Effect of Domestic Clay Minerals on Growth Performance and Carcass Characteristics in Growing-Fattening Hanwoo Steers (육성비육 거세한우에 대한 점토광물 급여가 성장 및 도체특성에 미치는 영향)

  • This study was conducted to investigate the effects of domestic clay minerals on feed efficiency, meat quantity, meat quality and economic traits in 24 head of Hanwoo steers(166.1kg in body weight) for 540 days from six to 24 months in age. Feeding trial was conducted with 4 treatment(six heads/treatment) which were T1(Control), T2(Control+Kaolinite), T3(Control+Bentonite), T4(Control+Illite). The results obtained are summarized as follows; The range of average daily gains were 0.682 to 0.713, 0.669 to 0.714, 0.690 to 0.840 and 0.699 to 0.756kg in growing, fattening, finishing and over-all period, respectively, and the gains were high in T1 for growing and fattening period but in clay mineral groups for finishing and over-all period, especially it was high in Illite and Bentonite groups. Concentrates and TDN intakes per unit of kg gains were lower in clay mineral groups than in control and was lower especially in Bentonite groups. In carcass characteristics, dressed carcass and fresh meat and retailed cut percent were not apparently difference by treatments, and yield index was 69.3, 68.9, 68.8 and 68.6 in T3, T2, T4 and T1, respectively. Marbling scores were 5.1, 4.6, 4.4 and 3.3 in T3, T2, T4 and T1, respectively, and the range of shear force by treatment was from 3.51 to 6.02kg/cm2. and were improved with significant difference(P<0.05) in clay mineral groups than in control. Also in palatability traits, panel test scores of juiciness, tenderness and flavor were improved in clay mineral feeding groups, especially the flavor was improved with highly significant difference(P<0.01) in clay mineral groups than in control. In total fatty acid contents, the rate of SFA(saturated fatty acid) in longissimus muscle of beef was higher in the order of T2, T3, T1 and T4 while the rate of MUFA(monounsaturated fatty acid) was high in the order of T4, T3, T1 and T2. The content of oleic acid which is major influential factor at the flavor of beef was higher in Illite groups than in any other groups. In composition of amino acids in longissimus muscles of beef, the rate of essential amino acids was high in the order of T1, T2, T3 and T4. and the rate of amino acids in clay mineral groups was smaller than in control.In chemical component in Gom-Tang(soup of bone) made by Hanwoo steer’s leg-bone, the ranges of crude protein, ether extract, and crude ash was 0.81 to 1.24, 0.17 to 0.35 and 0.07 to 0.09%, respectively. In mineral composition, the ranges of Ca, P, Na and Mg was 14.01 to 15.77, 11.45 to 16.40, 37.92 to 49.99 and 0.26 to 0.46ppm, respectively. Chemical composition were not apparently different but mineral composition was increased in clay mineral groups than in control. Income by treatments was 967,096 to 1,524,055 Won per head for 540 days and income of clay mineral groups in comparison with control’s increased by 23.7 to 57.6 percent, and especially it was higher in bentonite and(or) Illite groups than others. According to the above results it may be concluded that clay mineral to growing-fattening Hanwoo steers can be improved the meat quantity, meat quality and income. Especially the effect of bentonite and illite is large and can be recommended for usage to improve animal performance as feed additives of growing-fattening Hanwoo steers.

Correlation Analyses on Growth Traits, Body Size Traits and Carcass Traits in Hanwoo Steers (한우 후대검정우 체중, 체척 및 도체형질간 상관분석)

  • This study was conducted to estimate correlation structure between Hanwoo steer growth traits - body weights at 6 month, 12 month, 18 month and 24 month of age, average daily gain, carcass traits, body size traits at 18 months of age. Hanwoo progeny test data(body weight, body size traits) collected from 2004 to 2008 on a total of 1,838 steers at Hanwoo Improvement Main Center(NACF) were analyzed. Carcass traits were used to score the 24 months of age and slaughter. Correlation analyses were performed with observed scales of the traits and with residuals considering fixed effects in generalized linear models. The correlated coefficient estimated between live weight at slaughter(24 months of age) and cold carcass weight was high at 0.92. Correlation between beef yield index values and backfat thickness was estimated to be high and negative at -0.92. Hip height and wither height was found to be highly correlated(0.89). Chest width and chest depth also was found to be highly correlated at 0.73. Rump width was highly correlated with chest depth(0.75) and chest width(0.74). Correlation between pelvic width and rump width was estimated to be 0.74. Hipbone width was shown to be highly correlated with chest depth(0.73), chest width(0.70), rump width(0.75), or pelvic width(0.75). Correlation between wither height and carcass weight was 0.48 in observed scale. Chest girth was phenotyically (residual correlation) correlated with carcass weight (0.51), the estimates of which were some higher than than with the other carcass traits. This study will be utilized for Hanwoo Steers genetic evaluation.

