Assessment of Quality Changes in Mackerel Scomber japonicus During Refrigerated Storage: Development of a Freshness Indicator (냉장 저장 중 고등어(Scomber japonicus)의 선도 지표 개발을 위한 품질 특성 평가)

  • No freshness indicator for fish has yet been established. Thus, we investigated changes over time in mackerel quality in an effort to development useful indicators. Fresh whole mackerel Scomber japonicus were stored at $4^{\circ}C$ immediately after capture and quality changes were evaluated every 3 days for a total of 15 days. Whole fish were divided into ventral parts (VPs) and dorsal parts (DPs); we measured the trimethylamine (TMA) and volatile basic nitrogen (VBN) levels, pH values, and color values in/of these parts. The TMA and VBN levels tended to increase during storage and the TMA changes in VPs were higher than those in DPs. In particular, the VP TMA content attained a maximum of 3.68 mg/100 g at 6 days, and the VBN content attained a maximum of 20.88 mg/100 g at 9 days, suggestive of initial fish spoilage. The pH ranged from 5.99-6.17 over the first 3 days and from 6.17-6.38 from days 6-15. Surface color changes on VPs and DPs were explored. Significant decreases in both VP lightness and yellowness were evident after 3 days. The data suggest that both TMA level and lightness of the color are valuable indicators of freshness in the initial stage of mackerel retail.

The Contamination Characteristics of BTEX and TPH Components in Silty Soils with the Oil Leakage Event from Point Source (점오염원 형태의 유류누출 사건에 의한 실트질 토양층에서 BTEX와 TPH 성분의 오염도 연구)

  • The contamination characteristics of BTEX and TPH components in silty soils with the oil leakage event from point source were studied. The over ratios of three soil pollution standard for TPH component were $1.5{\sim}1.7$ times higher than that of BTEX component. The mean and maximum values of BTEX and TPH components with sample points were B-zone > A-zone > C-zone, and the highest concentrations were measured at $1{\sim}2m$ depth below surface. BTEX and TPH components were increased with linear distance in zone within 120 m and 80 m from point source. For the zone more than 120 m, BTEX and TPH concentrations were under soil pollution standard. The cutoff values of indicator kriging using BTEX and TPH components were defined as confirmative limit, warn- ing limit and counterplan limit. The variograms of indicator-transformed data were selected linear model. The contamination ranges of BTEX and TPH components using confirmative limit and warning limit were estimated similar, but the contamination range of those using counterplan limit was much reduced. The maximum contamination probabilities were estimated by probability maps usinB confirmative limit, warning limit and counterplan limit. The maximum contamination probabilities with three soil pollution standard were estimated 26%, 26% and 13% for BTEX component, and 44%, 38% and 26% for TPH component.

Ileal Amino Acid Digestibility in Different Cultivars of Chinese Rapeseed Meals for Growing-finishing Pigs

  • Studies were conducted with nine barrows, average initial body weight $44.5{\pm}2.1kg$, fitted with a T-cannula at the distal ileum, to determine the apparent ileal (and true) digestibility (AID and TID) of CP and AA in different cultivars of rapeseed meals and soybean meal. The barrows were fed either a casein diet or one of eight corn starch-based semipurified diets, formulated to contain 17.0% CP (DM basis) with one of seven different cultivars of rapeseed meal or soybean meal as the sole source of dietary protein, according to a six-period, nine-treatment, incomplete Latin Square. Chromic oxide (0.5%) was used as a digestibility marker. The pigs were fed of 4% of body weight twice daily, at 08:00 and 20:00 h. Ileal digesta were collected at 2 h intervals daily from 5 d to 7 d. The AID or TID values of CP and most AA (Cysteine excluded) were significantly lower in the rapeseed meals than in soybean meal (p<0.05). There were significant differences in the AID or TID values of CP and AA among the seven different cultivars rapeseed meals (p<0.05); the seven rapeseed meals were arranged according to the size of the AA digestibility values of the rapeseed meals from the greatest to the least, as Zayou 59, Youyan 7, Ganyou 16, Qingyou 2, Huaza 3, Ningza 1 and Lianglou 586; differences in CP, AA, NDF and ADF contents in the rapeseed meals were mainly responsible for the variation in the AID or TID values of AA among rapeseed meals. The AID value of CP can be used as an index of the AID or TID values of most AA in rapeseed meals. However, the AID value of CP was less appropriate as a direct indicator of the AID or TID values for cysteine, methionine, tryptophan, phenylalanine and proline.

