A Study of Factors Affecting the Purchases of Well-Being Tea Drinks (웰빙 차(茶) 음료 구매 영향요인에 관한 연구)

  • The purpose of this study was to identify factors affecting the purchases of well-being tea drinks based on the analysis of demographic characteristics, well-being oriented consumer behaviors, and consumer consciousness toward well-being tea drinks. The subjects of this study were undergraduates and graduate students in Seoul. The findings were summarized as follows: 1. Well-being oriented consumer behavior patterns were categorized in three factors; non-dietary life, selective dietary life, and regular/temperate behavior and consumer consciousness toward well-being tea drinks were categorized in two factors; habit/ familiarity and health/ economical efficiency. 2. Multiple regression analysis was used for finding out factors affecting the purchases of well-being tea drinks; independent variables were demographic characteristics(sex, monthly average family income and the amount of personal expenditure), well-being oriented consumer behavior factors and consumer consciousness factors toward well-being tea drinks. Weekly purchase frequency of well-being tea drinks was defined as a dependent variable. As a result, the purchases of well-being tea drinks were influenced in order of regular/temperate behavior, the consciousness of health/ economical efficiency, the amount of personal expenditure and the consciousness of habit/ familiarity. Especially, regular/temperate behavior negatively affected the purchases of well-being tea drinks.

Effects of Protein and Iron Concentrations on Iron Solubility in Black Tea Infusion (단백질 함량 및 철분 농도의 변화에 따라 홍차 추출물이 철분의 용해도에 미치는 영향)

  • Tannins in plant foods and beverages may produce antinutritional or toxic effects although some proteins with high affinity for tannins seem to function as defense mechanism to tannin toxicity. Our objectives were to investigate of tea tannins, iron and protein and to evaluate the role of proteins in tannin effects on iron solubility. Iron solubility in vitro was measured using tea with and without proteins. Mixtures of tea, protein in varying concentrations(either gelatin or bovine serum albumin), and iron(eithe 10 or 50ug/mL) were prepared. Controls contained water in place of tea. Iron bioavailability was assessed by measuring iron solubility in the simulated gastric condition with pepsin digestion. Bound iron was removed by centrifugation and soluble in tea alone. When iron concentratin was 10ug/mL, addition of small amounts of protein to tea dramatically reduced iron solubility, but solubility of iron increased in the tea mixturea as the concentration of protein was increased. The percnetage of iron that precipitated was much greater at 10ug Fe/mL than the values at 50ug Fe/mL suggesting that the iron binding sites on the tea-protein complex was saturated. These results suggest that interactions of iron with tea tannins are influenced by the concentratins of protein and iron.

A Study on the Antioxidant Activity and Quality Characteristics of Pan Bread with Waxy Black Rice Flour and Green Tea Powder (흑미와 녹차 혼합분을 첨가한 식빵의 항산화성 및 품질 특성)

  • The antioxidant activity and quality characteristics of bread made from waxy black rice flour(WBRF) and green tea powder were investigated. The bread was manufactured with 1% of green tea powder and 10, 20, 30 or 40% of WBRF(w/w). The group of 40% of WBRF and green tea powder significantly showed the highest bread weight and volume. Lightness(L value) and yellowness(b value) decreased, but redness(a value) increased with increasing WBRF contents in mixture. Hardness, gumminess and chewiness were the lowest in the control group, but springiness was the lowest in the group of 40% of WBRF and 1% of green tea powder. The sensory scores of appearance, external and crumb color, grainy in the group of 40% of WBRF and 1% of green tea powder were the significantly lowest. Overall acceptabilities of the groups of 10% and 30% of WBRF with 1% of green tea powder were not significantly different from the control group. The group of 40% of WBRF and 1% of green tea powder showed the highest DPPH radical scavenging effect and TEAC content. Thus, if the mixture of green tea powder and WBRF would be used, it might be proper to use 1% of green tea powder and 10% of WBRF mixture considering the quality and antioxidant activity of bread.

Scavenging Effects of Tea Catechins on Superoxide and Hydroxy Radical

  • Tea catechins, the most important compounds in tea polyphenols, can efficiently scavenge superoxide anion free-radical ($O_2$.), hydroxyl radical. (.OH) The mechanism of scavenging active oxygen free radicals was investigated by ESR spin trapping technique and Chemiluminescence. Results showed that various tea catechins constitute an antioxidant cycle in accordance with the decreasing order of the first reductive potential, and produce the effect of cooperative strength each other. Esterificated catechins could scavenge active oxygen free radicals more effectively than the non-esterificated ones. When.OH and $O_2$.- were scavenged by (-)-epigallocatechin gallate [(-)- EGCG], the stoichiometric factors were 6, and the rate constants of scavenging reaction reached $7.71{\times}10^6$ and $3.52{\times}10^{11}$ L $mmol^{-1}s^{-1}$, respectively. In the mean time, tea catechins could scavenge superoxide anion fiee radical ($O_2$-.) and hydroxyl radical (.OH) in a dose dependent manner. But at higher concentration or pH value, tea catechins can induce the prooxidant.

