한우 등심의 위치별 조지방 함량 및 근내지방도 비교 (Comparison of crude fat content and intramuscular fat score at different position of loin from Hanwoo)

  • This study was conducted to make certain that the intramuscular fat score at 13th rib could represent the fat content of whole loin from Hanwoo in Korea beef grading system. A total 42 loins from 23 carcasses of grade $1^{{+}{+}}$, 16 carcasses of grade $1^+$, and 3 carcasses of grade 1 of Hanwoo were used for this study. The crude fat content and intramuscular fat score at the $1^{st}$, $6^{th}$, and $13^{th}$ rib, and the last lumbar position of loin were measured. The crude fat content was the highest at the $6^{th}$ rib of loin from the carcasses of grade $1^{{+}{+}}$ and $1^+$ (p<0.05). There were no significant difference of the intramuscular fat scores measured by image analysis and beef marbling score (BMS) between the 6th and $13^{th}$ rib of loin from the carcasses of $1^{{+}{+}}$ and $1^+$ and that were significantly higher than intramuscular fat scores at the $1^{st}$ rib and the last lumbar position of the loin. From the results, we conclude that the intramuscular fat score at the $13^{th}$ rib can represent the fat content of loin when meat graders decide the grade of Hanwoo carcass.

Association of -867G>C, -877Gdel, and Exon 5G>T Polymorphisms in the Stearoyl-CoA Desaturase (SCD) Gene with Fatty Acid Composition in the M. longissimus dorsi Muscle of Hanwoo (Korean Cattle)

  • This study aimed to identify genetic polymorphisms associated with fatty acid composition in Hanwoo beef. In this study, three SNPs (-867G>C, -877Gdel and 878T>C) were detected in SCD gene by DNA sequencing and PCR-RFLP. Statistical analysis revealed that 878T>C SNP was significantly associated with total saturated (p=0.016), unsaturated (p=0.016), and monounsaturated fatty acid (p=0.026) composition. However, the other two SNPs (-867G>C and -877Gdel) that are detected in the regulatory region of the SCD gene have no association with the fatty acid composition of Hanwoo meat. The 878C (alanine type) allele was found to be associated with 2.2% higher monounsaturated fatty acid, 1.5% lower saturated fatty acid, and 1.4% higher unsaturated fatty acid content than those associated with the 878T (valine type) allele. These results indicate that the non-synonymous SNP (878T>C) in the SCD gene could be a causal mutation that contributes to the MUFA variation in Hanwoo beef.

Effects of Dietary Rhus verniciflua Stokes Supplementation on Meat Quality Characteristics of Hanwoo (Korean Cattle) Beef during Refrigerated Storage

  • The effects of dietary Rhus verniciflua Stokes supplementation (0%, 2%, 4% and 6%/feed) on meat color, water-holding capacity (WHC), lipid oxidation and fatty acid composition in m. longissimus from Hanwoo (Korean cattle) beef during refrigerated storage were investigated. The $L^*$, $a^*$, $b^*$ and $C^*$ values of 4% group were significantly (p<0.05) higher than those of the other groups for 7 days of storage. The $a^*$, $b^*$ and $C^*$ values declined gradually during storage in all of the groups and the decline was more rapid in control group. The metmyoglobin (%) was significantly (p<0.05) increased during storage time in all of the groups, but the 4% group had a lower rate of metmyoglobin accumulation during storage. WHC was significantly (p<0.05) higher in the 2% and 4% groups than in the other groups. The TBARS (thiobarbituric acid reactive substances) value of day 0 was not significantly (p>0.05) different among 4 diet conditions, but the TBARS value after 5 days of storage was significantly (p<0.05) higher in the control group than in other groups. The proportions of C18:1, MUFA, UFA and MUFA/SFA ratio were significantly (p<0.05) higher in the meat from Rhus verniciflua Stokes-supplemented Hanwoo than in the control group. Consequently, the meat from Rhus verniciflua Stokes-supplemented Hanwoo showed higher color stability, WHC, unsaturated fatty acids and retarded lipid oxidation compared to the control meat. In particular, dietary Rhus verniciflua Stokes supplementation with 4% extended storage life compared to the other groups.

