Physico-chemical Properties of Fermented Soybean Roasted on Different Roasting Conditions (볶음 조건에 따른 발효 콩의 이화학적 특성 연구)

  • This study was investigated the difference in the quality characteristics of the fermented soybean roasted with different conditions for making chungyukjang. Roasted condition of soybean was decided by pre-test, which was on $140^{\circ}C$ for 21 min, $180^{\circ}C$ 9.5 min, and $220^{\circ}C$ 6 min. Fermented soybean with different roasted condition and conventionally made cheonggukjang were measured for proximate composition, color, pH, amino nitrogen, ammonia nitrogen, free sugar and amino acids. The lightness and yellowness of soybean fermented by conventional method was higher than those of the fermented soybean with roasted soybean. The contents of free sugar of fermented soybean roasted on $220^{\circ}C$ for 6 min (FS220) was the highest among the group and followed by fermented soybean roasted on $180^{\circ}C$ for 9.5 min (FS180), $140^{\circ}C$ 21 min (FS140) and conventional cheonggukjang (FS0). The contents of total free amino acid was highest on fermented soybean roasted on $140^{\circ}C$ for 21 min (FS140) and followed by fermented soybean roasted on $180^{\circ}C$ for 9.5 min (FS180), $220^{\circ}C$ 6 min (FS220) and conventional cheonggukjang (FS0).

Changes in Antimutagenic Activities of Crushed Kimchi during Fermentation at Different Conditions (파쇄김치의 발효중 조건에 따른 항돌연변이 활성변화)

  • Antimutagenic activity of crushed kimchi fermented with starter under various conditions such as temperature(5-20$^{\circ}C$), salt concentration(2-10%), addition rate of starter (0-20%) was investigated. The kimchi was fermented with crushed Chinese cabbage without salting, red pepper powder, crushed garlic, crushed ginger, anchovy juice and starter. Well fermented kimchi juice(fermented at 10$^{\circ}C$ for 15 days) and sterilized radish juice was used as a source of lactic acid bacteria and starter medium, respectively. Antimutagenic activity showed the highest in the crushed kimchi fermented at 15$^{\circ}C$ for 15 days, 4% salt concentration, 5% starter added, respectively. The inhibition rate of mutagenic activity of the kimchi against S. typhimurium TA98 induced by NQO and S. typhimurium TA100 induced by MNNG was 56.41% and 60.11%, respectively. And the inhibition rate of the kimchi juice showed 56-60% per 100ul.

Effects of Kimchi Powder or Lactobacillus plantarum Added Fermented Sausages on Serum Lipid and Cholesterol Levels in Rats

  • This study was performed to investigate the serum lipid and cholesterol lowering effects of kimchi powder or Lactobacillus plantarum when added to fermented sausage in rats. Male SD (Sprague-Dawley) rats were divided in three groups and administered with the following diets for 6 wk: non-fermented sausage added diets (CON), kimchi fermented sausage added diets (KIM), and Lactobacillus plantarum fermented sausage added diets (PLA). The CON has significantly (p<0.05) higher food intake, body weight gains, and final body weight than the other two groups. The body weight of KIM was significantly (p<0.05) lower than that of the other groups. The weights of organs (heart, lung, liver, kidney, spleen, perirenal adipose tissue, and epididymal adipose tissue) were not affected by any treatments. The mean value of serum triglycerides (TG) concentration in KIM and PLA groups was not significantly different compared with CON. Total cholesterol, low density lipoprotein and high density lipoprotein levels in serum of KIM were significantly (p<0.05) lower than those of CON. The serum free cholesterol level and atherogenic index (AI) in KIM and PLA were significantly (p<0.05) lower than those of CON. In conclusion, dietary supplementations with kimchi powder fermented sausages or L. plantarum fermented sausages were effective for lowering serum lipid, cholesterol levels and atherogenic index in rats.

