전통장류에 대한 소비자 만족도 분석 - 대전소비자를 대상으로 - (An Analysis of Consumer's Satisfaction about Korean Traditional Soybean Paste Products - Focusing on Deajeon's Consumers -)

  • The purpose of this paper is to estimate consumer's satisfaction by purchasing farmer's processed food. So, this paper surveyed consumers which have purchased Korean traditional soybean paste products, by reason of limiting research objects among lots of farmer's processed food. A survey of 220 consumers was carried out on September and October 2016. For this matters, this paper used multiple linear regression model(included LOG-LIN model) and, set up 1 dependent and 11 independent variables. As the analysis results, we could find out that consumer's satisfaction was affected by 6 variables(price, taste, ease of cooking, confidence of product information, social awareness and perceived 6th industrialization). Among these variables, the strongest variable was "social awareness", and the second was "perceived 6th industrialization". This paper also estimated the rate of change that a dependent variable was affected by independent variables. As the results, this paper found out that "perceived 6th industrialization" had the highest rate of change(5.8%) and the second was "social awareness"(5.6%). This paper proposed 7 implications of Korean traditional soybean paste. Those were the proper price policy and quality value's promotion, quality Improvement and confidence enhancement, development of products for consumer's convenience, enhancement of social awareness, enhancement of politic management about 6th industrialization and accessibility of purchasing information.

국내에서 분리된 황국균을 활용한 된장 제조 및 특성 분석 (Manufacturing and Quality Characteristics of the Doenjang made with Aspergillus oryzae Strains Isolated in Korea)

  • 국내 전통발효식품으로부터 protease 활성이 높은 Aspergillus oryzae SCF-6, SCF-37, 그리고 JJSF-1 균주를 선발하여 된장을 각각 제조하고 60일간 숙성하면서 품질을 비교 평가하였다. 60일 숙성 동안 수분 염도 및 pH는 시료 간에 큰 차이가 없었다. 된장의 숙성지표가 되는 아미노산성 질소의 함량은 숙성 경과에 따라 증가하여 60일 숙성 후 SCF-6을 활용하여 제조한 된장이 971.6 mg%로 다른 시료보다 높았으며, 유리아미노산 함량도 상대적으로 높은 8,064.9 mg%이었다. SCF-6과 37로 제조한 된장은 60일 숙성 후 GABA 함량이 각각 61.3과 53.7 mg%로 측정되었다. 색도는 숙성 경과에 따라 명도와 황색도는 점차 감소한 반면 적색도는 점차 증가하였다. 아플라톡신은 모든 된장에서 불검출 되었고, 바이오제닉 아민 중 histamine 함량은 2.55-5.60 mg/kg 그리고 tyramine은 3.70-5.87 mg/kg으로 매우 낮게 측정되었다. 본 결과로 A. oryzae SCF-6은 장류 제조의 종균으로 적합한 것으로 판단된다.

콩 종류와 대두 가공식품에 함유된 isoflavones의 정량 (High Performance Liquid Chromatographic Analysis of Isoflavones in Soybean Foods)

