This study analyzed consumers' preferences and price sensitivity to native chickens. A survey was conducted from Jan 6 to 17, 2014, and data were collected from consumers (n=500) living in Korea. Statistical analyses evaluated the consumption patterns of native chickens, preference marketing for native chicken breeds which will be newly developed, and price sensitivity measurement (PSM). Of the subjects who preferred broilers, 24.3% do not purchase native chickens because of the dryness and tough texture, while those who preferred native chickens liked their chewy texture (38.2%). Of the total subjects, 38.2% preferred fried native chickens (38.2%) for processed food, 38.4% preferred direct sales for native chicken distribution, 51.0% preferred native chickens to be slaughtered in specialty stores, and 32.4% wanted easy access to native chickens. Additionally, the price stress range (PSR) was 50 won and the point of marginal cheapness (PMC) and point of marginal expensiveness (PME) were 6,980 won and 12,300 won, respectively. Evaluation of the segmentation market revealed that consumers who prefer broiler to native chicken breeds were more sensitive to the chicken price. To accelerate the consumption of newly developed native chicken meat, it is necessary to develop a texture that each consumer needs, to increase the accessibility of native chickens, and to have diverse menus and recipes as well as reasonable pricing for native chickens.
The genetic diversity of Korean native chicken is important for conservation of native chicken breeds and developing economically valuable traits in Korea. In this review, various types of genetic markers using Korean native chickens were investigated, which are mtDNA variations, microsatellite markers, markers in Major Histocompatibility Complex (MHC), and single nucleotide polymorphisms (SNPs). These genetic markers are suitable for breed discrimination and diversity studies because of their high polymorphism status. Thus, the purpose of this study was to summarize the genetic markers developed in the Korean native chickens and diversity studies using these breeds. Ultimately, these markers can be used for the future studies for understanding of genetic characteristics.
복제수변이(Copy number variation, CNV)는 DNA 다양한 구조적 변화의 한 형태이다. 복제수변이는 인간의 질병 및 농업의 생산성에 영향을 미치는 것으로 알려져 있다. 이전 우리나라의 닭의 품종은 유럽에서 유입되어진 품종을 기반으로 구축되어져 있었다. 따라서 농촌진흥청 국립축산과학원에서는 20년 동안 재래품종을 복원하려고 노력하였고, 5품종 12계통으로 복원하였다. 최근 염기서열분석 기술의 발달로, 해상도가 좋은 게놈 전체의 복제수변이를 발굴할 수 있게 되었다. 그러나 한국 재래닭 품종에 대해서는 체계적인 연구가 이루어지지 않고 있다. 본 연구에서는 한국 재래 닭(계통 L)에 대해서 게놈 전체의 염기서열을 분석하고 닭의 참고서열과 비교하여 재래닭에서 확인된 복제수 변이를 보고하였다. 닭의 28개 염색체에서 총 501개의 복제수 변이를 확인하였고, 이를 Gain과 Loss로 나누어서 표시하였다. 또한 우리는 501개의 복제수 변이를 포함하고 있는 유전자의 기능을 분류하였다. 그 결과, 전사 및 유전자 조절에 관련된 유전자들이 많이 분류되었다. 본 연구의 결과는 복제수 변이와 한국 재래닭의 경제형질 간의 연관성을 설명할 수 있는 기초자료로 활용될 것으로 사료된다.
본 연구는 10종의 MS(microsatellite) Marker를 이용하여 한국 재래닭 품종 내 외모 특성에 의해 구분되는 3계통(적갈색: 60수, 황갈색: 46수, 흑색: 40수)과 오골계 집단(49수), 총 4계통(총 195수)에 대한 유전 특성을 분석하고, 이를 활용하여 동일성 검정을 실시할 경우 개체 식별에 대한 신뢰도를 검정하기 위해 실시하였다. 집단 간의 유전적 유연관계를 알아보기 위해 각 MS marker별 대립 유전자의 빈도를 산출하여 이를 근거로 집단간의 보정을 통한 방법을 이용하는 DISPAN program을 활용하여 유전적 거리에 대한 추정 결과 R(적갈색 계통)과 L(흑색 계통)간의 유전적 거리는 0.05로 가장 가까운 것으로 나타났으며, R과 Y(황갈색 계통, 0.073), Y과 L(0.083) 역시 가까운 유전적 거리를 나타내고 있음을 확인하였다. 반면, 재래닭 집단과 오골계 집단(S) 간의 유전적 거리는 0.149(R과 S), 0.144(Y과 S) 그리고 0.158(L과 S)으로 비교적 먼 것으로 나타나 재래닭 집단과 오골계 집단 간의 유전적 차별성을 확인할 수 있었다. 10종의 MS marker를 대상으로 누적 개체 식별력을 계산한 결과 99.999%로 확인되었고 $0.255{\times}10^{-7}$의 짝확률 값이 추정되었다.

Poultry is one of the three major meats in Korea and is a representative source of protein. The annual per capita consumption of chicken has been showing steady growth trends, with an increase of approximately 89% in 2018 compared to that of 2005. In this study, we investigated the domestic chicken production and consumption, and conducted an overall study on the domestic chicken industry. By using consumer panel data, we analyzed the characteristics of consumers buying chicken. Specifically, poultry was categorized into two types: traditional raw chicken and processed chicken, which emphasizes convenience. The purchase of raw chickens has generally been on the decline. From these, however, the proportion of native Korean chicken and chicken cuts is on the rise. Processed chicken, on the other hand, continues to grow, especially online. After examining the consumption characteristics of consumers who buy chicken, it was found that the purchase share increased with increasing age of native Korean chickens, whereas the purchase share increased with decreasing age of processed chicken. Based on these results, we confirmed that it is necessary to establish differentiated marketing and promotion strategies for each consumer target for the growth of chicken market.
