This study was intended to obtain the basic information on the germination status, changes of $\beta$-amylase activity and reducing sugar contents during seed germination of barley after an imposition of water stress by adding Polyethylene glycol solution. The effects of water deficit on germination were to be decreased in germination rate and velocity. Respiratory Quotient was increased as the osmotic potential in culture solution was decreased. But $\beta$-amylase activity and reducing sugar contents were decreased and the ratio of dry to fresh weight of germinated seeds was increased as the osmotic potential of the culture solution was decreased.

For the last few decades, much research has been tried to improve crop’s characteristics such as crop yield, quality, seeding period and environmental adaptability. In this paper, the effect of nanobubbles on the germination rate of barley seed is experimentally investigated. The air nanobubble was generated in water by gas-liquid mixing method. The results were shown that the mean diameter and concentration of nanobubble fabricated in DI water are 133 ㎚ and 8.59✕108 particles/㎖, respectively. Also, the seed germination rate for the nanobubble water was approximately 40 % higher than that of pure water.

Background: An imbalance in energy intake and expenditure can cause obesity, which is a major risk factor for chronic diseases such as heart disease, type 2 diabetes, insulin resistance, cancers and hyperlipidemia. Methods and Results: In this study, we evaluated the anti-obesity effects of a water extract from the young leaves of barley sprout (BS) in 3T3-L1 cells and in high-fat diet (HFD)-induced obese mice (HF). Lipid accumulation measurement indicates that BS markedly inhibited adipogenesis by reducing lipid droplet production in a dose-dependent manner. Furthermore, the mRNA expression of adipogenic transcription factors peroxisome proliferator-activated receptor-${\gamma}$ and fatty acid synthetase, CCAAT/enhancer binding protein-${\alpha}$ and fatty acid binding protein 4 in 3T3-L1 cells was significantly inhibited by BS treatment. In an in vivo test, the BS-administered group of HFD-induced mice showed less body weight gain, and lower liver and epididymal white adipose tissue weights. The BS-treated mice showed decreased serum levels of leptin and lipids compared to untreated HFD mice and the levels of adiponectin and the HDL-cholesterol/total cholesterol ratio increased. These results indicate that BS inhibits body fat accumulation by reducing the mRNA expression of lipogenesis transcription factors and increasing serum adipokine concentration in in vitro and in vivo tests. Conclusions: BS reduced high fat diet-induced weight gain and had a positive effect on dyslipidemia.

