경북지방(慶北地方)에 수입(輸入)된 CANADA 산(産) 유우(乳牛)의 Piroplasma 감염피해(感染被害)에 관(關)한 조사보고(調査報告) (Piroplasma Infections of Canadian Cows Imported to Kyungpuk, Korea)

  • A survey on the piroplasma infections for Canadian cows imparted from November 1968 to June 1969 to Kyungpuk, Korea was conducted by means of enumeration of erythrocytes and examination of Giemsa staining blood films from the cows and their calves. The results obtained were summarized as follows: 1. So-called small type piroplasma (Theileria) infections were suspected in almost all of imported cows and their calves during their first pasture season and mixed infections with so-called large type piroplasma (Babesia) or Eperythrozoon wenyoni were detected in some cows and calves. 2. Fever, anorexia, depression, marked decreased milk production, sever anemia and jundice were observed in the imported cows with havy infection of so-called small type piroplasma (Theileria). And the piroplasma infection was most important cause of deaths of imported cows. 3. Sever anemia, malnutrition and poor growth were observed in many calves from imported cows with havy infection of so-called small type piroplasma(Theileria). 4. Good results were obtained in treating cattle acutely ill with so-called small type piroplasmosis by injection of pamaquine but they may need scond injection 3 to 4 weeks after the first treatment for reapperence of the piroplasma in the erythrocytes.

일반음식점의 쇠고기 원산지 표시에 대한 소비자 인식 연구 (Research on Consumer Awareness Due to Origin Declaration of Beef in General Restaurant)

  • 2007년 현재 한 미 FTA 협상 결과에 따라 미국산 수입 쇠고기의 개방이 본격화되면서 국내 외식시장의 변화가 예상되고 있다. 이에 국내 외식시장은 '쇠고기 원산지 표시제의 정착'과 '국내산 한우와 수입 쇠고기에 대한 소비자 니즈의 충족'이라는 당면과제를 안고 있다. 이와 같이 조사 분석된 연구 결과를 요약하면 다음과 같다. 첫째, 일반음식점의 쇠고기 원산지 표시에 대한 소비자 인식 수준은 비교적 낮은 것으로 나타났다. 둘째, 수입 쇠고기를 선호하는 이유는 한우에 비해 맛은 떨어지지만 가격이 상대적으로 저렴하기 때문인 것으로 나타났으며, 일반음식점에서 판매하는 국내산 한우에 대한 불신감이 큰 것으로 분석되었다. 셋째, 국내산 한우는 맛의 우수성, 안전성, 신선도에서 높은 평가를 받고 있는 반면, 수입 쇠고기는 모든 속성에서 보통 수준 이하의 낮은 평가를 받고 있었다. 이와 같은 조사 결과를 토대로 판단해 볼 때, 쇠고기의 원산지 표시제에 대한 일반음식점의 올바른 인식과 원산지 표시제도의 정착을 통해 소비자들이 믿고 먹을 수 있는 외식 환경이 조성되어야 하며, 국내산 한우와 수입 쇠고기에 대한 소비자 니즈를 충족시키기 위한 노력이 있어야 할 것이다.

Evaluation of Natural Food Preservatives in Domestic and Imported Cheese

  • In milk and milk products, a number of organic acids naturally occur. We investigated the contents of some naturally occurred food preservatives (sorbic acid, benzoic acid, propionic acid, nitrite, and nitrate) contained in domestic and imported cheeses to establish the standard for the allowable range of food preservatives content in cheese. 8 kinds of domestic precheeses (n=104), 16 kinds of domestic cured cheeses (n=204) and 40 kinds of imported cheeses (n=74) were collected. Each domestic cheese was aged for a suitable number of months and stored for 2 mon at 5℃ and 10℃. No preservatives were detected in domestic soft and fresh cheeses, except cream cheese. In case of semi-hard cheeses, 2-5 mg/kg of benzoic acid was detected after 1-2 mon of aging. In imported cheeses, only benzoic acid and propionic acid were detected. The average benzoic acid and propionic acid contents in semi-hard cheese were 8.73 mg/kg and 18.78 mg/kg, respectively. Specifically, 1.16 mg/kg and 6.80 mg/kg of benzoic acid and propionic acid, respectively, were contained in soft cheese, 3.27 mg/kg and 2.84 mg/kg, respectively, in fresh cheese, 1.87 mg/kg and not detected, respectively, in hard cheese, and 2.07 mg/kg and 182.26 mg/kg, respectively, in blended processed cheese.