Effects of Soybean Sauce and Pre-rigor Muscle on Physicochemical Properties of Frozen Hanwoo Patties

  • In this study, we evaluated the physicochemical and sensorial properties of frozen Hanwoo beef patties prepared from prerigor and post-rigor muscle with soybean sauce or sodium chloride. The pH of the soybean sauce treatments was lower than the sodium chloride treatments (p<0.05); however, the Hanwoo patty prepared from pre-rigor muscle with soybean sauce had a lower cooking loss and smaller diameter than the Hanwoo patty prepared under the same conditions from post-rigor muscle (p<0.05). The addition of the soybean sauce inhibited lipid oxidation due to the antioxidative materials in soybean sauce such as melanoidin. The hardness of patties prepared from pre-rigor treatment was lower relative to those prepared from post-rigor muscle (p<0.05); however, there was no significant difference between springiness, cohesiveness, and chewiness (p>0.05). In the sensory evaluation, patties prepared from pre-rigor muscle with soybean sauce had a significantly high score in all traits (p<0.05); thus, pre-rigor muscle with soybean had the highest overall acceptability. Furthermore, the addition of soybean sauce to pre-rigor muscle produced similar effects as those observed for the addition of sodium chloride in regards to psychochemical properties. Moreover, meat products produced from pre-rigor muscle will have better antioxidative and sensorial properties.

Comparison of Physicochemical and Functional Traits of Hanwoo Steer Beef by the Quality Grade

  • The physicochemical and functional traits for loin muscles of Hanwoo steers were compared by quality grade (QG). A total of 500 Hanwoo steers were slaughtered, their carcasses were categorized into four groups (QG 1++, 1+, 1, and 2), and the longissimus dorsi muscles were analyzed. QG 1++ group had the highest fat and lowest moisture content (p<0.05). QG 1++ showed higher $L^*$ and $b^*$ color values, higher cooking loss, and lower shear force values, compared with the other groups (p<0.05). The flavor, tenderness, juiciness, and preference scores by sensory evaluation were highly ranked for premium QG groups (1++ and 1+). Regarding the micro compounds, QG 1 and QG 2 had greater amounts of inosine monophosphate, and QG 2 had greater amounts of anserine, carnosine, and creatine, than QG 1++ (p<0.05). QG 1++ and 1+ had higher percentages of oleic acid (C18:1) than QG 2 (p<0.05). Within premium QG 1++ and 1+, the results of the nucleotides, free amino acids, dipeptides, and fatty acids did not show any distinctive differences. Hanwoo beef as determined by the current grading system was not significantly different in terms of functional components; the only significant difference was in intramuscular fat content.

한우 2번 염색체 양적형질좌위 영역에서 육질 연관 후보 DNA 마커 규명에 관한 연구 (Study on identification of candidate DNA marker related with beef quailty in QTL region of BTA 2 in Hanwoo population)

