Location of Sampling Points in Optical Reflectance Measurements of Chinese Cabbage and Kale Leaves

  • Purpose: A sampling scheme may significantly affect the accuracy of a sensor. This study was conducted to investigate the effects of sampling point locations on optical reflectance measurements of Chinese cabbage and kale plant leaves. Methods: Variability and similarity of multiple measurements for different parts of the leaves were compared. Results: The results indicate that the variability between the average and individual reflectance spectra was smaller for the blade part than for the vein part. Furthermore, the reflectance for the blade part over the upper leaf area was greater and more stable than those for the other parts for both the cabbage and kale leaf samples. Conclusions: The results provide guidelines for optical reflectance measurements of Chinese cabbage and kale plants. The effects of the number of sampling points, the number of leaves, and the relationships between optical reflectance and leaf components remain to be investigated in the future.

당근과 케일에서 저장온도와 양념첨가에 의한 잔류 Captan의 제거효과 (Removal of Residual Captan in Carrot and Kale by Storage Temperatures and Addition of Condiments)

  • The removal of residual captan in carrot and by storage temperatures and the addition of condiments was investigates. The quantities of residual captan after sticking and drying of captan in carrot and kale wer 0.958 and 23.12 ppm, respectively. During storage of 20days at 15,3 and -17$^{\circ}C$, the levels of the residual captan in carrot decreased to 0.008 (removal rate: 99.2%) and 15.06 ppm (42.3%), respectively. The higher removal rate of residual captan was oberved at the higher storage temperatures, When the condiments of soy sauce, green onion, garlic and vinegar added to the carrot which contaminated with the captan and then stored at 15$^{\circ}C$ for 24hrs, the residual levels of captan decreased to 0.207 (removal rate: 78.4%), 0.196 (79.5$^{\circ}C$), 0.164 (82.8$^{\circ}C$) and 0.209 ppm (78.2%), respectively, showing the garlic was the most effective. However, the residual levels in tale were 2.27 (91.3%), 12.70 (51.4%), 16.42 (37.1%) and 13.70 ppm (47.5%), respectively under the same condition, indication the soy sauce was the most effective. The removal rates of residual captan in carrot and kale were significantly higher with the addition of the condiments than those of the controls that without the condiments.

녹즙추출물의 아질산염 소거능에 대한 연구 (Nitrite Scavenging Effect of Methaol Fraction Obtained from Green Yellow Vegetable Juices)

  • The objectives of this study were to investigate biological activities such as nitrite scavenging effect of water and methanol fractions obtained from each green juice(Angelica keiskei, kale, carrot) under different pH conditions, and antioxidant vitamin contents in green juice made of green yellow vegetables. The result shows that nitrite scavenging effect of each green juice was 14.0~91.2% in model system. The methanol fraction provided higher effect than the water fraction. The nitrite degradation was the highest at pH 1.2. Nitrite scavenging effect of methanol fraction obtained from kale juice was 91.2% at pH 1.2 which was the highest among tested samples in this experiments. Consequently, extracts of kale juice were shown to provide the greatest functional properties among the vegetables tested. Contents of vitamine E and C in the extracts of kale were higher than the others.

러시안 컴프리와 케일의 급여(給與)가 병아리의 성장률(成長率), 영양소(營養素) 이용률(利用率) 및 혈청(血淸) Cholesterol 함량(含量)에 미치는 영향(影響) (Effects of Supplementing Russian Comfrey and Kale on the Growth Rate, Nutrients Utilizability and Serum Cholesterol of Chicks)

  • This experiment was conducted for 4 weeks to compare the feeding values of dried meal of Russian Comfrey and Kale as green feeds with Acacia leaf meal and Ladino clover meal, and to investigate the effects of feeding these on the total cholesterol in blood serum and liver fat content. Seventy-five male chicks of Single Comb White Leghorn were allotted into 5 treatments. Fifteen birds in each treatment were received Russian Comfrey meal, Kale meal, Acasia leaf meal, Ladino clover meal or no dried meal, respectively. The results obtained are summarized as follows: 1. No significant differences were recognized between the treatments and control in the growth rate, feed consumption, feed efficiency, utilization of nutrients, nitrogen retention and metabolizable energy value. 2. Carotene content in Russian Comfrey and Kale has been decreased as the growing stage advanced, and the leaves of both vegetable contained significantly (p<0.01) more carotene than that in stems. Vitamin C content of leaves was also signifcantly (p<0.01) higher than that in stems, however, vitamin C content has been increased as the growing stage advanced. 3. Toltal cholesterol content in blood serum of the chickens fed the Acacia leaf meal or Russian Comfrey meal was significantly (p<0.05) lower than Ladino clover meal fed group or those received no green feeds. Kale seems to decrease cholesterol content a little. Above results indicated that Acacia leaf and Russian Comfrey might contain certain substances that would depressing the cholesterol content. 4. No significant differences in the liver fat were discovered among the treatment but it was observed that liver fat was decreased as the cholesterol content increased.

