Moisture Adsorption Preventative Effect of Fermented Red Ginseng Extract Spherical Granules by Using Hydrophobic Compounds (홍삼의 지용성 성분을 이용한 발효홍삼 농축액 알갱이의 흡습방지 효과)

  • For prevention of moisture adsorption, the fermented red ginseng extract spherical granules were coated by using hydrophobic fractions. The hydrophobic parts were extracted from red ginseng such as the perfect soluble part in 90% ethanol (PSE) and non-soluble part in hot water (NSHW). The optimum operating conditions for making fermented red ginseng extract spherical granules coated with PSE were a feeding rate (FR) of 0.49 mL/min, atomization air pressure (AP) of 2.14 bar, and product temperature (PT) of $48.96^{\circ}C$., whereas conditions for granules coated with NSHW were a FR of 0.61 mL/min, AP of 2.75 bar, and PT of $46.30^{\circ}C$. The solubility of coated fermented red ginseng extract spherical granule was lower than that of not coated. The fermented red ginseng extract spherical granules coated with NSHW showed more preventative effects for moisture adsorption than those coated with PSE, although there were no differences in solubility and fluidity. In the sensory evaluation, granules coated with hydrophobic fractions extracted from red ginseng were shown to be bitterer and less soluble than those not coated spherical granules. In conclusion, fermented red ginseng extract spherical granules coated with hydrophobic extracts from red ginseng showed a preventative effect against moisture.

Quality Characteristics of White pan bread with Led Ginseng powder (홍삼 분말을 첨가한 식빵의 품질특성)

  • This study investigated properties of bread utilizing extracts of ginseng powder. Ginseng powder bread was baked. Addition of 1~3% of ginseng powder extract to wheat flour was carried out. Rheological properties, dough pH, dough volume, bread volume, water absorption capacity, baking loss, bread color, bread texture, and sensory evaluation were tested to examine properties of bread baked with extracts of ginseng powder. The results are as follows. The dough pH decreased gradually with increasing ginseng powder extract concentration. The bread volume, baking loss, and bread weight increased with increasing use of ginseng powder extract, and springiness and cohesiveness increased as red ginseng powder additive concentration increased. Lightness of the L decreased while a and b increased. In the sensory evaluation, ginseng powder with 1% ginseng powder extract was evaluated as the best for taste, texture, flavor, and overall acceptability.

Ginsenoside Composition and Quality Characteristics of Red Ginseng Extracts prepared with Different Extracting Methods (추출방법에 따른 홍삼추출액의 사포닌 조성과 품질특성)

  • This study was conducted to compare the contents of ginsenoside according the water extract conditions of red ginseng. In method A, red ginseng extract was prepared at $75^{\circ}C$ for 18 hours by 1 time extraction, and method B, the preparation was done at $85^{\circ}C$ for 18 hours by 1 time extraction. In method C, the primary extract prepared at $75^{\circ}C$ for 9 hours was blended with the secondary extract prepared by re-extracting the red ginseng residue obtained after the primary extraction, at $85^{\circ}C$ for 9 hours. Method D was the same procedure as method C but the extraction temperature for the primary extraction was $85^{\circ}C$ and that for the secondary extraction was $95^{\circ}C$. The contents of total and $Rb_1$, $Rg_1$ and $Rg_3$ ginsenoside were highest in Method C. The content of prosapogenin (ginsenoside $Rg_2$, $Rg_3$, $Rb_1$ and $Rb_2$) was highest in Method B. There was no consistent tendency in Brix, pH, Hue value and absorbance among extraction methods.

  • This study was carried out to investigate the effect of red ginseng extract on development of pepsinogen 1 decrased pyloric glands in experimental stomach carcinogenesis in Sprague-Dawley male rats. Sequential quantitative analyses (by ABC immunohistochemical staining) were made of pepsinogen 1 decreased pyloric glands (PDPG) after treating rats first with a single dose (160 mg/kg) N-methyl-N'-nitrosoguanidine (MNNG) and then with N-ethyl-N'-nitro-N-nitrosoguanidine (ENNG) (100ug/ml of drinking water) as a second gastric carcinogen (or promoter).

Effect of Preheating Condition of Raw Ginseng on the Yield and Physical Property of Korean Red Ginseng Extract (수삼의 열처리 조건에 의한 홍삼 엑스의 수율 및 물리성 변화)

  • In order to enhance the yield and physical property of Korean red ginseng extract, preheating stage was added to the inception of red ginseng manufacturing process and its effect was investigated. Preheating of raw ginseng at $70^{\circ}C$ for 2 hour followed by steaming for 2 hours increased the yield of water and 60% alcohol extract most effectively. Those yields were the highest at the same condition as above except preheating time shortened to 1 hour at $70^{\circ}C$. Steaming time had little effect on the yield of water and 60% alcohol extract. The content of starch in red ginseng was reduced effectively by preheating of raw ginseng at $70^{\circ}C$. The brown color intensity of red ginseng increased in proportion to preheating temperature in the range of $50-70^{\circ}C$. However, there was no increase in the color intensity at $80^{\circ}C$.

