to gluten free food or low gliadin food. To study about wheat allergies and research trend is important for future research like as wheat breeding and allergy reduction technology. In this study, we analyzed that the reported on the research field of wheat allergy have been reported until now, and was to provide direction for future research. The analysis of 235 episodes of major papers published from 2007 to 2016. The last 5 years from 2012, wheat allergy appears increasing number of related papers. The ratio of national papers 13% and 60% were published by the United States and other European countries, respectively. The fields of wheat allergen-related preclinical technology and wheat allergen related to genome research for discovery technology were represented high rate by 58% and 26%, respectively. In the case of Korea, significantly account genetic and breeding areas. Recently, however, the research of glutenin protein which is closely linked to wheat allergy is in progress. So, we expected to increase wheat allergy of the research is in the future in Korea.

Comparison of structure and physicochemical properties of commercial domestic and imported wheat starch (시판 우리밀과 수입밀 전분의 구조 및 이화학적 특성 비교)

  • This study characterized the chemical structure and physical properties of domestic commercial wheat starch and compared them with those of imported commercial wheat starch. Three varieties of domestic commercial wheat starch (DWS) were compared to three types of imported wheat starch (IWS). The morphology of DWS granules was spherical with diameters 17.0-18.3 ㎛; the IWS granules exhibited various diameter sizes (16.6-17.7 ㎛). The amylose content of both DWS and IWS was between 23.2-23.8%. DWS exhibited smaller gelatinization temperature ranges and gelatinization enthalpies compared to IWS. These results suggest that IWS-PW (plain wheat starch) is a mixture of many types of wheat starch. In conclusion, the quality of domestic wheat flour and imported wheat flour was related to gluten content as well as to the starch properties.

Sensory Characteristics of Pound Cake baked from Korean Wheat Flour (국산밀로 제조한 파운드케익의 품질)

  • This study was conducted to investigate the difference in the characteristics of pound cakes baked from one imported and three Korean wheat flours through sensory evaluation and physical measurement. From the result of sensory evaluation, it was shown that cakes baked from Korean wheat flour were not preferred than cake baked from imported wheat flour in texture, taste and overall preference. L, a, b value of crumb color of pound cake baked from imported wheat flour was 81.09, -0.49, 28.17. It means that crumb color of pound cake baked from imported wheat flour was brighter yellow than that of cakes baked from Korean wheat flour. The volume of pound cakes baked from Korean wheat flour(D, B) was larger than that of cake baked from imported wheat flour. It was 833 and 800 cc. There was no significant difference in hardness within cake samples.
