감마선 조사가 돈육 등심의 이화학적 특성에 미치는 영향 (Effect of Gamma Irradiation on the Physicochemical Properties of Pork Loin)

  • 사후경직이 끝난 돈육의 이화학적 특성에 대한 감마선 조사의 영향을 알아보기 위하여 돈육 등심을 진공 및 함기포장한 후 1, 3, 5 및 10 kGy 선량의 감마선을 조사하였다. 감마선 조사 후 냉장$(4^{\circ}C)$ 상태에서 저장하는 동안 Hunter 색도 및 육색소 함량의 변화, 육단백질 용해성, 수분손실, 전기영동적 변화 및 전단력 변화를 측정하였다. 감마선 조사가 돈육의 수분손실과 전기영동적 단백질 형태에는 유의적인 차이를 나타내지 않았고(p>0.05), 감마선 조사선량에 의존하며 L값과 a값의 유의적 증가가 관측되었으며, 저장 기간이 경과하여도 선홍색을 유지하였다. 감마선 조사된 돈육 등심의 단백질 용해성은 조사선량에 따라 증가하는 것으로 나타났고 전단력은 감소하였다. 그러나 포장방법에 따른 유의적 차이는 없었다. 5 kGy 선량 내외의 감마선 조사는 돈육 등심의 이화학적 특성에 큰 영향을 주지 않으면서 육색이나 조직 연화 등 품질개선효과를 가져 왔다.

진품콩과 탈지대두박의 배합비율 및 단백분해효소처리를 달리하여 제조한 콩치즈의 품질특성 (Quality characteristics of soybean cheese prepared with low lipoxidase soybean variety and defatted soybean meal by fermenting after proteolytic enzyme hydrolysis)

  • The effects of ${\alpha}$-chymotrypsin and trypsin treatments on the functional properties (degree of hydrolysis, solubility, and emulsifying capacity) of the soy protein isolate prepared from Jinpum soybean milk(JS milk) which has been developed as low lipoxidase-active soybean variety in Korea and extracted from commercially defatted soybean meal milk(DSM milk). The mixing ratios of JS milk to DSM milk were adjusted to 10:0, 7:3, and 5:5, respectively. The general quality attributes(yield, pH, titrable acidity, moisture contents, crude protein contents, color, textural properties, and sensory characteristics) of soybean cheese which has been prepared with the resulting soy protein hydrolysates were evaluated. Jinpum SPI was better subjected to trypsin than ${\alpha}$-chymotrypsin hydrolyses as indicated by better solubility and emulsifying capacity of the hydrolysates. The degree of hydrolysis and solubility of Jinpum SPI were higher than the soybean isolates from DSM milk. The increased ratios of DSM milk in the mixture resulted in the reduced yields and crude protein content along with the lowered titratable acidity while the pH values and moisture contents showed the opposite trends. In color characteristics, the increased amount of DSM milk brought about the significantly lower Hunter color reflectance values of lightness of the cheese products, along with the higher redness and total color difference value(ΔE). However, the enzyme treatment alone was not enough to cause any color differences. The increased ratios of DSM milk also caused the significantly lowered textural parameters such as hardness, adhesiveness and cohesiveness of the soybean cheese. Between the enzyme treatments, the ${\alpha}$-chymotrypsin treated samples resulted in the higher hardness and cohesiveness values of the products than those from the trypsin-treated ones. In organoleptic properties of the product, the better mouthfeel and overall quality scores were obtained from the trypsin treatments as compared with those from the ${\alpha}$-chymotrypsin ones. The mixing ratios of 10:0 and 7:3 were more favored than that of 5:5 as far as mouth-feel, yellowness and overall quality of the products were concerned. On the overall, the mixing ratio of 7:3(JS milk: DSM milk) and the trypsin treatment of the mixture was recommended for better manufacturing of high-quality soybean cheese.

감마선 조사가 식용색소의 색도에 미치는 영향 (Effects of Irradiation on Color Values of Food Colorants)

  • 가공식품과 화장품 산업에 사용되는 식용색소의 감마선 조사로 인한 이화학적 특성 변화를 연구할 목적으로 기계적 색도 변화를 측정하였다. 적색 2호(Amaranth), 녹색 3호(Fast Green PE), 청색 2호(Indigo Carmine)용액을 0.01 및 $0.10\%$의 농도로 준비하였으며, 0.25, 0.5, 1 및 3 kGy로 조사를 실시하여 기계적 색도 (L, a, b, ${\Delta}E$)를 측정하였다. 감마선 조사는 $0.01\%$농도 시료의 색소에 영향을 미쳤으며, 전반적인 색차$({\Delta}E)$에서도 변화를 나타내었다. 적색 2호와 청색 2호의 명도(L)는 조사선량에 의해 증가되었으며, 적색도(a)는 증가되었다. 녹색 3호의 경우에는 감마선 조사에 의해 적색도(a)와 황색도(b)가 모두 증가되었다. 이에 반해 $0.10\%$ 농도의 식용색소에서는 유의적인 변화를 일으키지 않는 것으로 나타났다.

