관광부페 식당 끽식자의 섭식실태에 관한 사례연구 (-A Survey on Fool Intakes by Patrons at Tourist Buffet Restaurant-)

  • A Survey was conducted to identify patrcis' eating behavior at the buffet styled restaurant during dinner time. The average frequency of taking food was 4.1±0.9 and this was statistically significant by age group. The frequency of taking food after satiety was 1.2±0.8. From the menu, 15 seafood items were the most popular which were chosen more than twice. The average of consumed food items was 24.9±8.9 out of 198. The average seafood items which were chosen by each individual was 5.8, desert items was 4.5, salad items with dressing was 4.2. The total weight of the consumed food was 954±365.1g. Mostly gruel, soup and saled chosen the first time. Alcholic beverages and drinks were chosen also first time. Seafood was chosen the 1.2 times and meat was chosen the first, second, and third time. Rice and soup. bread and noodles were chosen the second and third time. Desert was chosen the third time. The consumption of calories and nutrients were compared with the Korean Recommended Dietary Allowances. The average consumption of calories was 49.6% Korean RDAs, protein 71.4%, vitamin A 65.0%, thiamin 74.3%, riboflavin 71.8%, niacin 89.8%, ascorbic acid 72.7%, iron 68.1%, and calcium 108.3%. In one meal, the data shows over eating. The caloric consumption of desert was 275.5Kcal and seafood was 174.1Kcal. The protein consumption of seafood was 23.5g and meat was 7.5g. According to this research, customers have a lot of good chances to be exposed to the variety of food. This is desirable to correct the food habits with a experience. On the other hand, excessive food consumption is a problem. Therefore we suggest the provision of nutrition information about desirable order of eating a meal and the health problems due to overeating. We expect other research of nutritional evaluation in a meal in the different foodservice systems to be made in the future.

일제강점기 ‘간호부규칙(看護婦規則)’에 관한 연구 (The 'Nurses Ordinance' of Korea under Japanese Rule)

  • The Japanese colonial authorities promulgated the 'Nurses Ordinance(Kanhoboo Kyuchick), in 1914. It was the first act that regulated nurses' licensure in Korea. The gendarme did the administrational work of the ordinance. After the Nurses Ordinance of 1914, nurses without licenses could no longer work with the name of nurse, and Korean nursing gained a more professional status. After the March 1st Movement of 1919, Japan realized that its iron rule had to be more sophisticated. The gendarme gave way to an ordinary constabulary force. The Nurses Ordinance was amended to set the nurses quality as good as that of Japanese nurses, and the nurses licensure of Korea could also be used in Japan. In 1931 the Japanese war against China began, and the Japanese imposed military rule once again. The Nurses Ordinance was amended to 'The Korea Nurses Ordinance'. After the outbreak of the Sino-Japanese War(1937) and of World War II in the Pacific(1941), the Japanese desperately needed additional manpower to re plenish the dwindling ranks of their military and labour forces. To produce more nurses, the colonial authorities amended the 'Korea Nurses Ordinance' and lowered the age and educational status of nurses to produce more numbers. Until the Japanese surrender in August 1945, Korea was under Japanese rule. Koreans had no say in the passing of these acts, and the colonial authority could make and pass any act at will.

Validity and reproducibility of a food frequency questionnaire to assess dietary nutrients for prevention and management of metabolic syndrome in Korea

