Objectives: This study was performed to examine nutrition problems and causes/contributing risk factors. Methods: This study was conducted using data 1,863 adults visited Asan health screening & promotion center located in Seoul, Korea during May to June of 2013. We used Nutrition Care Process Model developed by the International Dietetics & Nutrition Terminology (IDNT). Results: The most frequent nutrition problem in male subjects was excessive alcohol intake. Men in fifties showed the highest rate of excessive alcohol intake among the age groups examined (22.4%). By comparison, the most frequent nutrition problem in women was inadequate protein intake. Women in fifties exhibited the highest rate of inadequate protein intake (22.5%). The most common contributing factors for these observations were a low preference for dairy products followed by high preference for alcohol and a deficit in food-and nutrition-related knowledge, regardless of the sex and age. The most common nutrition problem observed among the group diagnosed with hyperglycemia or hypertriglyceridemia or hyperuricemia or fatty liver was excessive alcohol intake (p < 0.001), whereas the group diagnosed with hyperglycemia or hypercholesterolemia showed significantly higher rate of inappropriate intake of carbohydrate (fructose) compared to the group not diagnosed with such disease conditions (p < 0.05). The group diagnosed with hypercholesterolemia, hyperuricemia and fatty liver showed significantly higher occurrence of inappropriate intake of fat (saturated fat) than the group free of such diseases (p < 0.001). The osteopenia group showed higher rate of inadequate protein intake (p < 0.001) and the fatty liver group with excessive energy intake (p < 0.001). Overall, the results suggest that there is a significant relationship between nutrition problems and health conditions found in groups diagnosed with a diverse array of medical conditions. Conclusions: Therefore, we strongly suggest that dieticians should implement nutrition interventions with people visiting health screening & promotion center based on nutrition problems and the contributing factors diagnosed by dietitions in order to prevent chronic diseases in this population.
In order to evaluate the accuracy of the measurement of maximal oxygen intake (MOI), the MOI in seven subjects was determined 3 to 4 times in each individual. Following a 10 minute warm-up on treadmill (4.3 km/hr with 9 degree grade), the subject was asked to run at a speed of 8.73 km/hr on treadmill for a period of 3 minutes at a given grade which was elevated in a step-wise manner from zero to the level of exhaustion. Following a 3 minute run, the subject was allowed to rest for a period of 3 to 5 minutes. During each period of running, several cardio-pulmonary functions were determined and the range of variability for each measurement was computed. The oxygen consumption during the maximal work load was taken as the MOI. The results may be summarized as follows: (1) The minute volume, the oxygen consumption and the heart rate increased linearly until the grade was elevated to 9 degree above which these values were leveled off. (2) The minute volume and the heart rate during maximal exorcise were $87.4{\pm}8.10\;1/min\;and\;187{\pm}3.7$ per minute, respectively. (3) The maximal oxygen intake which corresponds to the oxygen consumption during maximal exercise was averaged to 3.04 1/min. (4) The coefficient of variance for the maximal oxygen intake was 6.32% while the corresponding values for the minute volume and the heart rate during maximal exercise were 5.22 and 2. 14%, respectively.

In order to determine whether oxalate from grasses affects feed intake, blood calcium (Ca) and other blood parameters of adult sheep, two feeding trials were conducted. In Trial 1, one group of sheep received guineagrass (0.47% soluble oxalate) and another group received setaria (1.34% soluble oxalate) for 28 d. In Trial 2, one group of sheep received guineagrass while another group received the same grass treated with an oxalic acid solution (at a rate of 30 g oxalic acid/kg dry matter of hay) for 72 d. All sheep received concentrate mixtures (0.5% of body weight) throughout the experiment. In both trials, it was observed that plasma Ca concentration (11.0-11.7 mg/dl) was significantly (p<0.05) lower in sheep fed high oxalate-containing grasses than in sheep fed low oxalate-containing grasses (12.4-13.7 mg/dl). No differences (p>0.05) were observed in concentrations of magnesium, phosphorus and parathyroid hormone in plasma between the feeding of low and high oxalate-containing grasses. In addition, no differences (p>0.05) were observed in roughage dry mater (DM) intake, total DM intake or body weight of sheep. This study suggests that sheep may consume oxalate-rich forage, but Ca bioavailability may decrease with increasing oxalate levels in the ration.