Changes in the Antibacterial Activity of Green Tea Extracts in Various pH of Culture Broth against Staphylococcus aureus and Salmonella typhimurium (배지의 pH에 따른 녹차추출물의 Staphylococcus aureus 와 Salmonella typhimurium에 따른 항균작용)

  • Water extract of green tea(GTW) and 70% ethanol extract of green tea(GTE) were prepared for the test of antibacterial activity. The sensitivity of Staphylococcus aureus and Salmonella typhimurium to the green tea extracts in various pH of culture broth was tested. Tryptic soy broth(TSB) containing 0∼2%(w/v) of green tea extracts was adjusted to pH 5.0∼7.0 and inoculated with 10$\^$5/∼10$\^$6/ cells/ml of each bacteria. The plate counting method and clear zone test were used to determine inhibitory effect of green tea extracts. Green tea extracts completely inhibited the growth of S. aureus at 0.5% level and bactercidal at 0.5∼1.0% level of GTW and GTE at pH 5.0∼7.0. Green tea extracts were bactercidal to S. typhimurium at 1.5∼2.0% level of GTW and 1.0∼2.0% level of GTE at pH 7.0. Sal. typhimurium was more resistant than S. aureus. in same concentration of green tea extracts at same pH. The resistance of S. aureus and Sal. typhimurium was increased with decreasing pH of culture broth. The morphology of S. aureus cells treated with green tea extracts showed damage of cell wall and cytoplasmic membrane. Severely damaged cells of S. aureus lost electron dense material and cytoplasm. Green tea extracts stimulated autolysis and cell death of S. aureus. This result suggests that green tea extracts can be used as an effective natural antibacterial agent in food.

Quality Characteristics of Green Tea Jeungpyun Made with Meringue (머랭을 이용하여 제조한 녹차증편의 품질특성)

  • Purpose: The purpose of this study was to simplify the traditional manufacturing method of Jeungpyun by developing a new process for Jeungpyun preparation using meringue and to also investigate the quality characteristics of Jeungpyun made with green tea powder. Methods: The Jeungpyun was manufactured as 4 sample preparations (Jeungpyun: J; Jeungpyun+0.5% green tea: J+0.5% GT; Jeungpyun+1% green tea: J+1% GT; and Jeungpyun+1.5% green tea: J+1.5% GT) through mixing rice flour, meringue, green tea powder (0-1.5%), dry yeast, water, and milk, steaming for 4 min at $180^{\circ}C$ and 3 min at $220^{\circ}C$, and then standing for 1 hr at room temperature. The quality characteristics of Jeungpyun were evaluated based on physicochemical properties, total mold, texture analysis, and sensory evaluation. Results: The pH of Jeungpyun batter was significantly lower in J+1.0% GT and J+1.5% GT than J. The specific gravity, weight, volume, and specific volume of J+0.5% GT and J+1% GT was not significantly different, as compared to J. In color, L value decreased and a and b value increased based on the increase of green tea powder. The antifungal activity was the highest in J+1.5% GT, followed by J+1.0% GT, J+0.5% GT, and J, in order. Samples with added green tea powder showed decreased hardness, as compared with J; its effect was significant in J+1.0% GT and J+1.5% GT after storage for 1 day. In sensory evaluation, the color of Jeungpyun was darkened by the addition of green tea powder. The egg smell and hardness significantly decreased by addition of green tea powder. Based on quantitative description analyses, overall acceptability was the highest in J+1% GT. Conclusion: Therefore, 1% green tea powder was the optimal amount for preparing Jeungpyun with meringue. For simplification of the traditional manufacturing method, Jeungpyun could be produced with meringue and green tea powder, which has potent physiological activities.

