국내 . 외 전통음식 관련 관광상품의 현황 분석+ (The Study on the Present Status of Overseas and Domestic Tourism Products Focusing on Traditional Foods+)

  • The purposes of this study were to: a) investigate how other countries brought up their traditional food into the commercial market for tourists b) analyze present marketing status of the Korean traditional food in dealing with foreign tourists as consumers. Present marketing status of the overseas and domestic tourism products focusing on traditional foods was investigated through literature reviews and face-to-face in-depth interviews conducted with professionals in tourism business. As a result, the foreign tourism products focusing on traditional foods were diverse and these products were representative of the regional heritage brought together in an effect to increase understanding of traditional foods. In case of the tourism products focusing on Korean traditional cuisine, the popular programs were 'Making Kimch', 'Making ricecake' and 'Making Bibimbap' in which tourists participated have expressed great satisfaction. The results of this study would be used as an important data in developing unique tourism programs focusing on Korean traditional cuisine attracting foreign tourists.

전주지역 중학생의 학교급식에 대한 만족도, 메뉴기호도 및 개선사항 조사 (The Study of Satisfaction, Meal Preference and Improvement on School Lunch Program of Middle School Boys and Girls in Jeonju)

  • This study was conducted with 262 middle school student(118 boys, 144 girls) to examine their satisfaction, meal preference and improvement of school lunch program(SLP) in Jeonju area. Major plate waste ranked high in soup, fishes, vegetables, Kimch and rice. The overall reason for plate waste were listed as being tasteless and disliking food except for rice. In the case of rice, it because of too big portion size. On the satisfaction with SLP, the lowest satisfaction category was waiting time for meal. The changes after taking part in SLP of students ranked in having a regular meal time(31.4%), lessening to eat snack except for regular meals(18%) and correcting habit about picking favorite food(15.2%), in order. The improvement on SLP of students were listed as more appetite food, various side-dishes, squaring of the western and eastern food and so on. To improve the satisfaction SLP and provide a high quality service, it should be needed to make proper dining space, increase the frequency of survey on complaints and taste of students and reflect the menu plan.

김치숙성 중에 미치는 단삼과 감초의 혼합효과 (The Mixed Effect of Salvia miltiorrhiza and Glycyrrhiza uralensis on the Shelf-life of Kimchi)

  • The Mixed effect of Salvia miltiorrhiza and Glycyrrhiza uralensis(SG) on kimchi fermentation was investigated by measuring changes of physicochemical, icrobiological and sensory qualities of kimchi during fermentation. The pH of SG-added kimchi was a little higher than that of control during the fermentation. Titratable acidity, viable cell of total bacteria and lactic acid bacteria in mixed medicinal herbs(SG) added kimchi were changed more slowly than those in control. The inhibitory effect of the mixture on kimchi fermentation was increased as the concentration of the mixture was increased from 1% to 5%. Total bacteria and lactic acid bacteria of 3% and 5% SG-added kimchi reduced to 1.3~2.9 and 1.2~4.0 log10 cycle after 15 days fermentatin compared to control. The changes in texture of SG-added kimchi was a higher and sour taste of SG-containing kimchi excepts of 1% SG-added kimchi was more weak than that of control. Sensory score of flavor and overall acceptability did not show any significant difference between SG-added kimchi and control during fermentation. But SG-added kimchi decreased its sensory quality by 5% the other kimch.

큰느타리버섯 첨가량에 따른 김치의 품질 특성 (Quality Properties of Kimch by the Addition of King Oyster Mushroom(Pleurotus eryngii) during Fermentation)

  • 김치에 큰느타리버섯을 첨가하여 숙성시키면서 품질특성의 변화를 측정하였다. 버섯 첨가량에 따른 김치의 pH를 측정 한 결과 대조구보다 버섯첨가구의 pH가 전반적으로 약간 낮게 나타났으며, 적정산도는 pH와 반대로 버섯의 첨가량이 높을수록 적정산도가 높았다. 큰느타리버섯 첨가에 따른 김치의 총균수 및 유산균수는 숙성 18일경에 모두 최대치를 보였으며, 이후에는 조금 감소하였다. 특히 버섯 $30\%$ 처리구는 총균수 및 유산균수 모두에서 미생물 억제현상이 관찰되었다. 큰느타리버섯 첨가량에 따른 김치의 라디컬 소거능 및 총페놀함량은 첨가량에 비례하여 증가하였으며, 이는 버섯에 존재하는 항산화성 페놀성분에 의한 것으로 생각된다.

