국내에서 비육한 수입 생우의 도체등급 특성에 관한 연구 (Carcass Grading Properties of Imported Beef Cattles Fed in Korea)

  • 국내에 생우로 수입된 호주산 육우 Hereford, Angus, Murray Grey, Hereford${\times}$Angus 각각 10두의 도체등급 특성을 비교 분석하여 수입생우의 국내 비육에 대한 기초자료를 제시하고자 실시하였다. 육량등급요인 중 등지방 두께는 Hereford종이 13.7mm로 가장 얇았으며, Angus, Murray Grey, Hereford${\times}$Angus은 각각 18.20, 18.90, 17.30mm로 나타났다(p<0.05). 배최장근 단면적에서는 품종간 유의적인 차이가 나타나지 않았으며(p>0.05), 육량지수는 Hereford종이 64.63으로 가장 높았고, Murray Grey종이 62.43으로 가장 낮았다(p<0.05). 육질등급요인 중 육색은 다른 품종들에 비하여 Hereford종이 낮았으며, 지방색은 Angus종이 가장 높았다(p<0.05). 성숙도는 다른 품종에 비하여 Angus종이 가장 낮았으며(p<0.05), 근내지방도, 조직감에서는 품종간에 차이가 없었다. 품종별 근내지방도 등급 출현율은 Angus종이 근내지방도 1++등급 이상이 50%를 차지하여 가장 높았으며, Hereford종이 전두수 1++등급 미만으로 가장 낮게 나타났다. 품종별 최종 도체등급 출현율에 있어서 육질등급에서는 Angus종이 육질 2등급 출현율이 20%로 가장 좋았으며, Hereford종과 교잡종(Hereford$\times$Angus)은 100% 육질 3등급으로 가장 저조한 성적을 보였다. 육량등급 출현율에 있어서는 Hereford종이 육량 B등급 출현율 30 %로 가장 좋은 성적을 보였으나, Angus종과교잡종(Hereford${\times}$Angus)은 100% 육량 C등급으로 가장 저조한 성적을 보였다. 전체적으로 볼 때 교잡종은 전 두수 육질 3등급, 육량 C등급을 보여 육질 및 육량 면에서 가장 저조하였다. 본 연구결과 수입생우(거세우)는 한우거세우에 비하여 육량, 육질 모든 면에서 저조한 결과를 보였다. 그러나 비육시험에서 한우와 동일하게 시험을 하지 못한 면에서는 아쉬운 점이 있었으며, 한우거세우와 정확한 비교를 위해서는 동일조건에서 한우와 수입생우의 비교시험이 필요하다고 사료된다.

국내에서 비육한 수입 생우 채끝육의 이화학적 특성에 관한 연구 (Physico-Chemical Properties for Sirloin Domestic Fed Imported Beef Cattles)

  • 수입생우인 Hereford, Angus, Murray Grey, Cross breed (Hereford$\times$Angus)의 채끝을 채취하여 도축 후 0$\pm$1$^{\circ}C$에서 7일간 숙성 후 이화학적 특성을 비교하였다. 수입우 품종별 일반성분 분석결과 수분은 교잡종이 71.8%로 가장 높았으며, Hurray Grey종이 69.1%로 가장 낮았다 (p<0.05). 단백질과 지방은 품종간 유의적인 차이를 보이지 않았으나, 회분은 Hurray Grey종이 가장 높았고, Angus종이 가장 낮았다(p<0.05). 물리적 특성 중 pH와 지방경도는 품종간 유의적인 차이를 보이지 않았으나(p>0.05), 보수성은 Hurray Grey종이 가장 높았고, 전단력은 Angus종이 가장 높았으며, Hereford와 Murray Grey종이 가장 낮았다(p<0.05). 가열감량은 Murray Grey종이 가장 낮았으며, 나머지 품종들 간에는 유의적인 차이가 없었다(p>0.05). 수입우의 육색 및 관능검사 결과는 품종간에 유의적인 차이를 보이지 않았다 (p>0.05). 본 연구결과 수입우 품종간 일부 조사항목을 제외하고는 육질에 큰 차이를 보이지 않았다. 따라서 국내 수입 생우의 국내비육 후 소비자의 선호도 등, 보다 폭 넓은 연구가 필요하며, 아울러 한우와 동일한 사육프로그램에 의해 사육하여 한우와 수입 생우간 육량 및 육질에 대하여 포괄적인 비교연구가 필요하다 하겠다.

