This experiment was conducted to determine the effects of the pre- and post-harvest variable factors on the processed product of kimchi cabbage. Two kimchi cabbage cultivars, namely 'Chungwang' and 'Dongpung,' were grown in a field and under a plastic greenhouse condition and stored at $5^{\circ}C$ after harvesting with and without low-density polyethylene (LDPE) film packaging. Growths were determined after harvesting while salting characteristics were determined after the processing and storage. The results show that the height, weight and leaf thickness were higher in kimchi cabbages grown in the greenhouse than those grown in the field. The plastic house culture increased the kimchi cabbage growth of the head weight, head height and leaf thickness compared with that of the open field culture. However, the osmolality and firmness were higher in the outdoor cultivated kimchi cabbages. Kimchi cabbage packed in film covered sacks and stored at $5^{\circ}C$ showed lower weight loss than unpacked cabbages during storage. Salt concentration and pH were also affected by the different pre- and post-harvest factors after salting the kimchi cabbages. Salt concentrations of the kimchi cabbage were influenced by various factors such as the cultivars, cultivation methods and storage covering. Though the present findings showed a limited difference in salt concentration and pH between the cultivars of kimchi cabbages, this study suggests that there is a relationship between processed agricultural products and their pre- and post-harvest methods.
Cruciferous vegetables are rich in biologically active compounds such as glucosinolates and have various health benefits. Among these vegetables, Kimchi cabbage (Brassica rapa L. ssp. Pekinensis) is one of the most popular leafy vegetables due to the presence of the highest amounts of numerous vital phytonutrients, minerals, vitamins, and antioxidants. This study aims to investigate the effects of six cultivars (Chundong 102, Asia No Rang Mini, Hwimori Gold, Asia Seoul, Wol Dong Chun Chae, and Asia Bbu Ri) on hairy root induction and glucosinolate biosynthesis in the hairy root cultures of Kimchi cabbage. Seven different glucosinolates, in this case sinigrin, gluconapin, glucoerucin, glucobrassicin, 4-methoxyglucobrassicin, gluconasturtiin, and neoglucobrassicin, were detected in the hairy root cultures of Kimchi cabbage. Among the different cultivars, Asia No Rang Mini was the most promising candidate for hairy root stimulation, as it achieved the highest values for the growth rate, root number, root length, transformation efficiency, and total glucosinolate content. Overall, the Asia No Rang Mini cultivar of Kimchi cabbage performed best as a promising cultivar hairy root culture for glucosinolate production.

In September 2021, gray-to-brown discoloration and expanding water-soaked lesions were observed on the outer and inner layers and the core of kimchi cabbage (Brassica rapa subsp. pekinensis) in fields located in Samcheok, Gangwondo, Korea. A bacterial strain designated as KNUB-02-21 was isolated from infected cabbage samples. Phylogenetic analysis based on the sequences of the 16S rRNA region and the dnaX, leuS, and recA genes confirmed that the strain was affiliated with Pectobacterium versatile. Additionally, the biochemical and morphological profiles of the isolate were similar to those of P. versatile. Based on these results, the isolate was identified as a novel strain of P. versatile. Healthy kimchi cabbage slices developed soft rot upon inoculation with P. versatile KNUB-02-21 and exhibited symptoms similar to those observed in the diseased plants in fields. The re-isolated strains were similar to those of P. versatile. Prior to our study, P. versatile as the causative pathogen of kimchi cabbage soft rot had not been reported in Korea.
This study investigated the effect of the addition of germinated brown rice extract powder (0, 0.67, 3.35 and 6.70%) to the fermentation of Korean cabbage kimchi. During the fermentation of Korean cabbage kimchi with GBREP, content of total free amino acid and essential amino acid was showed higher value by increasing the addition of GBREP. In particular, ${\gamma}$-aminobutyric acid (GABA) content of Korean cabbage kimchi, prepared with 6.70% GBREP was 2 times higher than control Korean cabbage kimchi. By increasing the content of GBREP, total phenol content was showed high value and the content was more increased during fermentation except control Korean cabbage kimchi. By increasing the content of GBREP, electron donating activity and superoxide radical scavening activity were showed higher value and then showed maximum scavening activity on palatable period. Nitrite-scavenging ability of Korean cabbage kimchi with GBREP was higher than control Korean cabbage kimchi and showed the highest scavenging ability at pH 1.2.