전남 여수지역 산업체에 근무하는 근로자의 식품 및 음식의 기호도 조사 (Food and Meal Preference of Workers in the Chonnam Yeosu Industrial Area)

  • This study was conducted to investigate food and meal preference of workers (435 male and 212 female) in the Chonnam Yeosu industrial area. The results of the survey were analyzed by principal components analysis. The results were obtained as follows: 19.3% of the subjects were twenties, 28.3% were thirties, 28.8% were forties and 23.7% were fifties. Females liked rice rolled in dried laver, rice cakes, janchi-noodle and breads, on the other hand males liked thick beef soup, loach soup, an eel stew and soju. The young liked instant noodles, fried chicken, sweet and sour pork, pork cutlet, pizza, hamburger, ham, sausage and fruit beverage, on the other hand the old liked a fish pot stew, loach soup, eel stew, fish boiled in soy with spices, panfried fish, sea slug, ascidian, bunder, green laver and boiled burdock-lotus root in soy. Females who are young liked hamburger and sweet and sour pork whereas males who are young liked instant noodles, pork cutlet, ham, sausage and fruit beverage. Aged females liked fish boiled in soy with spices, panfried fish, bunder, green laver, boiled burdock-lotus root in soy whereas aged males liked a fish pot stew, loach soup, eel stew, sea mussel and oysters. Boiled rice was located within the middle irrespective of age and sex, but noodles, wheat flour meal, fast foods and fruits were situated at the young female side. Aged males liked soup and pot stew. Young males liked meats and eggs whereas fish and shellfish and kimch were located at the aged people side. Aged females liked sea weeds and most people disliked vegetables but females liked some vegetables irrespective of age. Processed foods, salted foods, and alcohol were generally disliked foods by subjects but males liked those foods. 우리나라 농촌지역의 메뉴패턴에 관한 연구 (I) -주요 메뉴패턴 분석 - (The Study on Menu Patterns in Korean Rural Areas (I) - Analysis of Major Menu Pattern -)

  • This study was conducted to investigate the menu patterns consumed frequently in 5 Korean rural areas for all seasons, using 24-hour recall method with 1,185 subjects. The purpose of this study was to suggest the menu pattern in rural areas for the basis data of the nutrition education program and nutrition intervention project. The result were following : most frequently used menu patterns by the number of side dish were rice + soup + kimchi + 1 side dish> rice + soup + kimchi + 2 side dish> rice + soup + kimchi > rice + stew + kimchi + 1 side dish in the order. Most frequently used menu patterns by the kind of side dish were rice + soup + kimchi > rice + stew + kimch > rice + kimchi> noodle + kimchi in the order. In menu patterns showed higher frequency, Nutrient Adequacy Ratio(NAR) of all nutrients except Ca and Vit A was over 0.7. The Mean Adequacy Ratio (MAR) of rice + soup(or stew) + kimchi + 2(or 3) side dish was 0.76∼0.82. The number of dishes consumed in winter was the highest. The menu had traditional menu pattern based on cooked rice, Korean soup and kimchi in Korean rural areas. With these results, we can conclude that nutrient balances from the menu pattern can be improved, if the composition of main dish and side dish are adequate . For the nutrition program in the community menu patterns should be examined carefully. The result from this study can be used as basic data for nutrition education programs in Korean rural areas.

전문가 델파이 기법을 통한 전공 대학생 대상 쌀 교육 프로그램 개발 (The Development of Rice Education Program for University Students through Expert Delphi Method)

  • The purpose of this study was to develop a rice education program and rice cooking practice for university students majoring in foodservice and nutrition. To achieve this purpose, 2 rounds of delphi survey was used by convenience sampling including total of 27 experts in the food and nutrition industry. Below are the findings. First, both the importance and suitability for macro-theme of theory education were in the following order: 'nutrition and health of rice', 'characteristics of rice in food science', 'history and culture of rice' and 'the consumption of rice. Second, the history and culture of rice(traditional culture related to rice, and the origin & history of rice), nutrition and health of rice(main nutritive components and efficacy of rice and prevention of disease), characteristics of rice as food(processed-products of rice and storage, the structure of rice), and the consumption of rice(current status of rice production and consumption) were found to be suitable for the micro-theme of theory education. Third, the education theme for rice cooking practice was determined. Barley sprout song-pyeon and beet song-pyeon were chosen for rice cake. For bread, coconut & walnut muffin, tofu & bean muffin, citron bread, red bean & sweet persimmon pound cake, and sweet potato bread were selected. Dong-rae-pa-jeon, Kimch-jeon-byeong, fried sweet potato fried shrimp were developed for the main dishes.

