국내 시판 간장에서의 3-Monochloro-1,2-propanediol(3-MCPD) 분석 평가 (Analysis of 3-Monochloro-1,2-Propanediol (3-MCPD) in Soy Sauce Products in Korea)

  • 3-Monochloro-1,2-propanediol(3-MCPD) was analyzed in soy sauce products commercially available in Korea. A total of 24 samples were collected and 3-MCPD was determined by GC/MS. Sources of 24 samples were classified by manufacturing methods as naturally brewed(NB), acid hydrolyzed (AH) and mixed (M = NB + AH) soy sauces. 3-MCPD was not detected in NB soy sauce products (< 0.01 ppm, mg/kg) whereas AH and M soy sauce products showed a wide range of 3-MCPD contamination (0.0l ∼ 2.038 ppm). The contaminated levels of 3-MCPD in soy sauce products were higher than the permissible or tentative permissible level of 3-MCPD in both European Community (0.02 ppm) and Korea (0.3 ppm). These data suggest that 3-MCPD levels contaminated in soy sauce products in Korea were shown to be too high and should be reduced to as low a level technologically feasible to protect Korean from the exposure to toxic chemical, 3-MCPD.

한국 전통 간장의 숙성중 관능적 품질에 미치는 성분의 변화 -아미노산성질소, 아미노산 및 색도를 중심으로 (Changes of Components Affecting Organoleptic Quality during the Ripening of Korean Traditional Soy Sauce -Amino Nitrogen, Amino Acids, and Color)

  • This study was performed to investigate the changes of amino nitrogen, total amino acids, free amino acids, and color of Korean traditional soy sauce (kan-jang) during the ripening and storage for 12 months and the characteristics of the changes. All of the preparation methods for soy sauce followed the recommendations of the Korea Food Research Institute. The components of soy sauce were analyzed at 0,6, and 12 months. The contents of amino nitrogen of soy sauce were significantly higher than that of soybeans or meju (soybean cakes) at the initial stage of storage (p<0.05), and decreased during the storage. The content of total amino acids of soybean sauce was significantly lower than that of soybeans, and the content of free amino acids was higher than that of soybeans (p<0.05). The contents of total and free amino acids decreased in soy sauce after 12 months of storage (p<0.05). The composition of total and free amino acids and their ratios of soy sauce were changed during the storage. The ratios of free to total amino acids of soybeans, meju, and soy sauce were 0.8%, 17.3%, and 53.1-59.8%, respectively. Glutamic acid, which represents the savory taste, was detected the most abundantly in soy sauce during the storage. The ratios of free to total amino acids of glutamic acid were 42.9-59.5% in soy sauce. Lightness of Hunter color of soy sauce decreased over time (p<0.05). This study indicates that the ratios of free to total amino acids of soy sauce were much higher than those of soybeans, although its contents of total amino acids were much lower than those of soybeans. This study also indicates that this comes from the preparation and fermentation of meju. It was suspected that the organoleptic characteristics of soy sauce derived from the amino nitrogen, amino acids, and color might be inferior over 1 year of storage time. However, more detailed research should be conducted to interpretate this characteristics more accurately.

Capsaicine의 간장방미효과에 관한 연구 (Studies on the Antifungal Activity of Capsaicine for 'Ganjang' Soy Sauce)

  • Cayenne pepper used traditionally as hot seasoning and for antifungal agent in "Ganjang" soy sauce in Korea. However the correlation between its component and antifungal activity has been unknown. CApsaicine is known as hot component of cayenne pepper. Antifungal activity of capsaicine in 'Ganjang' soy sauce was studied and the results are as follows; 1) In 'Ganjang' soy sauce, antifungal activity of capsaicine were strong in same degree with butyl-p-hydroxybenzoate. 2) Antifungal activity of capsaicine were intensified by the addition of sodium chloride. 3) The antifungal activity of capsaicine was increased by lower pH (pH 5.5-4.5) of 'Ganjang' soy sauce.

한국 전통 간장과 된장의 숙성 중 미생물상의 변화(제1보) -Bacillus sp.를 중심으로-

  • This study was performed to investigate the changes of Bacillus sp. of traditional Korean soy sauce (kan-jang) and soybean paste (doen-jang) during the ripening and storage for 12 months. All of the preparation methods for soy sauce and soybean paste followed the recommendations of the Korea Food Research Institute. The soy sauce and soybean paste were analyzed at 0, 6, and 12 months. The numbers of Bacillus sp. of meju (soybean cakes) or soy sauce and soybean paste at the initial stage were significantly higher than those of soybeans (p<0.05). The number of Bacillus sp. increased in soy sauce and soybean paste after 12 months of ripening and storage. This study indicates that this comes from the preparation and fermentation of meju. It is suspected that the organoleptic characteristics of soy sauce and soybean paste might be inferior over 1 year of storage time. Therefore, more research fur overall microbiological quality changes of soy sauce and soybean paste during the storage period should be conducted to interpretate this characteristics more accurately.