Objectives: This study was performed to develop an assessment tool for middle aged women's health status based on dietary patterns, which will have practical applications in the working field of health and hygiene, aiming at improving the middle aged women's quality of life through their health improvement. Methods: As a first step, a literature review was conducted and the original data of '2008~2009 Korea Health and Nutrition Examination Survey' were reanalyzed. This analysis identified 65 preliminary questions that may be relevant to the study. After verifying the content validity by experts, the 65 questions were reduced into 51 questions. In order to secure higher validity of the candidate items, verification of their clinical validity was conducted among women aged between 45 and 60 years. Finally, an assessment tool was developed by applying weight and scoring. Results: Selected 51 questions were used to verify clinical validity and the results showed that 20 questions were relevant, nine questions ('regular meal time', 'regular amount of meal', 'intake frequency of dairy products', 'intake frequency of fruits', 'intake frequency of meat products', 'intake frequency of high cholesterol foods', 'intake frequency of salty foods', 'appetite', 'eat breakfast everyday') were related to dietary life. Eleven other questions ('self-rated health status', 'deep sleep', 'smoking', 'frequency of drinking', 'stress levels', 'health-related fitness levels', 'pounding of the heart', 'strange feelings on the skin', 'interfere with daily life', 'menopause will bring you a chance to see the life in a different perspective', and 'body mass index') were selected as valid questions. For the response scale for each question, 5 point Likert scale was used to make total 100 point score. Conclusions: This study is the first attempt to develop a health status assessment tool for middle aged women based on their dietary patterns. We conclude that this tool is expected to be a useful and practical tool in the field.
Coffee is known to increase pancreatic secretion of digestive enzymes. The mutagen, aflatoxin B1(AFB1) is contained in fermented foods and known to increase the specific activities of pancreatic chymotrypsin, trypsi, amylase, and lipase. Nowadays, coffee intake is increased among Koreans who have consumed relatively high amount of traditional fermented foods. Therefore, this study was performed to examine the effect of coffee and AFB1 on pancreatic exocrine function and structure. Rats were divided into 10 experimental groups. The first five groups were W(control group), LD(0.2g decaffeinated coffee/Kg B.W), HD(3g decaffeinated coffee/Kg B.W), LC(0.2g coffee/Kg B.W), and HC(3g coffee/Kg B.W). The second five groups were WA, LDA, HDA, LCA, HCA, same as first five groups in caffieine level but treated with AFB1. The result of this experiment showed that the caffeine intake did not influence significantly on the growth and feed efficiency. But water intake was increased by caffeine intake and AFB1 treatment. The weights of pancreas and liver were increased as the caffeine intake was increased. Trypsin activities were tend to increase in concentrated coffee groups(HD, HC). AFB1 treated groups showed the higher trypsin level than the AFB1 untreated groups. Amylase activities were tend to increase in concentrated coffee groups(HD, HC) of AFB1 untreated animals. AFB1 treated did not show the additional effect on the stimulated amylase secretion by coffee. Lipase activities were tend to decrease in concentrated coffee groups(HD, HC) of AFB1 untreated animals. Lipase activities were increased in the order named WA group, coffee groups, decaffeinated coffee groups in AFB1 treated animals. AFB1 treated groups showed the higher lipase level than AFB1 untreated groups. In the histologic observation of pancreas HCA group showed more dense compound tubuloalveolar glands and proliferation of nuclei than normal. The result suggested a development of a atypia which is ongoing phase to a cancer.