Antioxidative Effect on the Green Tea and Puer Tea Extracts (녹차와 보이차 추출물의 항산화 효과)

  • To see the antioxidative ability of puer tea against green tea, antioxidative effects of water and methanol extracts were compared and researched each. Water extracts from green tea and puer tea contain similar percentage of total polyphenol content while methanol extract from puer tea has about $58\%$ of total polyphenol content of that from green tea. Water extracts from both teas contain similar percentage of the electron donating ability while methanol extract from puer tea has about $54\%$ of the electron donating ability of that from green tea. Solvents made a big difference in SOD-like activities. The activations in water extracts were from $13.46\%$ to $48.93\%$, which didn't give much difference between green tea and puer tea. However, the activations in methanol extracts were $59.63\%$ in green tea and $48.93\%$ in puer tea, which was $3\~4$ times higher than that in water extracts and green tea activated better. The nitrite scavenging activity was similar in water extracts from both teas and the methanol extract from puer tea had a bit higher nitrite scavenging activity than that from green tea. The ACE inhibitory activity in water extract from puer tea was about $38\%$ higher than that from green tea while the activity of methanol extract from green tea was higher than that from puer tea. These results indicate that the antioxidative ability of water extract from puer tea is similar to that from green tea but the ACE inhibitory activity of puer tea reveals higher value and antioxidative ability of methanol extract from puer tea was lower than that from green tea while the nitrite scavenging activity of puer tea was higher.

Characteristics of Shrinking and Rehydration of Korean Tea-Leaves (한국산 차엽의 수축 및 복원특성)

  • Major characteristics of shrinking and rehydration of Korean tea-leaves were investigated in the hot-air drying equipment. Experiments were performed with various drying temperature, plucking time, heating method and rolling condition. The values of shrinking raito and rate were the highest at 7$0^{\circ}C$ in the range of 3$0^{\circ}C$ to 9$0^{\circ}C$. The 1st tea-leaves and showed higher values. Shrinking ratio was 16.62 and 19.62% for leaves and stems; shrinking rate was found 0.083 and 0.091cm/hr.cm, respectively. The rehydration characteristics of tea-leaves at the drying temperature of 3$0^{\circ}C$ were fairly satisfactory. The 2nd tea-leaves showed higher value than others, while the natural tea-leaves were lower. Average rehydration ratio and rehydration rate constant were 85.7% and 0.063/min for leaves; 80.1% and 0.032/min for stems, respectively.

Sensory Drivers of Liking for Adlay (Coix lacryma-jobi) Tea (시판 율무차의 소비자 기호 유도 인자)

  • This study investigated the sensory characteristics of adlay tea favorably consumed by Korean consumers and analyzed the drivers behind for liking or disliking adlay tea. Six adlay tea products showing the highest market share in South Korea were selected. Sensory properties of the six products were analyzed using generic descriptive analysis. Among these, four products were further selected for consumer taste acceptance test. Sensory lexicons of adlay tea were developed by trained panelists, and the sensory characteristics of each adlay tea product were measured based on the perceived intensities of these attributes elicited from the samples. In the consumer taste acceptance test, frequent tea and coffee drinkers participated. Consumers rated the acceptance of each tea product on a 9-point hedonic scale and evaluated the reasons for liking or disliking each product based on the check-all-that-apply method. Analysis of Variance, principal component analysis, frequency analysis, and correspondence analysis were utilized for statistical analysis. Twenty sensory attributes were developed in order to characterize the six adlay tea products. The results of the descriptive analysis showed that attributes such as viscosity, black soybean flavor, goso flavor, peanut flavor, seaweed flavor, green, and presence of chunks were key factors differentiating the adlay tea products. In the consumer taste test, roasted flavor, goso flavor, peanut flavor, and presence of chunks were positive drivers for liking the adlay tea products, whereas seaweed and green flavors were negative attributes that drove consumers away.

An Area-Efficient Design of Merged TEA Block Cipher for Mobile Security (모바일 보안용 병합 TEA 블록 암호의 면적 효율적인 설계)

  • In this paper, a merged TEA block cipher processor which unifies Tiny Encryption Algorithm(TEA), extended Tiny Encryption Algorithm(XTEA) and corrected block TEA(XXTEA) is designed. After TEA cipher algorithm was first designed, XTEA and XXTEA cipher algorithms were designed to correct security weakness. Three types of cipher algorithm uses a 128-bit master key. The designed cipher processor can encrypt or decrypt 64-bit message block for TEA/XTEA and variable-length message blocks up to 256-bit for XXTEA. The maximum throughput for 64-bit message blocks is 137Mbps and that of 256-bit message blocks is 369Mbps. The merged TEA block cipher designed in this paper has a 16% gain on the area side compared to a lightweight LEA cipher. The cryptographic IP of this paper is applicable in security module of the mobile areas such as smart card, internet banking, and e-commerce.
