한국전통 김치의 다양화 및 세계화를 위한 스페인인의 기호도 조사연구 (A Survey of the Preference for Korean Kimchi by Spanish Natives)

  • This study was conducted to develop methods of promoting traditional Korean Kimchi globally. To accomplish this, 99 Spanish natives were surveyed for their sensory evaluation and awareness of Kimchi. The results revealed that a relatively high number (46.9%) of the respondents had eaten Korean Kimchi. After eating the Kimchi, women tended to provide a slightly higher overall acceptability than men. Furthermore, when the overall sensory evaluation was conducted, the characteristics of Kimchi that were most recognized were its red color, spicy smell and hot taste. In addition, 93.9% of the respondents said that Korean Kimchi was a suitable food based on its spicy flavor>chewing force>appearance>red color>fermented smell. However, 6.1 percent of the subjects responded that they did not find Kimchi appetizing due to its hot taste>fermented smell>chewing force. Interestingly, the hot taste was a common selection for the reason that individuals liked or disliked Kimchi. When ranked among traditional Spanish foods, Kimchi was reportedly similar to cooked cabbage, cooked bell peppers, cooked red peppers and Moheu ppikan, pickles, Spanish lettuce, chiseutora and oil pickled cheese, or to various vegetables pickled in vinegar. Taken together, the results of this study should facilitate the globalization of Kimchi. In addition, the findings of this study provide fundamental data that should assist in the development of a local style of Kimchi for Spain.

한국의 무김치에 관한 역사적 고찰 (A Historical Study of Korean Traditional Radish Kimchi)

  • Radish kimchi is a typical side-dish in Korean traditional food and is a way of keeping vegetables for a extended period using fermentation. This study examined the classification, usage, eating history, variety, and recipes of Korean radish kimchi through ancient and modern era literature. The Korean radish kimchi were categorized into six groups: kkakttugi, seokbakji (or nabakkimchi), dongchimi, jjanji, jangachi, and jangkwa. According to the record, the eating history of radish kimchi comes from before the age of the Three Kingdom period. Radish was preserved in salt, vinegar, soybean paste or lees of fermented liquor in the early times. This pickled radish was not supposed to be watery. Radish kimchi was divided into watery kimchi (dongchimi) during the period of United Silla and the Koryo Dynasty. Kimchi was mixed with Chinese cabbage to make seokbakji or nabakkimchi. Up to the early Chosun Dynasty, the key ingredient of kimchi was radish. After the middle of the Chosun Dynasty, kimchi was mixed with red pepper powder, salted fish, soybean sauce, and various ingredients. There were many kinds of radish kimchi during the late Chosun Dynasty. In the 11 Korean recipe books published within the past 100 years, there are nine kinds of kkakttugi, three kinds of seokbakji, four kinds of dongchimi, three kinds of jjanji, nine kinds of jangachi, and five kinds of jangkwa. Kkakttugi (cubed, sliced or julienne radish) was pickled with salt, red pepper powder, garlic, green onion, oyster, sugar, salted fish, and more. Seokbakji and nabakkimchi were not as salty, so they could not be preserved as long. Dongchimi (watery radish kimchi without red pepper powder) was made of radish, water, salt, 18 side ingredients, 13 condiments, and seven garnishes. Jjanji was pickled to be very salty and was eaten during summer. Jangachi can be used as a regular side dish and is made of radish or dried radish slices pickled or seasoned with salt, soy sauce, vinegar, soybean paste, lees of fermented liquor, and spices. Jangkwa is used as a stir-fry method and has been segregated from jangachi relatively recently.

Metabolic Pathways Associated with Kimchi, a Traditional Korean Food, Based on In Silico Modeling of Published Data

  • Kimchi is a traditional Korean food prepared by fermenting vegetables, such as Chinese cabbage and radishes, which are seasoned with various ingredients, including red pepper powder, garlic, ginger, green onion, fermented seafood (Jeotgal), and salt. The various unique microorganisms and bioactive components in kimchi show antioxidant activity and have been associated with an enhanced immune response, as well as anti-cancer and anti-diabetic effects. Red pepper inhibits decay due to microorganisms and prevents food from spoiling. The vast amount of biological information generated by academic and industrial research groups is reflected in a rapidly growing body of scientific literature and expanding data resources. However, the genome, biological pathway, and related disease data are insufficient to explain the health benefits of kimchi because of the varied and heterogeneous data types. Therefore, we have constructed an appropriate semantic data model based on an integrated food knowledge database and analyzed the functional and biological processes associated with kimchi in silico. This complex semantic network of several entities and connections was generalized to answer complex questions, and we demonstrated how specific disease pathways are related to kimchi consumption.

