청소년의 패스트푸드점과 패밀리레스토랑 이용 실태 지역별 비교 연구 (Korean Youths' Use of Fastfood and Family Restaurants in Different Regions: a Comparison among Cities and Rural Towns)

  • This study was conducted to investigate Korean youths' use of fastfood and family restaurants in different regions, especially among cities and rural towns. Total 1,600 questionnaire surveys were distributed to Junior high and Senior high school students and 1,487 were used for the analysis. In order to consider regional differences as well as overall characteristics of youths' fastfood and family restaurant visiting behaviors, the subjects were evenly sampled from north Seoul, south Seoul, big cities, middle/small cities and small towns. As for the frequency of visiting fastfood restaurants, 58.3% of the respondents answered 'once to five times' a week. South Seoul area showed the highest frequency. 'Easiness' was the main reason of eating fastfood, which was up to 57.8% of the overall respondents while 42.8% of the small town youth ate fastfood because of the 'good taste.' As for the concepts on fastfood, 42.7% understood it as 'easy to eat' while 33.6% responded as 'easy to get fat.' For the question of getting channel of fastfood information, 44.8% answered 'TV' and 28.3% responded 'from friends.' Coupons were found to affect fastfood restaurant visits, highest in south Seoul, and lowest in small cities. For the question of the relationship of Koreanized menus and fastfood restaurant visits, small towns showed the highest frequency, while South/North Seoul had the lowest frequency. For the percentage of visiting family restaurants, respondents answered in the order of South Seoul(59.7%), North Seoul(44.5%), Big cities(39.5%), small cities(19.4%), and small towns(13.1%). Most of youth visited family restaurants because of the taste, while youths of middle/small cities visited due to the atmosphere. The effect of coupons on visiting family restaurants were found to be lower than the one of fastfood restaurants. Korean youths were found to visit fastfood restaurants very frequently in all regions and the tendency of visiting family restaurants is also increasing. At this point, balanced menus and education for healthy eating habits are urgently needed for the youth.

패스트푸드 레스토랑의 소비가치가 고객만족, 행동의도에 미치는 영향 (The Effects of Consumption Values on Customer Satisfaction and Behavior Intention in Fast-Food Restaurants)

  • Purpose - Until recently, studies on customer values for restaurants recognized two path structures; the SERVQUAL model, that is, service quality? perceived value? customer satisfaction? behavioral intention, and the customer value? customer satisfaction? behavioral intention path that categorizes customer values into functional value and hedonic value. This study, instead, classifies the consumption values of fast-food restaurants based on the consumption value system provided by Sheth, Newman and Gross (1991) and illustrates the new path structure, consumption value? customer satisfaction? behavioral intention, targeting college students for a generalization of the consumption value system of fast-food restaurants. Research design, data, and methodology - This study establishes five hypotheses based on the relationship between each type of consumption value (functional, emotional, social, and epistemic) and customer satisfaction, and the relationship between customer satisfaction and behavioral intention. For this analysis, data was collected by conducting a pre-test and administering a survey to 213 college students who are regular customers at fast-food restaurants in Seoul, Korea. The data collected was then analyzed using SPSS 15.0 and AMOS 6.0 statistical packages. Results - The study showed that: First, the consumption values of fast-food restaurants are classified into the following four categories: functional value, emotional value, social value, and epistemic value while consumption value can be applied to customer value of fast-food restaurants. Second, the functional and epistemic values had a positive impact on customer satisfaction. The resulting satisfaction is attributed to the intrinsic characteristics of fast-food restaurants like the consistent quality of food, reasonable prices, fast service, and unique or new experiences on every visit. On the other hand, emotional and social values did not affect customer satisfaction. The results on emotional value differed from the general studies on restaurants while the results obtained for social value were not consistent with the studies on high-end restaurants. Third, customer satisfaction had a positive impact on behavioral intention. The survey showed that college students reflected behavioral intention - repurchase intention and word-of-mouth - if they were satisfied with the food quality and employee services provided. Simultaneously, it was seen that the impact of functional value on customer satisfaction of fast food restaurant goers was more than that of epistemic value. Conclusions - The consumption values of fast-food restaurant users could be classified into four categories, functional, emotional, social and epistemic values, based on the consumption value system provided by Sheth, Newman and Gross (1991). It proved that the customer values of restaurant goers can be extended to the path structure of consumption value? customer satisfaction? behavioral intention to confirm its generalization. The study also showed that marketing managers need to focus more on the factors that influence functional value as the fast-food restaurant users consider timely services with the consistent quality of food at a reasonable price and at a convenient place more important than the new experiences or uniqueness.