Co-digestion of Thermophilic Acid-fermented Food Wastes and Sewage Sludge (음식물찌꺼기 고온산발효산물과 하수슬러지의 혼합처리)

  • This study has been conducted to investigate biodegradation characteristics and optimum mixing ratio for co-digestion with thermophilic acid-fermented food waste and sewage sludge using batch anaerobic digester. As the basis operating conditions for anaerobic digestion, the reaction temperature was controlled $35{\pm}1^{\circ}C$ and stirrer was set 70rpm. Thermophilic acid-fermented food waste and sewage sludge were mixed at the ratio of 10:0, 7:3, 5:5, 3:7, 0:10 and 5;5(food waste : sewage sludge) as the influent substrates. In results of co-digestion according to mixing ratio of thermophilic fermented food wastes and sewage sludge in batch mesophilic anaerobic digestion reactor, $385mL\;CH_4/g\;VS_{added}$ of methane production rate at 1:1 mixing ratio was more than that of any other mixing ratios. Compared with $293mL\;CH_4/g\;VS_{added}$ of methane production rate at 1:1 mixing ratio of food wastes and sewage sludge, pretreatment of food wastes by thermophilic acid fermentation was more effective in co-digestion with sewage sludge.

Assurance on the Genotoxicological Safety of Fermented Vegetables Pasteurized by Gamma Irradiation

  • The genotoxicological safety of fermented vegetables pasteurized by gamma irradiation was examined to consider the possibility of the application of irradiation for extending of fermented vegetables. A fermented vegetable was irradiated at 20 kGy to assure its toxicological safety even at a high dose of radiation. The Ames test with Salmonella typhimurium (TA98, TA100, TA1535, TA1537) and Escherchia coli (WP2), and the chromosomal aberration test in Chinese hamster lung (CHL) cells were performed. In vivo micronucleus test were conducted in mouse bone marrow cells. With or without metabolic activation, negative results were obtained in the Ames test and the chromosomal aberration test. In the micronucleus test, there was no enhancement in the formation of micronucleus, and there were no such significant differences between the irradiated and non-irradiated samples. The observed results indicated that, a level of 20 kGy of gamma irradiation on the fermented vegetable did not bring about any genotoxic effects under the described experimental conditions.

Hypolipidemic Properties of Fermented Capsicum and Its Product

  • This study was conducted to investigate the effects of fermented capsicum and a capsicum product on lipid metabolism. Fermented capsicum was prepared from red pepper puree tov three months. After 9() days of fermentation, capsaicin and dihydrocapsaicin concentrations were reduced from 24.7 and 14.7 g/mL to 15.5 and 6.45 g/mL, respectively. The capsicum product was prepared from the fermented capsicum mixed with prune extract, green tea extract, neroli extract and oligo-saccharide. Thirty-two male Sprague-Dawley rats were as- signed to four dietary groups (control, high-fat control (BE-control), high-fat-fermented capsicum (HF-S-1), high- fat-capsicum product (HF-S-2)). Plasma and hepatic lipid profiles were examined after three weeks of experimental diet. Food intakes were significantly lower in the HF-S-1 and HF-S-2 groups compared to the control group (p<0.05). The weight of perirenal fat pads was lowest in animals on the control diet (low-fat) and highest in high-fat control diet. The addition of fermented capsicum to high fat diets, HF-S-1 and HE-S-2 groups, resulted in significantly lower fat pad weights compared with the HF-control group. Both fermented capsicum (HF-S-1) and the capsicum product (HF-S-2) groups had lower plasma TG levels, atherogenic-index, and liver TG levels than the BE-control group (p <0.05). Liver TC levels were significantly lower in the HF-S-2 group than the HF-control group. The results demonstrate a hypolipidemic effect of fermented capsicum and the fermented cap-sicum product.