  • Little data exists on metabolic syndrome (MetS) related with intake, especially for the South Korean. The purpose of this study was to develop and evaluate a food frequency questionnaire (FFQ) for nutritional assessment in the population with MetS in South Korea. Randomly selected female participants, mean age 21.9 years (n = 38) were invited to answer the FFQ twice (FFQ1 and FFQ2) over a nine-month interval and to complete twelve-day diet records (DR) during the months between in South Korea. The correlation coefficients for nutrient intake between FFQ1 and FFQ2 varied from 0.253 (niacin) to 0.573 (cholesterol), and the energy intake-adjusted correlation coefficients ranged from 0.187 for protein to 0.662 for iron. The energy intake-adjusted and de-attenuated correlation coefficients for comparison of FFQ1 and the DRs ranged between 0.277 (vitamin $B_1$) and 0.768 (fiber), and between 0.229 (zinc) and 0.859 (fat) for comparison of DRs with FFQ2. The percentages of study subjects classified into the same quartiles in both the DRs and FFQ1 ranged from 15.8% (vitamin $B_6$) to 47.4% (calcium), and for the same quartiles in DRs and FFQ2 from 13.2% (vitamin $B_1$) to 44.7% (potassium). The FFQ has reasonably good validity and reproducibility. Further research is needed for an assessment of reproducibility and validation of present FFQ in the subjects with MetS.

  • 국가적(國家的) 차원에서의 국민영양소요양(國民營養所要量)을 확립하는데 중요한 지표(指標)가 되는 한국인(韓國人) 평균1인1일당(平均1人1日當) 영양소요양(營養所要量)설정의 필요성에 의하여, 1980년도(年度) 경제기획원인구(經濟企劃院人口)센서스 자료(資料)와 FAO한국협회(韓國協會)가 1980년(年) 제(第)3 차 (次) 개정(改定)한 한국인영양권장양으로부터 한국인(韓國人) 평균(平均)1인(人)1일당(日當) 영양소요양(營養所要量)을 계산(計算)하였다. 즉 영양소별(營養素別) 평균(平均)1인(人)1일당(日當) 영양소요양(營養所要量)은 에너지 2,200 kcal, 단백질(蛋白質) 70 g, 칼슘 0.72 g, 철(鐵) 14 mg, 비타민 A 1,900 IU, 비타민 C 50 mg, 비타민$B_{1}$ 0.9 mg, 비타민 $B_{2}$ 1.2 mg 그리고 나이아신당양(當量)은 15 mg이었다.

임신기부터 성장기 동안의 인삼 투여가 흰쥐의 체내대사에 미치는 영향 (The Effect of Ginseng Supplementation From Prenatal to Growing Period on Metabolism of the Rats)

  • The purpose of this study was to examine the effects of long- term Ginseng administration on metabolism of rats during growing period. A group of pregnant rats was divided into 2 groups, the one was given 18% casein diet and the other, 18% casein diet with ginseng powder 500 mg/kg body was during the gestation and lactation. After weaning, 84 male offsprings were taken at random from the 2 groups. The rats from each group were divided subsequently into 2 groups. Ginseng and control group. The rats were sacrificed at three different times -7, 11, 17 weeks of age. The body weight and amount of food intake were measared during the feeding period. After sacrificing, the weight of some organs, liver glycogen. serum total lipid values, urinary nitrogen and creatinine were examined. The results were analysed by t-test and F-test Results obtained are summarized as follows : 1) Addition of Ginseng did not significantly affect the body weight of rats. 2) The weight of liver, testis, epididymal fat pad were not significantly different between ginseng group and control group during the experimental period. 3) Urinary nitrogen and creatinine did not have significance among all the experimental groups. 4) Amount of liver glycogen was not statistically significant in the ginseng group and control group. 5) The serum total lipid values of rats Iron ginseng group was not statistically different from that of the control group. It can be concluded that Ginseng, 500 mg ginseng powder /kg body wt, does not affect the metabolism of rats under the conditions of this study.