The effect of glutathione S-transferase M1 and T1 polymorphisms on blood pressure, blood glucose, and lipid profiles following the supplementation of kale (Brassica oleracea acephala) juice in South Korean subclinical hypertensive patients

  • BACKGROUND/OBJECTIVES: Glutathione S-transferase (GST) forms a multigene family of phase II detoxification enzymes which are involved in the detoxification of reactive oxygen species. This study examines whether daily supplementation of kale juice can modulate blood pressure (BP), levels of lipid profiles, and blood glucose, and whether this modulation could be affected by the GSTM1 and GSTT1 polymorphisms. SUBJECTS/METHODS: 84 subclinical hypertensive patients showing systolic BP over 130 mmHg or diastolic BP over 85 mmHg received 300 ml/day of kale juice for 6 weeks, and blood samples were collected on 0-week and 6-week in order to evaluate plasma lipid profiles (total cholesterol, triglyceride, HDL-cholesterol, and LDL-cholesterol) and blood glucose. RESULTS: Systolic and diastolic blood pressure was significantly decreased in all patients regardless of their GSTM1 or GSTT1 polymorphisms after kale juice supplementation. Blood glucose level was decreased only in the GSTM1-present genotype, and plasma lipid profiles showed no difference in both the GSTM1-null and GSTM1-present genotypes. In the case of GSTT1, on the other hand, plasma HDL-C was increased and LDL-C was decreased only in the GSTT1-present type, while blood glucose was decreased only in the GSTT1-null genotype. CONCLUSIONS: These findings suggest that the supplementation of kale juice affected blood pressure, lipid profiles, and blood glucose in subclinical hypertensive patients depending on their GST genetic polymorphisms, and the improvement of lipid profiles was mainly greater in the GSTT1-present genotype and the decrease of blood glucose was greater in the GSTM1-present or GSTT1-null genotypes.

수분스트레스에 의한 케일 내 글루코시놀레이트 변화 (Variations of glucosinolates in kale leaves (Brassica oleracea var. acephala) treated with drought-stress in autumn and spring seasons)

  • The present study aimed to investigate the effects of drought stress on the accumulation of glucosinolates (GSLs) in the leaves of Kale cultivated in autumn and spring. HPLC analysis guided to identify seven GSLs including progoitrin, glucoraphanin, sinigrin, gluconapin, glucobrassicin, 4-methoxyglucobrassicin and neoglucobrasscin. Quantification of GSLs revealed that the contents of sigirin was the highest (45%) followed by the level of progoitrin (24%) in terms of total GSLs. The ranges of total GSL contents was 1.16 (84)-15.88 (89 DAS, ${\mu}mol/g$ dry wt. (DW)) in treatment plot and 1.23 (84)-7.05 (74 DAS, ${\mu}mol/g$ dry wt.) in control plot showed the enhancement in the contents of GSLs in treatment than in the control plot. The present results evidenced that the variation of total GSL contents were depending on the harvest period. In 105 DAS, comparatively no differences in the GSL contents on each sample in autumn season, whereas in spring season, although there was decrease in the GSLs tendency from 74 DAS to 84 DAS in both control and treatment plot, the GSL contents of treatment plot was dramatically increased in 89 DAS. In treatment plot, the GSL contents on 89 DAS (1.16) was 15 fold higher to 84 DAS ($15.88{\mu}mol/g$ DW). The variation in the contents of GSL in spring and autumn did not documented significant differences because of their differences in the growth time and cultivation conditions. In conclusion, the GSL contents in kale was likely to be affected by drought stress treatment. Scrutiny and further research for exact relation between drought stress and GSL contents in kale should be needed.