Effect of Fresh Garlic on Lipid Oxidation and Microbiological Changes of Pork Patties during Refrigerated Storage

  • The effects of two levels (1.4 vs 2.8%) of fresh garlic on lipid oxidation and microbial growth in pork patties were evaluated. Hunter color (L, a, b), pH, thiobarbituric acid reactive substances (TBARS), oxidative volatile compounds, total bacteria and Enterobacteriaceae in the pork patties with or without fresh garlic were measured during storage at $4^{\circ}C$. Addition of fresh garlic decreased redness (a), while increased pH and yellowness (b) values of the fresh pork patties were observed, regardless of the levels added. The TBARS values of the pork patties were increased with the addition of fresh garlic (p<0.05). Similar results were observed in oxidative volatile compounds. A total of 13 volatile compounds were detected in the patties (5 sulfur-containing compounds, including allyl mercaptan, allyl methyl sulfide, diallyl sulfide, methyl-(E)-propenyl-disulfide, and diallyl disulfide, and the 8 other oxidative compounds, including 1-pentanol, hexanal, 1-hexanol, heptanal, (E)-2-heptenal, 1-octen-3-ol, (E)-2-octenal and nonanal). Fresh garlic accelerated development of oxidative products in the pork patties, especially hexanal and the total oxidative volatile compounds. However, the addition of 1.4 and 2.8% of fresh garlic inhibited the growth of total bacteria and Enterobacteriaceae, indicating low total bacterial counts and Enterobacteriaceae than the controls.

과채쥬스 제조를 위한 혼합조건의 선정 (Selection of Mixing Ratio for Preparation of Mixed Vegetable Juice)

  • A preferable mixing ratio of a six-vegetable juice was suggested in this study. The vegetables used for preparation of mixed vegetable juice were carrot(Ct), cabbage(Cg), pear(Pr), cucumber(Cr), celery (Cy) and dongchimi(Di). The characteristics of pH, titratible acidity, reducing sugar, turbidity, solids, color and acceptability were compared to determine the mixing ratio. The vegetables showed a wide ranHe of pH of 3.70-6.01, acidity of 28.92 uv~74.40 nd and reducing sugar of 1.20ft~ 12.69fo. Celery juice showed the higest suspension stability and "b" value and the lowest values in Hunter "L" and "a" values among the 6 vegetable juice. The preferable mixing ratio of two-vegetable juice selected were Ct-Di(1 : 4), Cg-Pr(1 : 3) and Cr-Cy(3 : 1). From the various ratio of the three of biary mixtures of Cg-Pr(1 : 3): Ct-Di(1 : 4): Cr-Sy(3 : 1), two ratio of 5.0 : 2.5 2.5(V-6A) and 6.0 : 2.0 : 2.0(V-6B) were suggested as the most prefered six-vegetable juice. Pear, dongchimi and cucumber were found to be influential on the preference. The pH and titratible acidity of the two juices with different ratios were in the range of 4.92~4.98 and 36.g∼37.4 ml, respectively.

당종류를 달리하여 제조한 지황정과의 품질특성 및 항산화성 (Quality Characteristics and Antioxidant Activities of Rehmannia glutinosa JungKwa Prepared with Different Kinds of Sugars)

  • In this study, we have investigated the quality characteristics and antioxidant activities of Rehmannia glutinosa JungKwa (RJ) prepared with different types of sugars (sucrose, isomalto-oligosaccharide, honey or sorbitol). Moisture content was the highest in RJ with honey. The pH level was the highest in RJ with sorbitol, whereas the acidity is the highest in honey. The reducing sugar content is the highest in RJ with honey. The L and a values of Hunter color system showed the highest in RJ with honey, while the b value the highest in RJ with sorbitol. The hardness of texture profile analyses represented the lowest in RJ with sorbitol. Sensory results showed that RJ with sugar was the best in the sensory preference test. The total phenol content was the highest in RJ with honey, while the lowest in RJ with sorbitol. The antioxidant activity determined by $IC_{50}$ values of DPPH and hydroxy radical scavenging activities was the highest in RJ with honey. From these results, it was suggested that RJ with honey show the highest antioxidant activity.