외국인의 한식당에 대한 가격민감성 분석 (Analysis of Foreign Customers' Price Sensitivity on Korean Traditional Restaurants Using Price Sensitivity Measurement)

  • 본 연구에서는 한식당에 대한 외국인 고객의 가격민감성을 측정하였으며, 그 결과 한식당 유형별로 가격민감성이 다르게 측정되어 가격이 각 외식업체의 제품과 서비스의 품질과 가치를 특징짓는 것으로 나타났다. 이에 따라 소비자의 서로 다른 요구에 의해 준거 가격이 복잡해지며, 소비자의 구매 목적에 따라서도 영향을 미치는 것을 알 수 있었다. 특히, 외국인 국적별로 가격민감성을 비교한 결과, 각 세분 시장별로 가격민감성에 차이를 나타냈는데, 전반적으로 일본인이 다른 세분시장에 비해 가격에 민감한 경향을 보이는 것으로 측정되었다. 이러한 가격민감성측정 모델은 다른 타겟 시장의 민감성과 각각의 수용가격범위를 측정할 수 있으므로, 외식업체 운영자들은 어떤 시장이 얼마의 최소한의 가격으로 구매 행동을 하지 않으며, 어떤 시장에 그 가격에 맞는 가치를 제공하도록 노력을 기울일 것인지 파악해야 한다. 또한 가격과 품질사이의 단순한 상관관계에 의해서만 소비자들의 행동을 설명하기 엔 너무 많은 변수들과 상황이 존재하고 있다. 따라서 구매 동기,사회적 환경 등의 요인, 시간제한, 계절적 효과, 물리적 환경, 구매 주체, 분위기 등의 상황적 변수들이 가격 민감 행동과 상호 작용 가능한 잠재적 요인들이므로 가격민감성과의 상관관계 분석도 가능할 것이다. 그러나 가격은 동질적인 제품 또는 동질적인 상황에서 소비되는 제품과 서비스에 대해서는 그 중요성이 떨어지고, 브랜드가 품질의 지각과 가치의 지각, 그리고 구매의도에도 긍정적인 영향을 미치게 되므로 외식기업들은 궁극적으로 이러한 순간에 다른 브랜드와 차별화 될 수 있는 한식 브랜드 요인들을 강조하여 경쟁적인 이익과 이윤을 증가시켜야 함을 잊지 말아야 할 것이다. 이와 함께 소비자의 기호와 욕구를 충족시킬 수 있는 가격과 가치 부여만이 고객 만족과 재 방문, 나아가 충성 고객을 이끌 수 있으며, 외식기업의 이를 활용한 가격전략 수립이 우선되어야 한다.

한식당의 서비스 수행도에 대한 외국인 고객의 평가 분석 (Analysis of Foreign Customers' Evaluation of Service Performance for Korean Traditional Restaurants)

  • The purposes of this study were to (1) identify foreigners’ evaluation of service performance, (2) define foreigners’ needs for each segment of Korean traditional restaurants, and (3) plan the adaptation strategies for Korean traditional restaurants on foreign countries. From April to July, 2005, 542 foreigners responded to an individual survey. Statistical analyses on SPSS 12.0 for Windows were performed on the survey data using descriptive statistics, factor analysis, reliability analysis, independent-samples t-test and ANOVA. The major findings from the study are as follows. First, among all the attributes, ‘Offer free additional side dishes’ scored the highest, followed by ‘taste of food is good’ and ‘temperature of food is proper’. Second, factor analysis classified the service attributes into four factors in the following order of importance: menu, sanitation, service, and facility and atmosphere. Finally, foreigner groups categorized by their general characteristics, including demographics, showed statistically differences in their evaluation. In consequence, the research findings suggest that operators of Korean traditional restaurants should understand different customers’ needs within and between customer segments.