The objective of this study was to evaluate the quality characteristics of string cheese with different concentrations (0, 1, and 2%) of barley sprout (Hordeum vulgare L.) powder. The pH of barley sprout string cheese (6.26) was significantly lower compared to that of the control (6.46). Chromaticity tended to decrease with increasing amounts of barley sprout powder in terms of L* (lightness) and a* (redness), whereas b* (yellowness) tended to increase. In the texture profile analysis, string cheese prepared with barley sprout powder showed higher values of hardness, gumminess, and chewiness but lower value of cohesiveness. The string cheese prepared with barley sprout powder also showed higher values for total amino acids and stretchability. Total polyphenol contents of string cheese showed the highest value when barley sprout powder was 2%. Therefore, addition of barley sprout powder to string cheese can be valuable for improving quality of string cheese.
The number of immature spikes of barley (Hordeum vulgare L.) and wheat (Triticum aestivum L) were studied to determine if there could be existed the significant difference among 5 varieties of barley and wheat each. Heritability of 6 characters including the number of immature spikes have also calculated. Correlation between the immature spikes and 5 other characters were also investigated. There were significant difference among 5 varieties of barley and wheat in the number of immature spikes. Heritability estimated were very high in case of number of immature spikes of barley and that of wheat was high. There were highly significant correlation between the number of immature spikes of barley and number of internode and significant correlation between the number of immature spikes and flag leaf. However, in wheat no correlations were found among the 5 characters in wheat and between the number of immature spikes and number of internode were negative.
Varietal and annual variations in the contents of ${\beta}$-glucan fractions per weight grain samples were examined in sixteen covered and eighteen naked barley and five oat cultivars developed in Korea. Also, the effect of pearling on ${\beta}$-glucan content was investigated. Average contents of total, soluble and insoluble ${\beta}$-glucan fractions were 5.25, 3.72, and 1.53%, respectively, in covered barley, and 5.86, 3.51, and 2.35%, respectively, in naked barley. Soluble ${\beta}$-glucan content was higher in covered barley, though total ${\beta}$-glucan content higher in naked barley. The total and insoluble ${\beta}$-glucan contents were higher in pearled grains. Total ${\beta}$-glucan content was higher in waxy barley than in non-waxy barley. Duwonchapssalbori, a two-rowed and waxy naked barley cultivar, was highest in total, soluble and insoluble ${\beta}$-glucan contents. Highly significant positive correlations were observed between total ${\beta}$-glucan and soluble ${\beta}$-glucan contents both in covered and naked barley. There were significant annual variations in total ${\beta}$-glucan content in barley. Average contents of total, soluble and insoluble ${\beta}$-glucans of oat cultivars were 4.33, 3.44, and 0.89%, respectively. Contents of all fractions of ${\beta}$-glucans were higher in barley than in oat. These results would be useful for the breeding of high ${\beta}$-glucan variety and also for the use barley and oat as valueadded food ingredients.
Specialty barley extracts were prepared and investigated for its antioxidant activity and biological activity. Hunter $L^*$ values of the Iksan 86 extracts had higher than that of the Iksan 87 and Zasoojeongchal extracts. The extraction yields of Iksan 86, Iksan 87, and Zasoojeongchal was 8.08, 6.62, and 7.30%, respectively. The contents of total phenolic compounds of the Iksan 86, Iksan 87, and Zasoojeongchal extracts were 16.24, 15.51, and 13.95 GAE mg/g of sample, respectively. The DPPH radical scavenging activity of Iksan 86, Iksan 87, and Zasoojeongchal extracts were 50.00, 33.27, and 7.56% at a 500 ppm, respectively. The samples showed an inhibition of xanthin oxidase. ACE inhibition effect of specialty barley extracts, Iksan 86, Iksan 87, and Zasoojeongchal, was 39.81, 41.06, and 27.78%, respectively. Tyrosinase inhibition rates (%) of Iksan 86, Iksan 87, and Zasoojeongchal extracts were 26.21, 24.57, and 20.00%, respectively. Results indicated that specialty barley extracts possesses various biological activities including antioxidative capacity, xanthin oxidase inhibition activity, angiotensin converting enzyme inhibition activity, and tyrosinase inhibition activity.
Background and objective: Traditional farming is winning recognition as a sustainable alternative farming method. As urban farming increases in South Korea, it is crucial to develop more sustainable farming techniques. Gyeonjongbeop is the traditional farming method introduced in the Joseon period. This study was conducted to propose a productive garden model suitable for urban farming through the interpretation of traditional farming methods contained in Imwongyeongjeji Bolliji and to test the model on an actual field. Methods: Using the design and cropping system of Gyeonjongbeop as the research materials, we reviewed its tillage and cultivation and examined the applicability. We proposed a modified method by extracting parts applicable to urban farming. According to the methods, we created a garden with ridges and furrows, cultivated proper vegetables, and evaluated their growth. Results: Raphanus sativus, Allium fistulosum L., Brassica juncea, and Spinacia oleracea grown on ridges showed higher growth than those grown on a conventional flat field. The growth of Hordeum vulgare var. hexastichon and Triticum aestivum L. on furrows was also slightly higher. This proved that the method could make up for the deficiencies of barley and wheat that are weak against winds and cold and are easily destroyed by the spring rains. Conclusion: Ridge and furrow cultivation derived from Gyeonjongbeop can be an efficient urban farming system compared to the conventional cultivation in flat fields. The system can use fallow lands in winter for year-round urban farming. In addition, the application of the traditional farming system can enhance the humanistic value of urban farming.
Estimate of heritabilities, genotypic and phenotypic correlations and path coefficient analysis were performed for the seven characters of barley cultivars (Hordeum vulgare L.). Heritabilities of broad sense for stem length and spike length were 0.923 and 0.907. Kernels per spike, grain yield and 100 grain weight also showed high heritabilities. High genotypic and phenotypic correlations existed between stem length and 100 grain weight. Grain yield showed highly significant phenotypic correlation with spike length, 100 grain weight and kernels per spike. Genotypic correlations between those characters were moderately high. Number of stem had greatest direct effect but the number of spike had a strong negative direct effect upon grain yield. Kernels per spike via number of spike showed greatest indirect effect and the number of stem via number of spike showed strong negative indirect effect upon grain yield.

The effect of sulfite on barley seedlings was investigated through Chl content, the electron transport activity of the photosystem, and Chl fluorescence. Barley leaves were harvested every 12 hrs during greening periods, and were then treated with a sulfite solution in either light or dark conditions. In both cases, the Chl content decreased in comparison with the control at any greening period. After sulfite treatment in the light, the activity of PS I decreased slightly, yet that of PSII showed a decrease of about 15%. The values of Fv, qP and qE decreased, however, the value of ql increased compared with the control. In addition, the value of qE decreased in leaves greened more than 12 hrs compared with that of the control. This indicates that the photosynthetic complex involved in energy dependent fluorescence quenching is undeveloped in a 12 hrs greened leaf, accordingly, it was a hardly affected by sulfite. After sulfite treatment in the dark, the activities of PSII and PSI decreased slightly, there was a small change in the value of Fv, qP decreased, and qE and the ratio of qNP/q increased in comparison with the control. As a result, PSII and PSI were not inhibited, however, the redox of QA was inhibited, and the excited energy was lost through the nonphotochemical pathway. The effects of sulfite in light or dark conditions were not considerably different with the Chl fluorescence quenching analysis method. In both light and dark conditions, the value of qP significantly decreased with sulfite compared to that of the control. This implies that the redox of QA was inhibited by sulfite in both light and dark contions.
