지역별 옹기에서 발효된 한국 전통간장의 항산화 활성 (Antioxidant Activity of Korean Traditional Soy Sauce Fermented in Korean Earthenware, Onggi, from Different Regions)

  • 본 연구는 한국 전통간장을 각기 다른 지역별 옹기에서 숙성시키면서 변화하는 색도, protease 활성과 항산화 활성을 비교하였다. 120일간 지역별 옹기에서 발효한 간장의 색도는 적색도에서만 유의적인 차이를 나타내었다. 간장의 갈색도는 발효가 진행될수록 증가하였으며 발효 120일째 예산 옹기 간장의 갈색도가 가장 높았다. 간장의 protease 활성은 발효하는 동안 지속적으로 증가하였으며 강진 옹기의 간장에서 가장 높았다. 모든 지역 옹기에서 발효된 간장은 발효될수록 총 페놀 함량과 항산화 활성이 증가하였다. 강진 옹기의 간장은 총 페놀 함량(16.6 mg GAE/mL), FRAP(54.3 mg AAE/mL), DPPH 라디칼 소거 활성(43.6%)이 지역별 옹기 중에서 가장 높았다. 갈색도와 항산화 활성과의 상관성은 낮으나 protease 활성과 총 페놀 함량과의 상관은 높았다(R=0.85). 120일 동안 발효된 간장의 항산화 활성, protease 활성, 갈색도, 총 페놀 함량은 지역별 옹기에 따라 차이가 있었다.

간장, 고추장 및 된장 양념으로 발효한 진공포장 돈육의 저장기간 동안 품질 특성 (Quality Characteristics of Vacuum Packaged Fermented Pork with Soy Sauce, Red Pepper and Soybean Paste Seasoning during Storage)

  • 이 연구는 간장, 고추장 및 된장 양념을 이 용한 발효 돈육의 품질 특성에 관한 것으로 돼지 뒷다리를 채취하여 7 × 10 × 2 cm3 크기로 자른 후 육을 동일한 비율의 소스(간장소스 T1, 고추장소스 T2, 된장소스 T3)에 침지하여 1±1℃에서 10일간 발효숙성한 후 진공포장하여 1±1℃에서 1, 14 및 28일 동안 저장하면서 품질 변화를 측정한 것으로 결과는 다음과 같다. pH는 된장 발효 돈육이 저장 1일과 28일에 간 장과 고추장 발효 돈육에 비해 높았지만, 저장 14일에는 낮았다. 보수성은 간장 발효 돈육이 저장 28일에 고추장과 된장 발효 돈육에 비해 높았다. 전단가는 된장 발효 돈육이 간장과 고 추장 발효 돈육에 비해 낮았다. 표면 육색의 L*값은 된장 발효 돈육이 간장과 고추장 발효 돈육에 비해 높았지만, a*와 b*값은 고추장 발 효 돈육이 간장과 된장 발효 돈육에 비해 현저하게 높았다. VBN은 저장 1일과 28일에 된장 발효 돈육이 간장 발효 돈육에 비해 현저하게 낮았다. TBARS는 된장 발효 돈육이 간장과 고 추장 발효 돈육에 비해 현저하게 낮았다. 총균 수는 저장 14일에 된장 발효 돈육이 간장과 고 추장 발효 돈육에 비해 높았지만, 저장 28일에 는 현저하게 낮았다. 대장균수는 저장 1일에 간장과 된장 발효 돈육이 고추장 발효 돈육에 비해 현저하게 낮았고, 저장 14일과 28일에는 고추장과 된장 발효 돈육은 대장균 성장을 나타내지 않았다. 유산균수는 고추장 발효 돈육 이 간장과 된장 발효 돈육에 비해 현저하게 낮았다. 이상의 결과에서 된장 발효 돈육은 간장 과 고추장 발효 돈육에 비해 전단가, 단백질변 패, 지방산화도가 낮게 나타났고 미생물 중 총 균수와 대장균수가 적게 나타났다.