How Does the Food Quality Matter in Beef Specialized Store?

  • The purpose of this study aims to confirm the importance of customer selection attributes of beef restaurants. This study found a selection attributes for a beef specialty restaurant, and proved the hypothesis through empirical analysis. Along with the increase in income levels over the past decade, the restaurant industry has grown. In contemporary society, where quality of life is becoming more important, the restaurant industry has expanded the importance of service quality. In particular, for meat consumption, per capita beef consumption is expected to increase every year; the effect of the Korea-U.S. Free Trade Agreement is also expected to further increase the consumption of high-quality and high-priced U.S. beef. However, like the study of general restaurant-selection factors in restaurant management research, studies of beef restaurants and commercial studies considering consumers' selection attributes are scarce. This study verified the characteristics of consumer choice for restaurants specializing in beef, and how quality, price, restaurant atmosphere, and employee service impacted customer satisfaction. We suggest that beef restaurants should focus more on atmosphere and service in addition to food price and quality, which are the choice factors for restaurants in general. This study empirically verified the importance of selection attributes, providing theoretical and practical implications.

Energy intake from commercially-prepared meals by food source in Korean adults: Analysis of the 2001 and 2011 Korea National Health and Nutrition Examination Surveys

  • BACKGROUND/OBJECTIVES: The commercial foodservice industry in Korea has shown rapid growth recently. This study examined Korean adults' consumption of commercially-prepared meals based on where the food was prepared. SUBJECTS/METHODS: Data from a 24-hour dietary recall of the 2001 and 2011 Korea National Health and Nutrition Examination Surveys were analyzed. A total of 10,539 subjects (n = 6,152 in 2001; n = 4,387 in 2011) aged 19-64 years were included for analysis. Commercially-prepared meals were classified into four food source groups based on where the food was prepared: Korean restaurants, Chinese/Western/Japanese restaurants, fast-food restaurants, and retail stores. Subjects' energy intake, including the amount and proportion of calories, was examined for each food source. The analysis was also conducted by gender for age-stratified groups: 19-29, 30-49, and 50-64 years old. RESULTS: Korean adults' energy intake from commercially-prepared meals increased in the amount of calories (551 kcal to 635 kcal, P < 0.01), but not in the proportion of daily calories (27% to 28%) from 2001 to 2011. The most frequent food source of commercially-prepared meals was Korean restaurants in both years. The amount and proportion of calories from retail stores increased from 83 kcal to 143 kcal (P < 0.001) and from 4% to 7% (P < 0.001), respectively, during the same period. Males aged 30-49 years (34%) and females aged 19-29 years (35%) consumed the highest proportion of daily calories from commercially-prepared meals in 2011. CONCLUSIONS: Korean adults consumed about one-fourth of their energy intake from commercially-prepared meals. In particular, males aged 30-49 years and females aged 19-29 years consumed more than one-third of their energy intake from commercially-prepared meals. Korean restaurants played a significant role in Korean adults' energy intake. Retail stores increased influence on Korean adults' energy intake. These results could be useful for developing health promotion policies and programs.

