Consumption Pattern of Kimchi in Seoul Area (서울지역의 김치섭취에 관한 실태조사)

  • The objectives of this study were to determine the consumption pattern and importance of Kimchi in our meals, and the preference of Kimchi. The 77.0% of the housewife respondents were preparing Kimchi at home. The reasons for not making Kimchi were ‘don't have time’(39.4%), ‘don't know how to make Kimchi’(18.2%) and ‘don't eat much’(18.2%). The amounts of daily Kimchi intake of the respondents were ‘less than 50g’(42.3%) or ‘50-100g’(29.8%). They are Kimchi because it was ‘delicious’(48.4%) or ‘habitual’(39.5%). The 70.0% of the respondents answered that Kimchi was important in each meal. The most respondents favored ‘moderate’ in the degree of fermentation(48.1%), hot taste(65.0%) and salty taste(72.4%). As the age of the respondents increased, they favored less sour, less hot and less salty taste. Baechu Kimchi(4.15), Chonggak Kimchi(3.89), Dongchimi(3.85), Kkaktugi(3.74), water Kimchi(3.67) were preferred by the respondents. The 73.97% of the respondents preferred Kimchi Jjigye. The 10- to 19-years old respondents preferred Kimchi Jjigye(52.8%), Kimchi pan cake(24.5%) and fried rice with Kimchi(17.0%).

  • In order to standardize a recipe of Jeung-Pyun, fermented rice cake, we studied the sensory, rheological and physicochemical characteristics of Jeung-Pyun in terms of fermentation time and ratio of ingredients. Jeung-Pyun fermented for 3 hours was higher in pH, better in taste, hardness and overall quality than that fermented for 7 hours. It was softer, and had more moisture and fine grain as the amount of added water increased. Jeung-Pyun made with 80% added water had the greatest volume. Jeung-Pyun without salt was the worst in color and flavor and the smallest in volume. As the Jeung-Pyun was added more sugar and Tak-Ju, the volume was more larger and the moisture was more less. Taste and overall quality of Jeurig-Pyun was not affected by the amount of Tak-Ju added. The pH of Jeung-Pyun was lower as it was added more Tak-Ju. Therefore, Jeung-Pyun which is fermented for 3 hours, with 70% water, 0.8% salt, 15% sugar, and 30% Tak-ju was the most acceptable one in terms of sensory qualities and physiochemical properties.

  • Various kinds of jeolpyon (cubed rice cake) differing in soybean content were prepared. By the sensory and instrumental analysis, it seemed that addition of soybean powder for jeolpyon should be less than 5%. Jeolpyon with 5% soybean powder was not significantly different from the control.

Study on Recognition and Development of Native Local Foods in the Young-ju Area (영주 지역 향토음식의 인지도 분석 및 개발방안)

  • This study was conducted in order to better understand the local and specialty foods of the Yeong-ju region. This study provides basic data for new menu development and commercialization. The results of 384 surveys, which were conducted to determine traditional rice cake production methods and their traits, were analyzed. Samgyetang was ranked top in the survey on recognition, public interest, and frequency of the local foods. Dakjuk was ranked second, followed by Baechujeon and Bopguk, in order. The levels of recognition and preference of specialty foods were in the order of hasuo, peach, apple, and meat. Among the answers in the survey on the popularization and commercialization of local foods, changing of the cooking style for younger generations' taste was considered to be the most important. Holding events to promote regional specialty foods and initiate the public to traditional cooking styles were listed sequentially by importance. The survey results show that promotion of local foods through education, and as well as incorporation of new ingredients are both highly effective ways to commercialize local foods for tourism. The results also indicate that taste, nutrition, and appearance of food should be considered in order to improve quality.