FREQUENCY OF COTTONSEED CAKE SUPPLEMENTATION FOR YEARLING HEIFERS ON BLUE GRAMA RANGE

  • Yearling replacement heifers were used in a two-year study at the Fort Stanton Experimental Ranch near Capitan, New Mexico, USA to compare frequency (once versus three times weekly) of feeding a cottonseed cake supplement. The study involved periods of 130 days (January 4 through May 14) in 1985, and 146 days (December 4 through April 29) in 1986. In each year, supplemental periods were just before the breeding season (natural breeding in multiple-sire groups) that lasted for 75 days during first year and 60 days during second year. During the first year, all (83) heifers (Angus $\times$ Hereford) were supplemented at a level equivalent to 45 kg/head daily and during second year, all (69) heifers (Angus $\times$ Hereford, Hereford) were fed at a level equivalent to .68 kg/head daily. In the first year, heifers were sorted by initial weight into two replications, i.e., those weighing under 223 kg were placed in replicate 1 and those weighing over 223 kg were placed in replicate 2. During the second year, heifers were sorted by breed into two replications, i.e., Angus $\times$ Hereford heifers were placed in replicate 1 and Hereford heifers in replicate 2. Each year, half of the heifers in each replication were supplemented once weekly and the other half three time weekly. Weight gains of heifers were similar for the two treatments over both years of study. During the first year, weight gains for heifers supplemented once or thrice weekly (.23 vs .21 kg daily, respectively) did not differ (p>.05) and the same trend for the second year (.15 vs .16 kg daily, respectively) was observed. Similarly, breeding performance was consistent with weight gains and no difference (p>.05) between treatments was observed either year. Lower conception rates during the second tear of study (92 vs 72% for years 1 and 2, respectively) were due mainly to involvement of Hereford heifers that had an average weight of 232 kg at the start of breeding season and conception rate of 54% (averaged across both supplemental treatments). Based on the combined results of both trials, frequency of supplementation did not affect growth rate of yearling heifers nor did it influence their subsequent conception rate.

Efficiency of Calf Production from Twin-bearing Beef Cows on an Intensive Pasture System in Subtropical Australia

  • Forty-two single-bearing and 42 twin-bearing mature Angus${\times}$Hereford cows were allocated, seven per cell to 3 replications of 2 stocking rates (3.2 cows/ha; medium stocking rate [MSR], and 3.8 cows/ha; high stocking rate [HSR]) to graze summer-active and winter-active pastures from late pregnancy to the weaning of their calves. Cow liveweights and growth of calves were recorded as well as estimates of pasture quantity and forage intake. Pasture quantity did not differ in the paddocks grazed by single- and twin-bearing cows during pregnancy, nor effectively did forage intake. Subsequently, intake was higher during mid-lactation especially with twin-rearing cows (25% higher than single-rearing cows at the MSR; 9% at the HSR). However, quantity of pasture decreased for twin-rearing cows and was less than that available to single-rearing cows as lactation progressed. Liveweights of twinrearing cows decreased by 16% from late pregnancy to weaning at the MSR, and by 14% at the HSR, compared to decreases of 1% for single-rearing cows. Twin calves were lighter at birth, had slower growth rates, and were lighter at weaning than single calves. In spite of weaning smaller calves twinning increased the output (kg of calf weaned) per cow and per ha, and increased the efficiency (kg calf weaned per unit of forage eaten by the cow) over single calf production by 46% at the MSR and by 58% at the HSR. Twinning also increased the marginal returns from investment in high input pastures required by the enterprise.
