This study was designed to find out passible correlations between the growth rate and daily food intakes of two hundreds E and Y kindergarden children in Seoul, Korea. The subjects adapted in this study were 5-year-old boys and girls and their physical growth index was calculated by means of body weight and height. Dietary survey was performed by recording all the foods taken at daily basis for six days. The results are summarized as follows: 1. Living circumstances of the subjects. a) In most cases, subjects had two to three brothers and sisters. b) About 39% of boys were brought up by cow's milk and 34%, by mined nourishment with mother's milk and cow's milk, while approximately 40% of the girls were brought up by mother's milk and 37%, by mixed one. Of the whole subjects, 70% were weaned at the age of $7{\sim}18$ months. c) Fruit juices were introduced to children at about 3 months old in 40% of the subjects. d) Approximately 60% of the children had their meals regularly and the rest of the subjects had irregularlity in their meal, mainly because of excess consumption of snacks. e) About $20{\sim}40%$ of total income of sampled families were spent for foods. f) The most favorate main dish was steamed rice, other favorate foods were beef and pickled cabages for boys, and ham and dried laver for girls. The least favorate foods for both sexes were oyster, shellfish and various vegetabes. Fruits, juice, milk, and ice cream are more popular snacks among children. 2. Nutrition survey a) Insufficient caloric intakes were shown in both sexes, comprising 90% of daily recommended dietary allowences for boys and only 75% for girls. Iron intake was strikengly low, reaching only 62% of R.D.A. for boys and 72% for girls. b) The total caloric intake was composed of CHO 62%, protein 18%, and fat 21% respectively. c) The consumption of animal protein comprises 55% of total protein intake. d) The cereal consumption was found to be the highest at the level of 43%. e) When the total caloric intake was divided into each meal and snack, snack took the highest part in any other meal. Each figure showed as follow; breakfast 21%, lunch 27%, supper 22% and Snack 30% for boys, and 23%, 22%, 25% and 30% for girls, respectively. 3. The result of statistical analysis. a) There was a significant relationship between the growth rate and the caloric intake of the subjects at the level of 0.05
This study was designed to comparse the metabolic effects of Korean diet pattern which contained all-polished rice and 70% polished rice, and to compare dietary restriction. The results were as follows. 1. Food intake survey to catch the Korean diet pattern The calory intake showed women took much more than men and farm village was higher than city, However, protein intake showed men were higher than women and decrease gradually from city, fishing village, and farm village. Calcium intake showed Seoul was the first rank of all, but was merely 70% of recommended quantities. Fe intake was greatly short especially in women and vitamin C also showed same situation. In the view of food group intake, grains and potatoes were 70.06%, vegetables and fruits 13.05%, meats fishes and beans 11.99%, respectivelly. Oil and fat intake showed lowest percentage as 0.77%. 2. Nutritional experiments albino rats have been fed for 7 weeks with three different diet: all-polished rice diet, 70% polished rice diet, and the standard diet for contral group. Dietary restriction were at 4 levels: 5% , 10%, 15%, 20% in 70% polished rice det. Body weight of 70% polished rice group gained value compare to all polished rice group. In the final organ weight all-polished rice group and 70% polished rice group and 70% polished rice group revealed similar results, but organ weight almost decreased dued to dietary restriction and statistical data showed significant differences between dietary restriction group and none-restriction group. In the femur length, 70% polished rice group was longer than all polished rice group but there was no significant differences. The nitrogen content of liver and muscle of 70% polished rice group was higher than all-polished rice group. Furthermone there was significant differences in the female (P<0.1). In the 10% restriction group(female) and 15% restriction group(male), nitrogen retention was higher than 0% restriction group. The other biochemical analysis such as liver lipid, serum cholesterol, glucose of urine, feces and serum were not revealed any significant differences. As a result of studying, it seems clear that 70% polished rice intake influenced much nourshment to white rat growth than all-porished rice intake, and there is no significant influence to animal growth and metabolic effect even if it was restricted $5{\sim}10%$ of diet.