Comparisons of food security, dietary behaviors and nutrient intakes between adult North Korean Refugees in South Korea and South Koreans

  • BACKGROUND/OBJECTIVES: North Korean refugees (NKRs) in South Korea are a unique population as they must adapt in a new country with similar cultural traits but different social, political, and economic systems, but little research has been conducted on diet and nutrition in this population. This study examined food security, dietary behaviors, and nutrient intakes among adult NKRs living in South Korea and compared them to those of South Koreans. SUBJECTS/METHODS: The subjects were 139 adult NKRs (25 men, 114 women) living in the Seoul metropolitan area, and 417 age- and sex- matched South Korean controls (SKCs; 75 men, 342 women) selected from the Korea National Health and Nutrition Examination Survey (KNHANES). Food security and dietary behaviors (meal skipping, eating-out, meals with family, nutrition education and counseling, and nutrition label knowledge and utilization) were obtained using self-administered questionnaires. Nutrient intakes were assessed by 24-hr recall. The statistical analysis was performed using IBM SPSS ver. 23.0. RESULTS: In South Korea, food security had improved over the previous 12 months, but remained significantly poorer for NKR women than SKC women. Meal skipping was three times more frequent than for SKCs and eating-out was rare. Average energy intake was 1,509 kcal for NKR men and 1,344 kcal for NKR women, which was lower than those of SKCs (2,412 kcal and 1,789 kcal, respectively). Significantly more NKRs (men 24.0%, women 21.9%) showed simultaneously deficient intake in energy, calcium, iron, vitamin A, and riboflavin than SKCs (men 2.7% (P = 0.003), women 7.0% (P < 0.001)). NKR women had a significantly higher index of nutrient quality (INQ) for some nutrients than SK women. CONCLUSIONS: This study reports significant differences in food security, dietary behaviors, and nutrient intakes between NKRs and SKCs. Generally, NKRs reported lower intakes despite improved food security, but relatively good INQs across nutrients. Further research is needed to understand processes of food choice and consumption among NKRs to provide appropriate support aimed at improving diets.

여성 근로자의 영양섭취 및 건강상태 조사 : 사무직과 납 사업장 근로자의 비교 (Nutritional and Health Status of Women Workers by Working Fields)

  • The objective of this study was to investigate the nutritional and health status of women industrial workers by working fields. One hundred forty eight (105 lead and 43 office) workers were recruited from March 2005 to October 2005. Information on age, education, smoking and drinking status were collected using questionnaire and nutrient intake and diet quality of workers were assessed by average of two-day 24 hr recall method. Biochemical indexes including blood lead level (PbB), indexes for iron status, serum calcium (Ca) and serum lipid profiles were analyzed from fasting venous blood or serum. Results showed that education level of lead workers was lower than that of office workers (p<0.05), but nutrient intake levels were not significantly different by working fields. Overall nutritional status of the subject were good except for calcium, vitamin $B_2$, C and folic acid intakes. PbB of lead workers were significantly higher than that of office workers while mean corpuscular hemoglobin concentration (MCHC) and serum Ca levels were significantly lower in lead workers. MCHC was positively correlated with zinc intake (r=0.166) and serum Ca was positively correlated with vitamin C intake (r=0.179). This study confirms that lead workers need extra care to keep their health and nutritional management especially for the nutrients known to interact with lead. Tailored nutrition education for workers at specific working fields needs to be more focused for the improvement of health status of industrial workers.

충남서북부 지역 초등학생의 신체계측치와 영양소 섭취 및 골밀도와 관련된 요인 (Factors Related to Calceneal Broadband Ultrasound Attenuation, Anthropometric Indexes and Nutrient Intakes among Elementary School Children in Chungnam)

  • Variables affecting bone heath of growing children were analyzed among forty nine 10-12 year old elementary students in three rural regions of north west Chungnam area. Information on age of the parents, duration of breast feeding and birth weight were collected from the guardians of the participants and nutrient intake and diet quality were assessed by average of three-day food records of participants with the help of dietitians. Bone health status was measured by calceneal broadband ultrasound attenuation (BUA) using quantitative ultrasound (QUS). Results showed that anthropometic indexes and nutrient intake levels were not different between boys and girls. However, iron intake was significantly lower in girls than in boys. Girls after menarche showed lower intake levels for thiamin, riboflavin, pyridoxine and niacin than girls before menarche. z-scores of BMI were lower than -1 and higher than +1 showed shorter breast feeding period than others but the difference was statistically non-significant. Overall, the subjects did not consume enough s of calcium, vitamin C and folic acid. Zinc intake and BMI were the most significant factors affecting BUA by the results of backward elimination in multiple regression models. Phosphorous and beta-carotene intakes showed significant negative relation with BUA. This study showed that children living in the rural area of Chungnam need extra care to keep their health and nutrient intakes especially for the nutrients known to affect growth. Tailored nutrition education needs to be more focused on the improvement of bone health status of children.

