Effects of vacuum and high-oxygen modified atmosphere packaging on physico-chemical and microbiological properties of minced water buffalo meat

  • Objective: In this study, the effects of vacuum (VP) and high-oxygen modified atmosphere ($80%\;O_2+20%\;CO_2$) packaging (HiOx-MAP) on physico-chemical and microbiological properties of minced water buffalo meat were investigated. Methods: After minced meat preparation, samples were packaged under VP and HiOx-MAP and stored at $2^{\circ}C{\pm}0.5^{\circ}C$ for 14 days. Samples taken on certain days were subjected to total aerobic mesophilic bacteria, total aerobic psychrotrophic bacteria, lactic acid bacteria, Pseudomonas, Enterobacteriaceae and yeast-mold counts as well as pH, color ($L^*$, $a^*$, and $b^*$) and thiobarbituric acid reactive substances (TBARS) analyses. Results: In minced water buffalo meat packaged under HiOx-MAP, TBARS value exceeded 1 mg malondialdehyde/kg on the 4th day of the storage. In VP samples, TBARS value remained close to initial TBARS value during storage. According to the findings, $a^*$ value was determined to be high in the HiOx-MAP samples within initial days of the storage. However, no significant changes in $a^*$ value were observed in VP samples during storage. In contrast, the mean value of $L^*$ was detected as higher in HiOx-MAP sample than VP samples. The count of psychrotrophic bacteria increased more than that of mesophilic bacteria during storage. The growth of Enterobacteriaceae and Pseudomonas was delayed in both the packaging methods. However, lactic acid bacteria exhibited more growth in VP samples compared to MAP samples. Conclusion: The lipid oxidation proceeded faster than expected in minced water buffalo meat packed with HiOx-MAP method. This situation adversely affected the $a^*$ value. On the other hand, similar microbiological results were obtained in both packing methods.

2D-QSAR Analyses on the Binding Affinity Constants of Tetrahydropyrane and Tetrahydrofurane Analogues against Bovine Odorant Binding Protein and Predicted of High Active Molecules (Bovine Ordorant Binding Protein에 대한 Tetrahydropyrane 및 Tetrahydrofurane 유도체들의 결합 친화력 상수에 관한 2D-QSAR 분석과 고활성 분자의 예측)

  • The two dimensional quantitative structure-activity relationships (2D-QSARs) models concerning the binding affinity constants ($p[Od.]_{50}$) between 2-cyclohexyltetrahydropyrane and 2-cyclohexyltetrahydrofurane analogues as substrates, and bovine odorant binding protein (bOBP) as receptor were derived by multiple regression analyses method and discussed. The statistical quality of the optimized 2D-QSAR model (5) was good (r=0.907). From the model, the binding affinity constants ($p[Od.]_{50}$) were dependent upon the optimal value ($(TL)_{opt.}$=2.737) of total lipole (TL) of substrate molecules. Based on these findings, the high active compounds predicted by optimized 2D-QSAR model (5) were 2-(dimethylcyclohexyl)tetrahydropyrane molecule and their isomer molecules. The binding affinity constants regarding bOBP of the tetrahydrofuryl-2-yl family compounds were dependent upon the hydrophobicity (logP) of whole substrate molecules. In any case of porcine odorant-binding proteins (pOBP), the constants were dependent upon the hydrophobicity (${\pi}x={\log}P_X-{\log}P_H$) of substituents (R) in substrate molecules. Also, from the optimal values of hydrophobic constant, the hydrophobicity for bOBP influenced ca. twice time bigger (bOBP>pOBP) than that for pOBP.

  • The rotor flux level need be changed frequently for field weakening or power efficiency control. Motor inductances depend on rotor flux but not on machine temperature. On the other hand, rotor resistance varies greatly with the machine temperature. Motor parameters such a sinductances and rotor resistance should be known precisely in order to attain high dynamic performance of inductin motor. In this paper, efficient an dnovel identification algorithms for motor inductances and rotor resistance are presented. The rotor flux is changed. As the result, the slip frequency is varied. The identificatin algorithm for rotor resistance measures the varied slip frequency and alters the estimated rotor resistance. Then, the estimated value of rotor resistance will approach its real value. The proposed identification algorithms are computationally simple and have very small identification errors.

  • An effective thermal conductivity measurement for suspensions of microparticles in oil mixture is conducted in order to evaluate the shear rate-dependence of the thermal conductivity of suspensions. Measurements are made for rotating Couette flows between two concentric cylinders. The rotating outer cylinder is immersed into a constant temperature water bath while the stationary inner cylinder is subject to a uniform heat fluff. Test fluids are made to be homogeneous suspensions, in which neutrally buoyant microparticles ($d=25{\sim}300{\mu}m$) are uniformly dispersed. The present measurements show strong shear-rate dependent thermal conductivities for the suspensions, which are higher than those at zero shear rate. The shear rate dependent thermal conductivity increases with the particle size and volume concentration.4 new model for shear rate-dependent thermal conductivity of microparticle suspensions is proposed; the correlation covers from zero shear rate value to asymptotic plateau value at moderately high shear rates.

