This study was conducted to investigate the effects of germinated and fermented unmarketable soybean (GFS) on laying performance and egg quality in laying hens. A total of two hundred laying hens were divided into 5 groups (5 treatment $\times$ 4 replication $\times$ 10 birds each) and fed with the experimental diets for 8 wk as follows: control, GFS free; T1, GFS 0.15%; T2, GFS 0.3%; T3, GFS 1%; T4, GFS 2%. The laying performance, egg quality, blood profiles, cecal microbial population, isoflavone content in egg yolk were investigated. There were no significant differences laying performance, relative liver and spleen weights, egg yolk color, eggshell color among groups. Eggshell strength in groups fed with diets containing GFS increased, but not significantly. Eggshell thickness significantly increased in the GFS-supplemented group. No significant differences were observed in the blood profiles and intestinal microflora after supplementation. The decrease of Haugh unit during storage was alleviated by feeding of GFS (p<0.05). The concentrations of malondialdehyde in groups fed with GFS were decreased as compared with control (p<0.05). Isoflavones in the egg yolk were detected in group fed with diet containing 2% GFS. These results showed that unmarketable GFS could be used as a favorable feed additive and feedstuff for production of quality enhanced and isoflavone fortified eggs.

Background: A six-week study involving two hundred and fifty (250) Harco Black layer birds at point of lay was conducted to investigate the effects of potential natural colorant on performance and Egg quality traits. The birds were assigned to five (5) dietary treatments, each containing supplements either of control, Baobab Leaf (BL), Waterleaf (WL), Red Pepper (RP), Canthaxanthin (CTX) at 40 g/kg feed and 50 mg/kg feed of natural and commercial colorants, respectively. Results: Performance records shows that there was no significant (p > 0.05) difference in feed intake across the supplements of Red pepper, Water leaf, Canthaxanthin and control diet, however, birds fed Baobab leaf treatment had a significantly lower (p < 0.05) feed intake value (94.07 g) when compared with other treatments. Body weight gain and Hen Day Production were not significant influenced (p > 0.05) by the dietary treatments, although laying hens fed Baobab leaf supplement had lowest mean HDP of 48.80%, while birds fed Red pepper and Water leaf supplement had an average value of 52.79%. There was no significant effect (p > 0.05) of colorants on egg external traits, compared with the control; birds fed Canthaxanthin treatment had higher mean egg weight (51.79 g), egg length (4.55 g), egg breadth (3.29 g); Red pepper treatment had highest mean shell thickness (0.29 g), however these differences were not significant (p > 0.05). Yolk height, Albumen height, Yolk index, and Haugh unit were not significantly affected (p > 0.05) across treatments. Yolk width was lowest (p < 0.05) in Baobab leaf treatment (2.54 cm); Red pepper, Water leaf and Canthaxanthin (2.89 cm, 2.62 cm and 2.89 cm respectively) were not significantly (p > 0.05) different from the control (2.73 cm). Yolk colour score was significantly highest (p < 0.05) in Red pepper treatment (7.50); Water leaf, Baobab leaf and Canthaxanthin ranged between 2.25-3.31 on the DSM yolk colour fan, Control treatment had the lowest yolk colour score (p < 0.05) of 1.31. Conclusion: The study showed Red pepper as a worthy alternative to commercial yolk colorant. Water leaf and baobab are not good substitutes for canthaxanthin as a yolk colourant.

This study was conducted to investigate the effect of drinking ion water on the performance, egg quality, and serum biochemical properties of laying hens in a high-temperature environment. A total of 180 laying hens with equal egg production rates were randomly divided into three treatments with five replicates. Treatments were applied from 24 to 27 weeks of age and included the supply of ion water (IW), tap water (TW), and cold water (CW). The results showed that the egg production rate, egg weight, and feed intake of hens were significantly (P<0.01) improved in the IW group compared with those in the TW group but did not differ from those in the CW group. Egg quality parameters such as albumen height, Haugh unit, and eggshell thickness were found to be higher in the IW than in the TW group (P<0.05); however, no significant differences were observed in comparison with the CW group. Serum Ca and P concentrations tended to increase (P<0.10) in the IW group, and serum high-density lipoprotein cholesterol and albumin levels were greater (P<0.05) in response to IW than those to TW. This study provides evidence that the supply of IW can relieve the high-temperature stress during the summer. In particular, because the improved effects of the IW were confirmed to be similar to those of CW, it shows potential as a method to manage the drinking water of hens in the summer season along with the supply of CW.