일식 레스토랑 설비와 조리기구의 미생물 오염 실태 분석 (An Analysis Microbiological Contamination on the Facilities and Utilities of Japanese Restaurants)

  • 광주 지역 하절기 동안 일식 레스토랑 10곳의 위생 평가를 위해 미생물 검사를 실시하였다. 일식 레스토랑의 설비 및 조리기구 표면에서 swab sampling 방법으로 스폰지로 200개의 도말 표본을 채취하였다. 총 균수, 대장균군, 대장균, 포도상구균, 살모네라균, 리스테리아균을 측정하였다. 그 결과, 대부분의 도말 표본이 미생물과 대장균군으로 오염된 것으로 입증되었다. 오염 정도는 샘플 채취 장소에 따라 달랐다. 심하게 오염된 곳은 바닥, 트렌치, 생선 취급 코너였고, 이러한 표본의 총 균수는 $10^4$ CFU/100 $cm^2$이 넘었다. 바닥, 트렌치, 나무 도마의 대장균군은 $10^3$ CFU/100 $cm^2$이 넘었다. 게다가 대장균군은 행주, 식기, 그리고 생선 및 채소 코너에서도 검출되었다. 대장균은 몇몇 식당의 바닥과 트렌치에서 검출되었다. 포도상구균은 몇몇 식당의 도마, 행주, 바닥, 트렌치에서 발견되었다. 살모넬라균과 리스테리아균은 모든 표본에서 검출되지 않았다. 이러한 결과는 일식 레스토랑에서 위생관리와 소독이 필요함을 보여준다.

식생활라이프스타일과 인구통계적 특성이 외식영양표시 외식업체의 브랜드 이미지에 미치는 영향 (The Effects of the Dietary Lifestyle and Demographic Characteristics on the Brand Image of Restaurants with Nutritional Labeling)

  • 본 연구의 목적은 식생활라이프스타일과 인구통계적 특성이 외식영양표시 외식업체의 브랜드이미지에 미치는 영향을 분석하여 외식업체의 차별화된 브랜드 이미지 전략을 수립을 위한 마케팅의 기초자료를 제공하는데 있다. 연구분석을 위해 SPSS 21.0 (ver.) 프로그램, 빈도분석 및 기술통계, 요인분석 및 신뢰도분석, 상관관계 분석, 다중선형회귀분석 등을 실시하여 가설을 검증하였다. 그 결과 거주지에서 수도권은 안전추구, 비수도권은 맛추구, 안전추구, 성별에서 남성은 건강추구, 맛추구, 안전추구, 여성은 안전추구일수록 외식영양표시 외식업체에 대한 브랜드이미지가 상승하였다. 연령에서 20대는 맛추구, 30대와 40대는 안전추구, 결혼여부에서 기혼과 미혼 모두 안전추구일수록 외식영양표시 외식업체에 대한 브랜드이미지가 상승하는 것으로 분석되었다. 즉, 식생활라이프스타일이 안전추구, 건강추구일 경우 주거지, 연령, 성별, 결혼여부, 자녀유무와 관계없이 외식영양표시 외식업체에 긍정적인 브랜드이미지를 갖고 있다는 것을 알 수 있었다.

  • The purpose of this study was to examine Korean restaurant industry during $1979{\sim}2001$, and to review Korean restaurant industry related by statistics. Finally, to predict the Korean restaurant industry, major restaurant industry was categorized into fast food restaurants, family restaurants, pizza restaurants and ice cream restaurants. A contents analysis used to review Korea food industry yearly statistics and monthly magazine 'restaurant'. Korean food service industry yearly statistics have been published since 1980, the magazine 'Restaurant' has been published since 1985, but the statistics was recorded from 1995.

  • This research suggests critical and specific decisive variables that affect general service quality of the products in family restaurants, considering features of services in which consumption and production happens simultaneous by collecting the raw data through point of sales. It also analyses the factors and helps to offer them practical strategies by providing managers of the restaurants and marketers with empirical viewpoints based on the research. Generally, family restaurants need their own physical environment and are required to encourage customers to revisit themselves by maintaining pleasant environment as well as, considering space for customers and for employees' working routes and effective maintenance of the facilities. The result of the study also tells that even if the unimportant factors did not affect much on the restaurants, management over these factors can be a differentiated strategy for competitive advantage over the other businesses.