Effects of Organic Selenium Mix on the Performance, Carcass Characteristics, Tissue Selenium Distribution, and Economic Value in Finishing Hanwoo Steers (유기셀레늄 혼합제 급여가 비육말기 거세한우의 성장, 도체성적, 체내 셀레늄 분포 및 경제성에 미치는 영향)

  • This study fulfilled to investigate the feed efficiency, tissue selenium distribution, carcass characteristic and economic value in finishing Hanwoo steers fed organic selenium mix (OSM) which included seleno-yeast, rumen culture and other microbial supplements. Forty five finishing Hanwoo steers were tested for 4 months dividing to three feeding groups: OSM add as 0.5 ppm Se of DM feeds (0.5 ppm OSM), OSM enriched add as 1.0 ppm Se of DM feeds (1.0 ppm OSM) and basal diet without OSM (control). The total weight gains, the average daily gains and the feed intakes were not differ in treatments (p > 0.05). No differences (p > 0.05) were noted for hot carcass weight, loin eye area, backfat thickness, meat yield index, meat color, fat color, tenderness and maturity. However, the 1.0 ppm OSM showed better performances for feed requirement, TDN per gain, meat yield grade and meat quality grade compared to other groups. Tissue selenium distribution was increased by organic selenium feeding: higher Se concentration in liver and rump of 0.5 ppm OSM (p < 0.05), and kidney, liver, sirloin and rump of 1.0 ppm OSM (p < 0.05) than the tissues of control group. Generally, tissue selenium was the highest value in 1.0 ppm OSM and showed higher concentrate in order; kidney, liver, sirloin and rump. The income over feed cost was 1.06-fold higher in 1.0 ppm OSM than control group. In conclusion, organic selenium mix supplementation and its amounts were not influenced to feed intake, body gain and carcass characteristic but significantly increased tissue selenium. Therefore, these results suggest that finishing Hanwoo steer fed an enriched organic selenium mix with proper probiotics is able to produce “high-Se” beef as high bioavailable form as well as create a beneficial opportunity on Hanwoo farm.

Effect of Pen Floor Condition Depending upon Housing Orientation on the PerFormance of Finishing Hanwoo Steers (우사의 향방에 따른 사육장 바닥면의 조건이 비육말기 거세한우의 생산성에 미치는 영향)

  • In order to investigate the effect of floor condition on the fattening performance of cattle, sixteen finishing Hanwoo steers of weighting 570kg were fed for 16 weeks to slaughter on two types of sawdust bedding pen oriented to the south(SP) and the north(NP) then obtained following results. The floor condition of SP roofed by transparent material was dry and flat during overall experimental period, whereas, that of NP roofed by solid slate was muddy and rough even in summer and fall, and then frozen in winter period resulted in interfering with the locomotion and resting behavior of steers. Average daily dry matter intake of steers was not different between tow treatments, however, the average daily gain of steers in NP and SP was 0.64kg and 0.75kg, respectively, meaning that gained 14.3% less for the NP group(p<0.05), accordingly, feed requirement(feed/gain) and TDN/gain increased by 15.9% and 15.5%, respectively. No significant differences were found in slaughter weight, carcass weight, dressing percentage, meat yield index and meat quality traits between two treatments. In conclusion, this study revealed that poor floor condition of feeding pen could decrease weight gain and feed efficiency of cattle by increasing energy consumption for locomotion and conductive energy loss while resting on the floor surface. These results indicates that housing orientation of cattle shed and the selection of roof material are important factors in beef cattle production.