With the rise of internet of things (IoT), there have been several studies to analyze the technological trend and technological convergence. However, previous work have been relied on the qualitative work that investigate the IoT trend and implication for future business. In response, this study considers the patent information as the proxy measure of technology, and conducts a quantitative and analytic approach for analyzing technological convergence using patent co-classification analysis and text mining. First, this study investigate the characteristics of IoT business, and characterize IoT business into four dimensions: device, network, platform, and services. After this process, total 923 patent classes are classified into four types of IoT technology group. Since most of patent classes are classified into device technology, we developed a co-classification network for both device technology and all technologies. Patent keywords are also extracted and these keywords are also classified into four types: device, network, platform, and services. As a result, technologies for several IoT devices such as sensors, healthcare, and energy management are derived as a main convergence group for the device network. For the total IoT network, base network technology plays a key role to characterize technological convergence in the IoT network, mediating the technological convergence in each application area such as smart healthcare, smart home, and smart grid. This work is expected to effectively be utilized in the technology planning of IoT businesses.
The effects of lactic acid bacteria on the chemical and microbial changes of fermented kimchi at various temperatures were studied. Kimchi was homogenized and was sterilized by ultra violet, then Lactobacillus plantarum, Leuconostoc mesenteroides, Pediococcus acidilactici, Lactobacillus brevis and the mixture of there bacteria inoculated on sterilized kimchi, respectively. The measurement of pH and total acidity, quantitative analysis of volatile organic acids and nonvolatile organic acids by gas chromatography were investigated while inoculated kimchi were fermented at $30^{\circ}C$, $21^{\circ}C$, $14^{\circ}C$ and $7^{\circ}C$. Sample I (original kimchi homogenate), Sample III (inoculated with Leuconostoc mesenteroides) and Sample Ⅵ (inoculated with mixed lactic acid bacteria) were alike in that changes of pH and total acidity and especially, these phenomena were prominent at $14^{\circ}C$. Formic, acetic and heptenoic acid as volatile organic acid were detected by GC, and these acids formed mainly by Leuconostoc mesenteroides and lactobacillus brevis. Sample III was more higher content than other samples at $14^{\circ}C$. As nonvolatile organic acid, lactic acid in all samples, citric acid in sample III at $21^{\circ}C$and $14^{\circ}C$, succinic acid in sample I at $30^{\circ}C$, $21^{\circ}C$, $14^{\circ}C$ and sample V at $30^{\circ}C$ were detected by GC.
Soy sauce was prepared with the addition of Gorosoe and Kojesu saps instead of tap water to make ordinary soy sauce, respectively. The changes of free sugar, organic acid, mineral, amino acid and nucleotides and other compounds during the fermentation of soy sauce were assessed. The free sugar were found to be fructose, glucose, galactose and sucrose in soy sauce of saps but sucrose was not detected in ordinary soy sauce. Galactose contents were dominant free sugar in all samples. The contents of butyric acid were dominant among 7 kinds of organic acid while fumaric acid was trace amount during the fermentation of soy sauce. The contents of potassium and phosphorus among 13 kinds of minerals were dominant during the fermentation of soy sauce. In the amino acid composition of soy sauce, dominant amino acid was glutamic acid(185.6${\pm}$1.0 mg/100 ml above), but proline and arginine were not detected. AMP detected above 7.5${\pm}$O.2 ${\mu}$mol/100 ml was dominant while inosine was not detected during the fermentation of soy sauce. The results of sensory evaluation in the fermented soy sauce of Gorosoe was 'liked more' than that of soy sauce of Kojesu and control.