Red Chinese cabbage is rich in anthocyanins, with beneficial effects on anti-obesity and lipid profiles. The purpose of this study was to examine the anti-obesity effects of red Chinese cabbage. Four-weeks old Spague-Dawley male rats were divided into four groups for six weeks as follow: Normal Diet (ND), High Fat Diet (HFD), HFD + Red Chinese Cabbage Diet (RCD), HFD + Red Chinese Cabbage Juice (RCJD). After six weeks, the liver weight was significantly higher in the HFD group than in the other groups, and the RCD and RCJD groups showed similar values to the ND group. The epididymal fats were significantly higher in all high fat diets (HFD, RCD, RCJD) than in the ND group and there was statistical significance in the post-tests when comparing the RCD and RCJD groups with the HFD group. Triglycerides significantly decreased in the RCD group. In conclusion, red Chinese cabbage is rich in anthocyanins, with beneficial effects on organ weight and lipid profiles.
This study was carried out to find out major factors to mitigate carbon emission using Life Cycle Assessment (LCA). System boundary of LCA was confined from sowing to packaging during vegetable production. Input amount of agri-materials was calculated on 2007 Income reference of white radish, chinese cabbage and chive produced at open field and film house published by Rural Development Administration. Domestic data and Ecoinvent data were used for emission factors of each agri-material based on the 1996 IPCC guideline. Carbon footprint of white radish was 0.19 kg $CO_2kg^{-1}$ at open fields, 0.133 kg $CO_2kg^{-1}$ at film house, that of chinese cabbage was 0.22 kg $CO_2kg^{-1}$ at open fields, 0.19 kg $CO_2kg^{-1}$ at film house, and that of chive was 0.66 kg $CO_2kg^{-1}$ at open fields and 1.04 kg $CO_2kg^{-1}$ at film house. The high carbon footprint of chive was related to lower vegetable production and higher fuel usage as compared to white radish and Chinese cabbage. The mean proportion of carbon emission was 35.7% during the manufacturing byproduct fertilizer; white radish at open fields was 50.6%, white radish at film house 13.1%, Chinese cabbage at outdoor 38.4%, Chinese cabbage at film house 34.0%, chive at outdoor 50.6%, and chive at film house 36.0%. Carbon emission, on average, for the step of manufacturing and combustion accounted for 16.1% of the total emission; white radish at open fields was 4.3%, white radish at film house 15.6%, Chinese cabbage at open fields 6.9%, Chinese cabbage at film house 19.0%, chive at open fields 12.5%, and chive at film house 29.1%. On the while, mean proportion of carbon footprint for the step of $N_2O$ emission was 29.2%; white radish at open fields was 39.2%, white radish at film house 41.9%, Chinese cabbage at open fields 34.4%, Chinese cabbage at film house 23.1%, chive at open fields 28.8%, and chive at film house 17.1%. Fertilizer was the primary factor and fuel was the secondary factor for carbon emission among the vegetables of this study. It was suggested to use Heug-To-Ram web-service system, http://soil.rda.go.kr, for the scientific fertilization based on soil testing, and for increase of energy efficiency to produce low carbon vegetable.

This study investigated and compared the fermentation characteristics of intact kimchi and brined baechu cabbage and seasoning fermented separately. Fermentation characteristics of kimchi, brined baechu cabbage and seasoning, such as pH, acidity, microbial counts, and springiness were measured during the fermentation period (4 weeks at $4^{\circ}C$). Changes in pH, acidity, and microbial counts of the seasoning fermented separately were slower than those of brined baechu cabbage and kimchi itself. The fermentation characteristics of brined baechu cabbage were very similar to those of kimchi during the fermentation period. Additionally, we manufactured and fermented kimchi, after which baechu cabbage and seasoning were separated shortly before the measurements. Baechu cabbage and seasoning separated instantly from kimchi showed similar fermentation characteristics to their separately fermented counterparts. Changes in springiness of kimchi itself and brined baechu cabbage fermented separately were similar during the fermentation period. These results indicate that kimchi fermentation is affected by brined baechu cabbage more than seasoning.

For the convenience of transportation and improvement of the utility of raw chinese cabbage during harvest season, the condition of pretreatment for the raw chinese cabbage with pickle has been examined by preserving for one to ten days. The changes in the content of riboflavin and ascorbic acid in kimchi (pickled-seasoned chinese cabbage), which was manufactured by using the pickled cabbage as a main raw material, along with ginger, garlic, red pepper powder, rad-dish and fermented shrimp as seasonings, during ripening were investigated with specially referred to palatability. The yield of the pickled cabbage compared to the raw cabbage after treating with pickle was 62 to 65% in volume and 15 to 42% in weight. After 10 days of pickling of the chinese cabbage, one-third of total ascorbic acid was diminished but no change in riboflavin content was observed. During ripening of kimchi, riboflavin content in kimchi processed with the pickled cabbage has not been changed compared to the content in convention- ally made kimchi, however, slight decrease in ascorbic acid content in the kimchi processed with the pickled cabbage was as certained. The result of organoleptic test showed that the kimchi processed with the pickled cabbage became inferior to the conventionally made kimchi with the days of ripening.
A pot experiment was conducted to study the effect of urea and ammonium nitrate on the use of soil born potassium and the yield of chinese cabbage (Brassica pekinensis, Var. Heungnong, Seoul). Results obtained are shown as follows; 1. In comparison with urea, ammonium nitrate lowered soil pH and promoted the utility of soil born potash by chinese cabbage which resulted in the increase of the yield at no potash applied cultivation. 2. Ammonium nitrate seemed to be more effective than urea on the growth of the edible part of chinese cabbage (inner leaves of cabbage) and the effect was much promoted by the addition of potash. 3. The greater the yield of edible part of cabbage, the lower the N/K ratio of dry mater. The highest yield was obtained at N/K ratio of 1.4 in 1.2-1.3 m.e/g K range of the dried cabbage.
To study the shelf-life of cut cabbage kimchi, we examined the several quality characteristics of cabbage kimchi under various storage temperatures and packing materials. The pH of kimchi extracts were decreased to 4.0 in the condition of storage at 8$^{\circ}C$ during 6 days, at 4$^{\circ}C$ during 18days, 0$^{\circ}C$ during 42 days. The increase patterns of the organic acid were reverse to the changes of pH under the all conditions. The contents of reducing sugar were continuously decreased at 8$^{\circ}C$ , but increased gradually at 0$^{\circ}C$ and 4$^{\circ}C$ storage conditions. The contents of vitamine C were decreased at the early storage but increased to optimum ripening stage of pH 4.2-4.4 and after decreased continuously. The total bacterial cell counts of cabbage kimchi were increased suddenly at the early storage and after decreased gradually. And at the higher storage temperature, the more lactic acid bacteria were. On the results of sensory evaluation of cabbage kimchi at marketable shelf-life, sour taste and sour smell were significant under all experimental conditions by Duncan's multiple range test. On the above all results, we concluded that the marketable shelf-life of cut cabbage kimchi were 42 days, 19 days, 6 days at 0$^{\circ}C$, 4$^{\circ}C$, 8$^{\circ}C$ storage condition respectively.