'장 담그기'의 전승양상과 지속가능성에 관한 고찰 (A Study on the Transmission and Sustainability of 'Making Traditional Soy Sauce' in Korea)

  • 본고는 '장 담그기'라는 구체적 사례를 통해 무형유산으로서 음식의 전승성이라는 문제를 살펴보고, 음식관습을 지속 유지시키는 원동력이 무엇인가에 대한 답을 모색하기 위해 마련되었다. 이를 위해 필자는 서로 다른 세 가지 유형의 구체적 사례를 통해 '장 담그기'의 전승양상에서 나타나는 지속과 변화를 살펴보았다. 첫 번째 사례는 '장 담그기'의 전과정을 직접 수행하는 경우다. 두 번째는 구입한 메주로 '장 담그기'를 실천하고 있는 사례다. 세 번째 사례는 음식에 관한 이념을 공유하는 사람들끼리 계를 조직하여 매년 장을 담그고 '씨간장'을 적립해가는 경우로, 매우 새로운 음식공동체의 출현을 엿볼 수 있다. '장 담그기'전승에서 변화를 이끌어내는 요인은 도구와 기술, 생산과 소비, 그리고 음식공동체의 변화라 할 수 있다. 이러한 변인들 때문에 오늘날 '장 담그기'전승은 실제 상당 부분 변화되고 있지만, 면담대상자들은 전통적 방식으로 만든 장맛이 유지되는 한 본인들의 '장 담그기'전통은 지속된다고 믿고 있었다. 따라서 '장 담그기'가 계속 전승되고 유지되기 위해서는, 장맛을 기억하고 향유할 줄 아는 '맛의 공동체'의 지속에 관심을 가질 필요가 있다.

장기숙성 한식간장의 숙성 기간별 품질 특성 비교 (Comparison of Quality Characteristics of Long-Term Matured Korean Soy Sauce)

  • In this study, the quality characteristics of 30 kinds of long-term matured soy sauce collected from all over Korea classified according to ripening period were analyzed. The longer the soy sauce had to matured, the closer the pH was to neutrality. Acidity decreased as the ripening period increased. Total nitrogen and amino nitrogen content increased as the soy sauce matured. Moisture content decreased with the increasing soy sauce ripening period, and the content of pure extracts increased in proportion to the ripening period. The numbers of bacteria, fungi, and yeast increased in proportion to the maturation period. The content of P was highest in all soy sauce analyzed, followed by K, Ca, Mg, Fe and Zn. Mg and Ca contents decreased with maturing, whereas K increased with maturing.

장기 숙성된 한식간장의 맛성분 및 관능적 특성 (Taste Components and Sensory Characteristics of Long-term Mature Korean Soy Sauce)

  • In this study, 30 kinds of long-term and mature Korean soy sauce were collected and classified by the fermentation period, and the components related to taste and sensory characteristics were analyzed. A total of 4 kinds of organic acids were detected. The total organic acid content was in the range of 97.2~341.6 mg%, but did not show the tendency to increase or decrease in proportion to the aging period. The total free amino acid content was within the range of 3,001.0~3,834.7 mg% and showed a tendency to increase in proportion to the ripening period of the soy sauce. The contents of aspartic acid and glutamic acid subsequently increased in the long-term matured soy sauce. The ratio of essential amino acid to total amino acid was 31.6~35.7%, and the ratio of glutamic acid to total amino acid was 19.6~23.9%, respectively. The panel of 20~29-year-old indicated that the longer the aging period of soy sauce, the lower the preference while the panel of 30 or more years indicated that the longer the aging period of soy sauce, the higher the preference. This study was the first to investigate the quality of long-term matured soy sauce in more than one year.

학동기 아동용 닭찜의 관능적 기호도에 영향을 주는 요인 분석 (Analysis of Factors Affect Sensory Acceptance of Dak-jjim in School Aged Children)

  • The purpose of this study was to analyze factors affecting acceptance of four kinds of dak-jjim samples in third year school-aged children (n=100). Soy sauce, red pepper paste, Vietnam fish sauce, and star anise were applied to samples for their familiar and exotic characteristics. Significant differences among samples were observed in odor, taste, and acceptance (p<0.001). Soy (Soy sauce sample), RPPaste (Red pepper paste sample), and Soy_FishS (Soy sauce and Vietnam fish sauce sample) samples scored higher than Soy_StarA (Soy sauce and star anise sample) sample. On the other hand, there were no significant differences in intensities of saltiness, sweetness, and hot spicy flavor (p>0.05). Liked attributes in samples were saltiness, sweetness, chicken flavor, potato flavor, moistness of chicken, hot spicy flavor, and color. Disliked attributes in samples were hot spicy flavor, saltiness, and ginger flavor. Significant differences among samples were observed in familiar intensity and willing to try again (p<0.001). Soy, RPPaste, and Soy_FishS samples scored higher than Soy_StarA sample. Panels considered taste (46%) and nutrition (45%). Higher familiar intensity of sample was associated with higher acceptance in samples. In other words, familiarity of food affects acceptance of food. Therefore, familiar ingredients such as soy sauce and chicken can be used for development of Korean menu items considering taste and nutrition with enhanced Korean food acceptance in school-aged children.

간장양조용 대체원료에 관한 연구 2 (Studies on the Substitution of Raw Materials for Soy Sauce (II))

  • The possibility of substituting potato or sweet potato for the wheat, one of the raw materials for soy sauce, was studied by measuring the amylase and proteolytic activities of Koji. Also optimum conditions of Koji making were determined. It was found that substitution of up to 30% (starch content) of wheat content (15% of the total bean and wheat content) with potato yielded good qulity of soy sauce. Use of more than 30% potato yielded a Koji of low enzymatic activity. This was attributed to the high moisture content of potato. It ws also found that substitution of up to 50% (starch content) of wheat content(25% of the total bean and wheat content) with sweet potato yieldede a good quality of soy sauce. But the taste was inferior to the control (the soy sauce which was made with 50% of bean and 50% of wheat).
