Monitoring on preparation properties of Bokbunja (Rubus coreanus Miquel) granule (복분자 과립차 가공특성 모니터링)

  • This study was done in order to monitor the quality properties of the granule using Bokbunja (Rubus coreanus Miquel) extracts. In order to prepare the granule depending on operational parameters such as content of Bokbunja extract ($X_1$, 0.4~1.2 g), sugar content ($X_2$, 6~10 g) and citric acid content ($X_3$, 0.1~0.3 g), a response surface methodology was applied to monitor the optimum recipes on the organoleptic properties and Hunter's color. The optimum recipe on the organoleptic color showed extract content of 0.96 g, sugar content of 7.05 g and citric acid content of 0.232 g. The optimum recipe on the organoleptic flavor showed extract content of 0.86 g, sugar content of 6.04 g and citric acid content of 0.215 g. The optimum recipe on the organoleptic taste showed extract content of 0.92 g, sugar content of 6.39 g and citric acid content of 0.251 g. The optimum recipe on the overall palatability showed extract content of 0.86 g, sugar content of 6.65 g and citric acid content of 0.272 g. The response surface of the Hunter's color b value was similar to the response of the overall palatability; therefore, the optimum conditions accepted by the consumers were 0.8 g Bokbunja extract content and 0.6 g sugar content in the Hunter's color a value of 6.0.

Visual Color Deterioration of the Extract of Lithospermi radix (자초(紫草)추출물의 외관상 변색)

  • The effects of temperature on the visual color deterioration of Lithospermi radix were investigated under steady conditions of various pH and temperature. The changes of Hunter L, a, b, and ${\Delta}E$ values related to the color deterioration were sharply increased above $50^{\circ}C$ and the deteriorations were expressed linear relationships with the temperature above $60^{\circ}C$. Linear regression coefficients of Hunter L, a, b values decreased with an increase of heat treatment time, whereas the color difference was increased. The linear regression coefficients of Hunter L, a, b, ${\Delta}E$ values in 66.7% ethanol extract solution of Lithospermi radix for 1 hr were -0.3696, -0.4124, -0.2279, and 0.5983, respectively. Inear regression coefficients in color difference (${\Delta}E$) could be calculated from the coefficients in Hunter L, a, b values. The low pH treatment of extract from pH 6.07 to pH 1.35 led to decrease of Hunter a value and a little increase of Hunter L, b values, but the high pH treatment above pH 6.07 decreased all Hunter values. Particularly, the visual color of the extract of Lithospermiradix was appeared to be faborable at pH 4.0-6.5, which was a bright red color.

  • The production of black rice in Korea has been increasing, as more Koreans are tending to blend black rice with medium-grain rice for serving. This increased production creates an opportunity for developing new products. In this study, the properties of sponge cakes produced from a blend of black rice flour (BRF) and wheat flour (WF) are investigated. Black rice sponge cakes (BRSC) were produced with constant process variables (e.g. baking temperature, fermentation time and BRP content (10, 20 & 30%)). Proximate compositions, farinogram, amylogram and extensogram analyses of BRSC were determined by AACC method. BRSC color was expressed to Hunter L, a and b values using a colorimeter. Sensory properties were evaluated by a trained 5-member panel. Moisture contents in BRSC decreased with increasing contents of BRF, while ash and protein contents were increased. Farinograph and amylograph data did not differ significantly between treatments, while extensograph data decreased with increasing BRF contents. With increasing BRF contents, Hunter L value decreased, while Hunter a value increased. When using 20% of BRP, sensory scores of BRSC were the highest in color, flavor and taste. In conclusion, 20% of BRF would be the optimum amount for producing sponge cake with BRP and WF.

Effect of Ultrasonic Treatment on the Quality of Frying Chicken Meat (초음파 처리가 튀김 닭고기의 품질에 미치는 영향)

  • This study was carried out to investigate effect of ultrasonic treatment on the quality of frying chicken meat. Moisture content of ultrasonic treated leg meat was lowest to 59.7%, moisture content of breast meat was higher than leg meat and protein content of control was higher than ultrasonic treatment. Fat content of ultrasonic treatment was higher than control and leg meat was higher than breast meat. Hunter's L (lightness) and a (redness)-value was not different between frying methods, but L-value of breast meat and a-value of leg meat was higher than leg and breast meat, respectively. Hunter's b (yellowness)-value was not different among frying chicken meats. Frying loss of ultrasonic treatment was significantly lower than control, water holding capacity was higher than control. VBN content of ultrasonic treatment was comparatively higher than control, TBA number of ultrasonic treatment was highest to 0.78mg malonaldehyde/kg. Hardness, springiness and cohesiveness of frying chicken meat was not different between frying methods, but difference of chicken muscle parts were significantly showed. Chewiness was not different among frying chicken meats and shear force value of control breast meat was lowest to 1.9kg. In case of sensory score, aroma and taste of frying chicken meat were out different between frying methods, but texture, juiciness and palatability of ultrasonic treatment were higher than control and that of breast meat were higher than leg meat.

