중학생의 학교급식에 대한 급식만족도 - 광주ㆍ전남지역을 중심으로 - (Degree of Satisfaction on the School Foodservice among the Middle School Students in Gwangju and Chonnam Area.)

  • A survey on the school foodservice was conducted from 693 middle school students to examine their degree of satisfaction on foodservice with the object to enhance the quality of school foodservice in Gwangiu and Chonnam area. The degree of satisfaction with school foodservice ranked high in taste, temperature and service categories. There were notable differences in the satisfaction level by the gender of the students. Male students ranked higher than female students in taste, temperature and the sanitary condition of food containers. According to grades, first grade students ranked the highest in satisfaction of food selection, temperature, services and cafeteria. Regarding the amount of left-overs, soup and pot-stew were the greatest followed by side dishes. Reasons for leftover food were listed as being tasteless, having no appetite, or large serving size. The items of priorities on school foodservice were revealed as sanitary conditions, taste and variety in menu selection by the students.

양산대학생들의 음주행동에 관한 조사연구(II) (A Study of Drinking Behaviors Among Students at Yangsan College)

  • To investigate the drinking pattern and behaviors of Yangsan College students, a self-administrated survey was conducted to the subjects, composed of male 336 and female 165. The results of this study were as follows: 1. With regards to kind of alcoholic beverage, 71.6% of subjects responds have a preference for soju, which is favored more by male than by female. 2. The most favorite side dishes are stew and soup(48.2%), then roasted meats and fruits. 3. In the drinking habit, 40.4% of subjects responded that they drink themselves to sleep, 20.6% have more chatter, and 12.5% become silent. 4. 80% of the subjects, some of which recognized overdrinking, responded that the culture to have a drinking after official events is essential, while 6.6% responded that it goes wrong.

  • Vibration analysis of pipe with Elbow subject to internal pressure and temperature is studied through a commercial finite element analysis tool. The natural frequency of Elbow increased very slightly as internal pressure increases. Meanwhile, the frequency of Elbow decreased as temperature increases. It is shown that frequency deviation caused by temperature was greater than that caused by pressure. As the length of Elbows increases, frequency deviation by temperature stew rapidly, but frequency deviation by pressure was not so high. It is concluded that more concern needs to be focused on temperature rather than on pressure in terms of natural frequency.

서울 지역 일부 초등학교 급식 식단의 식품 및 영양소 섭취 분석 (Analysis of Food and Nutrient Intake of Menu for Elementary School Foodservices in Seoul)

  • This study was carried on the analysis of food and nutrient intake for elementary school foodservices in Seoul. The survey was conducted through the 200 menus submitted by the 5 elementary schools in Seoul. Energy and all nutrient intakes exceeded the Recommended Daily Allowances of Koreans. Carbohydrate provided 56.32% of total energy intake; protein accounted for 16.06%; fat provided 27.62%. Total intake of food was 549 g on the average, which consisted of 90.04 g cereals, 130.17 g vegetables, 31.56 g meats, 21.63 g fishes and 200.00 g milks. The basic menu patterns were Rice+Soup (or Stew)+Kimchi, and 2 other side dishes including milk. These data underscore the necessity of developing the 'Standard Menu' for elementary school foodservices.

  • The paper presents the experimental analysis of a Stewart platform-based force-torque senor. The closed-form solution of forward kinematics of the Stewart platform is derived approximately by way of a linearization technique, and the solution is used in the force analysis of the force-torque sensor. An exper- mental studies show that the proposed method including gravity compensation algorithm is valid for Stew- art platform-based force-torque sensors. The performance of the developed force-torque sensor is evaluated in view of accuracy and linearity in measurements.

  • This paper proposes a new test generation algorithm to detect stuck-open faults regardless of tine-skews in CMOS circuits. For testing for stuck-open faults regardless of time-skews, in this method, Hamming distance between the initialization pattern and the test pattern is made 1 by considering the responses of the internal gates. Therefore, procedure of the algorithm is simpler than that of the conventional methods because the line justification is unnecessary. Also, this method needs no extra hardware for testability and can be applied to random CMOS circuits in addition to two-level NAND - NAND CMOS circuits.

한국 성인들의 24시간 소변 분석법에 근거한 고나트륨군의 혈압과 고나트륨 섭취관련 위험인자에 관한 연구 (Blood Pressure and Dietary Related Risk Factors Associated with High Sodium Intake Assessed with 24-hour Urine Analysis for Korean Adults)

  • Objectives: This study was conducted to examine blood pressure and other characteristics of a high sodium intake group assessed with 24-hr urine analysis and the dietary factors related to the risk of high sodium intake among Korean adults. Methods: A cross-sectional study was conducted with adults aged 20-59 years. Subjects who completed 24-hr urine collection (N = 205) were divided into 3 groups (tertile) according to the sodium intake estimated with 24-hour urine analysis. We compared the blood pressure, BMI and dietary related factors of the 3 groups (low, medium, high sodium intake group) with General Linear Model (GLM) and Duncan's multiple range test (p < 0.05). The risk factors related to high sodium intake were assessed with odds ratio (p < 0.05). Results: The sodium intake (mg/day) of the 3 groups were $3359.8{\pm}627.9$, $4900.3{\pm}395.1$ and $6770.6{\pm}873.9$, respectively, corresponding to daily salt intake (g/day) 8.5, 12.4 and 17.2, respectively. High sodium group showed significantly elevated age, BMI and systolic/diastolic blood pressure. Being male gender was associated with significantly increased risk of sodium intake (OR = 1.972; 95%CI: 1.083-3.593). The other factors related to high sodium intake were higher BMI (${\leq}25$) (OR = 2.619; 95% CI: 1.368-5.015), current alcohol consumption (OR = 1.943; 95%CI: 1.060-3.564), and having salty soybean paste with salt percentage > 14% (OR = 3.99; 95% CI: 1.404-6.841). The dietary attitude related to increased risk of high sodium intake included 'enjoy dried fish and salted mackerel' (p < 0.001) and 'eat all broth of soup, stew or noodle' (p < 0.001). Conclusions: Because high sodium intake was associated with higher blood pressure, nutrition education should focus on alcohol consumption, emphasis on related dietary factors such as using low salt soybean paste, improvements in the habit of eating dried fish and salted mackerel or eating all broth of soup, stew or noodle.