Effects of different sulfur ion concentration in nutrient solution and light source on glucosinolate contents in kale sprouts (Brassica oleracea var. acephala)

  • The aim of this study was to investigate the amount of glucosinolates (GSLs) in kale sprouts (Brassica oleracea L. var. acephala) ('TBC') according to different concentrations of sulfur ions in sprout's nutrient solutions (0.0, 0.5, 1.0, and 2.0 mM) and to different light sources [Fluorescent lamp, Red, Blue, and Mix (R+B) LED]. Kale sprouts were cultivated in a growth chamber for 13 days in sulfur solutions. Kale sprouts were treated with fluorescent lamp and LED light sources for 5 days, from eight days after sowing to harvest. Amount of seven types of GSLs (progoitrin, sinigrin, 4-hydroxyglucobrassicin, glucobrassicin, 4-methoxyglucobrassicin, gluconasturtiin, and neoglucobrassicin) were measured in kale sprouts after harvest. The total GSL content was influenced by different sulfur solution concentration, and it was the highest at S 0.5 mM ($172.54{\mu}mol{\cdot}g^{-1}DW$) and the lowest at S 2.0 mM ($163.09{\mu}mol{\cdot}g^{-1}DW$). The GSL content was influenced by different light source, and it was the highest with Red LED ($159.23{\mu}mol{\cdot}g^{-1}DW$) and the lowest with Blue LED ($147.57{\mu}mol{\cdot}g^{-1}DW$). As the sulfur solution concentration increased under all light source, progoitrin and sinigrin contents tended to decrease while glucobrassicin content showed an upward tendency for all of the light sources. The content of glucobrassicin was higher than that of progitrin when treated with sulfur solutions for all LED light sources. Sinigrin, which has excellent anti-cancer effects, showed the highest rate (92.2%) among all the GSLs, under all of the light sources.

식물생장촉진 Bacillus sp. SB19 균주의 케일 처리에 대한 가뭄 스트레스 완화 효과 (Mitigation Effect of Drought Stress by Plant Growth-promoting Bacterium Bacillus sp. SB19 on Kale Seedlings in Greenhouse)

  • 가뭄은 농작물의 생산성을 저해하는 주요 원인 중 하나이며, 잎을 먹는 쌈채류의 경우 물 부족 스트레스에 더 치명적일 수 있다. 본 연구는 케일 유묘에 대한 식물생육촉진 균주(PGPB)의 가뭄 내성 효과를 알아보기 위해 수행되었다. 쌈채류의 토양 및 근권 토양으로부 터 형태학적으로 구분되는 146개의 콜로니를 분리하고 온실 생물검정을 통해 케일 생육촉진이 우수한 균주 SB19를 최종 선발하였다. SB19 균주는 케일 재배 토양으로부터 분리하였으며 16S rRNA 유전자 염기서열 분석 결과 Bacillus sp.로 확인되었다. Bacillus sp. SB19 균주를 처리한 케일에 7일 간 수분 부족 스트레스를 유도하고 7일째에 가뭄 피해 조사 후 모든 처리구에 1회 관수하였다. 이후 다시 7일 간 수분 부족 스트레스를 주어 14일째에 케일의 내건성 증진 여부를 조사하였다. 가뭄 조건 7일째에 $10^6$$10^7cell\;mL^{-1}$ 농도의 SB19 균주를 처리한 케일에서 무처리와 비교하여 가뭄 스트레스 경감 효과를 보였다. 7일째에 모든 처리구에 관수 후 다시 가뭄 스트레스를 주었을 때에도 $10^6$$10^7cell\;mL^{-1}$ 농도의 SB19 균주 처리구에서 무처리구와 비교하여 가뭄 피해 경감 효과가 있었으며, 7일째와 14일째 모두에서 $10^7cell\;mL^{-1}$ 농도의 SB19 균주 처리구에서 가뭄 피해의 완화 정도가 가장 효과적인 것으로 나타났다. $10^6cell\;mL^{-1}$ SB19 균주 처리구에서는 물 부족으로 인한 잎의 노화가 $10^7cell\;mL^{-1}$ 농도 처리구에 비해 빠르게 발생하였다. 본 연구 결과를 바탕으로 유용 미생물과 식물의 상호작용이 식물의 물 이용률을 증진시키는 중요한 역할을 하고 약한 가뭄 조건에서 쌈채류의 품질을 향상시킬 수 있는 방안이 될 수 있을 것이라고 예측한다. 즉, 미생물학적인 환경 스트레스 극복 방법으로서의 가치를 뒷받침하는 것이라 할 수 있다.