호두 첨가에 따른 양조간장의 맛 성분 및 관능적 특성 변화 (Changes in Taste Compounds and Organoleptic Preferences of Soy Sauce with Addition of Walnut)

  • This study was conducted to investigate changes in organoleptic properties and taste components including free sugar, organic acid and free amino acid with addition of walnut. Changes in total nitrogen were insignificantly different with addition of walnut. Amino type nitrogen content was decreased in proportion to supplemental level of walnut. Content of organic acids, of which three kinds were detected, such as citric acid, malic acid and lactic acid increased more than two times with addition of walnut. Contents of free sugar and amino acid were decreased with addition of walnut. The proportion of essential amino acid was 40.6~41.4 percent. Glutamic acid in total amino acid was increased in proportion with addition of walnut. The highest sensory evaluation score was recorded in soy sauce with addition of 2 percent walnut. Together, it was expected that 2 percent addition of walnut to soy sauce has a positive effect on the taste of soy sauce.

호두 첨가가 양조간장의 지방산 조성에 미치는 영향 (Effects of Addition of Walnuts on Fatty Acid Composition of Soy Sauce)

  • This study was conducted to assess effects of addition of walnuts on soy sauce quality. The pH was significantly increased by adding more than 4 percent of walnuts. As the addition of walnuts increased, Hunter's color values and brown color increased. Total solid of soy sauce did not change significantly with the addition of walnuts. Crude fat content increased by two times in the 2 percent added walnuts group compared to the control group, but it was not dependent on the addition of walnuts. DPPH radical scavenging activity was significantly increased with the addition of walnuts. The addition of walnuts decrease saturated fatty acids and increased unsaturated fatty acids. Composition ratio of linoleic acid was highest in the control group and all the additions. These results revealed that soy sauce made with walnuts have a positive effect on functionality and preference.

한국 전통간장 제조시 맥아첨가방법이 간장의 성분과 식미에 미치는 영향 (Effects of Methods of Adding Barley Malt in the Production of Kanjang (Korean traditional soy sauce) on it's Chemical Compositions and Sensory Characteristics)

  • 전통간장의 맛과 품질을 개선하기 위하여 간장제조시 탄수화물과 효소원으로써 맥아의 첨가법에 대하여 연구하였다. 전통메주(대조)와 메주제조시 맥아를 첨가하여 만든 메주 및 간장 담금시 전통메주에 맥아를 첨가하여 각각 간장을 담금한 후 150일간의 숙성기간동안 간장의 성분 변화를 조사하고 숙성간장의 식미검사를 실시하였다. 메주 제조시 맥아를 첨가하여 만든 메주로 담근 간장은 대조구인 전통 콩메주로 담근 간장에 비하여 간장 담금 초기부터 150일간의 숙성을 마칠 때까지 총질소, TCA가용성 질소, 색도, 순추출물 및 젖산함량이 높았으며 맥아첨가량이 더 많은 메주로 만든 간장에서 이들 성분함량이 더 높았다. 그러나 간장 담금 할 때 간장덧에 맥아를 첨가하였을 때는 포도당을 제외하고는 전통메주로 담금한 대조구 간장보다 오히려 성분함량이 낮았다. 식미검사에서도 메주제조시 맥아를 30% 첨가한 간장이 모든 기호도 특성에서 가장 높은 점수를 얻었고 종합적 기호도 점수도 7.56점으로서 전통간장(대조구)보다 5% 수준에서 유의적으로 식미가 우수함을 보여주었다.