Studies on enzyme-linked immunosorbent assay(ELISA) for detection of antibody to Brucella abortus (효소면역법을 이용한 Brucella abortus 항체 검출에 관한 연구)

  • In order to establish a rapid, sensitive and specific diagnostic method for detection of antibody to Brucella abortus, a enzyme-linked immunosorbent assay(ELISA) was adapted. The diagnostic efficacy of the established ELISA was compared with that of the standard tube agglutination test for B abortus. 1. It was found that the optimal concentration of antigen for this ELISA was 5$\mu\textrm{g}$/ml, the optimal dilution of conjugate was 1 : 2000, and the optimal dilution of serum was 1 : 200, respectively. 2. Cut off value in this ELISA was 1,102 that was determined by mean absorbance(at 492nm) of tube agglutination test negative serum added with the triple value of the standared devation. 3. The relationship between the tube agglutination test and ELISA was showen high corresponding rate with sensitivity(96.3%) and specificity(98.1%). 4. The efficacy of the ELISA for detection of B abortus antibody was compared with tube agglutination test In brucellosis outbreak farm. The sensivity of ELSIA was higher than tube agglutination test.

  • The effects of mixture of tween 20 and span 20 or span 80 on griseofulvin absorption in rabbit were studied. The plasma concentration of griseofulvin in blood samples was determined by high pressure liquid chromatographic procedure. Griseofulvin suspension with 0.05% surfactant increased mostly drug absorption and produced about two times higher plasma level of griseofulvin than that of the suspension with 1% and 0.1% surfactant. Surfactants with H.L.B. value 4.3 resulted $2.74{\mu}g/ml$ of maximum plasma levels of griseofulvin at 18 hours after its oral administration and surfactants with H.L.B. value 16.7 resulted $0.56{\mu}g/ml$ of peak plasma levels of griseofulvin at 1 hour after its oral administration.

Determination of Boron Steel by Isotope-Dilution Inductively Coupled Plasma Mass Spectrometry after Matrix Separation

  • The concentration of B in steels is important due to its influence on mechanical properties of steel such as hardenability, hot workability, and creep resistance. An analytical method has been developed to determine B in steel samples by high-resolution inductively coupled plasma mass spectrometry (HR-ICP-MS). National Institute of Standard and Technology Standard Reference Material (NIST SRM) 348a was analyzed to validate the analytical method. The steel sample was digested in a centrifuge bottle with addition of aqua regia and $^{10}B$ spike isotope. Sample pH was then adjusted to higher than 10 to precipitate most matrix elements such as Fe, Cr, and Ni. After centrifugation, the supernatant solution was passed through a cation exchange column to enhance the matrix separation efficiency. B recovery efficiency was about 37%, while matrix removal efficiency was higher than 99.9% for major matrix elements. The isotope dilution method was used for quantification and the determined B concentration was in good agreement with the certified value.

  • Li2O-B2O3-P2O5 glasses with high lithium content were analysed by electrical characterization. The electrical conductivity increase with Li content and exhibits a maximum value of 1.2$\times$10-4S/cm near B2O3/P2O5=1 at 15$0^{\circ}C$. Glass transitiion temperature increased with conductivity. Concentration of charge carrier and distribution of relaxation time were independent of temperature. In this system the variation of conductivity with the composition was depend on mobility of lithium ion. Basically, it is attribute to primitive activation energy. Enhancement of conductivities was related to be formation of (B-O-P)-, di-, and metaborate group, which give additional available sites for Li+ diffusion.

  • Nowadays shear wall structural system is gradually changing to framed structure. For this reason, lightweight panel is increasingly being used as separating walls. One of design methods to obtain high transmission loss is double panel. To predict the acoustic performance of double panel, prediction of transmission loss of single panel must be performed, previously. In this study, the predicted values for four single panels were compared with the measured values. The result shows the arithmetical average deviations(100Hz to 3150Hz) between the predicted and measured transmission loss were in range between 1.1dB and 3.9dB. The predicted values were generally lower than measured values above critical frequency. The single-number quantities, $R_W+C$, were predicted in range between 36dB to 38dB, and the differences of single-number quantities between the predicted and measured value were within 1dB.

A Study on the Concordance Rate of the Diagnostic Results Among Sasang Constitutional Medicine(SCM) Specialists (사상의학(四象醫學) 전문의(專門醫)의 체질진단(體質診斷)결과 일치도에 관한 연구)

  • 1. Objectives The purpose of this study was to investigate the concordance rate of the diagnostic results among Sasang Constitutional Medicine(SCM) specialists. 2. Methods We carried out two studies in order to investigate the concordance rate of the diagnostic results between SCM specialists. We calculated the kappa value for analyzing concordance rate(using the SPSS program). 1) Study A : We investigated 142 clients who had taken health examinations and diagnosis of Sasang constitution from March 9, 2005 to March 29, 2005 at a health examination center of Kyung-Hee medical center. Every SCM specialist diagnosed 142 clients directly. Each SCM specialist don’t know the other specialist’s diagnosis. 2) Study B : We investigated 176 clients who had taken health examinations and diagnosis of Sasang constitution from January 2005 to March 2005 at the department of Occupational and Environmental medicine of Kyung-Hee medical center. One SCM specialist diagnosed 176 clients directly and the other specialist knowing previous specialist’s diagnosis, diagnosed each person indirectly 3. Results 1) The concordance rate of the diagnostic results among SCM specialists in study A was relatively high(kappa value=0.700). 2) The concordance rate of the diagnostic results among SCM specialists in study B was high(kappa value=0.895). 4. Conclusions We can confirm the concordance rate of the diagnostic results among SCM specialists is relatively high.