칼슘을 첨가한 무설탕 과일 채소잼의 품질특성 (Quality Characteristics of Sugar Free Fruit-Vegetable Jam containing Calcium)

  • 현대인의 과도한 설탕 섭취, 채소 및 칼슘 섭취 부족 등과 같은 문제점들을 해결하기 위하여 칼슘을 첨가한 무설탕의 과일 채소잼을 제조하였으며, 제조한 제품에 대하여 이화학적 변화와 관능평가를 실시하였다. 당도는 사과의 농도를 줄이고, 케일의 함량을 증가시킨 결과, 낮은 당도를 보였으며, 제조한 잼의 pH에서는 당도와는 달리 사과와 케일의 양과는 상관없이 전반적으로 유의적인 차이를 보이지 않았지만, 사과의 함량이 적을수록 약간 높은 pH를 보이는 것으로 나타났다. 명도 및 황색도의 경우, 케일 함량이 증가할수록 점점 명도 및 황색도의 값이 증가하는 경향으로 나타났다. 그러나 적색도의 값은 -2.05~-1.37로 케일의 함량이 증가한다고 하여 증가 또는 감소의 경향을 보이지는 않는 것으로 나타났다. 조직감의 경우, 케일의 함량이 증가할수록 경도(hardness), 탄력성(springiness), 응집성(cohesiveness), 검성(gumminess) 및 씹힘성(Chewiness)은 유의적으로 감소하는 경향을 보였다. 그러나 부착성(adhesiveness)은 케일 함량이 증가할수록 증가하는 경향을 나타내었다. 관능검사의 경우, 10.0~12.0%의 케일 첨가군이 유의적인 차이 없이 가장 높은 기호도를 보였으며, 케일의 농도가 높을수록 맛을 비롯하여 향, 색, 발림성 및 종합적 기호도는 모두 감소하였다. 이와 같은 결과로 보아 설탕 대신 프락토올리고당으로 대신하고, 식이섬유의 함량이 높은 케일을 첨가하여 잼을 제조할 때 사과와 케일의 비율은 3:1 또는 4:1 정도가 적합할 것으로 판단되었다.

녹즙의 항산화 영양성분 분석 (Analysis of Antioxidant Nutrients in Green Yellow Vegetable Juice)

  • 본 연구에서는 녹즙재료로 많이 이용되고 있는 신선초, 케일, 당근, 샐러리, 오이로 각각 녹즙을 제조하고 함유되어 있는 항산화 영양성분들을 측정하였다. 그 결과 5가지 녹즙에는 항산화 영양성분인 ${\beta}-carotene$, 비타민 E, 비타민 C, Se, Ca, Mn, Zn, 페놀물질들이 함유되어 있었다. ${\beta}-carotene$의 함량은 쥬스 100 g 당 당근이 59.09 mg, 케일이 3285.3 mg, 신선초가 1398.3 mg, 샐러리가 176.7 mg 오이가 61.4 mg이었다. ${\alpha}$-토코페롤의 함량은 케일녹즙이 1.41 mg/100 g으로 가장 높았고, 샐러리 녹즙에는 0.04 mg/100 g이 함유되어 있어 가장 낮게 나타났다. 케일 녹즙은 비타민 C 함량도 녹즙 100 g당 105.1 mg으로 가장 높았고 그 다음은 신선초 31.4 mg, 오이 9.3 mg, 샐러리 7.5 mg, 당근 5.2 mg 순이었다. 항산화성 무기질은 대체로 신선초에 가장 많이 함유되어 있었다. 그 양을 보면 녹즙 100 g당 Cu가 0.4 mg, Mn 0.5mg, Zn 0.24mg이고 Se은 녹즙 kg당 0.61 mg이었다. 케일녹즙에는 100 g당 Cu 0.45 mg, Mn 0.22 mg, Zn 0.24 mg이었다. Se는 1kg 당 0.33 mg로 신선초 다음으로 많은 항산화성 무기질을 함유하고 있었다. 그러나 샐러리와 오이에 함유되어 있는 황산화성 무기질의 양은 유의적으로 낮았다. 총 페놀 물질함량은 5가지 녹즙에서 $0.01{\sim}0.05%$이었으며 케일 녹즙이 가장 많은 페놀물질을 함유하고 있었다.