  • To study the effects of diets containing red Ginseng, rats were fed diets containing various amounts of red Ginseng for 10 weeks. The Ginseng diets were 600 mg of red Ginseng extract concentration, 1,200 mg of red Ginseng powder, 6,000 mg of red Ginseng tea, 3,000 mg of red Ginseng extract concentration, 6,000 mg of red Ginseng extract concentration, 12,000 mg of red Ginseng extract concentration per Kg of diet, and control. As results, growth rate, feed efficiency ratio, organ weight, and hematocrit value showed no statistically significant differences between red Ginseng fed animals and the controls. Serum cholesterol level and GPT were slightly lower in the experimental animals than those in the controls. These differences, however, were not statistically significant. Serum GOT activities for all experimental animals showed no statistically significant except for Group fed with 6,000 mg of red Ginseng extract concentration per Kg diet. This Group revealed significantly lower GOT activities than those of the controls statistically. No abnormalities of liver, spleen, and kidney were observed in the experimental animals.

  • Fludarabine, a chain terminating anti-cancer drug, is a purine analogue that causes DNA strand breaks in normal cells. In this study, we determined if A. melanocarpa and Korean red ginseng extract mixture reduce cytotoxicity of fludarabine. Treatment of HaCaT cells with $10{\mu}M$ of fludarabine for 24 hours decreased cell viability and increased DNA strand breaks. Treatment of A. melanocarpa and Korean red ginseng extract mixture for 24 hours increased cell viability as compared with single extract treatment. The protective effect of these extracts on cell activity increased in a concentration-dependent manner. DNA strand breaks induced by fludarabine decreased as concentration of extract mixture increased. p-H2AX level, a marker of DNA strand breakage, decreased depending on the concentration of extract mixture. The effect of mixed extract of A. melanocarpa and Korean red ginseng on DNA damage is due to the anti-oxidative effect of A. melanocarpa and signal transmission through glucocorticoid receptor upon binding of saponin of Korean red ginseng.

Controls of the Hydrolysis of Ginseng Saponins by Neutralization of Organic Acids in Red Ginseng Extract Preparations (홍삼의 가열추출 과정중 유기산 중화에 의한 사포닌의 가수분해 억제)

  • Glucosidic bonds at the C20 position of the sapogenins were hydrolyzed easily in the lower pH, higher temperatures and longer times to give prosapogenins and sugars. The glucosidic bond of saponin at the C3 of ginsenoside-Rb1, which is secondary carbon, was relatively stable due to the low electron density of -0.2. But the bond of saponin at the C20 position, which is tertiary carbon with the relatively high electron density of -0.3, was liable to be hydrolyzed even in weakly acidic solution by the increase of heating time. On the other hand, red ginseng contained 13.34 mg/g of citric acid, 8.78 mg/g of malonic acid, 3.70 mg/g of oxalic acid, 2.13 mg/g of malic acid and 0.44 mg/g of succinct acid. Ginseng saponins were very stable in ginseng extract neutralized with sodium carbonate or sodium bicarbonate corresponding to the equivalent amount of the total organic acid in the red ginseng.

  • In order to evalulate the qualities of red ginseng extract and decrease precipitate fonnation in ginseng drink, red ginseng extract was hydrolized with ${\beta}-amylase$ and transglucosidase. $5.2\%$ isomaltose was produced as isomaltooligosaccharides and glucose content was increased in the enzyme treated ginseng extract. Contents of ginsenoside $R-b_1\;and\;R-b_2$ were decreased, whereas ginsenoside-Rd was increased by the enzyme treatments. The growth of 3 strains of bifidus spp. and 4 strains of lactobacillus spp., beneficial intestinal bacteria, were enhanced by adding of the enzymatically hydrolized ginseng extract. Sweetness and sourness were increased, however, bitterness and astringency were decreased in the hydrolized ginseng extract. The fonnation of precipitates in hydrolized red ginseng extract of $pH\;3.0\~4.5$ were significantly decreased in the storage condition of $40^{\circ}C$ for 1 month compared to that of control.

  • Panax ginseng C. A. Meyer has been the most highly recognized medicinal herb in the Orient. The prolonged administration of red ginseng extract significantly inhibited the incidence of hepatoma and also proliferation of pulmonary tumors induced by aflatoxin B$_1$and urethane. Statistically significant anticarcinogenic effects were observed in powders and extract of 6 year-dried fresh ginseng, 5 and 6 year-white ginseng and 4, 5 and 6 year-red ginseng by 9 week medium-term anticarcinogenicity test using benzo[a]pyrene (Yun's model).(omitted)