Korean native chickens are a very valuable chicken population in Korea and their prices are higher than that of commercial broilers. In order to discriminate two commercial Korean native chicken populations (CCP1 and CCP2), single nucleotide polymorphisms (SNPs) from mitochondrial (mt) DNA D-loop sequences and LEI0258 marker polymorphisms in the major histocompatibility complex (MHC) region were investigated. A total of 718 birds from nine populations were sampled and 432 mtDNA sequences were obtained. Of these, two commercial Korean native chicken populations (363 birds) were used for investigation of their genetic relationship and breed differentiation. The sequence data classified the chickens into 20 clades, with the largest number of birds represented in clade 1. Analysis of the clade distribution indicated the genetic diversity and relation among the populations. Based on the mtDNA sequence analysis, three selected SNPs from mtDNA polymorphisms were used for the breed identification. The combination of identification probability (Pi) between CCP1 and CCP2 using SNPs from mtDNA and LEI0258 marker polymorphisms was 86.9% and 86.1%, respectively, indicating the utility of these markers for breed identification. The results will be applicable in designing breeding and conservation strategies for the Korean native chicken populations and also used for the development of breed identification markers.

This study examined how chicken breed affects consumer behavior. The breeds evaluated were a Korean native chicken (KNC) and a commercial broiler (CB). Consumer behavior was measured by evaluating sensory attributes (taste, odor, and texture) and purchase behaviors [satisfaction, purchase intention, and willingness to pay (WTP)]. The sensory evaluation was conducted using healthy Korean consumers (n=100). The chicken was cooked in baeksuk (Korean traditional chicken soup), which is a seasonal summer health food in Korea. The participants evaluated sensory attributes and purchase behaviors between blinded samples of baeksuk (CB) and unblinded samples of baeksuk (KNC). The sensory evaluation involved chicken breasts and legs. The participants considered KNC as having a more umami taste, a chewier and juicer texture, and a less metallic odor than CB. Moreover, when participants were given KNC breed information, they expressed higher satisfaction, purchase intention, and WTP. The results of this study contribute to consumer behavior literature by revealing the effects of breed information on consumer sensory perceptions and purchase behaviors. Furthermore, the findings provide evidence that branding KNC is one way to increase its demand and low market share while contributing to sustainable consumption.
The recent progress od DNA technologies including DNA fingerprinting (DFP) and random amplified DNA polymorphism (RAPD) analysis make it possible to identify the specific genetic trits of animals and to analyze the genetic diversity and relatedness between or withinspecies or populations. Using those techniquse, some efforts to identify and develop the specific DNA markers based on DNA polymorphism, which are related with economic traits for Korean native animals, Hanwoo(Korean native cattle),Korean native pig and Korean native chicken, have been made in Korea for recent a few years. The developed specific DNA markers successfully characterize the Korean native animals as the unique Korean genetic sources, distinctively from other imported breeds. Some of these DNA markers have been related to some important economic traits for domestic animals, for example, growth rate and marbling for Honwoo, growth rate and back fat thinkness fornative pig, and growth rate, agg weight and agg productivity for native chicken. This means that those markers can be used in important marker-assised selection (MAS) of Korean native domestic animals and further contribute to genetically improve and breed them.
닭고기 구매 의사결정력이 높은 503명의 일반 주부를 대상으로 토종닭의 생산에서 소비까지 관련된 품질 속성들을 선발하여 중요도-만족도 분석을 실시하였다. 중요도와 만족도 모두 높은 유지강화 대상으로는 원산지(origin), 유통기한(shelf life), 신선도(freshness), 위생/안전성(hygiene/safety) 등이 해당되었으며, 높은 중요도를 지님에도 만족도가 낮아 중점개선 대상으로는 토종닭 인증(certification), 냉동 여부(freeze or not) 등이 해당되었다. 건강에 대한 관심도 증가에 따라 정육량(lean meat) 또는 단백질(protein) 함량에 관심을 보였고, 관능적 특성으로 토종닭 특유의 쫄깃한 식감에 대한 중요도와 만족도가 높았다. 향후 새롭게 개발될 토종닭 품종에 대해서는 현재보다는 더 연하면서도 풍미가 강하고 쫄깃한 식감이 강한 것을 선호하였다. 이 결과를 통해 토종닭 구입 시 주요 속성과 앞으로 개선해야 할 품질적 특성 방향을 제시함으로써 신품종 토종닭의 육종 방향을 제시하고 있다.
본 연구는 proteomics의 방법을 이용하여 가금의 육질과 관련된 단백질을 찾고자 수행하였다. 인삼부산물 추출액을 급여한 실용 재래닭에서 육질과 관련된 것으로 추정되는 후보 단백질들이 선발되었으며, 이 결과는 가금의 육질을 향상시키는 단백질 Marker로서 이용될 수 있을 뿐만 아니라 현재까지 밝혀지지 않은 가금의 2D map을 만드는데 역시 중요하게 이용될 수 있다.