  • 콩에 함유되어 있는 이소플라본은 골다공증 예방 및 치료제로써의 활발한 연구가 진행중이다. 콩은 우리의 식생활과 깊은 관련성이 있으므로 이소플라본의 함량을 HPLC로 정량분석 하였다. 한국산 황기와 콩제품인 콩나물, 두부, 콩기름, 메주, 된장, 간장, 대두, 약콩, 완두콩 및 강남콩 등에서 함유된 isoflavone을 5mM $NaH_2PO_4$ 완충용액(pH 4.6)과 메탄올을 혼합한 이동상 (4 : 6) UV 260 nm에서 분석하였다(Table 2). 콩식품에 함유된 isoflavone중 유리 daidzein 양은 콩나물에서 $43.49{\pm}3.41\;mg/kg$, 된장에서 $233.31{\pm}5.81\;mg/kg$, 약콩은 $35.66{\pm}4.70\;mg/kg$이 검출되어 대두 $(14.52{\pm}0.58\;mg/kg)$ 비해 높았다. (P<0.05)간장 및 콩 기름은 함량이 낮았고, 완두콩 및 강남콩의 함량은 측정치 이하였다. 유리 genistein은 콩나물이 $27.631{\pm}1.66\;mg/kg$,메주가 $18.75{\pm}1.33mg/kg$, 된장이 $291.52{\pm}6.81\;mg/kg$ 검출되었고, 대두는 $22.49{\pm}0.93mg/kg$으로 약콩$(61.10{\pm}7.73mg/kg)$ 보다 낮았다(P<0.01). 그러나 formononetin의 함량은 daidzein, genistein과는 다른 양상을 보였으며, 특히 황기는 daidzein과 genistein은 검출되지 않았으나 formononetin의 함량이 대두$(60.62{\pm}11.35\;{\mu}g/kg)$ 비해 $9629.73{\pm}0.57\;{\mu}g/kg$으로 약 160배 이상 많았고, 약콩은 대두와 유사하였으나, 콩기름, 완두콩, 강남콩에서는 formononetin이 검출되지 않았으며, 전통식품인 된장과 메주에도 상당량 함유되어 있었다.

루우핀콩의 발효에 관한연구(I I) -한국 재래식 장유 제조시험 - (Studies on the Fermentation of Lupin Seed (II) - Preparation of traditional Korean fermented been Sauce and Paste -)

  • 본 실험은 대두콩 대신 루우핀콩으로 메주를 제조하여 숙성시키면서 숙성기간 중에 일어나는 성분 변화를 측정함과 동시에 대두콩으로 제조한 메주와 그 발효 특성을 비교하였다. 완전히 익은 콩에 Asp. oryzae를 접종하여 개량식 메주를 제조하였고, 건조된 메주는 소금물에 담궈 4주동안 숙성시켜 간장과 된장을 제조하였다. 일반적으로 숙성 기간중 단백질 분해효소와 전분 분해효소의 활성은 대두콩 메주에서보다는 루우핀콩 메주에서 더 높았으며, 단백질 분해효소의 활성에서의 증가는 발효된 된장과 간장의 $\alpha$-아미노태 질소 함량의 증가와 직접적인 상관관계를 나타내었으며 숙성 중 간장의 색깔이 진한 갈색으로 되는 정도는 대두콩 메주와 비교할때, 루우핀콩 메주에서 더 빨랐다. 또한 이렇게 발효된 간장과 된장에 대해 관능검사한 결과 루우핀콩 된장은 전반적인 품질면에서 대두콩으로 제조한 된장에 비해 떨어졌으나 루우핀콩 간장은 전반적인 품질면에서 만족할 수 있었다.

한국의 발효식품에 관하여 (Traditional Fermented Food Products in Korea)

  • Fermented foods available in Korea may be classified into four groups, namely, fermented soybean products, fermented cereal products, fermented vegetable products, and fermented fishery products based on raw materials used. The representative fermented foods based on soybean are Kanjang(soysauce), Doenjang(fermented soybean pastes), and Kochujang(red pepper added-fermented soybean paste). Such fermented products are made using Meju(functioning as a starter and prepared by fermentation of steamed soybean mash) as an essential ingredient, and used widely as a soup base and/or in seasoning side-dishes for everyday meals year around. Excepting Sikhae, all fermented products based on rice and other cereal grains are of alcoholic nature. Takju (Makgeolli) used to be made using rice as the major raw material, however, mainly due to the shortage of rice in recent years, other cereals, such as, barely, corn, and wheat flours are also used to replace rice today. Owing to such changes in the raw materials. the popularity of Takju has been somewhat reduced, yet it is still widely consumed in rural areas. Although Chungju is a popular rice wine with superior qualify over Takju, the amount consumed is considerably limited. The highest qualify rice wine, Bupju, in particular, is made by a low temperature fermentation using glutinous rice. Kimchi is an unique fermented vegetable product of long tradition in Korea. Although it was for consumption mainly in winter season serving as a source of vitamins, today it is widely used throughout the year. Except Kkakdugi and Dongchimi, all of the fermented vegetable products contain salted Korean cabbage as an essential item, while they abound in varieties depending on material composition and methods of processing, and also on seasons and localities Next to Kimchi in this category is Kkakdugi made of raddish in popularity and quantity consumed. The four groups of fermented food products described above are reviewed in some detail and evaluated in terms of their nutritional significances, processes and microorganisms involved. and their commercial potentials. Jeotkal (or Jeot) is a name given to all fermented products of fishery origin. A number of Jeot can be prepared by adding salt and allowing fermentation to the raw materials such as shrimp, anchovy octopus, clam, oyster, etc.