대체 감미료와 high methoxyl pectin을 이용한 저열량 pectin gel의 제조 (Replacement of sucrose with other sweeteners and high methoxyl pectin in low caloric pectin gels)

  • Replacement of sucrose with sugar alcohols in high methoxyl pectin(HMP) jellies were studied. HMP jellies were sweetened with 100% sucrose, 75% sucrose and 25% maltitol, 50% sucrose and 50% maltitol, and 50% sucrose, 25% maltitol, 12.5% sorbitol and 12.5% mannitol. The effect of sugar alcohols in HMP jellies were investigted. There was only slight differences in sweetness intersity in HMP jellies. Color(p<0.05), texture(p<0.01) and preference(p<0.01) of 100fl sucrose jelly were significantly higher than other Jellies sweetened with sugar and sugar alcohols mixtures. Hunter's L(lightness), a(redness), b(yellowness) values of 100%, sucrose jellies and jellies substituted with maltitol up to 25% were not signignificantly different. But as the ratio and the number of sugar alcohols used for substition were increased, L, a and b values had been lowered signigicantly(p<0.01). Instru-mental characteristics of jelly texture were examined. Hardness of 100% sucrose jelly sweetened with sucrose and 3 kind of sugar alcohols were higher than others(p<0.05). As substitution ratio was higher, springiness and chewiness of HMP jellies were lowered(p<0.01). Springiness of HMP jellies indicated positive correlation with general acceptance of sensory scores at 5% significant level. Brittleness, gum-miness and cohesiveness in all types of jellies were not significantly different.

감마선 조사에 보리의 저장 안전성 (Storge Stability of Barleys Irradiated by Gamma-Ray)

  • Physicochemical, microbiological, and sensory properties of barleys irradiated by gamma ray at 1.2kGy, 10.1kGy, or 30.5kGy were investigated every 40 days during the storage at 25℃ and 50% relative humidity. Moisture content of the irradiated barleys decreased but crude lipid content increased during the storage. TBA values increased in proportion to the irradiation dose and to the storage period. In Hunter's color, L, a, and b values of 30.5kGy dose irradiated barleys were higher than those of the non irradiated barleys right after irradiation and this trend continued during the storage. Numbers of mesophilic and psychrophilic bacteria in the non irradiated barleys and 1.2kGy dose irradiated barleys were higher than those in the barleys irradiated at 10.1kGy and 30.5kGy during the storage. Numbers of yeasts and molds in the irradiated and non irradiated barleys were low and they did not greatly increase during the storage. In sensory evaluation, acidic odor of the barleys was strong at the 10.1kGy and 30.5 kGy dose irradiation but barley odor and humid odor were not significantly different among the groups depending upon the radiation dose and storage period.

홍삼가루를 첨가한 홍삼다식의 품질 특성 (The Quality Properties of Hongsamdasik with Added Red Ginseng Powder)

  • The principal objective of this study was to assess the quality characteristics of Hongsamdasik prepared with the addition of red ginseng powder(0%, 2%, 4%, 6%, 8%). The moisture content of Hongsamdasik did not significantly differ between the added red ginseng powder group and control group. The following Hunter color values are not part of the sensory evaluation testing in the results obtained with Hongsamdasik, decreased, whereas the a and b values increased with increasing amounts of added red ginseng powder. The bitter taste was evaluated as improving with increased amounts of red ginseng powder. Hongsamdasik with 2% red ginseng powder had the highest acceptability value. On our mechanical evaluation, the hardness recording, which increased from the control value with increased amounts of red ginseng powder, and significantly so(p<0.05). In conclusion, the Hongsamdasik with up to $2{\sim}4%$ added red ginseng powder would be a useful method for the production of Dasik with its traditional high quality.

자색고구마 분말 첨가량을 달리한 쿠키의 항산화 활성 및 품질 특성 (Quality Characteristics and Antioxidant Activities of Cookies added with Purple Sweet Potato Powder)

  • This study was performed to evaluate the quality characteristics and antioxidative activities of cookies prepared with different amounts of purple sweet potato powder. Moisture and crude ash contents were lowest in the control group followed in order by the 10%, 20%, and 30% purple sweet potato powder addition groups. The lightness and yellowness values measured by Hunter color system decreased based on the amount of purple sweet potato powder concentration added to cookies. The total phenolic compound and anthocyanin contents were the highest in 30% purple sweet potato powder added cookies. The DPPH radical scavenging activity of 30% purple sweet potato powder added cookies showed the highest values among groups. In the sensory evaluation, the scores for taste, texture and overall preference were significantly highest in cookies with 10% and 20% purple sweet potato powder. Considering the scores of antioxidant activity and sensory evaluation, the concentration of between 10% and 20% addition of purple sweet potato powder would be ideal for development of functional cookies.