A Study on the Dietary Habit and the Food Preference of Pre-School Children (兒童의 食習慣과 嗜好에 관한 연구)

  • A study on the dietary habit and the food perference of Pre-school Children was made in order to identify the state of their dietary life and provide the data of dietetic education which can help the children to live a desirable food life, by analysing the present dietry life into the dietry habits, food preference, the actual condition of nutrition intake and table manners. 1. The Diet Habits. Both boys and girls were fond of dinner best and tended to neglect breakfast and lunch. 64.2% of the total children took meals regularly. 2. Food Preference. The most favorite food was beef, ham, Dupoo (beancurd), squid, ice-cream, bananas, watermelon, sweet potatoes, corn, Ingeolmi (cake form glutinous rice), doughnuts, JJajangmyon (Chinese noodles), Coke, fried chicken. 3. The Actual Conditions of Nutrition Intake. The frequency of intake of meat and its processed food was the lowest and that of fishes, shellfishes, fats and vegetables was low, too. 4. Table manners and Sanitary Conditions. The average mark of table manners and sanitary conditions is 12.49${\pm}$2.65. The children didn't practice well in the following points; talking at table, beginning to eat after the beginning of elder person's, brushing their teeth after taking meals, keeping a straight posture.

Quality Characteristics of Sulgidduk with Beet Leaf Powder (비트잎가루를 첨가한 설기떡의 품질특성 연구)

  • The purpose of this study is to propose the optimum adding rate of freeze-drying beet leaf powder, which has antioxidant components, that have superior DPPH radical extinction effects, in the Sulgidduk, a representative of steamed rice cake, which improve its functionality. According to the measured results on moisture contents and pH levels of Sulgidduk, with added freeze-drying beet leaf powder, the moisture contents have been significantly declined with increasing rates of added beet leaf powder. The pH levels of sample groups are within the range of 6.26-6.13. From the chromatography of measured results, lightness and yellowness have declined and redness have increased along with increasing rates of added beat leaf powder. According to the texture of measured results, the hardness, and chewiness have declined by the increasing the rate of added beet leaf powder. For the storage period, hardness, and chewiness have been inclined, but cohesiveness declines, with increased the storage period, while there are no changes from elasticity. The DPPH contents of Sulgidduk, with added freeze-drying beet leaf powder, inclined by increasing the rates of added beet leaf powder. The sensory test results of color, aroma and fragrance incline with increasing rates of added beet leaf powder. From acceptance test results, the sample group added with 3% receive the highest appraisals.

  • To analyze wedding feast dishes of royal prince (1651, 1696) of Choson Dynasty, studied Gare Dogam Euigwae. Historic book 'Gare Dogam Euigwae' discribed wedding feast dishes of king‘s Choson Dynasty. The results obtained from this study are as follows. Dishes were arranged in four kinds of table, the first one called the main table, the second the right side table, the third the left side table, the fourth the confronting side table. Dishes of main table were oil and honey pastry, and fruits (pine nuts, orange, dried persimmon, torreya nuts, dried chestnut, jujube). Dishes of the second table and the third table were oil and honey pastry, and small cake made of honey and rice with patterns pressed in it. Dishes of the fourth table were cooked vegetable (wild ginseng, platy-codon, radish, white gourd melon, ginger), dried slices of meat seasoned with spices (abalone, octopus, shark, pheasant), cooked meat (wild goose, fowl, egg, pheasant, abalone), and fried fish (roe deer, fish, duck, pigeon, sparrow). The main table (同牢大宴床) and the second table (右挾床) stand as a symbol for integrity. The third table (左挾床) symbolize longerity. The fourth table (面挾床) symbolize bearing many young and connubial felicity.