고추장 첨가 중국 음식에 대한 중국인의 관능적 특성 및 기호도 분석 (Sensory Characteristics and Preference of Various Chinese Foods added Kochujang by Chinese Focus Group)

  • The purpose of this study was to analyze the characteristics of Chinese foods in main ingredients, sauces, and cooking methods, and to assess the applicability of kochujang in Chinese foods. Twenty Chinese foods and commercial kochujang were selected by a Chinese head cook. The main ingredients were 24 kinds such as pork, chicken, shrimp, bok choy, bean curd, Chinese noodles etc., which were generally used in Korean foods. The main Chinese sauces were 11 kinds, and soy sauce was used in 12 foods, shang loo tau soy sauce in 2, wine in 8, oyster sauce in 7, rice wine in 6. The classification of cooking units in all Chinese foods was performed and the cooking frequency was deep frying>pan frying>boiling>stir frying>steaming>roasting. The proper amount of kochujang (weight ratio) was decided by pre-test of the Chinese head cook and Chinese food added kochujang was assessed by a Chinese focus group. The overall preference of Chinese food added kochujang was assessed highly and was related to the kinds of sauces, and to the kinds of main ingredients. The foods which used soy sauce or shang loa tau soy sauce were preferred. Sweetness by using kochujang wasn't preferred in several foods. Saltiness and aftertaste by using kochujang didn't affect the food preference, and the intensity of color and pungency were evaluated as a moderate level. An increased amount of kochujang would be possible in several foods. However, the increase in the amount of kochujang for intensive color and pungency in Chinese foods was directly related to the increase of sweetness, which had been discussed as the main problem in lowering the preference. Therefore, the screening of various Chinese foods harmonized with kochujang and the determination of the proper mixing ratio with Chinese sauces are very important. The results of this study could be used as basic data for the promotion of kochujang consumption in the Chinese market.

한국 음식과 일본 음식의 조미료 사용법 비교 (The Differences Between Korean and Japanese Ways of Seasonings)

  • In this paper, the differences between Korean and Japanese ways of seasonings are studied. The main results are summarized as follows: (1) Shouyu and Miso which are Japanese equivalents of soy sauce and bean paste of Korean foods are used in variety of different seasonings with some other ingredients while Korean counter parts are used only to add salty tastes. (2) Shouyu and Miso lose their flavors after considerable time of heating, while Korean soy sauce and bean pastes increase their tastes after heating. (3) Mirin adds sweety taste and glaze and Sake makes food soft or hard according to the moment of being added during cooking. (4) In Korean foods soy sauce, bean paste and red pepper paste are on the basis of tastes, Dashi is used in almost every Japanese food. (5) Seasoned vegetables of Korean food are prepared only with spices of green onion, garlic and sesame oil while seasoned fishes or vegetables are mixed with Shoyu or salt and vinegar in Japanese food. (6) In making Zorim, Korean traditional sauces are added from the beginning of heating. But in making Nimono, sugar, salt, vinegar, Shoyu and artificial taste are added in order during heating. (7) In grilling, main food for grilling in Korea is meat, which is prepared with a variety of spices such as soy sauce or/and red pepper pastes, garlic, green onion, sesame oil, sesame powder, pepper and sugar while mainly fishes are grilled with salt, occasionally with Shoyu or Miso in Japanese food. (8) Pan frying fishes are taken with soy sauce with vinegar in Korea but Tepura are eaten with Tentsuyu in Japan.

장류용 강력국균에 관한 연구 3 (Studies on Koji for Soy Sauce Brewing (Part. 3))