Clinical Usefulness of Cerebral State Monitor for Monitoring Sedation Depth during Dental Sedation in Children (소아 치과진정법 시행 시 진정심도 감시를 위한 Cerebral State Monitor의 임상적 유용성)

  • Background: It is imperative that adequate sedation level should be maintained for safe and effective dental sedation. Cerebral state index (CSI) is a empirically derived parameter calculated from the processed electroencephalography (EEG). We investigated whether CSI can be used as a sedation depth indicator. Methods: We continuously recorded CSI and bispectral index (BIS) values from 10 healthy children aged 3.6 yr undergoing dental sedation. We also evaluated sedation level using the Modified Observer's Assessment of Alertness/Sedation (MOAA/S). The correlation between CSI and BIS, or CSI and sedation score were sought a regression analysis. Results: There were good linearity between CSI values and sedation score. (r = 0.916, P < 0.001) The paired CSI and BIS values showed a significant correlation between the two values. (r = 0.895, P < 0.001) The difference between CSI and BIS values was not statistically significant at deep and conscious sedative levels. Conclusions: The CSI monitor can be easy to monitor sedation depth during dental sedation for children.

Relationship between Thermal Properties of Muscle Proteins and Pork Quality

  • The purpose of this study was performed as model study using four animals to investigate the correction between the changes in Differential Scanning Calorimetry thermogram of muscle proteins during storage and meat freshness. M. longissimus dorsi of pork was obtained immediately after slaughter and chilled/stored at either $-2^{\circ}C$ or $25^{\circ}C$ for up to 96 h for analyses. DSC thermograms were determined and compared with pH values, ATP-related compounds, K-values, volatile basic nitrogen (VBN) levels, bacterial counts and electrophoretic behavior. Changes in pH, bacterial counts, VBN and K-values were associated with increased storage temperature and time. The levels of pH values, bacterial counts, VBN and K-values of pork samples stored at $25^{\circ}C$ were higher than those of the pork samples stored at $-2^{\circ}C$. ATP concentration decreased faster in samples stored at $25^{\circ}C$. Only IMP increased in samples stored at $-2^{\circ}C$, whereas the concentration of hypoxanthine and inosine increased in samples stored at $25^{\circ}C$. One exothermic peak and two endothermic peaks appeared on the thermograms of pork stored at either temperature. Lower transition temperature of myosin, sarcoplasmic protein and actin peaks were observed. The freshness parameters of K-value, VBN and hypoxanthine showed highly negative correlations (-0.742- -0.9980) to the changes in transition temperature. Therefore, the shift temperature on DSC thermogram can be used as an indicator of the freshness parameters of meat.

A Study on the Characteristics of Groundwaters in Gyeongsan City (경산시 지하수의 수질특성에 관한 연구)

  • This study was performed to provide the basic information on characteristics of groundwater pollution in Gyeongsan city. Forty two groundwater samples were collected, and pH, DO, COD, $NH_3-N,\;NO_3^--N$, T-N, $PO_4^{3-}-P$, Cl, Ca, Mg, hardness, evaporate residues and others were investigated. And, ANOVA analyses were carried out to reveal the differences in water pollution indicator values of by industry, commerce/residence and agriculture areas. The results were as follows. 1. The mean values of pH, DO, COD, $NH_3-N,\;NO_3^--N$, T-N, $PO_4^{3-}-P$, Cl, evaporate residues, Ca and hardness were 6.9, $7.9mg/\ell,\;0.4mg/\ell,\;2.44mg/\ell,\;2.73mg/\ell,\;6.06mg/\ell,\;0.82mg/\ell,\;32.72mg/\ell,\;381.67mg/\ell,\;41.53mg/\ell,\;177.17mg/\ell$, respectively. 2. As groundwater became deeper, the values of Cl, Ca, Mg, Na, hardness and evaporate residues remarkably increased, but those of COD, $NH_3^--N,\;NO_3^--N,\;NO_2^-N$, T-N decreased. 3. The values of COD, Cl, Ca, Mg, Na, hardness and evaporate residues were very high in industrial area, and those of $NH_3-N,\;NO_2^--N$, T-N were very high in commercial/residential area, and those of $NO_3^--N$ were a little high in agricultural area. 4. The correlations between depth and each value of Mg, Na, Fe, hardness and evaporate residues were highly positive, and those between DO and each value of Mg, Cu, Fe, hardness and evaporate residues were highly negative. 5. According to ANOVA analyses, the differences in three area groups (industry, commerce/residence and agriculture) on the values of $NH_3-N$, T-N, evaporate residues, hardness, Ca, Mg, K and Fe were significant at 1% level.

