This study was carried out to prepare green teas by traditional roasting manufacturing process, Ku Geung Ku Po and to determine the quality charateristics of the green teas by examining the change of their main components induced during this roasting process. The content of total sugars in unroasted tea leaves was 7.82%. Its content of roasted teas was decreased by increasing the number of roasting and there was significantly differences between samples. The content of total sugars in 9th roasted green tea was 3.98%. The total nitrogen contents of green teas produced by this process were 4.96∼6.38%. The more the number of roasting and the less content of tannin in green teas. And the ratio of total nitrogen and tannin in tea leaves 21.97 but its ratio in 9th roasted tea was increased to 45.54. The ascorbic acid in tea leaves consisted in 1,820.3 mg/100g but its content was decreased by increasing the number of roasting process. Whereas the content of caffeine in green teas was not reduced significantly by this traditional method. Of all amino acids, green tea produced by Ku Jeung Ku Po was rich glutamic acid, lysine and aspartic acid. And especially, phenylalanine, which was rarely found in other green teas, was abundant in these green teas. The compositions of glutamic acid and methionine were increased as increasing the number of roasting process but those of aspartic acid and arginine decreased by these processing. The main fatty acids of Ku Jeung Ku Po green tea were linolenic acid, linoleic acid and palmitic acid and the contents of unsaturated fatty acid in green teas were composed over 70% of total fatty acid. And the fatty acid contents in green teas were not affected during Ku Jeung Ku Po's process. The contents of minerals in these teas was rich in the oder of potassuim. magnessuim and calciumim, and these contents were not observed the prominant change during the process.
The purposes of this study are : (a) to investigate the attitude to various coffee and tea of women, (b) to analyze the characteristics of each classified group according to eating frequency, and (c) to abstract the factors which can influence the consumption of coffee and tea. Questionnaires were hand delivered to 1,200 women residing in Seoul. A total of 1012 was usable: resulting in 84% response rate. Statistical data analysis was completed using SAS Package program for the one way-analysis of variance(ANOVA), Duncan's multiple comparison test, factor analysis and analysis of covariance (ANOCOVA). (a) Instant coffee was most consumed(22.1 times a month), green tea in tea bag(8.7), Donggulre tea(8.3), Coffee (72) in order of frequency. Among Korean traditional tea Donggulre tea(8.3) and Yuja tea (2.0) were most prefered but still a minute quantity of Korean traditional tea was enjoyed. (b) Coffee and Black tea was regarded unhealthful but habitual, delicious and familiar beverage. Green tea was regarded good for health but not so habitual, practical and familiar. The consumer awareness can be grouped into 3 clases : Healthy factor, Habitual Practical factor, Familiar factor. (c) The sociodemographic characteristics of women influenced the beverage consumption. Women in their 30s and 40s consumed much of instant coffee and coffee. 10s and 20s consumed much of canned coffee. Working women drank much of instant coffee and green tea in tea bag. Women in highest income group$({\geq}\;4,000,000\;won/month)$ consumed much of coffee. (d) The factors which influenced the eating frquency of those beverages were various. The eating frequency of instant coffee was influenced by the age, familiar factor and habitual practical factor. And coffee were influenced by income level, habitual practical factor. The frequency of green tea in tea bag was influenced by habitual practical factor and familiar factor, green tea was influenced by healthy factor and habitual practical factor, Donggulre tea was influenced by habitual practical factor.
This study was investigated the antioxidative and antimicrobial activities of a water extract (70$^{\circ}C$) of traditional Korean teas (rose, chrysanthemum, pine needles, mulberry, persimmon leaves, and green tea). Total phenol contents in rose, chrysanthemum, pine needles, mulberry, persimmon leaves, and green tea were 272.8, 74.6, 153.5, 73.5, 69.5, and 260.8 mg tannic acid/g extract, respectively, whereas total flavonoid contents were 75.1, 47.8, 26.8, 40.0, 27.9, and 99.5 mg quercetin/g extract, respectively. The order of electron donating abilities of Korean traditional tea water extracts (1 mg/mL) were : rose (96.8%) > green tea (95.3%) > pine needles (71.3%) > chrysanthemum (36.8%) > mulberry (28.9%) ${\qeq}$ persimmon (28.8%). The order of nitrite-scavenging abilities at pH 1.2 (2 mg/mL) was green tea > rose > pine needles > chrysanthemum ${\qeq}$ mulberry ${\qeq}$ persimmon. The order of hydroxyl radical scavenging activity (5 mg/g) was chrysanthemum > mulberry > rose > persimmon leaves > pine needles > green tea. Rose extracts showed antimicrobial activity against Micrococcus luteus, Bacillus cereus, Salmonella enteritidis, and E. coli, whereas green tea extracts showed strong antimicrobial activity aginst S. enteritidis.