전처리 방법에 따른 산채 물김치의 품질변화 (The Quality Changes of Watery Kimchi made of Wild Vegetables by the Pre-Treatment Methods)

  • 본 연구는 강원도 산채를 이용한 물김치 제조와 그 활용도를 검토하고자 숙성 중 이화학적 변화를 살펴보았다. 산채는 곰취, 참취, 고려엉겅퀴를 사용하였고, 식염수 절임, 블랜칭 전처리방법을 비교하였으며, 물김치 제조에 필요한 부재료는 동일하게 첨가하였다. 제조한 제품을 $5^{\circ}C$에서 저장하면서 숙성 중 이화학적, 관능적인 특성의 변화를 분석하였다. 물김치 제조 전 전처리별 처리에서 수분함량은 식염수에 절인 참취가 81.45%로 가장 낮았고, 블랜칭 처리한 고려엉겅퀴에서 87.39%로 나타났다. 색도는 블랜칭 처리가 식염수처리에 비해 L값, b값이 높게, a값이 낮게 나타났으며, 경도는 두 처리 모두 곰취 > 참취 > 고려엉겅퀴 순으로 분석되었다. 숙성 중 이화학적 특성 분석에서 총 가용성 고형분 함량과 염도는 식염수 처리가 블랜칭 처리보다 높게 유지되었으나, pH는 모든 처리에서 낮아지는 경향을 보였다. 탁도는 식염수 처리에서 1주후 높아졌으나, 그 이후에는 모든 처리에서 큰 차이가 나타나지 않았다. 블랜칭한 처리에서 색도 L값, b값과 a값의 변화 차이가 식염수 처리보다 높고, 경도는 낮은 경향을 보였다. 유리당 분석결과, 모든 처리에서 숙성중에 glucose, fructose 함량은 줄어들었으며, sucrose, maltose 함량은 일정하게 유지되었다. 전체적인 기호도에서는 블랜칭 처리한 고려엉겅퀴 물김치가 가장 높은 선호를 보였다.

여자 고등학생의 시판김치 섭취 실태 및 평가와 김치 담그기 교육에 대한 견해 (Intake and Evaluation of Commercial Kimchi and Perception of Learning Methods Making Kimchi among Female High School Students)

  • Kimchi is a traditional food in Korea. It is a fermented food made by several vegetables. Kimchies have traditionally made at home, but the use of commercial Kimchies is increasing. The purpose of this study was to evaluate the intake and evaluation of commercial Kimchies and the perception of desirable learning methods making Kimchies among female high-school students. Three hundred and seventy one female high-school students living in Chonbuk province were participated in the survey. The results obtained were as follows: 1. The percentage of subjects who had consumed commercial Kimchies at least once was 49.7%. It was higher in the subjects living in the rural area(65.6%) than in the urban area(37.9%) at p${\le}$0.001. 2. Positive reasons for the consume of commercial Kimchies was: ‘saving time($4.11{\pm}0.74$)’, ‘convenience to buy when it is needed($4.03{\pm}0.78$)’, ‘variety($3.59{\pm}0.86$)’ and ‘looking good($3.21{\pm}0.98$)’. However, commercial Kimchi received low scores for: ‘sanitation($2.24{\pm}0.96$)’, ‘taste($2.84{\pm}0.96$)’, and ‘economy($2.89{\pm}1.02$)’. 90.5% of the subjects believed that the use of commercial Kimchi will be increased. 3. 24.3% of the subjects had an experience of making Kimchi alone, and 88.7% of the subjects had assisted their mother making Kimchi. 88.9% of the subjects reported that they would like to learn how to make Kimchi from their mothers. 84.0% of the subjects want to make Kimchi by themselves at home when they will be housewives. In conclusion, this report suggests that commercial Kimchi should be produced under more sanitary conditions and Kimchi producers should also develop a variety of tastes to match consumer's preferences. 김치의 선도유지를 위한 천연보존제의 탐색 (Screening of Natural Preservatives to Inhibit Kimchi Fermentation)