전북 순창 동촌유적 출토 청동기의 원료 산지연구 (Scientific Analysis and Provenance Study of Bronze Artifacts Excavated from Dongchon Site in Sunchang, Jeollabuk-do, Korea)

  • 전북 순창 동촌유적 출토 청동기 4점에서 수습한 극미량의 시료를 대상으로 청동기 제작에 사용된 원료의 산지를 규명하고자 하였다. 납동위원소비 분석 결과를 동북아지역 방연석 광산 분포도 및 한반도 납동위원소 분포도와 비교한 결과 동부는 출토지와 인접한 옥천변성대 및 영남육괴지역, 나머지 3점은 중국 북부의 원료를 사용하였을 것으로 추정할 수 있다. 또한 익산 용제리유적 출토 세형동검 및 완주 덕동유적 출토 청동기 일부와 동촌유적 출토 동부의 경우 원료 산지 분석 결과가 일치하는 것으로 나타났다. 따라서 인근의 유사 지역에서 입수한 원료를 사용하였거나 동일한 공방에서 제작하여 여러 지역으로 전파되었을 것으로 추정된다. 향후 유사지역 출토 청동기의 원료 산지에 대한 추가 연구와 더불어 본 연구결과를 참고자료로 활용하여 초기철기시대 전북지역 청동기의 원료 산지 및 유통 과정에 대한 정보를 얻을 수 있을 것으로 기대된다.

Prevalence of Drug Abuse and Smoking and Dietary Behavior of Male Students at Technical High School

  • To investigate the relationship between eating behavior and the prevalence of adolescents drug abuse and smoking, this survey was conducted among 349 male students(mean age ; 16.0 $\pm$0.9yrs) at technical high schools in Kyunggi-Do. It was shown that 58.7% of total subjects were smoking and 11.2% were abusing drugs. Drug abusers weighed Less than non-abusers especially, student smokers were 2.7kg lighter than non-smokers despite the same height. Although parents' education showed no relationship with drug abuse, educational level of student smokers' fathers was significantly lower than that of non-smokers' fathers. Drug abusers and smokers showed significantly higher incidence of runaway from home, absence from school without notice, and parents' divorce than non-abusers and non-smokers. Drugs abused were sleeping pills(n=20), bonds and butane gas(n=9), marijuana(n=3), tranquilizer(n=3), morphine and cocaine(n=2), and pep pills like amphetamine(n=2) 76.9% of the drug abusers had their first experience in junior high school and 81% of the smokers stared smoking as early as in junior high school. Also, 44% of the smokers reported that they smoke daily. The drug abusers tended to have more irregular eating habits than the non-abusers. The smokers showed irregular mealtime, ate either too fast or too slow, and especially, often skipped lunch or dinner. The drug abusers and smokers took little vegetable in their meals and often ate bread or noodles instead of rice for staples. In addition, they preferred taste to nutrition when they had meals. The smokers tended to ingest smaller amount of calcium source such as milk or dinner food and fish with bone although they consume more volume of total foods than the non-smokers. All subjects took less in calorie, calcium, iron, vitamin A, vitamin E, riboflavin, and folic acid than the Recommended Dietary Allowance Those findings suggest that drug abuse and smoking cause bad eating habits that influence unbalanced nutritional state. Therefore, nutrition education should be provided to the adolescents so that they can recognize the disadvantages of drug and smoking and its relation to dietary relation.