The purposes of this study were to: 1) measure the levels of job satisfaction with five facets of a job: the work itself, promotion, pay, supervision and co-workers, 2) investigate the degree of job characteristics inventory which employees perceived, 3) investigate relationships between job characteristics and job satisfaction levels of the employees in hospital foodservice, 4) measure the levels of organizational commitment and investigate its relationships between job satisfaction and job characteristics, 5) investigate the relationships between job performance and job satisfaction, job characteristics of the employees in hospital foodservice. The questionnaire was developed based on modifying Job Descriptive Index developed by Smith, Kendall, Hulin and Job Characteristics Inventory developed by Sims, Szilagyi, Keller and Affective commitment Scale developed by Meyer and Allen. Subjects consisted of 76 employees in hospital foodservice. Data were analyzed for frequency, means, ANOVA, Duncan multiple range test, and pearson correlation using SAS PC Package. The results of this study were as follows. 1) Most of the respondents were 41 years up(39.5%) and married (92%). High school graduates were 59.2%. 10 years working experienced employees were 35%. 2) A majority of the respondents(44.7%) ranked work itself as the most important aspect. 3) They were the most satisfied with co-workers. 4) Satisfaction with work itself, wage, and supervision were found significantly related to age(p<0.05). 5) Task identify was the most prevalent job characteristics and then task identity. 6) Satisfaction with co-workers were found significantly related to job variety(p<0.05). Satisfaction with supervision and promotion were found significantly related to friendship(p<0.05). 7) Job satisfaction have not correlation with job performance. Satisfaction with supervision, co-workers were positively correlated with organizational commitment(p<0.01). 8) Job characteristics of dealing with others were positively correlated with job performance (p<0.05). Job characteristics of variety, autonomy, task identity were positively correlated with organizational commitment(p<0.05, p<0.01).
The cooking quality of irradiated chestnut after longterm storage were evaluated. 1. Color degree and tannin content of irradiated chestnut were slightly increased with the storage, but there was a little difference according to the radiation dose after nine months storage. 2. The main component of free sugars in the irradiated chestnut were identified as sucrose, glucose, fructose and the amino acids of chestnut were identified in the decreasing order of glutamic acid, aspartic acid, leucine, arginine, glycine, alanine, serine, pheylalanine, threonine, valine, isoleucine, tyrosine, methionine and cystein. Free sugars and amino acids of 25 Krad irradiated group showed a little difference compared with those of control group after nine months storage. 3. The calorie of candied chestnut prepared from nine months stored was marked 199 Kcal/100g of edible parts compared with 159 Kcal of raw chestnut. 4. Texture and sensory evaluation of candied chestnut prepared from nine months stored were better in 20-25 Krad irradiated group than in control group.
The effects of temperature (70-$100^{\circ}C$), pH (3-8) and various sugars were investigated on the reaction rate, activation energy and z-value of Maillard reaction of 0.8m sugar and 0.8m glycine mixture. The sugars compared were glucose, fructose, lactose and sucrose, and the reaction was evaluated by absorbances at 278nm for pyrazine compounds and at 400nm for brown pigments. Fructose-glycine mixture showed a faster initial reaction rate than that of glucose-glycine, which was reversed by the order of glucose > fructose > lactose > sucrose after 10 hrs of reaction at pH 5.8 and $100^{\circ}C$. Generally, higher activation energy was required for forming pyrazines than that of brown pigment development. The highest z-value was obtained for lactose-glycine mixture, followed by glucose or fructose-glycine which had almost same z-value. The reaction rate was little affected by the pH change in the range of 4-6, while pH < 3 and pH 6-8 caused a significant increase in the rates.

This paper was investigated to elucidate the nitrite-scavenging ability of roasted-barley extracts. Roasted-barley extracts exhibited nitrite-scavenging ability. The nitrite-scavenging ability of roasted-barley extracts showed pH-dependent, and did the highest at pH 1.2 and the lowest at pH 6.0. The roasting temperature and time of barley examined influenced the nitrite-scavenging ability of roasted-barley extracts. The water soluble fraction obtained from barley roasted at $230^{\circ}C$ for 90 min showed higher the nitrite-scavenging effect than the others. Ethanol soluble fraction which is further fractionated from water soluble fraction was most effective in nitrite-scavenging.