  • As a primary step to develop natural preservative for extending the shelf-life of kimchi, the effect of 102 edible plants, 21 antimicrobial agents and related compounds on kimchi fermentation was studied. Among 42 oriental medicinal plants tested, Baical skullcap and Assam indigo were found to be highly effective for maintaining the fresh state of kimchi. Although Bugbane, Red mangolia, Bushy sophora, Szechuan pepper, Chinese quince and Scisandre significantly inhibit the growth of Lactobacilli, their effect was not high enough to be used as raw materials for kimchi preservative. When the effect of 32 herbs and spices was tested, peppermint, cinnamon, lemon balm, clove, hop, rosemary, sage, horseradish and thyme showed high antimicrobial activity against kimchi microorganisms. Among them, the effect of clove ranked top. When it was added to fresh kimchi, initial cfu value ($2.4{\times}10^{6}cfu/g$) changed little even after 2 day's fermentation ($2.6{\times}10^{6}cfu/g$). Sensory test was not a good criteria to evaluate the effect of herbs and spices, since their highly specific flavors affected the taste of kimchies. Twenty eight fruits, vegetables and related plants were tested, but only leaves of pine tree, persimmon and oak leaves showed a significant bactericidal effect, finally contributing to the storage of kimchi. In addition, when 21 natural preservatives and other compounds were added individually to fresh kimchi, nisin and caffeic acid could inhibit fermentation.

Application of Highland Kimchi Cabbage Status Map for Growth Monitoring based on Unmanned Aerial Vehicle

  • Kimchi cabbage is one of the most important vegetables in Korea and a target crop for market stabilization as well. In particular Kimchi cabbages in a highland area are very sensitive to the fluctuations in supply and demand. Yield variability due to growth conditions dictates the market fluctuations of Kimchi cabbage price. This study was carried out to understand the distribution of the highland Kimchi cabbage growth status in Anbandeok. Anbandeok area in Gangneung, Gangwon-do, Korea is one of the main producing districts of highland Kimchi cabbage. The highland Kimchi cabbage status map of each growth factor was obtained from unmanned aerial vehicle (UAV) imagery and field survey data. Six status maps include UAVRGB image map, normalized difference vegetation index (NDVI) distribution/anomaly map, Crop distribution map, Planting/Harvest distribution map, Growth parameter map and Growth disorder map. As a result, the highland Kimchi cabbage status maps from May 31 to Sep. 6 in 2016 were presented to show spatial variability in the field. The benefits of the highland Kimchi cabbage status map can be summarized as follows: crop growth monitoring, reference for field observations and survey, the relative comparison of the growth condition in field scale, evaluation of growth in comparison of average year, change detection of annual crops or planting areas, abandoned fields monitoring, prediction of harvest season etc.

대학생의 김치섭취 수준에 따른 식습관, 식품섭취실태 및 혈중지질 농도에 관한 연구 (Comparative Study on Dietary habits, Food Intakes, and Serum Lipid Levels according to Kimchi Consumption in College Students)

  • 본 연구에서는 남자대학생 30명, 여자대학생 70명으로 총 100명을 대상으로 하여 김치섭취량에 따른 신체계측 식습관 식품섭취실태 및 혈중지질 농도와의 관련성에 대해 비교 분석하였다. 김치섭취빈도조사지를 이용하여 조사대상자를 김치섭취량이 50 g 미만인 군과 50 g 이상인 군으로 나누었다. 조사대상자들의 신체계측 및 생화학적 검사에서는 김치섭취량이 50 g 이상인 군이 50 g 미만인 군보다 체지방량, BMI 및 혈압이 낮게 측정되고 HDL-콜레스테롤은 높게 측정되었지만 유의한 차이는 아니었다. 남 여학생 모두 김치섭취량이 50 g 이상인 군이 50 g 미만인 군보다 소변으로 배설되는 나트륨량이 유의적으로 많았다. 식습관을 살펴 본 결과 김치섭취량이 50 g 이상인 군의 경우 남학생에 있어 '균형잡힌 식사를 합니까?'(p<0.05), '김치를 제외한 채소류를 매일 먹습니까?'(p<0.05)의 항목에 대한 점수가 50 g 미만인 군보다 높았다. 반면에 '우유를 매일 먹습니까?'에 대한 항목에 대해서는 남 여학생 모두 50 g 미만인 군보다 점수가 낮았으나 유의성은 없었다. 식품섭취빈도에서는 김치섭취량이 많을수록 남학생은 쌀(p<0.05)의 섭취가, 여학생은 라면(p<0.01)의 섭취빈도가 높은데 반하여, 우유 및 유제품의 섭취빈도는 남 여학생 모두 낮았다. 조사대상자의 영양소섭취량을 살펴본 결과 성별에 관계없이 김치섭취량이 50g 이상인 군이 50 g 미만인 군보다 일일 에너지섭취량이 높았으며, 탄수화물 및 식이섬유소 섭취량도 높았으나 유의성은 없었다. 김치섭취량과 신체계측, 혈액검사, 식품섭취빈도, 식습관 간의 상관관계를 살펴본 결과, 남학생과 여학생 모두 김치섭취량이 많을수록 HDL-콜레스테롤이 증가하는 양의 상관관계를 보였으며 체지방 및 BMI, 혈당은 감소하는 음의 상관관계를 보였으나 유의적 차이는 없었다. 혈중지질농도와 관련된 총 콜레스테롤 및 HDL-콜레스테롤은 남 여학생 모두 양의 상관관계를 보였으며, 중성지방은 남학생의 경우 양의 상관관계를, 여학생의 경우 음의 상관관계를 보였으나 유의성은 없었다. 김치섭취량과 쌀 및 채소류의 섭취빈도는 남학생(p<0.05)과 여학생 모두 양의 상관관계를 보였지만, 우유 및 유제품에서는 음의 상관관계를 보였고 유의성은 없었다. 본 연구는 건강한 대학생을 대상으로 한 단면연구이기에 김치섭취량과 혈중지질농도, 신체계측치와의 관계를 밝히는 데는 한계가 있었다. 앞으로 연구대상자의 범위를 성인으로 확대한 종단적 연구를 통하여 김치 섭취량과 건강요인과의 관계를 규명할 수 있는 연구가 필요하다고 생각된다.