The purpose of this study is to assess folate intake, and serum and red blood cell (RBC) folate concentrations, and investigate the association between folate status and health-related behaviors among Korean college students. A total of 169 students, aged between 18 and 27 years, participated in this study. Dietary intake data were collected by trained interviewers using a 24-hour recall method for three non-consecutive days in 2009. Information on health-related behaviors was obtained by a self-administered questionnaire. Serum and RBC folate concentrations were measured by microbiological assay. The average intakes of folate were $456{\mu}gDFE$ and $347{\mu}gDFE$ in male and female students, respectively. While the average serum folate concentration was significantly lower in male students (8.9 ng/mL) compared to female students (12.5 ng/mL), RBC concentrations were not significantly different between male (398.6 ng/mL) and female students (405.3 ng/mL). In male students, low serum folate concentrations were associated with total folate intake less than the Estimated Average Requirement, non-use of folic acid supplements, smoking, alcohol drinking at least once a week and low physical activity. In female students, low serum folate concentrations were associated with smoking and alcohol drinking at least two drinks at a time and BMI ${\geq}25$. Alcohol drinking and low physical activity were also associated with low RBC folate concentrations in both male and female students. In order to improve folate nutritional status of college students, the practice of desirable health-related behaviors, such as non-smoking, moderate alcohol drinking, regular physical activity, and maintenance of healthy BMI should be encouraged along with consumption of folate-rich foods and supplements.

The aim of this study was to evaluate the effect of two diets different in crude fibre content and ingredients on performance and on caecal characteristics of rabbits around weaning. Thirty litters from thirty New Zealand White does were divided at Day 18 in two groups fed, respectively, a low fibre concentrate (LFC, consisting mainly of soybean meal, delactated whey, barley) from Day 18-28 followed by a creep feed (CF, consisting mainly in alfalfa meal, barley and wheat bran) from Day 29-32, and a CF from Day 18-32. After weaning (32 days) both groups were fed the CF ad libitum for two weeks. During the pre-weaning period, mortality, milk intake and solid feed intake (from Day 20) were recorded daily, while the live weight of kits was recorded twice, at 18 and 32 days. At day 28, one rabbit/litter was slaughtered in order to obtain data on caecal content characteristics. After weaning, the rabbits were located in collective cages, feeding ad libitum CF; feed intake, live weight and mortality were recorded weekly for two weeks. During the preweaning period, there were no differences between the groups in milk and solid feed intake and, by consequence, in live weight at weaning; instead, the mortality was higher (12.5 vs 4.5%) for the group (A) that changed diet at 28 days. Group A showed also a higher caecal pH (6.12 vs. 5.72), propionate to butyrate ratio (0.73 vs. 0.46), ammonia content (9.3 vs. 7.1 mmol/l), but a lower total volatile fatty acid content (66.8 vs. 82.1 mmol/l) than B Group, probably due to the dried milk whey in the concentrate. After weaning, there were no significant differences between the two groups. The authors concluded that the use of a low fibre concentrate for suckling rabbits is not recommended.
Using dietary, anthropometric, and biochemical methods of evaluation, a nutritional survey was made of 81 seven-and eight-year-old children from two schools with different socioeconomic backgrounds in Daejon city, during the October of 1980. All the children were tall and heavy in comparison with 1976 Korean standard. School A children with relatively high socioeconomic levels showed higher value in length and lower value in weight than school B children with relatively low socioeconomic levels. Mean hemoglobin values were 13.3 (school A) and 12.8 (school B) g/100 ml and hematocrits were 39.7 and 37.9%, respectively. Anemic children were not many in both schools ( A ; 0-25%, B ; 12.5-15.0% ). Urea nitrogen/creatinine ratios were 9.2 (A) and 7.8 (B). The intake of animal foods was higher in school A owing to the higher intake of milks. The intakes of all nutrients except energy and calcium were comparable to or higher than Korean recommend dietary allowances (KRDA). Riboflavin intake wae deficient in school B only. Low socioeconomic school B children had significantly lower intakes of fats, calcium, and riboflavin than school A children. Energy intakes were low as 75.9 (A) and 83.2 (B) % of KRDA but their composition of carbohydrates, fats, and proteins were satisfactory in both schools. More than one-third of protein intake was animalorigin in both schools (A ; 1.40/3, B ; 1.10/3) and calcium intake was very low as 59.0%(A) and 45.8%(B). Education levels of parents, esp. mothers, were positively correlated with Kaup indice (in school A & B) and some nutrients intakes (in school A). In school B, number of siblings and birth order showed negative correlations with some nutrient intakes.