전자코를 이용한 검정현미의 산지판별 (Application of Electronic Nose in Discrimination of the Habitat for Black Rice)

  • 검정현미에 내포한 특이한 향기성분을 토대로 수입산 또는 국내산인지의 여부를 전자코로 분석하였다. 주성분 분석 결과 전반적으로 수입산과 국내산의 판별이 뚜렷하게 구별 가능하였다. 또한 인공신경망 분석 프로그램을 이용하여 학습시켜 원산지를 모르는 시료를 분석한 결과 국내산 검정현미가 수입산인지 국내산인지를 구별할 수 있었다. E-Nose 5000을 이용한 결과는 69종의 국내산 검정현미를 국내산으로 판별한 경우가 64종으로 92.75%이었고, 13종의 수입산 검정현미를 수입산으로 판별한 경우는 11종으로 92.31%의 높을 확률로 metal oxide sensor로만 구성된 전자코의 판별정도보다 더 정확하게 구별할 수 있었다.

한국인의 농산물 농약 오염 불안도 연구 -2008년도 사회조사를 바탕으로- (Food Safety Perceptions on Pesticide Contamination among Koreans -Based on the 2008 Social Survey-)

  • Objective: This study aimed to examine the level of risk perception related to pesticide contamination of food products and associated sociodemographic factors, as well as investigate the association with environmental pollution preventive behaviors. Methods: Based on data from Social Survey conducted in 2008 among a nationally representative sample of the population 15 years or older, we estimated proportions and 95% confidence intervals of the risk perception of pesticide contamination of food products. Logistic regression analyses were used to analyze the effects of sociodemographic status on risk perception. Results: Among respondents, those who feel anxious about the risks of pesticide contamination of domestic food products accounted for 40.4%, whereas the proportion rose to 87.0% with imported food products. These numbers showed that levels of anxiety about the pesticide contamination of imported food products were ranked at the top, and those for domestic products were at the bottom of the list of all environmental pollutants examined in the survey. Significantly related factors to anxiety about pesticide contamination of food products included women, the 40-50 age group, university graduates, married, non-manual employment, having school-aged children, and owning one's own home. The population attempting to prevent environmental pollution showed higher levels of anxiety about pesticide contamination of food products than did those who were not taking such steps. Conclusion: Compared to other forms of environmental pollution, Koreans show the highest levels of anxiety about pesticide contamination of imported food products. Therefore, it is necessary to establish appropriate regulations and transparent risk communication with the public about the safety of imported food.

Pedigree Indexing of Imported American Brahman Breeder Cattle in the Philippines

  • Pedigree data were used to predict the performance of 1,166 imported Americas Brahman breeder cattle, composed of 104 bulls and 1,062 heifers with an average age of 24.4 months (range of 17 to 40 months). A total of 13 full sib, 10 maternal half sib, and 228 paternal half sib groups were identified, each with average group size of 2.08, 2.00, and 4.49, respectively. Only 758 (64.9% of total) imported cattle were found to have at least one ancestor with expected progeny differences (EPDs) reported in the Spring 1995 Brahman Sire Summary. Moderate average accuracy values of .71, .69, .52, and .52 for birth weight, weaning weight, yearling weight, and maternal milk, respectively, were noted for EPDs of the ancestors. Prediction equations were derived by multiple regression analysis of available EPDs of sire, paternal grand sire, and maternal grand sire. Based on pedigree indexes that involve various combinations of available ancestral information, the average predicted EPDs (lbs) for imported cattle were $1.76{\pm}0.54$, $14.93{\pm}4.86$, $25.10{\pm}9.50$, and $5.86{\pm}2.08$ for birth weight, weaning weight, yearling weight, and maternal milk, respectively. Significant correlations (p < .05) were also found between sire and son EPDs (+.27) for yearling weight; and between sire and paternal grand sire EPDs for birth weight (+.34), weaning weight (+.51), yearling weight (+.49), and maternal milk (+.55).

시판 국내산 및 수입산 다슬기(Semisulscospira sp.)의 일반성분 및 지방산 조성 (Proximate and Fatty Acid Compositions of Commercial Domestic and Imported Melania Snails Semisulscospira sp.)

  • The proximate, fatty acid and dimethyl acetal (DMA) compositions of domestic and imported melania snails Semisulcospira sp. being sold commercially were studied. The protein content ranged from 8.09% (China) to 11.3% (North Korea). The lipid content ranged from 0.84 (China) to 2.36% (North Korea). Domestic melania snail had protein (10.5%) and lipid (1.02%) contents intermediate between those of the two imported melania snails. The prominent fatty acids were 16:0 and 18:0 saturated fatty acids, 16:1n-7, 20:1n-11, 18:1n-9, 18:1n-7 and 16:1n-9 monounsaturated fatty acids, and 20:4n-6, 20:5n-3 (eicosapentaenoic acid, EPA), 22:2 non-methylene-interrupted diene (NMID), 18:3n-3, 18:2n-6 and 22:5n-3 (docosapentaenoic acid, DPA) polyunsaturated fatty acids (PUFA). The percentage of n-3 PUFA was higher in domestic (19.6%) and North Korean (imported, 19.5%) snails than in that from China (imported, 16.8%), while the n-6 PUFA level was higher in snails from China (21.2%) and domestic snails (14.7%) than in that from North Korea (9.87%). The total DMA, i.e., 18:0 DMA, 16:0 DMA and 18:1 DMA was 7.30, 7.27, and 4.86% domestic snail and those from China and North Korea, respectively. These results suggest that melania snail is a source of n-3 PUFA, and DMA derived from plasmalogen.