  • 한우산업은 유전적으로 우수한 개체를 선발하기 위하여 전통적인 육종방법에 유전체정보를 활용하여 정확하게 예측하는 기술을 개발하고 있는 실정이다. 따라서 본 연구에서는 이미 규명되어진 한우 2번 염색체 양적형질좌위을 바탕으로 발현염기서열표식 (EST) 단일염기 다형성 연관지도상에서 선발된 12개의 염기표식영역 표지인자내 단일염기다형성들과 한우집단의 육질과의 연관성을 평가하였다. 한우 2번 염색체 양적형질좌위영역에 있는 12개의 염기표식영역 표지인자를 이용하여 30차에서 33차 후대검정우 집단에서 가계정보가 서로 다른 20두에서 직접 염기서열분석을 한 결과 10개의 다형성이 있는 단일염기다형성를 확인할 수 있었다. 이 중에서 근내지방도 정규분포상 양쪽 집단과 단일염기다형성 유전자형간 빈도분석을 한 결과 HWSNP_1-1과 HWSNP_9-4 단일염기다형성에서 40%이상의 빈도차이를 나타내었다. 이 2개의 단일염기다형성들로 한우집단 (n=233)에서 근내 지방도와의 연관성을 살펴본 결과 HWSNP_1-1 단일염기다형성에서만 유의적인 차이를 나타내었다 (P<0.05). 따라서 본 연구에서는 HWSNP_1-1 단일염기다형성는 유전체정보를 활용한 한우 육질 개량에 있어 가장 효율적인 보조수단으로 활용가치가 높을 것이라 판단된다.

Effects of Ruminally Protected Amino Acid-enriched Fatty Acids on Growth Performance and Carcass Characteristics of Fattening Hanwoo Cows

  • This study was conducted to determine the effects of ruminally protected amino acid-enriched fatty acids (RPAAFA) on body weight gain, feed intake and carcass characteristics of fattening Hanwoo cows. Twenty eight Hanwoo cows, $6.0{\pm}1.7$ years old and weighing an average of $463.2{\pm}77.6\;kg$, were used for 4 months. Animals were fed a basal diet supplemented with RPAAFA at 0 g (control) and 100 g (treatment), respectively. Average daily gain, dry matter intake and feed conversion ratio were not different among the control and treatment. The supplementation of RPAAFA did not affect carcass weight and rib eye areas. Quality grade score ($1^{++}$, $1^+$ and 1) for treatment was higher in RPAAFA supplemented group compared with the control, whereas no differences appeared in meat color, fat color, texture and maturity. Thus present results indicate that supplementation of RPAAFA may be recommended for producing high quality beef from fattening Hanwoo cows.

Investigation of blood biomarkers related to meat quality and quantity in Hanwoo steers

  • Objective: This study was conducted to investigate the correlation between blood components and carcass traits, and to find the biomarkers related to meat quality and quantity in Hanwoo steers. Methods: One hundred twenty-six Hanwoo steers (8 to 9 months of age, body weight of $185.6{\pm}24.38kg$) were used to find the correlation between blood compositions and carcass traits. The steers were fed concentrate and rice straw (30 steers) or total mixed rations (96 steers) during the whole experimental period. Blood samples were collected from the jugular vein at the growing (8 to 12 months), fattening (13 to 23 months) and finishing phases (24 to 30 months). Steers were slaughtered at 30 to 31 months of age (body weight of $701.6{\pm}60.45kg$) and the carcass traits were evaluated. Blood metabolites and hormones were analyzed and the correlation coefficients and regression equations with carcass traits were determined. Results: Average concentrations of retinol, leptin and insulin were 1.10 IU, 30.34 ng, and 35.35 ng per mL of blood plasma, respectively. Retinol has negative correlations (p<0.01) with insulin and leptin. Blood insulin and total protein decreased with the age of steers, but retinol, aspartic acid transaminase (AST), glucose, cholesterol and triglyceride increased. In the finishing phase, significant (p<0.01) negative correlations occurred between blood retinol content and marbling score, and between blood AST content and longissimus muscle area of 13th rib, and the following regression equations were obtained: Marbling score $(1-9)=-0.009{\times}retinol(IU/100mL)+9.125$ ($R^2=0.643$), Longissimus muscle area $(cm^2)=-0.250{\times}AST(U/L)+112.498$ ($R^2=0.450$). Conclusion: It is possible to make highly marbled beef by controlling the blood retinol content during the fattening and finishing phases of Hanwoo steers. Accordingly, blood retinol and AST could be biomarkers for determining beef quality and quantity, respectively, prior to slaughter.