서울시내 일부 가정식, 외식과 학교급식의 국물음식 나트륨 함량 비교 (Comparison of the sodium content of Korean soup-based dishes prepared at home, restaurants, and schools in Seoul)

  • 본 연구에서는 서울시내 일부 가정식, 외식, 학교급식에서 국물음식을 수집하여 건더기와 국물 각각의 나트륨 함량을 분석하고 제공 환경에 따른 나트륨 함량을 비교하였다. 가정식, 외식, 학교급식에서 건더기와 국물이 1인 분량에서 차지하는 나트륨 함량은 국 및 탕류와 물김치류에서는 국물이 더 높은 비율을 차지하였으며, 찌개류와 면 및 만두류에서는 국물과 건더기가 비교적 유사한 비율을 보이고 있었다. 특히 1인 분량 내에서 국물이 차지하는 나트륨 함량은 최소 43.7%에서 최대 73.2%까지 높았으며, 이를 바탕으로 국물을 적게 섭취하는 것만으로도 상당량의 나트륨 섭취를 줄일 수 있을 것으로 기대할 수 있다. 100 g 당 나트륨 함량은 전식품에서 가정식과 외식이 학교급식보다 각각 유의하게 높았으며, 건더기에서는 외식이 가정식보다 유의하게 높았고, 국물에서는 가정식과 외식이 학교급식보다 각각 유의하게 높고 외식이 가정식보다 유의하게 높은 것으로 나타났다. 연구 결과를 바탕으로 볼 때, 동일한 종류의 음식이라 할지라도 가정식, 학교급식, 외식에 따라 나트륨 함량의 차이를 보이며 가정식과 학교급식, 가정식과 외식, 학교급식과 외식 간의 동일한 종류의 음식에서 나트륨 함량의 차이가 있어, 건더기 및 국물의 섭취 정도에 따라 실제 섭취하는 나트륨 양이 달라짐을 확인할 수 있었다. 그러므로 보다 정확한 나트륨 섭취량 추정을 위하여 음식이 제공되는 환경 및 섭취 방식에 따라 구분된 데이터베이스를 적용해야 할 것이며, 향후 관련 대규모 연구를 통해 대표성을 가진 데이터베이스의 확충이 필요할 것으로 사료된다.

유치원 급식의 위생관리 실태조사 및 미생물적 품질평가 (Evaluation of Sanitation Management Practices and Microbiological Quality of Foods in Kindergarten Foodservice Settings)

  • This research aims to audit foodservice sanitation management practices and to assess microbiological quality of foods and their food contact environments in kindergartens. Sanitation auditing was conducted in 10 kindergartens in Seoul, Gyeonggi, and Incheon areas to assess the levels of safety practices. Results revealed that the surveyed kindergartens scored 41.4 out of 100 points, on average. The average scores of each category were 6.4/11 (58.1%) for facilities sanitation, 4.2/12 (35.0%) for equipment sanitation, 2.4/10 (24.0%) for personal hygiene, 5.1/10 (51.0%) for food ingredients management, 6.0/17 (35.3%) for production process, 5.4/10 (54.0%) for environmental sanitation, 2.0/6 (33.3%) for kitchen utensils sanitation, and 2.2/6 (96.7%) for safety management. Microbiological quality of raw, prepared foods, personal sanitation (hands), environmental sanitation, and drinking water were assessed. Total plate counts (TPC) of the following menus exceeded the critical limit: seasoned leek (5 log CFU/g), cucumber (5.0 log CFU/g), panbroiled fish paste (TNTC at $10^4$), tangpyeongchae (5.3 log CFU/g), egg rolls (6.1 log CFU/g), panbroiled sausage (TNTC at $10^4$), and soft tofu pot stew (TNTC at $10^4$). Coliform which exceeded the standard limit were detected from seasoned leek (2 log CFU/g), cucumber (2.5 log CFU/g), panbroiled fish paste (2.0 log CFU/g), egg roll (3.8 log CFU/g), tangpyeongchae (4.0 log CFU/g), panbroiled sausage (2.3 log CFU/g), and soft tofu pot stew (3.7 log CFU/g). For seasoned foods (muchim), S. aureus ranged 2.2~2.9 log CFU/g. In food workers' hands, microbial profiles ranged 3.8~7.9 log CFU/hand for TPC, ND~4.5 log CFU/hand for coliforms, ND~4.7 log CFU/hand for S. aureus, and ND~5.3 log CFU/hand for Enterobacteriaceae. Microbiological profiles of food contact surface of knives, cutting boards, dish-clothes, and trays showed possibilities of cross-contamination. General bacteria were 2.1~4.5 logCFU/ml in 4 purified water samples and E. coli were found in the kitchen of one kindergarten. These results suggested that environmental sanitation management practices need more strict improvement: effective sanitation education methods and practices were strongly required, and more strict sanitation management for cooking utensils and equipment were required.