Effect of Dietary Cracked Whole Barley on the Meat Compositional Properties of Hanwoo Steer Loin Beef (분쇄 통보리 급여 수준이 거세한우의 등심부위의 성분 조성에 미치는 영향)

  • This study was carried out to investigate the effects of the feeding level of cracked whole barley (CWB) on fatty acid composition, free amino acid content, organic acid content, pH, HDL cholesterol, total phenol and DPPH (1,1-diphenyl-2-picrylhydrazyl) radical scavenging activity of finishing Hanwoo steers. The dietary treatments were consisted of five types (C: base feed + 0% CWB, T1: base feed + 10% CWB, T2: base feed + 20% CWB, T3: base feed + 30% CWB, T4: base feed + 40% CWB). A total 30 Hanwoo steers(588.6${\pm}$11.8kg) were allocated into 5 feeding groups, and a total of thirty Hanwoo steers raised from 24 to 30 months. Linoleic acid of fatty acid composition was significantly higher for cracked CWB treatments (T1, T2, T3, and T4) than C, and T3 of CWB treatments was the highest than the other treatments (P<0.01). SFA, USFA, MUFA and USFA/SFA did not differ among the treatments. On the contrary, PUFA was significantly higher for CWB treatments(T1, T2, T3, and T4) than C, and T3 was the highest (P<0.05). EAA was higher in the order of T1 > T2 > C > T3 > T4 (P<0.05). NEAA was higher in the order of T2 >T3 >T1 >C >T4, although a statistical significance was not detected. The total organic acid content was the highest for T3 (20.15 mg/100g) and the lowest for T2 (13.19mg/100g). pH and total phenol of all treatments were did not differ. HDL cholesterol was higher in the order of T1 > C > T4 > T2 > T3 (P<0.01). DPPH radical scavenging activity was in order of T1 > T2 >T4 > C > T3 (P<0.01). Based on the above results, T1 treatment compared to other treatments have been shown to improve EAA, DHL, and DPPH radical scavenging activity.

Effects of Physically Effective Neutral Detergent Fiber Content of TMR Feed on the Productivity and Carcass Characteristics in Hanwoo (Bos taurus coreanae) Steers (TMR 사료의 물리적 유효 NDF 함량이 한우 거세비육우의 생산성과 도체특성에 미치는 영향)

  • This study was carried out to evaluate accurately physical characteristics of total mixed rations (TMR) by investigating the effects of physically effective neutral detergent fiber content on the growth performance and carcass characteristics in fattening steers. Twelve Hanwoo (Bos Taurus coreanae) steers aged 26 months were used in this trial. Steers were offered one of two total mixed ration (TMR) diets - High or Low physically effective neutral detergent fiber (peNDF) content groups-that were differentiated by mixing time. The carcass traits of the experimental animals were evaluated by Korea Institute for Animal Products Quality Evaluation (KAPE) after slaughter. Body weight gain during the experimental period was significantly higher (P<0.05) in the High group ($30.00{\pm}10.27kg$) compared with the Low group ($17.20{\pm}6.34kg$), and daily weight gain was also high in the former. Although there was no significant difference, the carcass weight was higher in the High group ($414.60{\pm}34.28kg$) compared with the Low group ($377.80{\pm}11.97kg$). However, the beef quality grade of the Low group ($1^{++}$) was higher than that of the High group ($1^+$). Increases in body weight gain, daily gain, and carcass weight for the High group were mainly influenced by a high level of dry matter (DM) intake and digestibility; consequently, back-fat thickness increased and the beef quality grade was lowered. Because growth performance and carcass characteristics were affected by the physical traits of the diet, we suggested that proper peNDF content is also needed for fattening steers.

Effect of Selenium Supplementation on Beef Color Stability (셀레늄 급여가 쇠고기 육색 안정성에 미치는 영향)

  • The objective of this study was to investigate the supplementation effect of selenium on beef color stability. A total of 15 Hanwoo steers were divided into 3 groups and 2 groups were administered with 0.9 ppm of one of two organic-selenium products, Organic-Se and Se-SMC (Se-spent mushroom compost) for 4 mon. The third group was the control group, which was not with fed selenium during the same period. The result of this study showed that there was no significant difference in meat color between the control and treatments when Hunter $L^*$, $a^*$, $b^*$, chroma, hue and total color difference (${\Delta}E$) were measured after 30 min of blooming. When the oxymyoglobin (OxyMb) contents were measured after beef samples were ground and stored for 48 h at $20^{\circ}C$ in an incubator, they were 26.04%, 28.52% and 33.78% for the control, Organic-Se and Se-SMC after 14 d of storage and 12.65, 18.98 and 18.72 after 21 d of storage at $4^{\circ}C$, respectively (p<0.05). The control had a significantly higher metmyoglobin (MetMb) content than Organic-Se and Se-SMC (p<0.05). This result indicated that selenium supplementation was effective in preventing the oxidation of myoglobin(Mb) and production of MetMb and thus was able to maintain the purplish fresh red color of the meat.