In order to examine nutritional and behavioral risk factors of atopic dermatitis (AD) in Korean preschoolers, we analyzed data on 144 children aged 3-6 years with AD and their 434 healthy counterparts. The data included breast-feeding history, current weight, food behaviors assessed by the Mini Dietary Assessment (MDA), food intake by a semi-quantitative food frequency questionnaire, and behavior problems by the Preschool and Kindergarten Behavior Scale (PKBS). Multivariate logistic regression analyses were performed after controlling for preschool location and child's age, gender and total energy intake, as appropriate. There was no group difference of child and household characteristics. Breastfeeding history was related to lower AD risk (OR = 0.63, 95% Cl = 0.40-0.99), yet no statistically significant association was found with overweight status. Regarding food behaviors, AD risk was lower in children who drank milk at least one cup per day (OR = 0.52, 95% Cl = 0.35-0.78) and had regular meals (OR = 0.62, 95% Cl =0.42-0.92). Moreover, there were lower risks of AD in the second (OR =0.48, 95% Cl = 0.28-0.82) and the highest (OR = 0.55, 95% Cl = 0.32-0.94) intake quartiles as compared with the lowest quartile of kimchi intake. Similarly, AD risk was lower in the highest quartile of rice (OR = 0.51 Cl = 0.28-0.93) and the second quartile of fruit (OR =0.45, 95% Cl = 0.25-0.82) intakes. AD children had more problems in social interaction (OR = 1.97,95% Cl = 1.26-3.07) and independence (OR = 1.60, 95% Cl = 1.01 -2.54) measures than the healthy controls. Likewise, AD children tended to show more problem behaviors such as anxiety (OR = 1.63, 95% Cl = 0.99-2.69). Our results suggest that nutritional and behavioral dimensions are related to AD risk, yet the case control study design may preclude generalization of these results.
The purpose of this study was to investigate how advanced maternal age influences lifestyle, nutrient intake, iron status, and pregnancy outcomes in pregnant women. The subjects of this study were 112 pregnant women who were receiving prenatal care at gynecologists located in Seoul. The subjects were divided into two groups according to their ages: those over age 35 were the advanced age group of pregnant women (AP) and those under age 35 were the young age group of pregnant women (YP). General factors, nutrient intakes, iron status, and pregnancy outcomes of the two groups were then compared. It was found that 72.5% of the YP group and 51.2% of the AP group had pre-pregnancy alcohol drinking experience; indicating that the YP group had more pre-pregnancy alcohol consumption than the AP group (P<0.05). The only difference found in nutrient intake between the two groups was their niacin intakes which were $16.83{\pm}8.20\;mg$/day and $13.76{\pm}5.28\;mg$/day, respectively. When gestational age was shorter than 38.7 weeks, the average infant birth weight was $2.95{\pm}0.08\;kg$, and when gestational age was longer than 40 weeks, it averaged at about $3.42{\pm}0.08\;kg$. In other words, as gestational age increased, infant birth weight increased (P<0.0001), and when maternal weight increased more than 15 kg, the infant birth weight increased significantly (P<0.05). In conclusion, in order to secure healthy human resources, with respect to advanced aged women, it is necessary to intervene by promoting daily habits that consist of strategic increases in folate and calcium intake along with appropriate amounts of exercise.