Study on Donggot-tteok of Chungjae Gwon Beol from the Andong Gwon clan Jong-ga (안동 권씨 충재 권벌 종가의 동곳떡에 관한 연구)

  • This study conducted a literature review, field study, and in-depth interview on the build order, cooking method, and origin of 'Donggot-tteok (rice cake)', which was the ritual food for 'Chungjae Gwon Beol from the Andong Gwon clan Jong-ga' in Bonghwa, Gyeongbuk, who deifies Chungjae Gwon Beol as Bulcheonwi. Donggot-tteok of Chungjae Jong-ga is classified as one kind of Bonpyeon (Janjeolpyeon) and 11 kinds of Utgipyeon, and assumes a unique circle build shape. According to the results of the literature review data in 2004 and 2010 with field study data in 2014, the build order, materials, and cooking method were maintained without large changes. With regard to Utgipyeon with which Donggot-tteok is topped, Cheongjeolpyeon, Milbiji, Songgisongpyeon, Gyeongdan, Ssukdanja, Bupyeon, Japgwapyeon, Jeon, Sansim, Jo-ak, and Kkaeguri were heaped in each layer, and the beauty of obangsaek (five colors) was well harmonized. Besides, with regard to the origin of Donggot-tteok, which was presented without elaborating sundry records, we examined the possibility of being introduced from the royal court through old paper and the Jokbo (family tree) that Jong-ga owns.

Physiological Functionality of Gugija Products and an In Vivo Examination on Anti-hypertension Effects (구기자 가공품의 생리기능성 및 항고혈압 활성 검증)

  • To develop a new Gugija(Lycium chinensis Mill) product having increased value, the physiological functionality of various commercial Gugija products were investigated. In addition, an in vivo study was performed using spontaneous hypertensive rats(SHR) to examine the anti-hypertension effects of products. The results showed that antioxidant activity was highest in the methanol extract of Gugija leaf pickle(97.7%), and anti-hypertensive angiotensin I -converting enzyme(ACE) inhibitory activity was 80.4% in Gugija doenjang(soybean paste) water extract. Anti-cholesterolemia HMG-CoA reductase inhibitory activity was highest in the methanol extract of Gugija rice cake(66.1 %). However, SOD-like activity was below 30% in most products; and fibrinolytic activity was not detected or was very weak. Ultimately, we selected Gugija tea and Gugija wine as superior anti-hypertensive Gugija products, and subsequent in vivo testing was performed using SHR, comparing the tea and wine to Gugija fruit. Among them, the Gugija fruit demonstrated the best anti-hypertension effects in SHR.

Quality Characteristics of Pound Cake Made with Rice

  • 최근 식생활의 변화로 쌀 소비량이 감소하면서 쌀 소비확대를 위하여 쌀의 영양적 우수성과 기능성을 강조한 다양한 가공식품 개발이 요구되고 있는 실정이다. 따라서 기존 가공식품의 원료를 쌀로 대체하고자 하는 다양한 연구가 이루어지고 있다. 본 연구는 박력분 대신 쌀가루를 사용하여 파운드케?을 제조하였으며 또한 파운드케? 제조에 있어서 다량의 유지 사용으로 인한 고열량 문제를 개선하기 위하여 유지 첨가량을 50%까지 감소시키고 그 품질특성을 비교하였다. 쌀을 주원료로 한 파운드케?의 부피는 대조구에 비하여 19% 감소하였으며 유지를 30%, 50% 감소시킴에 따라 17%, 24% 감소하였다. 비부피 역시 대조구가 1.94 ml/g인 것에 비하여 쌀파운드케?이 1.58 ml/g 그리고 유지 30%, 50% 감소구는 1.72 ml/g, 1.66 ml/g으로 나타났다. 색도 조사 결과 Lightness는 쌀을 주원료로 했을 때 대조구에 비하여 약간 감소하였고 redness는 높거나 비슷하였으며 yellowness는 약간 증가하였으나 유의적인 차이는 보이지 않았다. 쌀파운드케?의 물성 조사 결과 hardness, adhesiveness, gumminess, chewiness는 대조구에 비하여 컸고 유지 첨가량이 감소함에 따라 감소하였으며 springiness, cohesiveness는 대조구에 비하여 작았으며 유지 첨가량이 감소함에 따라 증가하는 것으로 나타났다.