  • Background Eyelids vary in morphology and structure depending on age, sex, and race. Usually, one-dimensional measurements are used to evaluate blepharoplasty outcomes. However, in recent years, three- or four- directional enlargements of the eyelid have been used for blepharoplasty in Asian patients, and the outcomes of techniques such as lateral canthoplasty or canthotomy and medial epicanthoplasty with increased scleral area cannot be analyzed using marginal reflex distance 1 or the area of corneal exposure. Therefore, we describe the use of a measurement method based on the eyeball exposure area (EEA). Methods To obtain normal EEA values by age and sex, 320 individuals were recruited. The participants were divided into eight age groups (n=40 in each group: female subjects, n=20; male subjects, n=20): 10-19, 20-29, 30-39, 40-49, 50-59, 60-69, 70-79, and 80-89 years. The EEA value was obtained by dividing the exposed area by the total eyeball area. The normal EEA values and differences in EEA according to age and sex were calculated. Results The mean EEA values for male and female subjects were 66.86% ±9.20% and 71.48%±10.48%, respectively. In each age group, the EEA values of females were higher than those of males. EEA decreased significantly with age in both male and female subjects (P<0.05). Conclusions We determined normal EEA values according to age and sex. EEA can be used as an indicator of the outcome of blepharoplasty.

Development of GRD Measurement Method using Natural Target in Imagery (영상 내 자연표적을 이용한 GRD 측정기법 개발)

  • This paper reports a reliable GRD (Ground Resolved Distance) measurement method of using natural targets instead of the method using artificial targets. For this, we developed an edge profile extraction technique suitable for natural targets. We demonstrated the accuracy and stability of this technique firstly by comparing GRD values generated by this technique visually inspected GRD values for artificial targets taken in laboratory environments. We then demonstrated the feasibility of GRD estimation from natural targets by comparing GRD values from natural targets to those from artificial targets using satellite images containing both artificial and natural targets. The GRDs measured from the proposed method were similar to the values from visual inspection and the GRDs measured from the natural targets were similar to the values from artificial targets. These results support our proposed method is able to measure reliable GRD from natural targets.

An indicator for managing the regional variations in approval rates of long-term care (LTC) service (지역별 장기요양 인정의 차이 관리지표 개발)

  • This study develops an indicator to manage regional variations of approval rates for long-term care (LTC) service. We used LTC insurance data for grade assessment that include 433,155 applicants from 227 LTC centers across Korea in 2015. The approval rate for each center was defined as the proportion of the numbers of approved applicants out of all applicants. We assumed that the approval rates depended on the characteristics of applicants. We estimated the 'standard' approval rates from a multiple linear regression analysis using the characteristics of applicants as independent variables. The difference between the observed and the standard rates was then defined as an indicator for deviation. A center having a large difference could be considered as a center with a potential error in grade assessment. We also examined if the characteristics of investigators affected the approval rates. We found that the socio-demographic characteristics of applicants and reapplication rate for LTC grade were independent factors affecting the approval rates. Centers having the management indicator values falling outside the middle 95% of the distribution were identified as centers with an error in grading. We expect that this study will contribute to enhancing reliability and equity in LTC grading.

Study of Quality Change in Chonggak-kimchi during Storage, for Development of a Freshness Indicator (신선도 표시계 개발을 위한 총각김치의 저장 중 품질변화 척도)

  • To develop a freshness indicator of Chonggak-kimchi for marketing purposes, Chonggak-kimchi was prepared and pH, total acidity, total aerobic bacterial load, lactic acid bacterial levels, and reducing sugar content were measured. Sensory evaluation tests on product stored at $4^{\circ}C,\;10^{\circ}C,\;and\;20^{\circ}C$, were performed. The pH increased slightly early in storage, and then decreased to pH 4.2-4.3 for all samples. The rate of decrease of pH rose with increasing storage temperature. Total acidity values rapidly increased after 1, 5, and 7 days of storage at $20^{\circ}C,\;10^{\circ}C,\;and\;4^{\circ}C$, respectively. Populations of total aerobic bacteria and lactic acid bacteria increased slightly until 4 days, 10 days, and 30 days of storage at $20^{\circ}C,\;10^{\circ}C,\;and\;4^{\circ}C$, respectively, and then decreased drastically. Sensory evaluation data showed that Chonggak-kimchi was edible until 4 days(pH 4.5), 10 days(pH 4.4), and 30 days(pH 4.3) of storage at $20^{\circ}C,\;10^{\circ}C,\;and\;4^{\circ}C$, respectively. These results clearly suggest that the shelf-life of Chonggak-kimchi depends on storage temperature, and the pH limit for marketing is 4.3; this is a freshness indicator for Chonggak-kimchi.