Metabolite Profiling and Microbial Community of Traditional Meju Show Primary and Secondary Metabolite Differences Correlated with Antioxidant Activities

  • Meju, a type of fermented soybean paste, is used as a starter in the preparation of various Korean traditional soybean-based foods. In this study, we performed Illumina-MiSeq paired-end sequencing for microbial communities and mass spectrometry analysis for metabolite profiling to investigate the differences between 11 traditional meju products from different regions across Korea. Even though the bacterial and fungal communities showed remarkable variety, major genera including Bacillus, Enterococcus, Variovorax, Pediococcus, Weissella, and Aspergillus were detected in every sample of meju. The metabolite profile patterns of the 11 samples were clustered into two main groups: group I (M1-5) and group II (M6-11). The metabolite analysis indicated a relatively higher amino acid content in group I, while group II exhibited higher isoflavone, soyasaponin, and lysophospholipid contents. The bioactivity analysis proved that the ABTS (2,2'-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid)) radical-scavenging activity was higher in group II and the FRAP (ferric reducing antioxidant power) activity was higher in group I. The correlation analysis revealed that the ABTS activity was isoflavonoid, lipid, and soyasaponin related, whereas the FRAP activity was amino acid and flavonoid related. These results suggest that the antioxidant activities of meju are critically influenced by the microbiome and metabolite dynamics.

고추장 산업의 현황과 세계화 제안 (Present status of Kochujang, a fermented hot pepper soybean paste, and its globalization)

  • Kochujang, a fermented hot pepper soybean paste, is a spicy condiment mixed with red pepper, boiled rice and mold fermented soybean (as koji) which is then fermented for several months. It has unique taste of hot, sweet, salty and savory flavor by all mixed ingredients by fermentation, and is one of most famous Korean traditional foods. The scale of the kochujang industry is about 200 billion won in Korea, and 7.8 million dollars and 4,500 tons in exports. Although it is still not a large part of the food industry in Korea, the scale of soy products will increase because it is a major subsidiary food in our dietary life and has grown from a homemade to a mass produced product. Kochujang has the largest market in the scale of sales among fermented soybean products and has merit because of its domestic base and its ability to grow to an international market due to its unique fermented taste. In order to make kochujang an international food, it Is necessary to study the scientific development of kochujang and the diversity of products using kochujang that are fitted to the taste of people around the world. In addition, participation in various exhibitions and food fairs supported by the government should help to promote kochujang throughout the world. In addition, these should be actively supported by the related businesses. Red pepper, a major ingredient in kochujang, has been widely studied and shown to have a positive effect on the reduction of fat, on the strengthening of the immune system, and on active biological functions. A fermented spice like kochujang has been shown to be beneficial for the body due to the process of fermentation rather than from the red pepper itself. If we prove the various biological functions of kochujang with a particular taste and flavor, it will energize a new market. It is necessary for business to make a continuous effort supported fly the scientific world and by government policy, in order to introduce this traditional food to the world. In the present day, the kochujang market is now on a firm basis and has been activated in the field of its study. Now, it is possible to achieve the birth of a secondary international market by concentrating on these efforts.