농촌지역 주민이 식품섭취평가에 관한 연구 (A Study on the Evaluation of Food Intake of People Living in Rural Areas)

  • To assess the food intake and diet quality of Koreans living in rural areas with discriminative environment, this dietary survey was conducted with 553 subjects living in five different rural areas using a one-day, 24-hour recall method. The average weight of total food intake was 1066g, with vegetable and animal food comprising 83.75 and 16.3% of total food intake, respectively. The average daily food intakes of residents in the five areas were 985g, 1005g, 1028g, 1318g, and 964g, and were significantly different(p<0.001). Residents of Ulju consumed the largest amount of food, 1318g. The total number of food items consumed was 336. The foods consumed in largest amounts were rice(223g), Korean cabbage-Kimch'i(111g), and soybean curd(41g). The foods consumed most frequently were rice, Korean cabbage-Kimchi, green onion and garlic. When investigating the consumption pattern of the major five food groups, only 5% of subjects consumed all five groups. The groups most frequently missing were dairy products and fruits. The average number of foods consumed per day was 16.8, but differed significantly by area(p<0.001). The number of major food groups (DDS, dietary diversity score) and that of food items(DVS, dietary variety score) correlated positively with NAR (nutrient adequacy ratio) and MAR (mean adequacy ratio). People with a DDS of above 4 or DVS of above 20 met two-thirds of the recommended dietary allowance for most nutrients. When assessing the dietary quality of subjects using DDS and DVS, many people appeared not to have a desirable food intake. dietary guidelines should be made considering the nutritional characteristics of different areas to improve the health of people living in those areas.

우리나라 농촌지역의 메뉴패턴에 관한 연구 (II) - 지역별 비교 - (The Study of Menu Patterns in Korean Rural Areas (II) - Compared by the Area -)

  • This study was conducted to investigate frequently consumed menu patterns by the area and season, using the 24-hour recall method. Subjects were 1,041 living in five different Korean rural areas for the spring, autumn and winter. The purpose of this study is to suggest the menu pattern in rural areas for the basic data of the nutrition education program and nutrition intervention project by the area and season. The result are following : Most frequently used basic menu patterns, excluding side dishes, were rice+soup in Yeoju, Hoensung and Jungup, rice+stew in Ulsan, and only rice in Chungju. The most frequent menu pattern by the number of side dish was rice+soup+kimchi+1 side dish in Yeoju and Ulsan were rice+stew+kimchi in Hoengsung, and was rice+soup+2 side dish in Chungju and Frequently used menu patterns by the kind of side dish weer rice+soup+kimchi>rice+stew+kimch>rice+kimchi>noodle+kimchi in the order The most frequent menu pattern was rice+soup+kimchi in spring and autumn, and was rice+stew+kimchi in winter. The mean adequacy ratio(MAR) in spring and autumn was higher than that in winter. MAR in Ulsan is higher than that of other areas. With these results, we can conclude that there are difference in menu pattern by the season and area. For the nutrition program in the community, menu patterns should be carefully examined by the season and area. The results from this study can be used as basic data for nutrition education program in Korean rural areas.

24시간 소변 분석, 식사기록법 및 음식섭취빈도조사에 의한 여자 성인의 나트륨 섭취량 조사 (Estimation of Sodium Intake of Adult Female by 24-Hour Urine Analysis, Dietary Records and Dish Frequency Questionnaire (DFQ 55))

  • This study assesses the sodium intake of adults by 24-hour urine analysis, dietary records review and a food intake questionnaire. Subjects were 236 adult female in Daegu. The results are summarized as follows: Sodium intake as indicated by the 24-hour urine analysis was $5,805.4\;{\pm}\;3836.8\;mg$. This was significantly higher than intake indicated by dietary records ($4415.4\;{\pm}\;1935.1\;mg$) and the dish frequency questionnaire (DFQ 55) ($4293.5\;{\pm}\;1526.5\;mg$). The results of the 24-hour urine analysis and DFQ 55 showed that sodium intake was higher for the 65-to-74-year-old age group than for other age groups (p < 0.05, p < 0.05). Review of dietary records to examine typical sodium intake by food groups showed that 53.7% of the sodium consumed by subjects in all age groups came from seasonings and spices ($2399.0\;{\pm}\;1526.5\;mg$). The analysis of sodium intake by food groups using DFQ 55 showed 34.2% of their sodium came from consumption of kimchi (p < 0.001) and kimch, soup, stew and fish jorim accounted for 57.8% of total sodium intake. The results indicate positive correlation between age and sodium intake, as shown by the 24-hour urine analysis and food intake questionnaire (p < 0.05). Therefore, these results would be valuable as basic data for planning nutrition education for sodium intake reduction.
