The Analysis of Conceptions on Korean, Japanese, Chinese and Western Cuisine by SD (SD법에 의한 한국 요리, 일본 요리, 중국 요리 및 서양 요리에 대한 개념의 분석)

  • According to conceptions of Korean, Japanese, Chinese, and Western cuisine, the results of study based on SD and the factor analysis are as follows. The factors, which were showed from the conception of Korean cuisine, were the tastes for simplicity, cheapness, and familiarity, such as a side dish. The factors, which were showed from the conception of Japanese cuisine, looked like unfamiliar, tasteless and citified except sushi and grilled meat. The factors, which were showed from the conception of Chinese cuisine, were familiarity with the exception of Chinese black noodles, sweet fried pork and fried rice and those looked delicious as well as good table setting. Young people were also trending to be fond of them. The factors, which were showed from the conception of Western cuisine, were luxurious, delicate and citified foods. People were familiar with pizza, spaghetti and stake in Western cuisine.

Risk assessment of heavy metals in tuna from Japanese restaurants in the Republic of Korea

  • Background: Studies on the risk of mercury (Hg) in Korean fishery products focus primarily on total Hg levels as opposed to methylmercury (MeHg) levels. None of the few studies on MeHg in tuna investigated tuna from Japanese restaurants. Few have evaluated lead (Pb), cadmium (Cd) and arsenic (As) in tuna. Thus, this study aimed to conduct a risk assessment by evaluating heavy metal concentrations in tuna from Japanese restaurants. Methods: Thirty-one tuna samples were collected from Japanese restaurants in the Republic of Korea. They were classified according to region and species. The concentration of heavy metals in the samples was analyzed using the Ministry of Food and Drug Safety Food Code method. The rate of exceedance of maximum residue levels (MRLs) and the risk compared to the provisional tolerable weekly intake (PTWI) set by the Joint Food and Agriculture Organization/World Health Organization Expert Committee on Food Additives (%PTWI) were evaluated for risk assessment. Results: The mean of MeHg, Pb, Cd and As concentrations were 0.56 ± 1.47 mg/kg, 33.95 ± 3.74 ㎍/kg, 14.25 ± 2.19 ㎍/kg and 1.46 ± 1.89 mg/kg, respectively. No sample exceeded the MRLs of Pb and Cd, but 9.7% of the samples exceeded the MRL of MeHg. The %PTWIs of MeHg, Pb, Cd and As were 4.2037, 0.0162, 0.0244 and 1.1627, respectively. The %PTWI of MeHg by age group and sex was highest among men aged 19-29 years (10.6494), followed by men aged 30-49 years (7.2458) and women aged 19-29 years (4.8307). Conclusions: We found that 3 out of 31 samples exceeded the MRL of MeHg. The %PTWI of MeHg showed significant differences based on age and sex, and the value was likely to exceed a safe level depending on individuals' eating behaviors. Therefore, improved risk management for MeHg is required.

A Study on the Intake and Satisfaction Levels of Busan Foods among Japanese Tourists (일본 관광객의 부산음식 섭취현황 및 만족도에 관한 연구)

  • This study was conducted to determine the intake and satisfaction levels of Busan local foods in Japanese tourists visiting Busan. The degree of satisfaction with Busan foods and services in restaurants was evaluated. What these tourists wanted to eat after touring Busan was also determined. The subjects consisted of 100 Japanese tourists visiting Busan. Women (including housewives), highly educated people, and people who visited more than four times were predominant in number among the Japanese tourists. Busan local foods eaten during touring were: Dongrae Pajeon (29%), Sengsunhoe (21%), Daejikukbap (10%) and Haemultang (10%). Tourists wanted to taste local foods and answered that eating local foods during the tour was important. A variety of menu items earned a high score of 3.8 (from a highest possible score of 5.0) and various dessert items received a low score of 2.7 for satisfaction with Busan foods. In general, the satisfaction level for Busan foods was low. Tourists responded that they wanted to eat Bulgogi, Pajeon, Bibimbap, Sengsunhoe, and Kimchi jjigae in that order if they revisit Busan, indicating their preference for general Korean foods rather than Busan local foods. From all of the activities included in touring Busan, foods received the highest points (51%) in terms of attraction. As fifty four percent of subjects answered that they wanted to revisit Busan. Busan city needs to prepare tourist restaurants for Bulgogi, Bibimbap, Pajeon, and seafoods (including Sengsunhoe). They must also improve Busan local foods and restaurant services in order to attract and satisfy the Japanese tourists industry.