Changes in Isothiocyanate Levels in Korean Chinese Cabbage Leaves during Kimchi Storage

  • Glucosinolates are hydrolyzed by the enzyme myrosinase and are mainly found in cruciferous vegetables such as Chinese cabbage (Brassica campestris L. ssp. pekinensis). lsothiocyanates (ITCs) are glucosinolate degradation products with reported anticarcinogenic properties. Korean Chinese cabbage in the form of 'kimchi' is a staple part of the Korean diet. In this study, we examined the effects of storage temperature and duration on glucosinolate, ITC, soluble sugar, and organic acid levels in kimchi. Changes in pH and the impact of various parts of the Korean Chinese cabbage being used during the preparation of the dish were also assessed. Extracted ITC levels, analyzed via gas chromatography (GC) and GC/mass spectrometry (GC/MS), were higher in the midrib parts than in the cabbage leaves after storage at both 4 and $20^{\circ}C$. During storage, organic acid levels increased while soluble sugars were depleted. The pH initially increased (after 1 day at $20^{\circ}C$, and 1 week at $4^{\circ}C$), but subsequently decreased over time at both temperatures. Glucosinolate and ITC levels increased in the beginning of storage but then generally fell during further storage. Our data suggest that acidity-related reduction in myrosinase activity during storage may decrease glucosinolate and ITC levels. The changes in these levels depended on the storage conditions and the Korean Chinese cabbage parts used for the kimchi preparation.

김치용 배추의 수경재배에 관한 연구 (A study on the hydroponic cultivation of Chinese cabbage for kimchi)

  • Hydroponic cultivation is a technology of raising crops without use of soil. Generally farmers use the method of DFT(deep flow technology)to grow leafy or fruity vegetables; however, systematic and scientific researches are insufficient on this matter. This study investigated the possibility of cultivating Chinese cabbage steadily year long by using the method of DFT. Chinese cabbage was cultivated hydroponically with and without Ge addition, used to prepare kimchi, and the chemical and microbiological characteristics of kimchi were compared. The basic hydroponic cultivation condition was as follows: 30 days after seeding, the raised seeds were moved to a hydroponic bed and given underground water for 3 days so the roots grow normally Standard nutrient solution was provided and the early electric conductivity concentration was maintained between 1.5∼2.5 thickness. The temperature of the solution was maintained between 10 ∼25$^{\circ}C$ to allow the growth of Chinese cabbage. When soil-cultivated, organically cultivated and hydroponically cultivated Chinese cabbages were compared, hydroponically cultivated cabbages were smaller in size and showed less ability to build up and fold leaves into a head, but showed better quality than organically cultivated cabbages. The contents of protein and fat showed no significant differences. The contents of water. Ca, P, Fe, Vitamin A and Niacin were higher in control and Ge-added cabbages compared with soil-grown cabbage. There was no difference between soil-cultivated Chinese cabbage kimchi and hydroponically cultivated Chinese cabbage kimchi.
