Case Studies on the Application of Universal Design Concept to Kitchen Planning (유니버설 디자인 개념을 적용한 부엌 계획을 위한 사례 연구)

  • The purpose of this study was to evaluate current usages and situations of kitchen with regard to universal design concept in order to provide useful data to plan universally designed kitchen space for all family members. Previous studies for universal design and kitchen planning were reviewed and a checklist was developed to evaluate kitchen space based on universal design concept by researchers of this study. Also, all items in the checklist were reclassified by 5 universal design criteria(Supportiveness, Adaptability, Communicability, Pleasantness, and Accessibility) and analyzed sample kichens by the criteria. The 7 households with different characteristics*age, sex, degree of disability or aging, and number of family) were selected for case studies. The results of this study suggested several critical design points to establish directions or provide guidelines for further kitchen planning.

A Study on the Preference for the Planning Components of Kitchen according to Residential Characteristics (공동주택 거주자 특성에 따른 부엌 공간 선호에 관한 연구)

  • The purpose of this study was to examine preference for the planning components of kitchen according to residential characteristics. The questionnaire survey was adopted in this study, and 184 cases were used for data analysis. The questionnaire consisted of condition and preference in size, location, and layout of kitchen, remodeling elements, and satisfaction with kitchen. Frequency, percentage, and mean, correlation, x2-test, and ANOVA were used for data analysis. Subjects preferred the kitchen of size $4{\sim}5$ pyung. And they tended to prefer the kitchen located the inside and 6th shape-separated kitchen from dinning area. The findings showed that the preference of the planning components of kitchen according to residential characteristics was not distinct except housing size.

  • With the development of digital technology and the advent of the concept of well-being, kitchen will be worked as the center of housing and turn into multi-functional space. So a research is requested to consider the users' needs for kitchen based on their life characteristics. The purpose of this study is to find out housing lifestyles, and to search and analyze users' needs for kitchen planning according to their lifestyles. And then plans for kitchen design are suggested. The findings are as follows. (1) Housing lifestyles of users living in apartment are categorized into the type of network and trial & development, pursing the new environment and technology, the type of high quality and convenience, seeking the way to make housework easy and comfortable, the type of housework oriented and the type of unspecification. (2) The type of network and trial & development requests home automation, confrontation layout of counter-top, the type of high quality and convenience requests enlargement of kitchen space, the newest appliance and kitchen island, the type of housework oriented requests the efficiency of space utilization with a counter-top style table, and the type of unspecification asks space for study and office work. All of the types have needs for water use space, larger storing space and a Kimchi refrigerator.

  • Korean living culture raised the users' needs for sub-kitchen. In the traditional Korean house, there was large space related to kitchen area for preparing food and stock big and bulky housing stuffs. As apartment housing became dominant as Korean dwelling, sub-kitchen has been planed in the balcony that is not included in the sales area. In this study, the case of the apartment housing in Esiapolis, Daegu was analyzed. To plan the user-oriented sub-kitchen, the consumer research was carried out. Consumers needed a pantry, more storage near the kitchen, and wanted to place washing machine and washing stand in a sub-kitchen. Sub-kitchens were planed to meet those consumers' needs. Through this case study and former studies analysis, sub-kitchen's function unit was derived: wash, storage, auxiliary work. By combining each function unit, sub-kitchen was classified into 3 types, wash & auxiliary work, wash & storage, and wash & storage & auxiliary work. For each sub-kitchen type, components of function units, available layouts, and minimum size were recommended.

  • The purpose of this study is to provide basic information far planning Dinning-Kitchen storage space. The self-administered questionnaire method were used for this study. The result were analyzed SPSS package program. The major findings were summarized as follows: The size of apartment was related to satisfaction of Dinning-Kitchen storage furiture and was related to storage usage.

The Implication of Changes on Unit Plans of Condominium Apartments in Rural Area depended on Women's Spaces (수도권 신도시 근교 농촌 아파트 주거의 내부 공간구조 변화 - 주부인 여성이 주로 사용하는 공간을 중심으로 -)

  • This study is to analyze women's power in family to be related to Anbang, kitchen, dining room, and utility room planning in a unit plan of condominium apartment housing in rural area Data were collected 194 unit plans from 9 eastern regions of Kungi-Do. The results are as followed: 1) Anbang reflects the women's power on changing its space character into mater bedroom, the highest hierarchy in private zone, and planning a dress room in it. 2) Dining room and kitchen is openly centered on the unit plan, but kitchen is still only women's working space for family and agriculture depended on literature review. Dining space is not activated family interaction, so it is not different from urban apartment housing. However, its location and character are changed, and its hierarchy is relatively higher with women. Dining room and kitchen tend to plan visually separated after 2001, so its trend seems to establish women's territory at home. 3) Whole family can't be easy to access utility and back balcony close to kitchen, and these spaces are functionally separated for women's house work. This design trend seems to establish for women's area. 4) Finally, women's power seems to be effective in house working area including kitchen space depended on results. Also, these results from rural condominium apartment are similar to urban ones in previous study.