  • Illustrations in advertisement uses various social and cultural codes to stimulate the desire to buy in consumers in the first place, since this is an economic phenomenon orchestrated to sell a product. Hence, factors outside the product per se, such as tradition, social issues and class consciousness are introduced. Especially, in modern advertisement a strategy is adopted to differentiate standard products produced by mass production. In order to do so, such factors as mentioned above become as important as physical characteristics of the product per se and its usage value. As a result, phrases or images used for advertisement can have independent influences on the society irrespective of the sales effects on the product. In this respect, it is fair to state that advertisement reflects the phases and consciousness of a given period as a cultural phenomenon. Therefore, based on the premise of characteristics and roles attributed to the advertisement, this thesis proposes to make a comparative study on the images of women in commercial advertisement in Korea during Japanese Imperialism and China during Cultural Colonial period dating from 1900 to 1945. The starting point of this research will cover the period of foreign trade and Japanese Imperialism in Korea and interference of Western Power in China. It will also investigate on the birth of Korean advertisement by Japanese Imperialists and Chinese modern advertisement along with the modernization of Shanghai. Then, I propose to present the illustrations of women in advertisements based on comparative study of their characteristics and expressions as observed in several case studies both in Korea and China. Connotative meanings in such advertisement will be investigated in the context of political, economic and cultural dominance.

Evaluation of Health-related Quality of Life for Hypothesized Medical States Associated with Cervical Cancer

  • Background: When evaluating health-economics for cervical cancer prevention policies in Japan, it is important to use Japanese value settings. This study aimed to obtain preference-based measures (preference measures) for hypothesized health states among healthy Japanese women, and to examine differences between the EuroQol-5D (EQ-5D) and standard gamble (SG) instruments. Materials and Methods: The investigation was performed among female students at a nursing university. We used written hypothetical scenarios describing three grades of cervical intraepithelial neoplasia (CIN) and eight stages of cervical cancer, both at diagnosis and after medical intervention. Preference measures were evaluated using both EQ-5D and SG. Results: We received responses from 136 women. The mean number of respondents per stage was 24.6 (SD: 2.7). At diagnosis, average EQ-5D scores for CIN1, CIN2, CIN3, IA1, IA2, IB1, IB2, IIA, IIB, III, and IV stages were 0.84 (0.14), 0.78 (0.12), 0.73 (0.10), 0.78 (0.12), 0.72 (0.12), 0.63 (0.13), 0.64 (0.12), 0.68 (0.08), 0.62 (0.13), 0.55 (0.21), and 0.18 (0.24), respectively. Using one-way analysis of variance with the Tukey-Kramer method for multiple comparisons (each stage vs. CIN1), we found significant differences for IB1 and more advanced stages (p<0.05). After medical intervention, corresponding EQ-5D scores were 0.84 (0.12), 0.81 (0.12), 0.84 (0.12), 0.80 (0.15), 0.78 (0.11), 0.64 (0.15), 0.63 (0.15), 0.71 (0.15), 0.50 (0.17), 0.52 (0.17), 0.21 (0.28). The multiple comparisons identified significant differences for IB1 and more advanced stages, excepting IIA (p<0.05). SG evaluations were more variable and relatively higher than EQ-5D evaluations. Conclusions: We obtained preference measures for three grades of CIN1-3 and eight stages of cervical cancer. In combination with appropriate sensitivity analyses, these preference measures will provide a basis for an economic evaluation of cervical cancer prevention in Japan. We suggest that EQ-5D is appropriate for cost-utility analysis of this topic.

-Comparative Studies on Food Consumption Pattern between Korea and Japan -I. Annual change of nutrient intake- (한국과 일본의 식생활에 관한 연구 -I. 영양소 섭취량의 연차적 추이-)

  • Annual changes of nutrient intakes of Koreans and Japanese were compared on the basis of the data from the National Nutrition Survey which has been carried out annually in Korea (1969-1988) and in Japan (1950-1988) for the guide of the future food and nutrition policy. Intakes of all nutrients except carbohydrate and protein by Koreans were lower than those of Japanese in 1988. The intake of lipid by Koreans was less than one half of the intake by Japanese. The intake of protein has been increased to 79.2g in Korea and 91.6g in Japan, of which 49% and 52.6% were provided by the animal sources in Korea and Japan, respectively, in 1988. In terms of consumption of the energy nutrients, the percentage of carbohydrate has been decreased, while those of protein and lipid have been increased in both countries. In 1988, the ratios of energy intakes by carbohydrate, protein and lipid were 67 : 19 : 14 in Korea and 59 : 15 : 26 in Japan. Considering the desired ratio, 65 : 15 : 20, the intake of carbohydrate seems to be still high and that of lipid still low for Koreans. The food supply has been increased in both countries and the supply of animal food, oil and fat were greater in Japan than in Korea.