영국인을 대상으로 한 고추장 제품의 정성적 소비자 조사 (A Consumer Study of Gochujang Products Using Focus Group Interviews in the UK)

  • To investigate the market potential for developing Gochujang(a traditional Korean hot pepper soybean paste) products in the UK including the European market, a qualitative consumer study utilizing focus groups was conducted on the $23rd{\sim}25^{th}$ of May, 2005. The focus group approach utilizes small groups of consumers and is very effective in determining the ways in which a product can be used, by examining consumer perceptions on the overall sensory properties of a product as well as variations in taste, flavour, and texture. A series of six consumer group studies were carried out in three different locations around the UK. Each group involved approximately eight respondents(a total of 48 respondents) and ran for at least 90 minutes. The respondents were recruited by specific criteria to achieve a cross-section of ages and genders. All respondents purchased, prepared, and ate home-cooked Oriental/Far Eastern cuisine. Consumer reactions to Gochujang in its traditional form, and in manufactured products, were explored in terms of appearance, texture, flavour, and taste the consumers' perceived uses and applications for products were also examined. Many consumers were familiar with ethnic cuisines such as Chinese, Thai, Japanese, Indian, and Tex/Mex, already preparing these foods using various convenience products at home at least twice a week. However, Korean cuisine was not mentioned by any of the respondents. The Gochujang sauce presented during the interview had broad based appeal mainly as a dipping sauce, and to a lesser degree as a marinade. Traditional Gochujang has the potential to inspire consumers who are looking for novel and authentic world cuisine products. From the sensory evaluations of various prototypes developed according to consumer reactions during the focus group interviews, three prototypes(a sauce for chicken, dipping sauce type, and BBQ sauce type) were determined for further consumer preference studies.

시판 재래식 된장 중의 biogenic amines의 함량 조사 (Biogenic Amines Content in Commercial Korean Traditional Fermented Soybean Paste)

  • 시판 5개사 재래식 된장 중의 biogenic amines의 함량과 BAs 생성에 영향을 줄 수 있는 미생물 분포 및 화학적 품질을 조사하였다. 모든 제품에서 Bacillus spp.는 $10^7{\sim}10^9$ CFU/g 수준으로 나타났으며, lactic acid bacteria의 경우 $10^2{\sim}10^3$ CFU/g 혹은 검출되지 않았다. pH는 제품별로 $5.05{\sim}5.75$의 범위로 나타났으며, 아미노태질소 함량은 $252.0{\sim}557.2$ mg%의 범위로 제품마다 숙성도의 차이를 보였다. 시판 된장에서 검출된 biogenic amines(BAs)은 putrescine(PUT), cadaverine(CAD), tryptamine(TRP), spermidine(SPD), spermine(SPM), histamine(HIS), tyramine(TYR) 및 agmatine(AGM) 등으로 총 8가지 종류가 검출되었으며, 각 제조회사에 따른 함량 차이를 보였다. 시판 된장은 발효 숙성이 완료된 제품으로, 제조회사마다 다른 공정에 의해 제조되어 미생물학적 및 일반적 품질특성과 BAs의 함량과의 연관성을 찾는 데에는 제한적인 면이 있었다.

Characteristics of B Cell Mitogen Isolated from Korean-Style Fermented Soybean Paste

  • Korean-style fermented soybean paste (KFSP), Doenjang, is a traditional food that is consumed as a protein source in Korea. Recently, efforts to identify biolgocial response modifiers (BRMs) have been focused on food products. Accordingly, this study which isolated abiologically active substance form KFSP, named KFSP-BRM, ws defined to be aheat-stable carbohydrate with a molecular weight of 2,000 kDa. The biological activity of KFSP-BRM was not inactivated by treatment with an anti-LPS antibody. The oral as well as intraperitoneal treatment of mice with KFSP-BRM significantly enhanced the number of B cells expressing surface significantly enhanced the number of B cells expressing surface immunoglobulins (IgM and IgG). Subsequently, an increased level of immunoglobulins in the sera was also observed. In vitro. KFSP-BRM was found to upregulate the production of interleukin-1 (IL-1) and IL-6 by mactro phages and B cells but not the production of IL-2 by T cells. In conclusion, these data demonstrate the presence of a BRM in KFSP, which may provide an additional benefit to those consuming it is a food. KFSP-BRM is a novel B cellmitogen distinct from fresh soybean lectin or B cell mitogens, such as LPS and Streptococcus protein A. The major biological effects of KFSP-BRM would appear to be anincreased production of IL-1 and IL-6 by macrophages and B cells, thereby enhancing the function of mature B cells.