A field experiment was conducted to evaluate effect by split-application of slow-release fertilizer on the tea plant. The yield of the 2nd harvested tea leaves was not different to the slow-release fertilizer of two time split manuring had been doing Sep. or Mar. compared with the traditional manuring had been doing four time split manuring, but that of the slow-release fertilizer to one time split manuring in Sep. had decreased $12.5{\pm}1.5%$. In case of the 2nd harvested leave, the contents of chemical components related to quality such as total nitrogen, total amino acid were somewhat higher in the slow-release fertilizer (two time split manuring) than in the traditional manuring, but those of tannin, and caffeine were low, and those of chlorophyll, vitamin C, free sugar and theanine were not different to out of treatments. In scoring test, appearance and quality of green tea were more excellence in the two time split manuring compared with one time split manuring of slow-release fertilizer and with the traditional manuring (four time split manuring). Therefore, I thought that use of slow-release fertilizer be increased yield and quality of tea leaves, and improved efficiency nature of nitrogen, phosphate and potassium out of soil fertilizer components.

The significance of Boseong Tea Agriculture System lies in its harmonious coexistence with the surrounding environment, producing high quality teas and maintaining its biodiversity. Boseong Tea Agriculture System has been inscribed as Korea's Important Agricultural Heritage System (KIAHS) in 2018, but the Aging Society of tea farmers is threatening the conservation and succession of tea farming of the region. The study suggests designation of Boseong Tea Agriculture System as one of Globally Important Agricultural Heritage System (GIAHS), objecting conservation and succession of Boseong Tea Agriculture System. The study has reviewed GIAHS, KIAHS, Boseong Tea Agriculture System and surveyed tea farmers of Boseong for 3 months from March to May, 2020. The survey method includes face to face interview, phone interview (ones couldn't be reached for face to face interview) and in-depth interview of community leaders and experts, verifying the Aging Society status in Boseong tea agricultural industry. The survey result includes the following. Average age of Boseong tea farmers is 69.4 years old. Family tea-farming over two generation is 36% (54 household), and 79.4% (119 household) depends on 90% of income from tea production. The in-depth interview shows the aging tea farming society is most serious concern of tea farmers and GIAHS designation will support reliability and recognition of Boseong tea, helping conservation and succession of Boseong Tea Agriculture System. GIAHS designation will enhance and share the value of Boseong Tea Agriculture worldwide and be able to inherit the heritage for our future generation.
Sujeonggwa is a popular Korean traditional beverage. However, consumers only prepare it at home on special occasions due to the time and effort required. Developing a convenient form of Sujeonggwa may promote its consumption. The objectives of this study were to 1) develop Sujeonggwa in a tea bag using different sweeteners and 2) describe the characteristics of Sujeonggwa's flavor in tea bag samples and 3) determine how well consumers accept the tea bag samples. A total of four types of Sujeonggwa in a tea bag were developed: two samples with varying amount of sugar, another sample using sugar and stevia and the last sample using sugar and short chain fructo-oligosaccharide as a sweetener. A commercial ginger tea and cinnamon tea were used as control products. Descriptive analysis was conducted on the same six samples and a descriptive panel identified its attributes. A total of 61 consumers evaluated acceptability using a nine-point hedonic scale and how they felt about intensities of the samples using a just-about-right scale. The results indicated that consumers liked Sujeonggwa samples in a tea bag more than commercial ginger tea and cinnamon tea.