  • The enzyme-producing potentials of industrially important strains of Aspergillus spp. were studied. Irradiation of three original isolates of Aspergillus oryzae to ultra-violet rays resulted in the production of mutants which differed from the parent riboflavin and vitamin $B_{12}$ in culture media. 1. Irradition three strains of Aspergillus oryzae to ultraviolet light produced mutants and two strains of them were selected for soy sauce brewing. 2. The two strains are the physiological mutants of Aspergillus oryzae. Both were found to have superior enzyme activity to their relatives. 3. Aspergillus oryzae UV-induced mutant 172-722 and 569-713 were more powerful than others in the production of riboflavin and vitamin $B_{12}$. The enzyme activity of these strain were high and decreased only slightly even in 20 percent solution of NaCl. 4. Aspergillus oryzae UV-induced mutant 172-722 had more powerful protease producibility in wheat bran media than in modified Czapek's solution. On the contrary, Aspergillus oryzae UV-induced mutant 569-713 had more powerful producibility of saccharogenic and dextrinogenic amylase in modified Czapek's solution than in mold bran. 5. Aspergillus oryzae UV-induced mutant 172-722 formed the spore rapidly and Aspergillus oryzae UV-induced mutant 569-713 did ordinarily. 6. It is found from the results that Aspergillus oryzae UV-induced mutant 172-722 is valuable material for the manufacture of soy sauce because of its high protease activity in 20 percent solution of NaCl. Aspergillus oryzae UV-induced mutant 569-713 is suitable for soy bean mash and for fermented red pepper sauce for its high saccharogenic and dextrinogenic amylase activity in 20 percent solution of sodium chloride.

3-MCPD Concentrations in Commercial Korean Soy Sauces Produced by Alkali Treatment Following Acidic Hydrolysis

  • Alkali treatment following acidic hydrolysis (ATAH) of defatted soybean is currently used to reduce the level of 3-chloropropane-1,2-diol (3-MCPD), a known carcinogen, in commercial Korean soy sauce. 3-MCPD concentrations in commercial soy sauces made by ATAH were compared with those made only by acidic hydrolysis, and products that combine soy sauce made by acid hydrolysis (followed by alkalinization) and enzymatic methods. The four soy sauces made by ATAH had lower 3-MCPD concentrations (below 0.078 ppm) than 4 commercial products (0.147∼0.481 ppm) made only by acidic hydrolysis. On the other hand, 3-MCPD concentrations in 4 commercial products made by combining soy sauces made enzymatically with that made from acid (with alkali treatment)-hydrolyzed soybean protein in varying ratios were in a range of 0.016∼0.053 ppm. The 3-MCPD concentrations in commercial Korean soy sauces, with the exception of 2 of the soy sauces made only by acidic hydrolysis, were lower than allowable limit of 0.3 ppm in Korea. These results demonstrated that currently produced commercial soy sauces on the Korean market hate toxicologically save 3-MCPD concentrations. It is also provides evidence that ATAH is an effective process for reducing 3-MCPD concentrations in commercial soy sauce.

Effects of Supercritical Carbon Dioxide Treatment on Meat Quality and Sensory Evaluation in Soy Sauce and Hot-pepper Paste Marinated Pork

  • The objective of this study was to investigate the effects of supercritical carbon dioxide (SC-$CO_2$) treatment on meat quality and sensory evaluation of marinated pork. Meat marinated in two traditional Korean marinades, soy sauce and hot-pepper paste, and raw marinated meat were then treated with 7.4, 12.2, or 15.2 MPa $CO_2$ at $31.1^{\circ}C$for 10 min. The SC-$CO_2$ treatments had no effect on the meat pH (p>0.05) or Warner-Bratzler shear force (p>0.05). There was no significant difference (p>0.05) in the total loss (sum of treatment loss and cooking loss) between the control and SC-$CO_2$ treated samples at 15.2 MPa (soy sauce marinated pork: 21.78 vs. 18.97%; hot-pepper marinated pork: 21.61 vs. 18.01%). After the SC-$CO_2$ treatment, lighter surface colors were observed in the treatment samples compared to those of the control samples (p< 0.001). However, tasting panelists were unable to distinguish a difference in color or in overall acceptability of the control and treatment (p>0.05). In the case of soy sauce marinated pork, when SC-$CO_2$ applied at 15.2 MPa and $31.1^{\circ}C$for 10 min, treatment samples showed a tenderer meat than the control samples. Therefore, the SC-$CO_2$ treatment conditions had no adverse effects on the sensory quality characteristics of the marinated meat products.