  • Response surface methodology (RSM) was used for optimizing preparation conditions and monitoring the quality of buckwheat mook prepared using buckwheat starch. The textures(hardness, adhesiveness, cohesiveness and gumminess) of buckwheat mook were decreased in inverse proportion to the increase of water content. the L and b values of Hunter color parameters in buckwheat mook were increased in proportion to the increase of water content. However, The a value of Hunter color parameters of buckwheat mook were decreased in inverse proportion to the increase of water content. Organoleptic properties(color, form, taste and mouth-feel) of buckwheat mook showed a maximum score in 700ml(water content), 14min(gelatinization time)

Effect of Pressure Cooling for Quality of 'Tsugaru' Apple during Storage at different Temperatures (수확후 예냉처리가 쓰가루사과의 저장중 품질에 미치는 영향)

  • This study was conducted to investigate the effect of precooling on the qualify of Tsugaru apple. Tsugaru apple, filled in plastic container and carton, was precooled by pressure cooler and stored at 1$^{\circ}C$and 25$^{\circ}C$. At 25$^{\circ}C$, Hunter a-value was not shown the difference significantly and Hunter b-value was increased more than a-value during l month. However, Hunter a and b-value was not increased so much at 1$^{\circ}C$. Hardness and toatal acidity was decreased during storage and precooled apple was less decreased than non precooled. Free sugars in Tsugaru apple was consisted of 7.07% fructose, 2.85% glucose, and 2.53% sucrose. Free sugars were decreased during storage at 25$^{\circ}C$ and 1$^{\circ}C$, also, the precooling inhibited those decomposition.

Effect of Ripening Conditions on Quality of Winter Squash 'Bochang' (후숙조건에 따른 단호박 '보짱'의 품질특성)

  • Ripening conditions of the winter squash 'Bochang' were evaluated. Soluble solids contents increased as the ripening duration was prolonged and with higher temperature. After harvest, the Hunter 'b' value of the skin was 2.42. At 25 and $30^{\circ}C$, the Hunter 'b' values were recorded at approximately 6.91 and 7.56, respectively. At $35^{\circ}C$, the Hunter 'b' value was increased to about 7.79 on day 9. Furthermore, at $35^{\circ}C$, the appearance quality was reduced with a yellowing phenomenon of the pericarp observed after 9 days. The starch contents also decreased with higher temperature, and sucrose contents increased in all ripening conditions with a longer period and higher temperature. Overall, these results indicate that ripening conditions of $25^{\circ}C$ for 18-21 days and at $30^{\circ}C$ for 12-15 days are suitable for the optimum ripening of winter squash.

Optimization of Maillard Reaction in Model System of Glucosamine and Cysteine Using Response Surface Methodology

  • Sulfur-containing amino acids play important roles in good flavor generation in Maillard reaction of non-enzymatic browning, so aqueous model systems of glucosamine and cysteine were studied to investigate the effects of reaction temperature, initial pH, reaction time, and concentration ratio of glucosamine and cysteine. Response surface methodology was applied to optimize the independent reaction parameters of cysteine and glucosamine in Maillard reaction. Box-Behnken factorial design was used with 30 runs of 16 factorial levels, 8 axial levels and 6 central levels. The degree of Maillard reaction was determined by reading absorption at 425 nm in a spectrophotometer and Hunter's L, a, and b values. ${\Delta}E$ was consequently set as the fifth response factor. In the statistical analyses, determination coefficients ($R^2$) for their absorbance, Hunter's L, a, b values, and ${\Delta}E$ were 0.94, 0.79, 0.73, 0.96, and 0.79, respectively, showing that the absorbance and Hunter's b value were good dependent variables for this model system. The optimum processing parameters were determined to yield glucosamine-cysteine Maillard reaction product with higher absorbance and higher colour change. The optimum estimated absorbance was achieved at the condition of initial pH 8.0, $111^{\circ}C$ reaction temperature, 2.47 h reaction time, and 1.30 concentration ratio. The optimum condition for colour change measured by Hunter's b value was 2.41 h reaction time, $114^{\circ}C$ reaction temperature, initial pH 8.3, and 1.26 concentration ratio. These results can provide the basic information for Maillard reaction of aqueous model system between glucosamine and cysteine.

Softening of Astringent Persimmon (Diospyros kaki Thunb.) as Affected by Harvest Time, Temperature, and Ethephon Treatment (수확기, 온도 및 Ethephon 처리에 따른 떫은감 (Diospyros kaki Thunb.)의 연화)

  • This study was conducted to evaluate the effect of harvest time, temperature and ethephon on the softening of astringent persimmon 'Cheongdobansi'. The persimmon was harvested on Sep. 21 (early season harvesting) and Oct. 11 (optimum season harvesting). Quality changes were evaluated at 10, 15 and $20^{\circ}C$ after ethephon treatment. Seventy percent of hardness decrease occurred during the first 2 days of treatment at 15 and $20^{\circ}C$, and hardness was slowly decreased after 6 days. The treatment of $10^{\circ}C$ was not effective on inducing fruit softening. Soluble tannin content was sharply decreased 6 days after ethephon treatment at 15 and $20^{\circ}C$ regardless the harvest time, whereas this was much slower in control. Hunter 'L' and 'b' values were increased until 2 days, and then decreased with the early harvested persimmon. The Hunter values were decreased until the 8th day of storage in fruit harvested at optimum season.