인진쑥 급여가 한우육의 이화학적·관능적 특성에 미치는 영향 (Physicochemical Properties and Sensory Score of Hanwoo Beef Loin after Feeding with Mugwort)

  • 본 연구는 인진쑥으로 TMR사료를 개발하여 한우에게 급여한 경우, 인진쑥의 급여가 한우 등심의 이화학적, 관능적 특성에 미치는 영향을 확인하였으며, 그 결과로 고급화된 기능성 한우의 생산 가능성을 검토하였다. 대조군(control)은 인진쑥을 혼합하지 않은 비육우 사료를 급여하였고, 급여군(treatment)은 인진쑥을 혼합한 비육우 사료를 급여하였다. 총 카테킨 함량은 대조군 및 급여군이 각각 0.307 및 0.516 mg/kg, 에피카테킨은 각각 0.087 및 0.116 mg/kg으로 급여군이 유의하게 높아 인진쑥 급여의 영향이 있었다(p<0.05). 명도 및 적색도는 급여군이 대조군보다 높았으나 황색도는 대조군과 급여군 사이에 유의한 차이가 없었다(p<0.05). pH는 급여군이 대조군보다 높았으며, TBARS는 대조군이 급여군보다 높았으나 VBN 함량, EDA% 및 총균수는 대조군 및 급여군 사이에 유의한 차이가 없었다(p<0.05). 보수력은 급여군이 대조군보다 유의하게 높았으며, 동결감량, 해동 감량 및 가열감량은 대조군 및 급여군 사이에 유의한 차이가 없었다(p<0.05). 경도, 응집성, 뭉침성, 저작성 및 전단력은 대조군 및 급여군 사이에 유의한 차이가 없었으나 탄성은 대조군이 급여군보다 높았다(p<0.05). 생육의 냄새는 급여군이 대조군보다 유의하게 우수하였으며, 열탕 가열육의 관능특성은 대조군 및 급여군 사이에 유의한 차이가 없었다. 그리고 팬 가열육의 맛, 연도, 다즙성 및 전체적인 기호성은 급여군이 대조군보다 유의하게 우수하였다(p<0.05). 이상의 결과에서 인진쑥의 급여는 항산화 물질의 축적으로 지방산화를 억제하고 보수력을 개선시키며, 기호성에도 좋은 영향을 미치기 때문에 기능성 고품질 한우육 생산을 위한 사료로서의 가능성이 기대된다.

Effects of a Mixture of Eugenol, Thymol and Malate on Growth Performance, Beef Quality and Liver Function in Hanwoo Finishing Steers Fed a High-Concentrate Diet

  • Thirty six Hanwoo steers (average BW, $564.5\;{\pm}\;25.7\;kg$; average age, approximately 23 months) were used to evaluate the effects of a mixture of eugenol (14%), thymol (1%) and malate (85%) on growth performance, beef quality and liver function in Hanwoo finishing steers fed a high-concentrate diet. A feeding trial was conducted for 7 months in National Agricultural Cooperative Federation farm located in Anseong, Korea. Steers were assigned randomly to one of three treatments: control (without additive supplementation), treatment 1 (0.05% additive of concentrate), treatment 2 (0.1% additive of concentrate). The results of this study showed that initial and final BW averaged 564 and 755 kg, respectively, and BW gain was significantly higher (P<0.05) for steers fed the additive mixture than for those fed no mixture (0.78 and 0.79 vs. 0.69 kg/d, respectively). Serum aspartate aminotransferase in the T2 treatment was decreased during the 24 to 31 months of age. Although supplementation of additives resulted in no substantial effect on carcass characteristics, it had a potential effect to improve feed efficiency and AST concentration in Hanwoo finishing steers fed a high-concentrate diet. In conclusion, a mixture of eugenol, thymol and malate has shown promise in improving feed efficiency and liver function in the finishing phase of Hanwoo steers.