Influence of the Mechanical Properties on Drapability in the Peach Skin-like Finished Fabrics (피치스킨 가공직물의 역학적 특성이 드레이프성에 미치는 영향)

  • The purpose of this study was to investigate the influence of the mechanical properties on drapability in the peach skin-like finished fabrics. For this study, the samples used were 50 kinds of peach skin-like finished fabrics. The mechanical properties such as tensile, shearing, bending, compressional, surface characteristic values, thickness and weight were measured with a KES-F system and drupe coefficient by drape tester. The relationship between the characteristic values and drape coefficicients of the peach skin-like finished fabrics results were obtained. 1. Peach skin-like finished fabric had $\pm$2o range of shearing, bending, compression, surface. properties, thickness and weight as compared with Japanese women's thin fabrics. The characteristic mixing values were better with the values of WC/T, W/T, etc. as compared with that of japanese women's thin fabrics. Accordingly, the peach skin-like finished fabrics had a little volume, excellent hanging and drapability as compared with japanese women's thin fabrics. 2. The drape coefficient of peach skin-like finished fabric had a high level of correlation between 2HB, G, WC, MIU, WT, MMD, 2HG, RT, W, B etc. of the mechanical properties. The blocked properties that contributed to the drape coefficient of peach skin-like finished fabrics were in the order of the bending> tensile> thickness> weight properties. This drape coefficients(DC) were found by measuring the mechanical properties according to the obtained regress on equate on. DC=99.0179+17.9023 log G -17.0543 log 2HG5+17.2104 log 2HG+35.7685 log 2HB+ 4.6082 log B-30.5906 log T+4.2308 log W 3. The contribution to the drape coefficient of the characteristic mixing values of peach skin-like finished fabric was in the order of > 2HB/W> 2HB/B> B/W The drape coefficients were found by measuring the characteristic mixing values according to the obtained regression equation. 4. The drape coefficients of peach skin-like finished fabrics were influenced by the differences between the bending of warp direction, bending of weft direction, shearing etc which in turn determine the level of hanging. The regression equation was as follows; 5. The drape coefficients of peach skin.like finished fabrics had a highly positive correlation with the node index. It has an negative correlation with number of nodes.

A Knowledge Graph on Japanese "Comfort Women": Interlinking Fragmented Digital Archival Resources (일본군 '위안부' 지식그래프: 파편화된 디지털 기록의 연결)

  • Records on Japanese "Comfort Women" have been individually managed by private sectors or institutions, and some are provided as digital archives on the Internet. However, records of digital archives differ in the composition and representation of metadata by individual institutions. Meanwhile, there is a lack of a consistent structure to describe the relationships between and among these records, leading to their fragmentation and disconnectedness. This paper proposes a knowledge model for interlinking the digital archival resources and builds a knowledge graph by integrating the records from distributed digital archives. It derives common elements by analyzing metadata from the diverse digital archives and expresses them in standard vocabularies to semantically describe multiple entities and relationships of the digital archival resources. In particular, the study includes the refinement of collected data to search and thread dispersed records and the enrichment of external data to provide significant contextual information of records. An evaluation of the knowledge graph is performed via a query measuring the (dis)connectivity between the distributed records. As a result, the knowledge graph is capable of interlinking and retrieving fragmented records, providing substantial contextual information on the records with external data enrichment, and searching accurately to match the user's intentions through semantic-based queries.

  • The purpose of this study is to propose grading increments chart for women's bodice sloper in their 20s in order to increase consumer satisfaction with apparel products. The selected bodice sloper is a compromise between the German Müller bodice sloper and the Japanese Munhwa bodice sloper. Based on National Standards Position Survey data, the main dimension average for women in their 20s was set. The grading increments was set at the grading deviation application area in bodyboard and sleeve. Thereafter grading was done and the suitability of the graded pattern was checked.

Differences of Women피s Perception of Fatigue According to the Period of Pregnancy (임신기간에 따른 임부 피로 자각 정도의 차이)

  • A study was done to identify the differences of women's perception of fatigue according to the period of pregnancy. Questionnaires were collected from 510 normal pregnant women in 3 University Hospitals in Korea from April to November of 1999. The questionnaires used to measure pregnant women's fatigue were the "Subjective Symptoms of Fatigue Test" designed by the Research Committee of Industrial Fatigue in Hygienic Association of Japanese Industry. The collected data was analyzed by SPSS-Win. The results revealed that there was a significant difference according to the periods of pregnancy: The degree of fatigue was the highest in the first trimester and then third and second trimester in decreasing order (F=89.53, p=0.000). The degree of fatigue was also compared with the respect to the general characteristics of women: There were statistically significant differences according to number of pregnancy (t=6.41, p=0.000), expectation of pregnancy (t=-291, p=0.004) and weight change (F=8.07, p=0.000). Therefore, variable nursing intervention should be provided to alleviate the fatigue according to the each trimester of pregnant period. Especially the nursing intervention program to alleviate the physical fatigue in the first trimester is necessary.