  • Volatile flavor compounds in Korean salt fermented shrimp on the market were analyzed by vacuum simultaneous distillation solvent extraction/gas chromatography/mass spectrometry/olfac tometry(V SDE/GC/MS/O) and aroma extract dilution anlaysis(AEDA). A total of 32 volatile com pounds were detected by GC/O analysis. Of these, 18 were positively identified, and composed of S containing compounds(5), aldehydes(4), ketones(3), N containing compounds(3), ester(1), alcohol(1) and aromatic hydrocarbon(1). Predominant odorants(Log3FD$\geq$4) in salt fermented shrimp were 2,3 butanedione(sour/buttery), 1 octen 3 one(earthy/mushroom like), dimethyl trisulfide(cooked cabbage /soy sauce like) and 2 acetylthiazole(grainy/nutty). Predominant free amino acids were aspartic acid, glutamic acid(sour and umami taste), arginine, methionine(bitter) and lysine(sweet and bitter) in evaluation of taste value.

Changes of Nutrient Composition and Antioxidative Activities of Fermented Tea during Fermentation (후발효차의 발효기간별 영양성분 및 항산화 활성의 변화)

  • To manufacture the fermented tea with hygienic quality, green tea was fermented using Bacillus subtilis, Saccharomyces cerevisiae and Lactobacillus bulgaricus and mineral composition, total amino acid content and antioxidative activity changes were evaluated during the fermentation period. Minerals detected in the fermented tea, the Ca, Fe, Zn, Mg and Mn minerals were detected. Ca and Mg are relatively large compared to other mineral content. Total amino acid content of the control was 3.57%, but total amino acid of fermented teas were higher (3.68~3.85%) during fermentation 20 days. Metal chelating activity of control was 55.11%, Metal chelating activity of the fermented tea using B. subtilis was the highest. In reducing power, O.D. value of the control was 2.27, three kinds of fermented tea were lower than that of control. The fermented teas increased lipid peroxidation inhibition compared to the blank test.

  • This study was conducted to compare the antioxidant activities of fermented soy products such as chungkukjang, meju and doenjang with soybeans. Total phenolic, flavonoids contents and antioxidative activities of the methanol extract of soy and fermented products were compared with specific reference to alpha-diphenyl-2-picryl-hydrozyl (DPPH) radicals scavenging effects, ferric /reducing power (FRAP), inhibition of conjugated diene formation and tyrosinase activities. Total phenolic and flavonoids contents increased in soybeans after fermentation. Fermented soy products also displayed enhanced antioxidative activities in comparison with the non-fermented soybeans. There were linear relationships between total phenolic and flavonoids contents and ferric reducing/antioxidant power of the samples. Overall, the fermented soy products showed a better antioxidant activity than soybeans. Among the 3 kinds of fermented soy products, chungkukjang, meju and deonjang, doenjang exhibited the highest levels of DPPH-free radicals scavenging activity, ferric /reducing power, inhibition of conjugated diene formation and tyrosinase activities. The fermented soy products with longer fermentation time demonstrated the higher antioxidant activities as well as higher total phenols and flavonoids in the order of doenjang > meju > chunghlkjang> soybeans.

Antioxidant Activity of Theaflavin and Thearubigin Separated from Korean Microbially Fermented Tea

  • Theaflavins (TF) and thearubigins (TR) were separated from Korean microbially fermented tea leaves. Contents of TF (74.4 $\mu$M/g) and TR (37.2%) were higher than reported for black tea fermented by oxidase. Antioxidant activities of TF, TR and EGCG were analyzed and protective effects of COS-7 cells against copper and cadmium-induced toxicity were investigated. TF and TR exhibited good inhibition rates of about 85$\sim$90% for antioxidant and scavenging activities of free radicals and protected COS-7 cells against apoptosis or damage caused by stress, such as cadmium and copper-oxidative injury, free radicals etc. These results indicate that TF, TR and EGCG have antioxidant and scavenging activities against free radicals and protect COS-7 cells from Cu, Cd induced injury.