Two experiments were conducted to investigate the dietary effect of chlorella vulgaris on egg production and lutein incorporation into chicken eggs. In Exp. 1, a total of three hundred, 70 wk-old Hy-Line brown layers were divided into six groups with five replicates and fed each experimental diet (corn-SBM based control diet and diets with 0.1, 0.3 or 0.5% chlorella powder and with 0.8 or 2.4% chlorella cultured media) for 6 wk, respectively. The egg production in the groups fed diets containing the chlorella powder and chlorella cultured media were higher than that of the control group (p<0.001). As dietary chlorella levels increased, the yolk color linearly increased. However, there were no significant differences in egg-shell qualities. The layers fed diet with 2.4% chlorella cultured media showed the highest Haugh unit value. In Exp. 2, a total of one hundred-eight 80 wk-old Hy-Line brown layers were assigned into four groups with three replicates per group (9 birds per replicate). The birds were fed one of four experimental diets (0, 0.5, 1.0 or 2.0% chlorella powder) for 4 wk, followed by a 14 d feeding of a withdrawal diet devoid of chlorella powder. At 2 wk, the lutein greatly increased with increasing levels of chlorella powder in birds fed diets containing more than 1%. The maximum incorporation of lutein into eggs was reached after 2 or 3 wk of feeding diets with chlorella powder. After a 7 d withdrawal, the lutein contents of egg yolks in the groups fed diets with more than 1% chlorella powder were still higher than that of control group (p<0.05). No significant differences in the lutein levels were found among groups after a 14 d withdrawal period. These results indicated that the use of chlorella in layer diets was effective in improving egg production and egg quality and for the production of lutein fortified eggs.

The objective of this study was to investigate the effects of food waste and probiotics supplementation on productive performance and egg composition of laying hens. Total 120 layers (Brown Tetran) 22 weeks old were divided into five groups with 4 replicates for each treatments and raised in battery cage. The experimental design was completely randomized. The egg Production rate was significantly increased in layer supplemented with 0%, 0.5%, 1.0% and 1.5% of probiotic supplemented diets compared to control (P<0.05). At feeding with food waste and probiotic supplementation had no effect on the egg shell strength (P>0.05). Haugh unit of the eggs was significantly increased in layers fed with 1.5% of probiotic supplemented diet (P<0.05). The different levels of inclusion of the food waste and probiotic supplementation had not effect on egg shell color, blood spot and albumen index of the eggs (P<0.05). There were not significant differences in over all acceptability, juiciness, texture and color of the eggs from layer fed with different levels of wood waste and probiotic supplementation. The appearance and flavor significantly deteriorated in eggs from layers fed with probiotic diets compared to control (P<0.05).
This study was performed to investigate the freshness and nutritive components of eggs from Incheon area. The eggs of 64 brands collected from 7 hypermarkets and 6 brands collected from farms were examined to test the Haugh unit (HU), egg yolk index and specific gravity. HU and specific gravity were higher in farm eggs than in hypermarket eggs (P<0.05), and there was no difference in the egg yolk index. Among hypermarket eggs, HU and egg yolk index were higher in the graded eggs than in non-graded eggs (P<0.05), and specific gravity was not different between them. HU and egg yolk index of the eggs collected in March were higher than those in August (P<0.05). To monitor the bacterial contamination, total coliforms, total bacterial counts (TBC) and Salmonella enteritidis were examined. Salmonella enteritidis and total coliforms were not detected from all eggs. TBC of farm eggs were less than $10^1$ CFU/mL in all samples and TBC of hypermarket eggs were less than $10^1$ CFU/mL in 187 samples, $10^1{\sim}10^2$ CFU/mL in 3 samples and $10^3{\sim}10^4$ CFU/mL in 2 samples, respectively. Antimicrobial residues were not detected from all eggs tested. The vitamin E contents in the vitamin E enriched eggs from 6 brands hypermarket were 1.98~22.96 mg/yolk100 g ($14.04{\pm}8.81$ mg/yolk100g), and those of 5 brands among them were higher than the average of ordinary eggs. In one brand egg, vitamin E content was lower than the average of ordinary eggs. The vitamin E contents of ordinary eggs were 1.75~16.36 mg/yolk100 g (average $5.57{\pm}2.76$ mg/yolk100 g) and there were no price differences between vitamin E enriched eggs and ordinary eggs. In the contents of vitamin E, docosahexaenoic acid (DHA) and cholesterol, there were no significant differences according to the price. These results suggests that egg production, distribution, and management system should be improved for supplying fresh eggs to consumers at reasonable prices.