Determination of Physico-chemical Properties and Quality Attributes of Hanwoo Beef with Grade and Sex (한우의 등급간, 성별간 품질 특성 및 이화학적 성분 규명)

  • This study was carried out to determine the physico-chemical components and to examine it the consumers can tell the difference in eating quality of loins of Hanwoo with grade and sex. Loins of 36 carcasses were selected and their intramuscular fat, color, pH, water holding capacity, shear force, the amount of myoglobin and moisture content were measured. The result was that only intramuscular fat was significantly different with grades. In Pearson correlation coefficients among quality factors, moisture content increased significantly with the amount of myoglobin(0.514) and shear force(0.503) and decreased as intramuscular fat(-0.957) and water holding capacity(-0.491) increased. Also, content of intramuscular fat decreased as shear force(-0.565) increased. According to descriptive analysis, aroma and acceptability in the 2nd grade steer showed the highest score. Aroma, juiciness and tenderness may affect acceptability of cooked meat. Also, juiciness, tenderness and acceptability had a negative correlation with moisture content and the intramuscular fat did not affect tenderness directly.

Effect of Marbling Score on Carcass Grade Factors, Physico-chemical and Sensory Traits of M. Longissimus Dorsi in Hanwoo (근내지방도가 한우 도체등급 요인, 이화학적 특성 및 관능적 특성에 미치는 영향)

  • The objective of this research was to investigate the effect of marbling scores on carcass grade factors, physico-chemical and sensory traits of Hanwoo. Data used in this study were collected from 73,316 carcasses obtained at the Nonghyup Seoul slaughterhouse in 2009 and 271 cuts of M. longissimusdorsi were analyzed to estimate beef qualities. As the marbling scores increased, backfat thickness was linearly increased (p<0.05) in cows (9.51 mm-14.69 mm) and steers (8.71 mm-14.23 mm). As the marbling scores increased, maturity of cows was increased and meat color, texture and quality grade improved for all genders. With increase of the marbling scores, crude fat contents (3.07%-26.70%), water holding capacity (52.09%-58.66%), $L^*$ value (34.08-41.97) were significantly increased (p<0.05) and Warner-Bratzler shear force was linearly decreased (p<0.05) from 8.58 kg to 2.60 kg. The increase of crude fat contents had the similar interval with the increase of marbling scores from 1 to 6 but it is sharply increased from marbling score 7. There was no difference observed on $pH_{24}$ (5.50-5.66), protein contents (19.57%-21.15%) among the marbling scores. Marbling score was significantly correlated with live weight (r=0.29) in cows, loineye area (r=0.35) in steer, and overall acceptability of panel scores (r=0.67) (p<0.01).

A Study on the Body Type of Hanwoo(Korean Cattle) Steer by Using Principal Components Analysis (주성분 분석을 이용한 거세한우의 체형분류에 관한 연구)

  • Data were consisted of the ten body measurements (withers height, rump height, body length, chest depth, chest width, rump width, rump length, thurls width, hipbone width and chest girth) of 642 steers (Korean cattle), which was entered in the National Beef Quality Contest hosted by the Korea Animal Improvement Association from 1997 to 2001. A principal components analysis was used to classify the body types of the steers, and estimate the correlations between carcass traits and principal components for the body measurements of the first, second, third and fourth period, respectively. The first principal component of body measurements at the first, second, third and fourth period accounted for 76.0%, 83.0%, 72.7% and 57.4% of the total variance, respectively. The sum of first, second and third principal component at each period accounted for 86.69%, 90.49%, 84.62% and 77.26% of the total variance, respectively. At each period, all the first principal component of the body measurements were positive and it generally showed large framed body shape. The size of body was influenced mostly by chest depth(0.328${\sim}$0.339) and rump length(0.325${\sim}$0.341). The second, third and fourth principal component at the each period were various. There were positive correlations between principal components index of each period and carcass traits such as carcass weight(0.539${\sim}$0.755), average daily gain(0.256${\sim}$0.564), backfat thickness(0.227${\sim}$0.280), and eye muscle area(0.187${\sim}$0.344). The correlation with yield grade index(-0.246${\sim}$-0.110), however, was negative. The correlation with marbling score(0.066${\sim}$0.099) was low or statistically insignificant. According to principal component indexes of the second, third, and fourth components, the correlations with the carcass traits were various. There were no large differences between the correlations of the single body measurement trait with the carcass traits and the correlations of the first principal component indexes with the carcass traits.