This study was carried out to prepare green tea by traditional roasting process, Kujeungkupo, and to determine its sensory characteristics. The carotenoid content in green tea was increased by roasting and reached 1,317 mg/100 g by Kujeungkupo. Of all carotenoids, the contents of lutein and $\beta$-carotene were 1,170 mg/100 g and 111.1 mg/100 g, respectively. The total cathechin content in green tea was 14.57 g/100 g after 9th roasting. The more the number of roasting the little contents of cathechin in green teas. Of all cathechin, epigallocathechingallate was the highest(6.80g/100 g) followed by epicathechingallte and epicathechin. total cholrophyll content was 141 mg/100 g of green tea. The free sugar content in Kujeungkupo green tea wet 2.18 g/100 g, of which sucrose comprised 46% (1.01 g/100 g). The color value ($\Delta$E) of Kujeungkupo green tea was 16.25. In sensory evaluation, sweet taste was the highest in green tea roasted 3 times and the flavor was best in that roasted 5 times. The sweet and astringent tastes of green tea had negative relationships with a and b values. The content of cathechin in green tea had a negative relationship with sweet taste and a positive relationship with astringent taste.
The purpose of this study was to investigate effect of the amounts of unpolished glutinous rice flour with green tea powder difference of adding amount on the sensory and objective characteristics of Heunmi-nokcha-injulmi which is KOREAN TRADITIONAL RICE CAKE supplemented with green tea. The results were as follow : According to sensory evaluation of Heunmi-injulmi, the score of the color, flavor, chewiness, and overall of adding green tea were higher than those of no-adding green tea, especially the best acceptance was shown in adding 2% green tea. The more the amount of green tea powder was increased, the more the hardness and gumminess of Heumni-injulme was increased in the textural profiles, whereas the cohesiveness and elasicity of those was decreased. The moisture content of Heunmi-injulme adding green tea powder was ranged to 42-45%, and it was increased as the amount of green tea powder be increased. The more the amount of adding green tea powder was increased, the more yellow and green color was changed darker and stronger. Refer to this study with the advisable recipe for as follow : Heunmi-nokcha-injulmi adding 294g(98%) unpolished glutinous rice flour and 6g(2%) green tea powder.
The purpose of this study was to investigate effect of the amounts of unpolished glutinous rice flour with green tea powder difference of adding method on the sensorty and objective characteristics of Heunmi-nokcha-injulmi which is KOREAN TRADITIONAL CAKE supplemented with green tea. The results were as follow: According to sensory evaluation of Heunmi-injulmi adding twice infused green tea powder, the acceptance was the bast in the hardness, moistness, chewiness, and overall quality when adding 6% green tea. The more the amount of two infused green tea power was increased, the more the hardness of Heunmi-injulmi was increased in the gextural profiles, whereas the cohesiveness, elasticity, and chewiness of those was decreased. The moisture content of Heunmi-injulmi adding infused green tea powder was ranged to 41-44%, and it was decreased as the amount of two infusedgreen tea powder be increased. The more the amount of adding green tea powder was increased, the more yellow and green color was changed darker and stronger. The Overall quality in the sensory measurement of Heunmi-injulmi adding two infused green tea powder had positive correlation with Adhesiveness in the measurement of food testing machine. Refer to this study with the advisable recipe for Heunmi-nokcha-injulmi as follow : Heunmi-nokcha-injulmi adding 282g(94%) unpolished glutinous rice flour and 18g (6%) two infused green tea powder.

This study was conducted to compare the nutrient and chemical contents of traditional Chungtaejeon tea with that of green tea which was harvested in Jangheung, Jeonnam district. Vitamin C, amino acids and total nitrogen contents of Chungtaejeon tea were lower than that of green tea by 0.30, 2.30 and 4.20g/100g, respectively. The tannin, caffeine, reducing sugar and chlorophyll contents in Chungtaejeon tea were the same as those in green tea. Comparing catechin contents, catechin (C), epicatechin (EC), and epigallocatechin (EGC) in Chungtaejeon tea were lower than those of green tea. However, gallocatechin (GC), epicatechin gallate (ECG), epigallocatechin gallate (EGCG) and catechin gallate (CG) showed no significant difference between Chungtaejeon tea and green tea. The flavonoid contents of Chungtaejeon tea and green tea showed higher quercetin and kaempferol contents in green tea, and higher myricetin content in Chungtaejeon tea. The measured amino acid contents for threonine and aspartic acid were lower, and for glutamic acid were higher in Chungtaejeon tea compared with those in green tea. However, free amino acid content in Chungtaejeon tea and green tea showed no significant difference. Potassium and magnesium contents in Chungtaejeon tea were lower compared to green tea but no significant difference was found for iron, manganese or calcium contents when comparing the two teas.