A Status of Kitchen Planning of Units in Elderly Housing Facilities (노인주거시설 단위주호의 부엌가구디자인 및 사용실태)

  • This study investigated the status of kitchen of units in elderly housing facilities and the housing needs of residents. Compared with a lot of comprehensive and alternative studies on elderly housing facilities until now, specialized studies of behavior of elderly housing life and detailed dimensional study have hardly made. Therefore we intend to examine the status of kitchen planning on representative elderly housing facilities in Korea. As the methods of this study, we executed a field study into 4 representative elderly housing facilities in Korea. We visited each 2 units out of the outstanding 4facilities and surveyed the total 8 kitchens. Then we analyzed the space planning and kitchen furniture design of them and the state of kitchen commodities, and measured the kitchen equipment. In addition, we executed interview about satisfaction, preference, use from the residents. As a result, we could find out that depending on whether residents were sewed with meal offered from the facilities or not, the pattern of usage and commodities were quite different. It is necessary to supply the simplest spaces just for preparing some refreshment and tea are suitable. And for the self-cooking residents, much larger cabinets and utility rooms are additionally needed. Safety and functional aspect were quite well designed. Washing machines are usually built-in the kitchen cabinets, and residents are satisfied with this arrangement. We hope that the supplementary study about old people habit and behavior will be a good data of kitchen planning for Korean-type elderly housing units of facilities.

  • This paper is written to analyze systematically the varieties of informations about cooking stream procedure on the basis of the basic theory of installation and arrangement such as SLP(Systemic Layout Planning) and to deduce the plan for the device, installation and arrangement suitable to cooking stream procedure. Through the substantial improvement in the modeling of hotel L, the optimization of the capacity of installation and arrangement, and the reduction of food resource stream and its movement and through the analysis of cooking stream procedure by disposing and dividing the main kitchen into three individual ones, the improvement of productivity in comprehensive cookery such as the specialization and equalization of cooking procedure and improvement effect of the price-reduction. Moreover, as for the problem of arrangement of installation, it was displayed that the effect went up to twice through the flexible production-related systems such as the improvement of arrangement, reduction of cooking preparation time, the standardization of cookery.

  • The Purpose of this study was firstly to identify the living characteristics of apartment residents in relation to the behavioral patterns in the kitchen and utility space and secondly to present the basic material necessary for planning the kitchen and utility space of future desirable apartments with consideration for resident usage. The findings are summarized as follows : 1) Behavioral patterns in the kitchen and utility space were classified as personal life, family with harmony, talking with visitors, caring for children, cleaning, cooking, and keeping and connecting. 2) Behavioral patterns in He kitchen and utility space showed patterns on personal life, family with harmony, and talking with visitors and were used in the kitchen including the dining room. 3) As the required kitchen size and sink arrangement varied according to the kinds of furniture appliance, plan for the kitchen wok is very necessary.

  • The purpose of this study is to find out the transition of meaning and terminology of support spaces in Korean houses based on preliminary studies and analysis of Korean novels. The major findings are as follows. The planning and location of the kitchen and its support spaces developed slowly until the 1970s. Buok has been the terminology of support spaces that appeared often and continuously in novels. The word Bongdang was mentioned only before the 1900s. The new words such as Sikdang. Buokaband appeared after the 1960s,. Jubang appeared after the 1980s. The meaning of kitchen space described in novels were various. Thpically the kitchen was used for cooking washing dishes keeping kitchen utensils foods and miscellaneous goods. Exveptionally the kitchen was the place for quarreling with others weeping secretly hiding washing clothes etc. The kitchen was also a symbol of the wealth of the family but many kitchens were usually described in novels as the unpleasant places. Even though most users of the kitchen in novels were women men also used the kitchen in novels were women men also used the kitchen without any restrictions. however the activities of men and women of the upper class in the kitchen were never described in any novels.