수입 소의 검역검사 수준에 따른 블루텅 검출 확률 비교 (Comparison of Probability of Detecting Bluetongue in Quarantine Testing for the Imported Cattle with Special Focus on the Sampling Scenario)

  • In view of free from bluetongue (BT) in the domestic cattle population in Korea, the key of quarantine testing for BT virus (BTV) infection is detection of cattle previously exposed to the virus. The objective of this study was to estimate the probability of detecting a cattle infected with BTV using a stochastic modeling analysis of existing quarantine testing data. Three testing scenarios were considered in this study: serological testing of all animals in all imported lots (scenario 1), serological testing of a sample of cattle from all imported lots (scenario 2), and serological testing of 50% of imported lots (scenario 3). In scenario 2 and 3, it was assumed that cattle were sampled (sample size) within each lot to detect 5% of the cattle in each lot with a 95% confidence, taking into account diagnostic sensitivity of the ELISA (enzyme-linked immunosorbent assay). The model output was the total number of BTV-infected cattle and the prevalence of BTV infection in imported cattle from the US, Australia, Canada and Japan. Compared to the scenario 1, the probability of detecting a BTV-infected cattle was estimated to be 19% and 1.6% in scenario 2 and 3, respectively. Furthermore, the analyses showed a 95% confidence that BTV prevalence was less or equal to $9.7{\times}10^{-4}$ (median = $1.5{\times}10^{-5}$), indicating that, for the scenario 2 and 3 with serological testing for a sample of cattle, the risk of introducing an exotic strain of BTV into Korea through the importation of live cattle would not be acceptable.

삼점검사 및 척도묘사분석을 이용한 국내산 및 수입산 목심의 관능적 품질특성 (Sensory Characteristics of Domestic and Imported Pork Butts by Triangle Test and Descriptive Analysis)

  • 국내 시장에 유통중인 국내 및 수입산 냉장ㆍ냉동 목심의 관능적 품질 특성을 조사하기 위하여 총 6종의 수입산 및 국내산 냉장ㆍ냉동 목심을 구입하여 연령 및 성별로 구분된 60명의 관능검사요원을 대상으로 조사ㆍ분석하였다. 제품의 외관평가 조사결과, 소비자들은 지방색 및 지방부착도에서 높은 선호 경향을 나타낸 국내산 냉동 목심 A를 가장 선호하는 것으로 조사되었다(p<0.001). 척도 묘사 분석법을 이용하여 분석한 연령별 기호도 조사에 의하면 젊은 층인 20대의 소비자들은 국내산 냉장 목심 A를 30대와 40대의 소비자들은 북미산 냉동 목심 A를 가장 선호하였다. 삼점검사법을 이용한 외관 및 조리육의 식별 특성 조사에 있어서는 국내산 냉동 목심 B와 북미산 냉동 목심 A의 조합에서 가장 높은 식별강도를 나타내었다(p<0.001).

GDL 두부의 품질 평가 (Nutritive Quality Evaluation of GDL Soybean Curds)

  • 본 실험은 국내산대두와 수입대두를 GDL로 응고 시킨 두부의 화학성분, 무기성분, 구성아미노산, 객관적 평가 및 관능검사를 실시하여 두부제품의 영양적인 면과 기호면을 분석 평가하여 단백질 급원식품으로서 그 이용도를 높이고자 한 것이다. 실험결과는 다음과 같다. 1. 두부의 수율은 D-GDL두부가 I-GDL 두부보다 높아 대두품종에 따른 차가 있었다. 2. 단백질함량은 D-GDL 두부가, 회분함량은 I-GDL 두부가 더 높았다. 3. 구성아미노산 함량은 보통두부의 아미노산 함량보다 높았으며 D-GDL 두부는 I-GDL 두부보다 높았다. 4. Hardness, toughness, springiness, chewiness는 D-GDL 두부가 I-GDL 두부에 비하여 그 값이 높았으며 elasticity, cohesiveness는 거의 차가 없었다. 5. 색상은 D-GDL두부가 I-GDL 두부보다 더 희었으며 a, b값은 거의 차가 없었다. 6. 기호면에서 볼 때 GDL 두부는 우리의 식성에 맞지 않았다.