This study was to execute the random arrangement of total 120 heads (10 heads per treatment plot ${\times}$ 3 repeats ${\times}$ 4 treatment plots) for four breeds [Blue arakana commercial Fowl (BC), Yeonsan silky fowl (YS), Korean native fowl (KN), White leghorn fowl (WL)] with the initiation of laying hens at 32 weeks old in order to comparatively analyze egg quality and composition by sorts of laying hens. In case of evaluation of the quality of eggs, this study has shown that BC had higher degree of Haugh unit coefficient (82.82) and in case cholesterol content of eggs, BC had significantly low content as 317.55mg/100g, but YS had rather higher content as 381.30mg/100g. Furthermore, this study has found out that BC had significantly low Oleic acid (C18:1n9) and WL had higher Amino acid content by breeds than those of other breeds (p<0.05).
The fresh eggs of African ostrich in Korea were used in this study to investigate their interior and exterior quality characteristics. In ostrich egg shape characteristics, long and short length were measured as 15.1~16.1 cm and 12.1~13.6 cm, respectively. The egg shape index was calculated as 81.0 and the egg shell showed a more g loss white in color than that of hen egg. Calculated breaking strength of egg shell and egg shell surface based on the equation were $41.155kg/cm^3$ and $804.7cm^2$, respectively. Average egg shell thickness including egg shell membrane was 1.89 mm and there are no differences among parts of the shell. The egg shell membrane thickness was 0.10 mm showing relatively thick in equator compared with that of blunt end. The ave rage number of egg shell pores was counted as $19.7/cm^2$ showing relatively high number of egg shell pores at point end and the total number of egg shell pores in an egg was estimated as 15,241. The relative port ion of each parts based on egg weight was estimated as 25.1% for egg yolk, 58.2% for egg white, 16.7% for egg shell and the ratio of egg yolk to egg white (Y/W) was 0.43. The average diameter and the ave rage height of ostrich egg white were 19.7 cm and 13.2 mm, respectively. Calculated the H.U (Haugh Unit) was -69.7 and the pH was 8.3. In ostrich egg yolk, the diameter, the height, the egg yolk index, and it's pH were calculated as 14.4 cm, 29.4 mm, 0.20, and 6.6, respectively. And the egg yolk color showed a more thin in yellow chroma compared with that of hen egg as due to it's thicker membrane.
Betaine functions as an osmoregulators in the cells and its inclusion in diet can spare the choline and carcass fat reduction in chicken. Thus, two hundred eighty eight laying hens were fed with 0, 500, 1,000, 2,000 ppm of betaine from seventy eight to eighty six weeks of age during the environmentally high temperature stress. Com and soybean basal diets contained 2,800 kcal/kg ME and 16% CP. Egg production, feed intake, and feed conversion were examined for eight weeks. Egg quality characters, serum cholesterol, liver betaine, and lower ileal osmolality were measured at the end of experiment. Egg Production rates of hens fed with 500 or 2,000 ppm of betaine were 75.06 and 75.02%, respectively and tended to increase compared to the control. The feed conversion(FCR) of these treatments was significantly(P<0.05) improved compared to that of control although it did not significantly differ in the e99 Production rates between 500 and 2,000 ppm of betain groups. Eggshell breaking strength of hens fed betaine was significantly(P<0.05) higher than those of control. However, betaine supplements did not influence to improving the albumen height and Haugh unit. Liver betaine in hens fed with betaine was linearly increased unto 2,000 ppm. The birds fed with 2,000 ppm betaine showed significantly(P<0.05) higher in the liver betaine than the control birds. Total cholesterol and triglyceride tended to be increased by dietary betaine supplement. The lower ileal osmolality in betaine supplement group tended to be slightly decreased. As a result, dietary betaine supplement tended to improve the egg Production and eggshell Quality in laying hens during heat stress.
The wild ginseng culture by-products(WGCB) was added to the laying hens diets. A total of 420 Lohmann Brown laying hens were alloted to five levels of drinking water containing WGCB 0, 0.4, 0.8 1.6, $3.2\%$with seven replications and fed com-soybean meal based diets contained ME 2,800 kcal/kg, CP $16\%$. Laying Performance, egg quality, egg yolk fatty acid and cholesterol concentration were measured. Egg Production and daily e99 mass were significantly lower(p<0.05) in birds fed the WGCB $3.2\%$ compared with no WGCB group, but showed no significant effect in other treatments. Feed efficiency of birds fed $0.4\%$ WGCB showed the lowest of all treatments(p<0.05). Eggshell thickness was increased(p<0.05) by WGCB supplementation, whereas eggshell breaking strength, haugh unit and yolk color index were not affected. No significant change in yolk fatty acids and cholesterol were observed by the addition of WGCB.
